INSTALLATION INSTRUCTIONS
VENTING YOUR OVEN:
The purpose of ventilating hoods is to direct and
capture smoke, grease-laden vapors, heat, odors, or
fumes.
Low temperature equipment (maximum temperature
250°F/121°C) does not produce heat, odors, fumes,
grease-laden vapors or smoke and is not required to be
vented.

UNIT SPECIFICATIONS: All units use three (3) elements (2670 watts each).
All units are rated 8200 watts. Water units have one (1) immersion element (1850 watts).

Most jurisdictions consider our low-temperature ovens
(maximum temperature is 350°F/177°C) as low-heat
appliances not requiring vent hoods.
Installation must conform with local codes. The
authority having jurisdiction of enforcement of
the codes will have the responsibility for making
interpretations of the rules.

HOW TO SET TIMER:
A. Press the UP arrow button (on the TIMER) to increase
the time. The longer the button is held down, the faster
the time will increase. Pressing the DOWN arrow
button (using the same method) will cause the time to
decrease.
B. Press START/STOP button on Timer to begin cooking
cycle. GREEN roast light will light up. Timer will
count down to 0.00. The timing light on the timer will
ash.
C. Cooking time can be changed while oven is in any
mode.
(1) Press START/STOP button.
(2) Adjust time by using UP and DOWN arrow-
buttons.
(3) Press START/STOP button to restart oven.
HOW TO START UNIT
(for rst-time operation only)
A new oven needs to “burn off” factory oils and glue
before it’s rst use. Do NOT load food into oven until this
has been done!
Push switch to “ON”.
Set the Cook/Retherm thermostats to 350°F/177°C.
Set the Hold thermostat to 150°F/66°C.
Set the timer to one (1) hour.
Allow oven to run automatically for one (1) hour of
Cook/Retherm cycle and 30 minutes of Hold cycle.

HOW TO INSTALL CABINETS:
Remove all packing material from inside and outside
of cabinet.
Position cabinet on level oor; install the cabinet
interior (pan slides) if not already installed.
Plug power cord into proper wall receptacle.
Fill water pan with three (3) gallons of HOT water.
(See CAUTION).

When water needs to be added to the pan, the Low Water
Light will stay on until the pan is re lled.

Air is VERY HOT when door is opened.
NOTE: Cold food is NOT to be added when unit is operating on HOLD mode.

HOW TO START UNIT
(After rst-time operation):
Push POWER switch “ON”.
Preheat:
In HOLD mode, preheat unit to 180°F/82°C for 60
minutes.
STANDARD OPERATION
Set Cook/Retherm thermostat to the cooking
temperature you need.
Set Hold thermostat to the warming temperature
you need after the cook cycle. Proper food holding
temperature is 140°F/60°C or higher.
Set Timer for the cooking time. Press timer start
button. The oven will automatically switch to the pre-
set hold temperature after cooking time has expired.
COOK (HUMIDITY) OPERATION
HOW TO COOK:
Set Cook/Retherm thermostat to the cooking
temperature you need.
Set Hold thermostat to the warming temperature you
need after the cook cycle.

HOW TO PROOF:
Fill the water pan with three (3) gallons of HOT
water.
Set the Humidity control at low to mid-range.
Set the Hold control to Proof.
Preheat the oven at this setting for ½ hour.
Put in product. DO NOT use frozen product.
Listed below are typical thermostat settings.
Experiment with different settings to get the
temperature and humidity that you need.
TO SHUT DOWN UNIT:
Push POWER switch to “OFF”.
NOTE: Ventilating fans will continue to run until cabinet
is cool. Do NOT disconnect the power supply to the
cabinet while the ventilating fan is still operating.

you need in the oven. This setting is for both COOK
and HOLD cycles.

Drain, wipe and ll water pan daily. (Clear vinyl drain-
hose is provided).
Push hose into drain nozzle under the base.
Turn knob to open the drain.
To Fully Dry Out:
Drain until 1/8” of water is left in pan bottom.
Turn humidity thermostat to “High” until water is
gone.
Wipe out pan.

HOW TO ADJUST THE DOOR LATCH:
For vertical (up and down movement) adjustment:
Loosen (2) screws located in magnetic strike.
Move strike up or down for alignment to magnet on
latch.
Tighten screws to secure
2. For horizontal (greater or lesser magnetic draw)
adjustment:
Loosen (4) screws in door latch.
Move latch forward or backward to adjust
magnetism.
Tighten screws to secure.
HOT UNIT REMOVAL:
Disconnect power cord from wall outlet.
For half-size model: CO151HW Series, remove
screws around top cover.
Disconnect the yellow cord between top and bottom,
in the back of the cabinet (see Figure 2).
Lift off Hot Unit.
