LIMITED TWO (2) YEAR WARRANTY
Lincoln Foodservice Products, LLC (“Lincoln”) warrants, to the original purchaser for use in the United States of
America, that each new item of Redco food preparation utensils (other than blades) manufactured by it (“Warranted
Product”) is free of defects in material and workmanship under normal use and conditions.
The exclusive remedy available under this Limited Warranty is that Lincoln will, free of charge, but at its option,
subject to, and in accordance with the terms and conditions of the Limited Warranty, repair or replace, for the
original purchaser for use in the United States of America, any Warranted Products or part thereof that proves to be
defective with the same or a similar item or part, if it is returned to Lincoln in accordance with the procedure set out
on the warranty card.
This limited Warranty applies only to the original parts of Warranted Products sold for use in the United States of
America and does not apply to any Warranted Products located outside the United States of America, regardless of
where sold, or to any item or part thereof that has been subjected to accident, casualty, alteration, misuse, or abuse
or if the date of manufacture is altered or removed.
THIS LIMITED WARRANTY DOES NOT APPLY TO BLADES WHICH ARE SOLD COMPLETELY WITHOUT
WARRANTY OR GUARANTEE OF ANY KIND, EXPRESSED OR IMPLIED. THE OBLIGATION OF LINCOLN IS
LIMITED TO THE ABOVE AND, EXCEPT AS EXPRESSLY STATED HEREIN, LINCOLN MAKES NO
GUARANTEES OR WARRANTIES, EXPRESSED OR IMPLIED, INCLUDING, WITHOUT LIMITATION,

OPERATION – ONION KING
1. Before each use, always check blade tightness. If blades are loose, review blade replacement instructions
for tightness procedure.
2. Prepare onions by completely peeling the dry skin and cutting off the stem and root tip. The maximum size
onion usable is 3” diameter. To cut larger onions they need to be halved or quartered.
3. Raise the handle to full open position. Place an onion on the rear of the cutting blades, push down gently
and rotate slightly scoring the onion.
4. Place left hand on the red hold down handle and hold firmly while pulling the pusher head handle down
with a firm, quick, continuous motion, forcing the onion through the cutting blades.
5. Repeat this process until you have prepared enough product for your daily needs.
6. Clean and lubricate your machine immediately.

Blades are sharp and can cause injury. Check machine before using. Be sure machine is clean. Check for
broken, nicked or dull blades and if found, replace blade assembly. Check to be sure Blade and Blade Holder
Assembly can be raised and lowered freely. Lubricate if necessary using a light coating of mineral oil, Petrol
Gel or food grade lubricant. DO NOT LUBRICATE WITH COOKING OIL AS IT WILL BECOME STICKY.
CAUTION:
PRIOR TO USING YOUR EQUIPMENT, IT IS IMPORTANT TO CLEAN THE UNIT.
WASH NEW BLADES WITH WARM SOAPY WATER AND RINSE THOROUGHLY TO
REMOVE THE THIN PROTECTIVE OIL FILM.

CLEANING INSTRUCTIONS (CONT’D)
1. Raise handle then rinse blades and pusher head fingers with a spray of hot water or immerse in warm
soapy water and rinse thoroughly. DO NOT put this machine in a dishwasher or dish machine with soaps,
detergents or other chemicals.
2. Food particles between blades of pusher head fingers may be removed with a small brush. Never use your
fingers when trying to remove food particles from between blades!
3. Let machine air dry.
BLADE SERVICING AND REPLACEMENT
If the machine no longer slices onions cleanly or without damage, the blades could be dull and need to be replaced
or adjusted. Broken, bent, nicked, or dull blades must be replaced immediately. Change the complete assembly.
Never mix old and new blades in the same assembly as this may lead to excessive blade breakage.
1. Allow yourself ample room to work on a flat, dry surface.
2. Remove the blade block screws from both sides of the blade blocks, using a 3/8” wrench.
DISPOSE OF USED BLADES AND BLADE ASSEMBLIES!
3. Examine the pusher head fingers. If they are nicked or burred, smooth the rough edges with a small flat
file. The spaces between the fingers must be uniform. Straighten any bent fingers.
4. The following instructions should be followed when installing the blade assembly.
A. Be sure that blade block shields are in proper position (see exploded view).
B. Place the blade assembly into the frame casting with the sharp side of the blade facing up.
C. Fasten the front of the blade assembly with four ¼-20 x 2” hex head screws. Tighten the screws
until the bearing plate can no longer be moved, then tighten the screw an additional ¾ turn. Do not
exceed ¾ turn (70 inch pounds).
D. Place four ¼-20 x 2” hex head screws in the rear side. Install a neoprene gasket on each screw
between the frame casting and the blade block shield. Tighten the screws until the bearing plate
can no longer be moved, then tighten the screws an additional ¾ turn. Do not exceed ¾ turn (70
inch pounds).
5. Check the clearance between the pusher head fingers and the cutting blades. Make sure they do not rest
on or touch the blades at any point when you mover the pusher head through its full travel.
6. If the pusher head fingers touch the blades, loosen set screws in both pivot rod locking collars and position
the pusher head so each finger passes through the blades without touching. Re-tighten the set screws.

BLADE TROUBLESHOOTING
BROKEN BLADES
1. Wrong food used in machine or onions are too large.
2. Blade tension not correct. Too tight or too lose?
3. Fingers misaligned.
4. Old and new blades mixed in blade replacement.
5. Blades dull.
SOLUTIONS
1. Slice only what is recommended (onions less than 3” in diameter).
2. Follow instructions when changing blades.
3. Always check blade tension before each use.
4. Never mix old and new blades.
5. Always turn the onion slightly to score the onion and start the cutting process.
PREVENTIVE MAINTENANCE
1. Clean machine immediately after each use.
2. Maintain proper blade tension and finger adjustment.
3. Use for intended purposes only.
4. Changing blades at first sign of improper cutting.
