should read, in its entirety, the repair procedure you wish to
perform to determine if you have the necessary tools,
instruments and skills required to perform the procedure.
Procedures for which you do not have the necessary tools,
instruments and skills should be performed by a trained Hobart
Service Technician.

GENERAL
INTRODUCTION
These instructions are for Hobart HP/HR/HPR,
BXP/BXR/BXPR Series Proofer/Retarder. Certain
steps may only apply to HP Series, HPR Series or
HR Series and will be indicated as such. The
HP1/HPR1, BXP1/BXPR1 single wide
proofer/retarder can be shipped assembled requiring
minimal field assembly. All proofer/retarder can be
shipped unassembled requiring field assembly. Both
shipping methods will require leveling and
connection to utilities.
All information, illustrations and specifications
contained in this manual are based on the latest
product information available at the time indicated on
the cover of the manual.
UNPACKING
Remove the crating from proofer/retarder and check
for possible shipping damage. If the proofer/retarder
is found to be damaged after uncrating, save
packaging material and contact the carrier within 15
days of delivery.
If location has multiple proofer/retarders, keep serial
numbered crates together.
Check contents against packing list (included) with
shipment.
LOCATION
Level floor within 1/8" per foot up to 3/4" in all
directions

5" above finished floor, route to air gap

The electrical diagram is located on the cover of the
component box. Proofer/Retarder requires a single
phase or three phase 208-240 volt electrical
connection. Neutral wire circuitry needed to provide
110-120 volt for miscellaneous control components.
A separate 110-120 volt line may be run or a
transformer option will be required if 110-120 volt is
not available. Consult Bakery Product Support for
110-120 volt line or transformer option requirements.

CLEARANCE DIMENSIONS
Proofer/retarder UL/CSA Listed for 1" clearance for
back and side walls.
A 1" to 4" back clearance is recommended when
plumbing rear drain connection.
Top of proofer/retarder requires a minimum of 24"
clearance for servicing accessability.

the proofing system.

SINGLE DEEP CABINET SHOWN
PREASSEMBLED PROOFER/RETARDER
Only single width/single depth and double width/single depth proofer/retarder will be shipped assembled. You may
want to remove door(s) prior to maneuvering proofer/retarder into place. Each proofer/retarder is shipped with the
individual parts needed for assembly along with a packing list. Before installing proofer/retarder, compare parts to
packing list to ensure all parts were received. Wait as long as possible before removing plastic protective covering
from panels. Apply silicone to all floor to wall or panel to floor seams. Leave no voids.
POSITIONING
PROOFER/RETARDER
1. Position proofer/retarder and mark final position
on facilities floor.
NOTE: Check proofer/retarder for being level. If
necessary, place shims under walls to level
proofer/retarder. If cabinet is double wide and shims
are required to level proofer, shims must be placed
under rear wall at connecting wall seam.
DRAIN
1. (HP/HPR, BXP/BXPR Series only) Install drain.
NOTE: Single deep cabinets only, drain tube will
need to be pulled out. Tube tucked in wall panel for
shipping.
A. Install drain tube thru left panel support
wall and hole in rear wall or hole in front
wall depending on location of facilities
drain.
B. Cut tubing to proper length. Length will be
determined by location of proofer in
proximity to a wall or drain.
C. Install compression fitting onto drain tube.
D. Install elbow on drain tube at wall of
cabinet and turn elbow in direction for
routing to facilities drain.
NOTE: Insulation may need to be cleaned out of
hole so drain tube can be routed through.
NOTE: If proofer/retarder rear drain is not accessible
from the back when in final location, route the
proofer drain outside of the cabinet to the facility
drain before setting proofer in final location.
E. Connect drain tube to drain pan.
2. (Retarder Series Only) Install PVC drain tube
(long tube) in evaporator drain ceiling panel left
side of cabinet.
A. Route PVC drain tube out thru back of left
wall panel.
NOTE: Insulation may need to be cleaned out of
hole so drain tube can be routed through.

