Lockout Procedure
1. Announce lockout to other personnel.
2. Turn both heat and control power off at main panel.
3. Clear unit of all personnel.
4. Test lockout by turning power switch on and observing if control panel displays or fan(s) come on.
Check heater circuit with voltmeter.
5. Perform necessary repairs or tests.
6. Clear unit of personnel before restarting.
7. Turn power on at main panel.
8. Announce unit is “on” to other personnel.

Safety Considerations
Your Lang LRP Proofer is manufactured to rigid standards. This equipment is E.T.L. listed and meets
safety and sanitation standards.
The presence of safety equipment control and interlocks on an appliance and attendant components of
installation cannot in and of themselves, assure absolute safety of operation. Diligent, capable, well
trained operators and maintenance personnel, as well as proper programs of operation and maintenance,
are essential to the safe and reliable operation of this appliance.
A. The responsibility of the manufacturer
is to supply suitable, comprehensive instructions and
recommendations for the operation and maintenance of the appliance.
B. Trained qualified and factory-authorized personnel must perform all operation, maintenance and
repair of these appliances. It is the responsibility of the owner / operator
to ensure that this
happens.
C. A regular periodic program of cleaning, inspection and maintenance must be established and
comprehensive maintenance records maintained. It is the sole responsibility of the user
to establish,
schedule and enforce the frequency and scope of these programs in keeping with recommended
practice and with due consideration given to actual operating conditions.
D. The appliance must be operated within the limits, which will not exceed the working limits of
any component within the appliance as a whole.

EQUIPMENT DESCRIPTION
Exterior
LRP-1
The Proofer exterior dimensions are 38.4” (97.5 cm) wide x 91.5” (232.5 cm) high x depth is dependent
upon model number [39.3”(100 cm) to 129.3” (328.5cm)]. The Top, Front, Back, and Sides are
constructed of stainless steel.
LRP-2
The Proofer exterior dimensions are 78.8” (200 cm) wide x 91.5” (232.5 cm) high x depth is dependent
upon model number [39.3”(100 cm) to 129.3” (328.5cm)]. The Top, Front, Back, and Sides are
constructed of stainless steel.
All Units
Modular design allows for a wide variety of sizes.
The proofer door is constructed of stainless steel and comes with both single and double doors.
Interior
LRP-1
The Proofer interior dimensions are 33.1” (84 cm) wide x 74.1” (188.1 cm) high x depth is dependent
upon model number [22.1”(56 cm) to 112.1” (284.7 cm)]. The Top, Front, Back, and Sides are
constructed of stainless steel.
LRP-2
The Proofer interior dimensions are 68.1” (173 cm) wide x 74.1” (188.25 cm) high x depth is dependent
upon model number [27.1”(68.8 cm) to 117.1” (297.4 cm)]. The Top, Front, Back, and Sides are
constructed of stainless steel.
All Units
Floor level loading.
Cabinet
Rigid, formed stainless steel panels filled with polyurethane foam insulation re-joined with camlocks and
sealed with gaskets to form a strong, energy efficient, tight and sanitary enclosure.
Doors
The welded stainless steel doors are polyurethane foam-filled. Door bumpers on the inside protect the
finish.
Controls
The microprocessor based digital controls are mounted for ease above the left-hand door. Power and light
switches are located between the control and the door.
Digital read-out with solid state temperature sensing and controls.
Air-Duct(s)
Each proofer comes with one or two air ducts. These air ducts perform the tasks of heating, humidifying
and circulating the air within the unit. Each duct contains a heater plate, spray nozzle, drain pan and fan.

GENERAL DESCRIPTION
Theory of Operation
The Lang Proofer is a controlled atmosphere chamber. Temperature and humidity can be set
independently to meet your particular proofing needs. The air temperature is increased as the air duct
heater in energized. Humidity is increased as water is sprayed in the air duct. Air is circulated
continuously to provide positive movement from bottom to top, creating a uniform distribution of warm,
moist air.

