ENERGY
1. DO NOT attempt to operate this oven with the door open since open-door operation can result in harmful
exposure to microwave energy. It is important not to defeat or tamper with the safety interlocks.
2. DO NOT place any object between the oven front face and the door or allow soil or cleaner residue to accumulate
on sealing surfaces.
3. DO NOT operate the oven if it is damaged. It is particularly important that the oven door close properly and that
there is no damage to the: (1) door (bent), (2) hinges and latches (broken or loosened), (3) door seals and sealing
surfaces.
4. The oven should not be adjusted or repaired by anyone except properly qualied service personnel.

designed for industrial or laboratory use.
This oven is for commercial use only.
8. As with any appliance, close supervision is
necessary when used by children.
9. DO NOT operate this appliance if it has a
damaged cord or plug, if it is not working
properly, or if it has been damaged or
dropped.
10. This appliance should be serviced only by
qualied service personnel. Contact nearest
authorized service facility for examination,
repair or adjustment. Special tools may be
required to service this appliance.
11. DO NOT cover or block any openings on
the appliance. Maintain oven clearances
specied on page 9.
12. DO NOT store this appliance outdoors.
13. DO NOT use this product near water – for
example, near a kitchen sink, in a wet
basement, near a swimming pool, or similar
locations.
14. DO NOT immerse cord or plug in water.
15. Keep cord away from heated surfaces.
16. DO NOT let cord hang over edge of table or
counter.
17. Oversized foods or oversized metal utensils
should not be inserted into a microwave
oven as they may create a re or risk of

Pieces can burn off the pad and touch
electrical parts involving a risk of electric

the oven with metal foil. This will cause
overheating of the oven.

WARNING
To reduce the risk of re in the oven cavity:
1. DO NOT overcook food.
2. DO NOT place paper, plastic or other
combustible materials inside the oven if these
materials are not intended for cooking by the
manufacturer.
3. Remove wire twist-ties from paper or plastic
bags before placing bag in the oven.
4. If materials inside the oven ignite, keep oven
door closed, disconnect the power cord or shut
off power at the fuse or circuit breaker panel.
5. DO NOT use the cavity for storage purposes.
6. DO NOT leave paper products, cooking utensils
or food in the cavity when not in use.
WARNING
Liquids such as water, coffee or tea are able to
be overheated beyond the boiling point without
appearing to be boiling. Visible bubbling or boiling
when the container is removed from the microwave
oven is not always present. THIS COULD RESULT
IN VERY HOT LIQUIDS SUDDENLY BOILING
OVER WHEN THE CONTAINER IS DISTURBED
OR A UTENSIL IS INSERTED INTO THE LIQUID.
To reduce the risk of injury to persons:
1. DO NOT overheat the liquid.
2. Stir the liquid both before and halfway through
heating/cooking.
3. DO NOT use straight-sided containers with
narrow necks.
4. After heating/cooking, take extensive care
removing the container from the cavity.
5. Use extreme care when inserting utensils into
the container.
CAUTION
To avoid risk of personal injury or property damage,
observe the following guidelines:
1. DO NOT use metal cookware in the oven.
Doing so may result in damage to the unit.
2. DO NOT cook without product in the oven.
Doing so may result in damage to the unit.
3. DO NOT deep fry fat in the oven. The fat could
overheat and be hazardous to handle.
4. Pierce the skin of potatoes, tomatoes and similar
foods before cooking with microwaves. When
the skin is pierced, steam escapes evenly.
5. DO NOT place popcorn bags in this oven as
they may ignite.
6. DO NOT use regular cooking thermometers in
this oven when cooking with microwaves. Most
cooking thermometers contain mercury and may
cause an electrical arc, malfunction or damage
to the oven.
7. DO NOT use metal utensils in the oven except
as recommended by Duke.
8. Never use paper, plastic or other combustible
materials that are not intended for cooking. If the
oven temperature is too high, some materials
may ignite. Plastic can also melt, posing a
potential health hazard.
9. The oven temperature is set between 375 °F
(191°C) and 500 °F (260 °C) in cook mode.
Verify that plastic, paper or other combustible
materials are recommended by the manufacturer
to withstand the maximum oven temperature.
10. DO NOT use paper towels, which contain nylon
or other synthetic bers. Heated synthetics could
melt and contaminate food or cause paper to
ignite.
11. Racks, utensils, containers and oven surfaces
will be hot during and after use until the oven
is fully cooled down. Use utensils or protective
clothing, like pan grips or dry oven mitts, when
necessary to avoid burns.
12. DO NOT unplug the oven immediately after use.
The internal fans must cool the oven to avoid
damage to electrical components.
13. Consult a physician or the pacemaker
manufacturer about the effects of microwave
energy on pacemakers to avoid malfunction.

