3 Instructions on Safe-handling of the Equipment
3.1 General instructions
The equipment is a technical appliance that is only intended for commercial use.
The Electro Pasta Cooker is used for the preparation of food on a commercial scale in the containers
provided for the purpose.
The appliance is not suitable for spatial heating nor for the warming up of other materials except those
normally used in cooking.
Ventilation of the work rooms complying with the regulations is to be ensured.
The appliance is only to be operated under supervision.
The employers' liability insurance association (BG) rules "Working in Commercial Kitchens" of the "Food
Processing Industry" expert committee of the BG Central Office (BGR 111) are to be observed when
setting up and operating equipment.
Technical modifications to the equipment by unauthorised persons without written permission from the
manufacturer completely nullify any claims under the guarantee and invalidate any claims in respect of
product liability.
These instructions are to be made known to the members of staff affected in the context of an operating
directive.
3.2 Safety instructions for operating, cleaning and repair
Some parts, due to the temperatures required during cooking, become very hot. Protect yourself by only
touching the control elements provided and by wearing clothing that prevents direct skin contact.
The operating and cleaning may only be carried out by personnel who have received appropriate
instruction. Maintenance and repair may only be performed by qualified specialists who have received
training.
The manufacturer cannot be made liable for damage due to inexpert connection and handling. Claims
under the guarantee in such cases are null and void.
Appliance with electrical connection
Before repair work is started, the equipment must be disconnected on all poles from the power (using
isolating equipment in the customer's supply, e.g. contact breakers).
If a short-circuit occurs in the appliance, recognised by the triggering of the contact breaker within the
customer's supply, an electrician must check the functioning of the appliance and the safety trip. These
inspections must also be performed after the electrical heating element is replaced.
3.3 Instructions for transport
Transport ascobloc equipment only in the original packaging. This avoids unnecessary damage and
expense.
Check equipment for damage.
Do not lift or shift the appliance by holding the top plate, the bottom edges at the sides of the appliance or
by the door handles. The bottom edges at the front and rear of the appliance are provided for this.
3.4 Instructions on installation
The appliance is wired up in the factory as far as the connector. All connection work must be carried out
by an authorised specialist company. Allow the technical experts to look at these documents. The legally
acknowledged regulations (Germany VDE, Austria ÖVE, Switzerland SEV etc.) and the connection
requirements of the local electricity utility are to be observed.

Before beginning the installation work, it should be checked that the mains voltage, mains type and the
current rating of the circuit breaker match the values given on the name plates. An isolating device in the
customer's scope of supply that is effective on all poles must be provided, e. g. contact breakers with at
least 3 mm contact gaps, so that the equipment is disconnected from the power supply during repair and
installation work. Connection to an equipotential bonding system is available. Make the connections in
accordance with the local regulations.
Mains cables are not to be sharply bent, crushed or damaged by sharp edges. Mains cabling is to be so
laid that contact with hot parts cannot occur. The power supply cable must be led through the equipment,
fully sheathed, from the screwed connection to the entry of the terminal. The appliance is intended for a
permanent connection; connection via plug and socket is not permitted
The layout of convection technical systems is only to be carried out by appropriate experts.
These instructions are to handed to the owner-operator once the installation work is completed. The
owner-operator is to be instructed on how the equipment functions, its correct handling and the safety
regulations.
4 Installation
4.1 Setting up
Do not set up the equipment next to walls, kitchen furniture, and decorations or similar which are made of
flammable materials. Otherwise there is danger of fire. See connection diagram with equipment
description for minimum distance. Local fire protection regulations must be kept to absolutely!
It is of importance that the equipment be set up absolutely horizontal (use spirit level for alignment) so
that the doors can be opened and closed without any problem and that they seal tightly when closed.
Equipment with adjustable feet can easily compensate for unevenness in the floor (+/- 20 mm) by turning
the bottom ends of the feet. If set up on a plinth, this is to have an underlay if needed.
4.1.1 Free-standing set-up
If the equipment is to be set up on its own, suitable means are to be used to protect it against tilting and
shifting.
4.1.2 Setting them up in groups or blocks
When setting up in groups or blocks, the equipment must be joined together by connecting elements
provided for this purpose. This is for the sake of hygiene. Observe equipment setting up sheets or
assembly diagram (data sheet in annex).
4.2 Connections
Details of connections for the media can be taken from the accompanying connection diagram and
equipment description. Check whether the size and position of the electrical connections of the customer
side correspond to the information in the connection plan, equipment description or installation plan
The terminal box for the connections is located behind the front panel A (see data sheet). Make the
connections as shown in the annex or in the connection diagram accompanying the equipment. The
number of the connection diagram is to be found on the type plate. Once the electrical connections have
been made, close the cover of the terminal box and screw the front panel in place again
4.2.1 Floor-standing appliances
The connections can be made from below or from the rear from a closed installation space. With the
connection from below, the pipe length must be 50 mm above the floor surface. With connection from
below, the installation pipes must not protrude into the appliance. A direct connection to the waste water
pipe is not permitted.
4.2.1.1 Connection from the rear when equipment on a plinth
The penetrations are to be made in compliance with the known DIN and VDE regulations. The
connections can be through the rear wall (see illustration for dimensions).