Controls
BASIC OPERATION
1. Turn power switch to “ON” position.
2. Press “Temp.” button.
3. Set temperature to desired temperature (80°F-120°F) using the “Up” or “Down” buttons.
4. Press “Humidity button
5. Set Humidity to desired humidity (50%-100%) using the “Up” or “Down” buttons.
6. Press Timer” button.
7. Set time to desired time using the “Up” or “Down” buttons.
8. Place product in proofer.
9. Press “Start / Stop” button and timer will begin counting down.
10. When buzzer sounds, press stop button and remove product from proofer.
11. To check actual temperature press “Temp.” button twice. Flashing display will indicate actual
temp.
12. To check actual humidity press “Humidity.” button twice. Flashing display will indicate actual
Humidity.

Every Day
Clean interior and exterior of proofer.
Every Six Months
Have factory authorized service personnel check proofer for proper temperature readings, air duct drain, heater plate,
spray nozzle.
As Needed
Clean interior and exterior walls and replace light bulb or any other components as needed.

Pre-Installation
Check the area where the proofer is to be installed for the following:
No electrical junction boxes will be under the floor of the proofer
Ceiling height above the proofer should be sufficient to allow for installation. The minimum height
needed for installation is 95 inches.
Access is needed for an air-gap drain from the rear left corner of the proofer.
Adequate space is needed in front of the proofer to load and unload racks.
Local and national codes will require an electrical shut-off within a reasonable distance to the proofer.

Step 1
Install the floor (optional) and base channels:
Locate the correct position of the proofer. Clean the floor and adjacent wall space to remove any obstruction. Note:
If a floor is included with the proofer, it may be desirable to remove any floor tile that may become loose over time.
Place the stainless steel floor on the floor and mark the edges with a non-permanent marker. Note: The stainless
steel floor has several holes along the door opening. Remove stainless steel floor. Apply several beads of floor
adhesive to the floor and spread with the trowel provided. Get a good continuous bead near the edge of the floor.
Place the stainless steel floor back in position and gently walk the stainless steel floor down on the adhesive. Place a
few weights such as a toolbox or crating on the stainless steel floor to keep it in intimate contact with the adhesive
and the floor beneath.
Place the wall base channels in position and align with the outside edge of the stainless steel floor, over the holes in
the stainless steel floor.
Drill the floor through the wall base channels with a 3/8” diameter drill to accept the concrete floor anchors.
o Mark the drill bit at 1-1/2 inches from the end with tape. Drill until the mark is at the top of the stainless steel
floor. Do not drill too deep.
o Clean the holes of concrete dust.
o If the proofer is mounted on stone or ceramic tile, extend the holes and the anchors into the concrete substrate.
Install the anchors in the holes and set in place with the anchor-setting tool. (Note: One good solid blow is better
than many little taps.)
Repeat this procedure at the front edge of the floor. Do not drill holes for the corner cove anchors (four additional
holes located inside the walls) at this time.
Install the ¼-20 flat head screws in the anchors. Additional Screws have been provided in the event that a hole is
drilled too deep.

Step 2
Assemble the walls:
Place the left rear wall corner in the wall base channel. The left rear corner has holes through the rear
for the drainpipe. Note: Remove the vinyl coating from the panels as you install them if there is no
access to the surface later.
Place one 20-inch wide wall panel next to the corner panel in the rear wall base channel. Remove paper
cover from wall gasket. Rotate the cam latches in the rear wall to the fully retracted position and then
fully engaged position to lock the corner and the panel together. Note: take extra care to align the top
edges of the panels and the inner face of the panels as you lock them together. The panels may tend to
move as you tighten the locks. Be sure the gasket material is in place and is not protruding.
Install the right rear corner panel and the remainder of the panels, including the left and right jambs.
Level the proofer by installing shims under the wall panels at the corners. Additional shims may be
needed along the walls for larger proofers. Be sure that the front jambs are vertical and parallel, and
that the top edge of both jambs are at the same height.
Install the header between the jambs. Be sure the header is aligned with the tops of the jambs and the
front plane of the jambs. Note: this step is critical in getting the door(s) to hang straight.