1. CONTROL PANEL
This is the electronic control board that is
programmable for different menus, temperature
settings, convection blower (fan) speeds
(Variable 1 to 9) and microwave power. It has
some statistical and service diagnostics.
2. OVEN DOOR AND CAVITY
The oven door and cavity are constructed from
stainless steel and must be kept clean (see
CARE AND CLEANING instructions).
3. CONVECTION AIR
The unit has two blower systems (left and right)
for distributing the air on the product. The blower
system can be operated at different speeds
(Variable 1 to 9) for higher efciency of cooking,
browning, etc. The nozzle openings must be
kept clean and free of debris (see CARE AND
CLEANING instructions).
4. DOOR
The door is pulled towards the user and rotates
downward to open. The door is designed with
interlocks for microwave safety. DO NOT use
the door to support heavy items. It must be kept
clean (see CARE AND CLEANING instructions).
5. DOOR SEAL
The seal prevents the microwave barrier in the
door from accumulating debris. They should be
kept clean and checked regularly for signs of
damage. At the rst sign of wear they should be
replaced by Duke approved service agent.
6. AIR VENT
The large air vent at the top of the cavity is part
of the convection system. It must be kept free
from obstruction. It will not allow microwave
energy to escape into the environment.

7. COOLING LOUVERS
The louvers prevent electrical components
inside the oven from overheating by supplying
cold air. Although the oven has only a clearance
requirements to the left adjacent wall with 0.5
in. (1.3 cm), these louvers should be cleaned
from obstructions between the rib openings and
preferably have access to open air.
8. EXHAUST VENT
The exhaust vent is at the rear of the oven. This
enables steam to escape and prevents build
up of condensation. It will not allow microwave
energy to escape into the environment.
9. COOLING FANS
Cooling fans are mounted to bring in cool air
from the room into and exhaust hot air from
the machinery compartment. Fans should be
inspected for operation regularly.

Unpacking Oven
• Inspect the oven for damage such as dents in
the door or inside the oven cavity.
• Report any dents or breakage to source of
purchase immediately. Do not attempt to use
oven if it is damaged.
• Remove all materials from oven interior.
• If oven has been stored in an extremely cold
area, wait a few hours before connecting power.
Radio Interference
Microwave operation may cause interference
to radio, television or a similar oven. Reduce or
eliminate interference by taking the following
precautions:
• Clean the door and sealing surfaces of the oven
according to the instructions in the CARE AND
CLEANING section.
• Place radios, televisions and similar electronic
devices as far as possible from the oven.
• Use a properly installed antenna on radio,
television and similar electronic devices to obtain
stronger signal reception.
Oven Placement
• Do not install oven adjacent to a source of heat
such as pizza oven or deep fat fryer. This could
cause the microwave oven to operate improperly
and shorten the life of electrical parts.
• Install the oven on a level countertop surface.
• If provided, place warning label in an obvious
place close to the microwave oven.
• The outlet should be located so that the plug is
accessible when the oven is in place.
WARNING
RISK OF APPLIANCE FALLING.
RISK OF PERSONAL INJURY
ONLY operate appliance if its legs are in direct
contact with the countertop or supporting
surface. If the legs are not in direct contact
with the supporting surface, the appliance can
creep slowly during repeated use, eventually
falling off the surface when the door is opened.
Such a fall could possibly injure anyone nearby.
The appliance is often installed using sliding
pads which are inserted between its legs and
supporting surface. These sliding pads MUST
be removed before operating the oven. Nothing
else should be inserted between the legs and the
supporting surface.
Oven Clearances
• Allow at least 6 in. (15.2 cm) of clearance on top.
• No clearance is required at the back.
• A clearance of 0.5 in. (1.3 cm) is necessary
between side panels and adjacent walls.
• A clearance of 3 in. (7.6 cm) is required to
operate two ovens side by side or the clearance
to an adjacent similar heat source.
• Proper airow around the oven cools electrical
components. With restricted airow, the oven
may not operate properly and life of the electrical
parts is reduced.
• Install the oven so the oven bottom is at least 36
in. (93.0 cm) above the oor.
• When stacking ovens, ONLY use the Duke
stacking frame.
Line Interference
The switching operation of this microwave oven
can cause voltage uctuations on the supply line.
The operation of this oven under unfavorable
voltage supply conditions can have adverse effects.
This device is intended for connection to a power
supply system with maximum permissible system
impedance, Z
max
, of 1.1Ω at the interface point of
the user’s supply. The user has to ensure that this
device is connected only to a power supply system
which fullls this requirement. If necessary, the
user can ask the public power supply company
for the system impedance at the interface point.
As the oven has no ON/OFF switch, it must be
connected to a breaker that conforms to national
regulations.
WARNING
To avoid risk of electrical shock or death, this
oven must be grounded and the plug must not
be altered. Improper grounding can result in
electrical shock.