B. Cut drain tube that protrudes through wall
panel to a length that just allows the fitting
assembly to be attached.
C. Connect fitting to drain tube exiting cabinet
wall and routed to facility drain.
FLOOR
UPDATED JULY 2005
1. Install rear corner brackets at both rear corners
of proofer/retarder cabinet.
NOTE: Place a spot of silicone on back side of
brackets to aid in holding brackets into position.
2. Install side brackets at bottom of each wall post.
NOTE: Place a spot of silicone on back side of
brackets to aid in holding brackets into position.
3. Install front corner brackets at bottom of door
jambs.
NOTE: Place a spot of silicone on back side of
brackets to aid in holding brackets into position.

4. (Proofer/Retarder No Floor option only) Check
walls for squareness and Install floor angels.
NOTE: Do not use floor angles on proofer/retader
with floor.
5. Apply adhesive to bottom of left proofer/retarder
floor and spread evenly with a trowel. Cover
entire floor surface with adhesive.
NOTE: Proofer/Retarder single wide and 30" deep
cabinets will only have a single (one piece) floor.
6. Place left proofer/retarder floor in final position.
NOTE: Floor brackets may need to be removed to
position the floor in place.
A. Position left proofer/retarder floor such that
side flange is behind panel supports on
proofer system & air duct wall.
7. Apply adhesive to bottom of right
proofer/retarder floor and spread evenly with a
trowel. Cover entire floor surface with adhesive.
Also apply adhesive to bottom side of overlap.
8. Place right proofer/retarder floor in final position.
NOTE: Floor brackets may need to be removed to
position the floor in place.
A. Push right floor against the right wall.
NOTE: Ensure right floor overlaps the left floor. If
not, square up proofer walls.
9. Anchor proofer/retarder floor to facility floor.
10. Check proofer for being level. If necessary,
place shims under proofer/retarder walls to
level.

FLOOR BRACKETS
UPDATED SEPTEMBER 2005
1. Install floor brakets to proofer/retarder walls.
NOTE: Ensure front, side and rear corner brackets
are in the gap between proofer/retarder floor and
wall.
2. Silicon front, side and rear corner brackets to
proofer/retarder floor and wall panels.
NOTE: One floor bracket for each side wall panel
and one for the rear wall.
3. Level and square door opening. Install door
jamb mounting brackets to front cabinet corners
and secure to facility floor.
NOTE: If mounting bracket holes do not line up with
clearance holes in floor, drill new clearance holes.
4. Install outer floor trim, remove film covering
from double sided tape and seal trim to wall.
Use roller tool to complete seal to wall.
NOTE: Before installing outer floor trim, clean outer
wall surface with de-greaser.
5. Silicone both front corner floor trim at top and
bottom seams.
6. Secure front edge of proofer/retarder to facility
floor.
WATER SUPPLY LINE
CONNECTION
(HP/HPR, BXP/BXPR)
1. Connect water supply line to solenoid assembly.
NOTE: Use Teflon tape on fitting threads.

ELECTRICAL SUPPLY
CONNECTION
WARNING: DISCONNECT THE
ELECTRICAL POWER TO THE
MACHINE AND FOLLOW LOCKOUT /
TAGOUT PROCEDURES.
1. Connect electrical supply per the wiring diagram
on the component box cover or back side of
lower front trim.
NOTE: If 208-240 volt electrical supply does not
have a neutral, a step-down transformer can be
installed (see following diagram). Step down
transformer must be installed into a leak tight
housing supplied by customer.