4.2.2 Wall/table mounted appliance - attached to an installation wall, cantilever or wall-mounted frame
When attaching the appliance to an installation wall, cantilever or on a wall-mounted frame (ACC 881),
the appliance connections from below or from the rear are to be used.
4.2.3 Wall/table-top appliances connect through the rear wall
On the right side at the rear in the corner is a bracket that is screwed on with downwards penetration that
covers the access to the installation channel to the rear. Remove the bracket, turn it through 180° and
screw it back on so that the penetration in the bracket now frees up access to the rear and covers the
downwards access.
4.2.4 Water connection
The connection point for cold tap water 0.3 - 10 bar can be seen in the appropriate connection diagram. A
shut-off valve is to be provided on the customer side.
5 Proper Use of the Equipment
5.1 Operational start-up
Remove the protective film before bringing into use.
Clean the equipment with dilute soap solution.
If the equipment is to be taken out of use, set all knobs to "zero".
5.2 Check functions
All basins are to be brought individually into operation. The green indicator light for operational readiness
must light up each time.
5.3 Operating
The appliance may not be used for the warming up of fat or oil.
Fill the basin to the upper filling mark with water, but not over that.
Fill up with water
Before filling with water, it must be ensured that the water drain (ball valve) is closed and the shut-off
valve on the customer side is open. The basin and the heating element must be clean.
By pressing the green button, a solenoid valve is opened and water flows via the water inlet into the
basin. The water inlet flow is interrupted if the button is pressed again.
For cooking, the basin must be filled at least to the lower mark but not over the upper mark on the rear
wall of the basin.
The perforated partition plate supplied with the appliance is to be laid with the unfolded edge on the edge
of the heating element box when cooking. The perforated area lies on the heating elements and forms the
seating for the pasta baskets that are also supplied with the appliance.

Three power settings are possible with the regulating switch
0 Appliance switched off
1 Keeping warm
2 Simmering level
3 Parboiling
After heating up using level 3, the switch should be turned back to level 2 for the following reasons:
Save energy
Reduce water consumption
Lower foam generation
Level 1 can be selected when short breaks are to be expected between cooking processes.
5.4 Safety shut-offs
Heating element swivelled upwards
If the heating elements are swivelled upwards, the heating is switched off. The yellow control light goes
out. When swivelled back, the heating elements are switched on again.
Temperature limit protection
If the max. allowable temperature for the heating element is exceeded, the temperature limiter switches
the heating off.
Possible cause: Heating without water.
The temperature limit protection can be reset manually after cooling down (approx. 5 min.). The switch is
located on the rear side of the heating element box (red button).
If the temperature limit protection triggers frequently, a fault in the thermostat is to be presumed. The
appliance must be inspected by customer service.
5.5 Cleaning
Please observe the hygiene regulations in your firm! The instructions in this document are not a substitute
for such regulations. (Observe the tips for the treatment of stainless steel appliances in commercial
kitchens!)
Attention! Appliances may not be cleaned using water under pressure (spraying with water hose or
steam jet or high pressure cleaners). The appliance is to be shut off if the surroundings are to be cleaned
using such means!
The appliance must be shut off and adequately cooled down before cleaning. Appliance parts or
accessories that come in contact with foodstuffs must be cleaned thoroughly with cleaning agents and
then rinsed off with tap water. Flammable liquids are not be used for cleaning.
To avoid interruptions in operation and for hygiene reasons, the appliance should be cleaned daily after
use.
Basins
Always empty and clean basins immediately after cooking.
To clean the basin, open the drain, take out the partition plate and pasta baskets with the swivel lever in
the up position. Care should be taken as the heating elements could still be hot. Danger of burns!
If the draining off is slower than normal although the ball valve is open, fragments of pasta have blocked
the drain pipe. Swivel the heating element upwards and break up the jam with a long stick (e.g. wooden
spoon) or appropriate bottle brush. Then remove the coarse waste.
Clean the basin with commercially available cleaning agent for stainless steel. Do not use a wire brush or
steel wool.
ATTENTION! The cleaning agent to be used must be free from chlorine and fluorine compounds as these
halides can attack even high-quality stainless steel.
Heating elements
Do not damage the temperature sensors and their spacers. Fill the emptied basin with water, add
detergent and bring the water to the boil for a short time. Drain off the water. Apply detergent directly to
the heating elements and clean carefully using a soft brush. Fill the basin again with water and carefully
rinse.
Pasta basket and partition plate
Clean the pasta basket and partition plate regularly.