Grounding Instructions
This appliance must be grounded. In the event of
an electrical short circuit, grounding
reduces the risk of electric shock
by providing an escape wire for
the electric current. This appliance
is equipped with a cord having a
grounding wire with a grounding plug. The plug must
be plugged into an outlet that is properly installed
and grounded.
WARNING – Improper use of the grounding
can result in a risk of electric shock.
Consult a qualied electrician or serviceman if
the grounding instructions are not completely
understood, or if doubt exists as to whether the
appliance is properly grounded.
DO NOT use an extension cord. If the power supply
cord is too short, have a qualied electrician or
serviceman install an outlet near the appliance.
This oven should be plugged into a separate circuit
with the electrical rating as provided in the product
specications. These are available on Duke’s
website: www.DukeMfg.com. When the oven is on a
circuit with other equipment, an increase in cooking
time may be required and fuses can be blown.
External Equipotential Earthing Terminal (export
only)
This oven is equipped with a secondary earthing
terminal. The terminal provides an external earthing
connection used in addition to the earthing prong
on the plug. Located on the back of the oven, the
terminal is marked with this symbol:

1. PREHEAT AND OVEN READY SCREENS
a. Standby – Door Open
• This screen is displayed when the door is
open with an oven temperature less than
150 °F (65 °C).
• Close the door to continue.
b. Standby – Door Closed
• This screen is displayed when the door is
closed with an oven temperature less than
150 °F (65 °C).
• Press the RIGHT key (Continue) to preheat
the oven. The heater indicator at the top
right of the control panel should illuminate.
Preheat should take approximately 15 – 20
minutes.
c. Preheat
• The Set Temperature is shown on the right
of the Preheat Screen. The oven will not
allow cooking until the Set Temperature is
reached.
• The current oven temperature is shown on
the left of the Preheat Screen.
• To adjust the Set Temperature:
o Press the TEMP/FAN key while
preheating to highlight the Set
Temperature.
o Use the UP and DOWN keys to change
the temperature.
o Press SELECT key to set the Set
Temperature. This value will stay the
same until changed using the above
procedure. The Set Temperature can
range from 375 °F (191 °C) to 500 °F
(260 °C).
WARNING: Holding down any key while the unit
is powering up will reset the unit. All groups and
recipes will be reset to the default settings.
d. Oven Ready
• The Set Temperature has been reached and
there are no recipes cooking.
• The oven maintains the displayed
temperature.
• The Set Temperature can be changed in this
screen using the same procedure as above.
• Press the SELECT key or wait 5 seconds for
the Product Group Screen to display.

2. RECIPE SELECT SCREENS
a. Product Group
• From the Oven Ready screen wait 5
seconds or press the SELECT key to
display the Product Group Screen.
• Select one of the 8 product groups by using
the NUMBER pad or the UP, DOWN, and
SELECT keys
o The Recipe Select screen will appear
when a 64 recipe menu (default) is in
use.
o The Product Subgroup screen will
appear when a 256 recipe menu is in
use.
• Press the RIGHT soft key “Back” to return to
the Oven Ready screen.
b. Product Subgroup (256 Recipe mode
only)
• Select one of the 4 product subgroups by
using the NUMBER pad or use the UP,
DOWN, and SELECT keys. The Recipe
Select Screen will appear for this Subgroup.
This menu will not appear if the oven is in 64
recipe mode.
c. Product Group or Subgroup – Name Edit
• To edit a Product Group or Subgroup name,
select the group or subgroup name to edit
and press the SELECT key and the LEFT
soft key “Manual” simultaneously.
• Use the UP and DOWN keys to change the
selected character.
• Press the SELECT key to advance to the
next character.
• After editing the Product Group or Subgroup
name, press either the LEFT key “Save”
or the RIGHT key “Back”. Both will revert
to the Product Group or Subgroup screen
respectively.
o Save will save any changes that have
been made.
o Back will not save any changes.