FINAL CHECKS
1. Remove all remaining protective plastic.
2. Test for proper operation.
NOTE: (HP/HPR, BXP/BXPR Series only) The right fan of each proofing/retarder system will run continuously and
20 minutes after proofer/retarder has been shut off. The left fan of each proofer/retarder system will cycle with the
heaters.
3. Complete Installation Checklist and return to Bakery System Service Support.
UNASSEMBLED PROOFER/RETARDER
If cabinet is double wide, or double or three deep and shims are required, shims must be placed at connecting wall
seam. Rear wall panels and back corners of side wall panels will be installed with cam locks and the side walls will
be installed together with gimlet bolts.
Pass-thru cabinets will have headers for both front and rear of cabinet. Pass thru models will not have a rear floor
trim. The cabinet is anchored by the door jamb mounting brackets. Anchor rear edge of proofer/retarder floor as
required.
WALL PANELS
Refer to WALL CONFIGURATIONS section for
assembling wall panels. Level each wall as it is being
installed.
1. Start with rear wall at final position on facilities
floor.
2. If cabinet is double wide, install second wall and
fasten with cam locks. Tighten cam locks as
walls are installed.
NOTE: Turn top cam to the right and bottom cam to
the left to lock.
NOTE: If cabinet model contains half panels, always
secure half panels to back wall.
3. Install the female half of the cam lock into the
back edge of the right wall. (Top and bottom
positions)
4. Set the right wall up and secure to back wall
with cam locks.
5. Remove flat head screws (4 total per wall panel)
from back of rear wall panel and install truss
head screws. Install rear wall with nutserts to
the floor.
6. If additional wall panels are added to increase
depth on double or triple cabinets:
A. Remove flat head screws from wall panel
at mating surfaces (4 total per wall panel).

B. Install two seals between walls.
C. Align walls and install gimlet bolt through
front panel and screw into insert of back
panel.
NOTE: Tighten gimlet bolts after all ceiling panels
have been installed.
D. Install cover over the seam and secure
with 4 screws in the cam lock plates.
E. Drill and tap remaining 3 holes in the cover
using 9/64" drill bit and #8-32 tap, install
screws.
F. Repeat for each additional right side wall
panel.
7. (HP/HPR, BXP/BXPR Series only) Before
setting the left wall, remove the screws securing
the cover panel from the proofing system panel.
A. Push panel up and lift cover panel from
panel frame.

B. Remove the intermediate panel.
C. Install the female half of the cam lock into
the back edge of the left wall. (Top and
bottom positions)
8. Set the left wall into position and secure to back
wall with cam locks.
9. Remove flat head screws (4 total per wall panel)
from back of rear wall panel and install truss
head screws.
10. If additional wall panels are added to increase
depth on double or triple cabinets:
A. Remove flat head screws from wall panel
at mating surfaces (4 total per wall panel).
B. Install seal between walls.
C. Align walls and install gimlet bolts through
front panel and screw into back panel.
NOTE: Tighten gimlet bolts after all ceiling panels
have been installed.
D. Install cover over the seam and secure
with 4 screws in the cam lock plates.
E. Drill and tap remaining 3 holes in the cover
using 9/64" drill bit and #8-32 tap, install
screws.
F. Repeat for third wall, if necessary.

11. Check proofer/retarder for being level. If
necessary, place shims under walls to level
walls of proofer/retarder.
CEILING PANELS
UPDATED JULY 2005
1. Install ceiling panel.
NOTE: Refer to WALL CONFIGURATIONS section
for assembling condenser/evaporator system.
A. Start with front ceiling panel first.
B. Make sure corners of cabinet are square.
C. Verify ceiling has all appropriate grommets
for access holes.
D. Align edges of ceiling panel with outside
edge of wall panels.
E. Drill holes in cabinet ceiling using #7 drill
bit and fasten with #14 x 5-1/2" screws.
NOTE: The ceiling panels have formed holes to
allow for the counter-sunk heads of the ceiling
screws.
2. If additional ceiling panels are added to
increase depth on double or triple cabinets:
A. Secure first ceiling panel.
B. Apply two seals to front of second ceiling
panel, upper and lower edges.
C. Slide second ceiling panel against first
ceiling panel. Ensure squareness of ceiling
panel with second wall panels and secure
with #14 X 4" screws.
D. Repeat for each additional ceiling panel.
E. Tighten all wall panel gimlet bolts. This will
pull the ceiling panels together for a tight
fit.
3. (HP3 Proofer Only) Install both upper brackets
onto cabinet for center door post.
NOTE: Refer to TRIPLE WIDE WALL
CONFIGURATIONS DIAGRAM under WALL
CONFIGURATIONS section for door post location.
A. Secure center door post to upper brackets.
B. Install both lower brackets to center door
post.
C. Level and square door post.