Step 3
Assemble the ceiling:
Place the rear-ceiling panel on top of the walls at the rear of the proofer, with the stainless steel side
down. Be sure to remove the vinyl coating from the panel and paper from the gaskets.
Place the 20-inch and 10-inch ceiling panels in place. Lock the panels together with the cam latches,
using care to keep the edges aligned.
Place the front ceiling panel in place and lock to the adjacent panel.
Square up the ceiling and align the side and rear panels with the edges of the ceiling panels.
Install a ¼ by 3” self-drilling hex head screw. Repeat along the rear wall, keeping the walls and the
ceiling aligned.
Drill through the front ceiling panel using a #25 drill bit and install #10 by ½ sheet metal screws.

Step 4
Install the doors:
Install the door hinges to the doorjambs using ¼-20 flat head stainless steel screws provided. Note:
left and right hand hinges are not interchangeable.
Install the hinges on the doors using ¼-20 flat head machine screws. Install the door bottom seal and
clamp strip using #10 by ¾ stainless steel sheet metal screws. On two door proofers, install the center
lap strip in the same manner.
Install the door closure hook on the door using #8 x 1 stainless steel sheet metal screws provided.
Place the doors on the hinge pins and lower into place.
Install the door handle using ¼-20 by 2 ½, round head stainless steel machine screws and ¼ flat
washers.
Install the door closure mechanism(s) on the back of the header using #8 x 1 stainless steel sheet
metal screws provided. Close the door and check clearances and the door mechanism action. The
door should be pulled closed when the mechanism comes in contact with the hook.
Close the door(s) and check the door fit. The door(s) should seal around the perimeter to the header
and the doorjambs. The doors, on a two door proofer, should match at the top edge. To adjust,
loosen the cam latches at the header and shim the walls until the doors align. Tighten the cam latches.

Step 5
Install the heat duct:
Remove the upper and lower covers and fan guard from the air duct.
Install the hanger strip on the right side of the air duct using ¼-20 by 5/8-truss head machine screw.
Place the duct in position (see illustration on page 17) and mark through the mounting holes. The air
duct should be installed in the front left corner on two-door proofers and at the rear wall, tight to the
left corner, for the single-door proofer. For deep double-door proofers requiring an extra air duct, the
second one is to be installed on the same wall as the first, and against the rear corner.
Drill and tap the walls at the marked locations using #20 drill bit and 10-32 tap.
Install the air duct using 10-32 by 3/8 truss head stainless steel machine screws. Install an insulating
bushing in the ceiling holes and push the heat and motor wires through the bushings.

Step 6
Install the Vallence:
Be sure that foam tape is on all surfaces of contact between the valence and the body.
Place valence in place and install using ¼-20x5/8 screws.
Install 10-32 screws at the bottom flange of the valance into the header panel, from inside the valance
(will be necessary to reach in from above).
Insert toggle switch into valence and tighten from inside with the rubber caps. Light switch should be
on the right and power on the left.
Place cover on top of valence and install using 10-32 x 3/8 screw (cover can be added after wiring is
complete).

Install the Control Panel:
Insert control panel into opening. Tabs on the bottom of the control panel are to go inside the cut outs
in the guide track.
To lock panel into place turn latches clockwise and the latches will tighten down from the back.
When wiring and accessing controls, hang the control panel from the control panel tabs.

Plumbing:
Route water delivery tube though ceiling panel. Connect top end to 90° elbow from the solenoid
valve. Bottom end connects to the spray nozzle as shown.
Cut pipe so that drain is in desired position in the rear of the proofer.
Place drain bumper over the drain tube and mark holes. Drill #21 and tap 10-32. Install with10-32
screws.