d. Recipe Select
• Select one of the 8 recipes in each Product
Group or Subgroup by using the NUMBER
pad. This will take you directly to the
Cooking in Progress screen.
• You can also use the UP and DOWN arrow
keys and SELECT the recipe you would
like. This will take you to the Recipe Editing
screen for that recipe (shown to the right,
below the recipe select screen).
• To begin cooking from the Recipe Editing
screen, press the SELECT key.
e. Manual Cooking
• From the Product Group Screen, press the
LEFT key to enter Manual Cook mode.

3. RECIPE EDITING SCREENS
a. Edit Recipe Time
• The recipe (including Manual Cook) may be
edited once it has been selected.
• For a multi-event recipe, see Section 4
(Events).
• Set Cook Time by pressing the TIME key.
• Use the TIME key to switch between
minutes and seconds.
• Adjust with the UP and DOWN keys.
• Press the SELECT key when done editing to
conrm settings.
b. Edit Recipe Fan Setting
• Press the TEMP/FAN key.
• Adjust with the UP and DOWN keys.
• Press the SELECT key when done editing to
conrm settings.
c. Edit Recipe Microwave Setting
• Press the MICROWAVE key.
• Adjust with the UP and DOWN keys.
• Press the SELECT key when done editing to
conrm settings.
d. Edit Recipe Display Picture
• Press the LEFT and SELECT keys
simultaneously to highlight the picture.
• Scroll through the pre-loaded pictures using
the UP and DOWN keys.
• Press the SELECT key when done editing to
conrm settings.
e. Edit Recipe Name
• Press the LEFT and SELECT keys
simultaneously to highlight the picture.
Press both keys again to highlight the recipe
name.
• Use the UP and DOWN keys to change the
highlighted character.
• Press the SELECT key to move the cursor
to the right.
• Press the LEFT and SELECT keys together
when done editing to conrm settings.

4. EVENTS
a. Editing Events
• Events are a sequence of up to 5
combinations of time, fan speed and
microwave power settings.
• The time shown in the Recipe Edit screen is
the sum of the time from all events for that
recipe.
• Enter the Event screen from the Recipe
Select screen by pressing the SELECT and
TIME keys simultaneously.
• Use the UP and DOWN keys to adjust the
highlighted setting.
• Press the SELECT key to advance to the
next setting.
• You can also use the TIME and TEMP/FAN
keys to navigate through the Events screen
o TIME will move you backward.
o TEMP/FAN will move you forward.
• When done editing, press either the LEFT
key (Exit) or the RIGHT key (Save).
o Exit will take you back to the Recipe
Editing screen. The changes made will
be used for the current cook cycle only.
They will not be saved for future use.
o Save will take return the display to the
Recipe Editing screen. The changes
made will be saved to this recipe for
future use.
• The recipe will run until it comes to an event
with a time of 00:00. Subsequent events will
not be run.
• To revert to a recipe without events, set the
Time for Event 1 to 00:00.

5. COOKING DISPLAYS
a. Cooking in Progress
• Select the Product Group and Recipe that
are to be cooked using either the Numerical
Keypad or the UP and DOWN keys and the
SELECT key to start.
• If the oven is not at the Set Temperature,
the Preheat screen will be displayed. After
the oven has reached the Set Temperature,
the Oven Ready screen will appear and the
recipe will need to be selected again.
• If the oven has reached the Set
Temperature, the Cooking in Progress
screen is displayed.
• To cancel cooking, press the LEFT key
(Cancel).
b. Cook Complete
• When cooking is completed, the Cook
Complete screen is displayed. The audible
alarm indicates the product is done.
• Press the LEFT key (Silence) to stop the
alarm. Press the LEFT key (Exit) again or
wait 3 seconds to return to the Oven Ready
screen.
• Press the RIGHT key (+20 sec) to cook for
an additional 20 seconds using the current
recipe settings.