D. Anchor lower brackets to floor.
4. (HP/HPR, BXP/BXPR Series only) Route
heater, fan, and high limit lead wires through
appropriate access hole in ceiling. There will be
a grommet around both the inner and outer skin
access holes.
NOTE: Insulation may need to be cleaned out of
holes so heater wires can be routed through.
5. (HP/HPR, BXP/BXPR Series only) Install water
line from solenoid to spray nozzle. Bends in
water line should be shallow radius bends.
CAUTION: Do not kink the water line.
6. (HP/HPR, BXP/BXPR Series only)
Humidity/temperature sensor must be routed
through the ceiling panel from top of ceiling at
rear of the front air duct. Plug will not fit through
ceiling hole.
NOTE: Humidity/Temperature sensor will be
positioned later in the instruction. (HP/HPR,
BXP/BXPR Series only) In double and three deep
cabinets, only the front proofing system will have a
humidity/temperature sensor.
7. Install shroud baffle on to exhaust grill.
A. Install exhaust grill on to proofer/retarder
ceiling under evaporator assembly.
8. Install plugs into all clearance holes.
DRAIN
1. (HP/HPR, BXP/BXPR Series only) Position
drain tube with one end at drain pan and other
end through rear or front panel. Install
compression fitting on end at drain pan and
connect to drain pan coupler.
NOTE: (HP/HPR, BXP/BXPR Series only) If cabinet
is double or three deep, drain tubes will be
connected using tees with one exit point from
cabinet. HP3 Proofer will have two drains, one for
each side.

A. Cut drain tube that protrudes through wall
panel to a length that just allows the
compression fitting to be attached. Length
will be determined by location of
proofer/retarder in proximity to a wall or
drain.
B. Check for correct orientation of elbow
(down or to side) before installing elbow on
drain tube at cabinet wall.
NOTE: Use Teflon tape on fitting threads.
2. (HR, BXR Series only) Install PVC drain tube
(long tube) in evaporator drain ceiling panel left
side of cabinet.
A. Route PVC drain tube out thru back of left
wall panel.
NOTE: Insulation may need to be cleaned out of
hole so drain tube can be routed through.
B. Cut drain tube that protrudes through wall
panel to a length that just allows the fitting
assembly to be attached.
C. Connect fitting to drain tube exiting cabinet
wall and routed to facility drain.

INTERMEDIATE & AIR FLOW
PANELS (HP/HPR, BXP/BXPR)
UPDATED NOVEMBER 2003
1. Install intermediate panel.
2. Install cover panel stop brackets on ceiling.
NOTE: For double or three deep cabinets, the
humidity sensor is always installed on the front
section.
3. Install humidity sensor bracket on ceiling.
NOTE: Ceiling has pre-drilled holes for mounting
humidity sensor bracket.
4. Route humidity sensor through grommet in
panel stop and mounting bracket.
5. Position sensor against bracket end.
6. Install cover panel.
7. Install air flow panel to ceiling using thumb
screws.
NOTE: 90° flat bend fits against cover panel.
Opposite end has angled bend to deflect air
upwards.
TEMPERATURE PROBE
(HR, BXR)
1. Install temperature probe bracket on ceiling.
NOTE: Ceiling has pre-drilled holes for mounting
temperature probe bracket.
2. Route temperature probe through grommet in
panel stop and mounting bracket.
3. Position probe 1/8" from bracket end.
4. Install cover panel.
5. Install air flow panel to ceiling using thumb
screws.
NOTE: 90° flat bend fits against cover panel.
Opposite end has angled bend to deflect air
upwards.

BUMPERS
1. Install bumper mounting brackets to both ends
of bumper supports.
2. Install plastic bumper(s) to bumper supports.
3. Install bumper assembly to wall. Install on left
wall(s) for HR Series.
4. Install rear bumper to wall. Remove the
necessary protective plastic.
5. Install bumper to air intake panel.
SIDE TRIM PANELS
1. Install both forward side trim panels.
2. Install both rear side trim to top of
proofer/retarder.
COMPONENT & JUNCTION BOX
(HP/HPR, BXP/BXPR)
1. Install the component box to top of ceiling panel
at front of cabinet.
A. Remove front cover of component box.
B. Install screws through the bottom of box.