6. ERROR SCREENS
a. Door Ajar Error
• If a Door Ajar error occurs, there was
a problem with the current ow to both
magnetrons due to the door being slightly
ajar.
• These errors are reported immediately when
detected during a cook cycle.
• Firmly close the door and select a recipe.
b. Mag (Magnetron) Error
• If a Mag Error occurs, there was a problem
with the current ow in one or both of the
magnetrons.
• The numbers (1 or 2) in the top corners of
the Mag Error screen are the magnetrons
that had errors.
• These errors are reported immediately when
detected during a cook cycle.
NOTE: The cook is aborted.
c. Fan Error
• The oven will not run after a Fan Error until
the error has been repaired.
• Silence the audible alarm by pressing the
LEFT key (Silence).
• Press the LEFT key (Support) for the Duke
Support phone number.
d. Probe Error
• The oven will not run after a Probe Error
until the error has been repaired.
• Silence the audible alarm by pressing the
LEFT key (Silence).
• Press the LEFT key (Support) for the Duke
Support phone number.
e. Support
• When the Oven Ready screen is shown,
press the LEFT key (Support) to display the
number to call for service help.
• Press the RIGHT key (Stats) to view various
statistics for the oven and the oven control.

7. STATS SCREENS
a. Oven Stats 1
• The Oven Stats screens are entered from
the Support screen by pressing the RIGHT
key (Stats).
• Software Ver. - Software Version Number
• Bootloader Ver. - Bootloader Version
Number
• Graphics Set - Graphics Set Number
• Cab Max Temp – The maximum
temperature the control board has reached.
• Cab Temp – The current temperature of the
control board.
b. Oven Stats 2
• Press the RIGHT key (Next) in Oven Stats 1

• Total Cooks – The number of recipes that
have been cooked.
• Ht Elem hr – The cumulative time, in hours,
that the heating elements have been on.
• Fan hr – The cumulative time, in hours, that
the fans have been on.
• Mag1 – The cumulative time that Magnetron
1 has been on.
• Mag2 – The cumulative time that Magnetron
2 has been on.
c. Error Stats
• Press the RIGHT key (Next) in Oven Stats 2
to toggle to Error Stats.
• The Error Stats screen shows the count of
errors for each item on the screen.

8. OVEN SETUP SCREENS
a. Oven Setup
• From the Support screen press the TIME
and TEMP/FAN keys simultaneously to
enter the Oven Setup screen.
b. Oven Setup 1
• Temp Offset – The difference between
the controller measured temperature and
the manually measured temperature at the
center of the oven.
• HoldOff TempAllows the user to adjust
the temperature drop before the unit enters
recovery mode. This variable is adjustable
from -30 °F to -70 °F (default).
• Lock Feature – Prevents the oven recipes
from being edited.
o A lock icon appears in the upper right
hand corner of the Recipe Edit screen
when enabled.
o To disable the Lock Feature, press the
TIME, MICROWAVE and LEFT keys
simultaneously or change the Lock
Feature setting to Disabled.
• Set ContrastAllows you to change the
contrast of the screen.
c. Oven Setup 2
• Press the RIGHT key (Next) in Oven Setup
1 to toggle to Oven Setup 2.
• Temperature – Toggles the temperature
display between Fahrenheit (default) and
Celsius.
• Mag TestAllows the user to decide
whether or not to be notied of Mag
(magnetron) errors. When off, Mag Errors
are recorded, but not displayed.
• Oven Recipes – Toggles the number
of available recipes in the oven from 64
(default) to 256. This will add 4 subgroups
under each product group.

9. TEST AND RESET SCREENS
a. Mag (magnetron) Test
• Press the TEMP/FAN and MICROWAVE
keys simultaneously in the Support screen
to enter the Mag Test screen.
• Press the SELECT key for a magnetron test.
• Place a load in the oven cavity before
testing. Duke recommends a 275 mL load in
a 600 mL beaker or a typical food load and
change to a fresh load every test.
b. Mag (magnetron) Test – 1 Min Start
• To test the magnetrons for 1 minute, press
the RIGHT key (1 Min Start). Underneath
1 Min will display the countdown time in
seconds. Pressing the RIGHT key again
during testing will stop the test.
c. Mag (magnetron) Test – Test Mag
• To test the magnetrons for an indeterminate
amount of time, press and hold the LEFT
key (Test Mag). The magnetrons will be
tested until the LEFT key is released.
• Press SELECT again to return to the initial
test screen.
d. Fan Test
• Press the RIGHT key (Next) in Mag Test to
toggle to Fan Test.
• Press the SELECT key to select the fan
speed (0 to 9) to be tested.
• NOTE: A fan speed of 0 is for testing
purposes only, it cannot be used in a recipe.
e. Clear Counts
• Press the RIGHT key (Next) in Fan Test to
toggle to Clear Counts.
• Press the SELECT key to reset the counters
shown on this screen.
