YourJenn-Air self-cleaning oven combines the bestoffourcooking methods,
conventional baking or roasting, convection baking, convection roasting and
broiling.
The Jenn-Air convection oven isactually aconventional oven that circulates
heated airwithin the oven. As both bake and broil heating elements cycle on
and offwith the thermostat, afan keeps the heated air circulating around the
food. The constantly recirculating heated air in the convection oven strips
away the layer of cooler air that surrounds the food. Consequently, many
foods cook more quickly. Evenly distributed heat makes multiplerack
cooking possible.Convection roasted meats retain their natural flavor and
juiciness with less shrinkage than conventional roasting.
Inaddition tothe many exclusive benefits of convection cooking,your Jenn-
Air oven isalso afine full featured conventional bake and broil oven. You can
cook your "old favorite" recipes as you have in thepast. The conventional
bake oven also gives you the flexibility of preparing various foodswhen
convection cooking may not be as beneficial,as when cooking foodsin
covered casseroles or clay pots. The broil element is convenient for top

qualifiedtechnician.
2.Never useyourappliancefor warmingorheatingthe room. This

3. Childrenshouldnot be left alone or unattendedin area where
applianceis inuse. They shouldneverbe allowedto sitor stand
on any part ofthe appliance.
4. Wear properapparel.Loose-fittingor hanging garments should
never bewornwhileusingthe appliance.
5. Donotrepairorreplaceanypartoftheapplianceunlessspecifically
recommendedin this manual.All other servicingshouldbe

6. Do notstorecombustiblematerials,gasolineor otherflammable
vaporsandliquidnearcooktop.Thisalsoappliestoaerosolsprays

9. Select cookwarelargeenoughto properlycontainfoodand avoid
boiloversor spillovers. This will save on cleaningand prevent
hazardous accumulationsof food,since heavy splatteringor
spilloversleft on a cooktopcan ignite. Pan size is especially
importantin deep fat frying.
10. Never leaverangetopunattendedat Hi heat settings. Boilover
causessmokingandgreasyspilloversthatmay ignite.
11. TYPE OF COOKWARE - Avoidpansthatare unstableand easily
tipped. In choosingpans,lookforeasily-graspedhandlesthatwill
staycool. Pansthatare tooheavywhenfilledwithfoodcanalso
bea hazard. Ifpanhandlestwistandcannotbetightened,discard
the pan.

12. HANDLES - Always turn pan handles to the side or back of the
rangetop - not out into theroom wherethey areeasily hit.
COOKWARE HANDLES SHOULD BE TURNED INWARD AND
NOT EXTEND OVER ADJACENT SURFACE BURNERS to
minimize burns, ignition of flammable materials, and spillage due
to unintentional contact with the cookware.
13.CAUTION - Do not store items of-interest to children in cabinets
above range - children climbing on the rangeto reach items could
be seriously injured.
14.Do not touch grill and surface burner areas, or perimeter trim
around rangetopor interior surfacesofoven. During and afteruse,
theseareas may behotenough to cause burns. Avoid contact with
these areas by clothing or other flammablematerials until they
have had sufficient time to cool. Other surfaces maybecomehot
enough to cause burns - among thesesurfaces arethe upper door
frameand door,ovenventopening and surfacesnearthe opening,
and the top edge of the control panel.
15. Do not heat unopened food containers.Buildup of pressure may
cause container to burst and result in injury.
16. Keep all controls "Off" when unit is not in use.
17. Keepoven vent ducts unobstructed. The oven isvented underthe
air grille,
18. GREASE - Grease isflammable and should be handled carefully.
Never leaveanycooking operation unattended. Letfat cool before
attempting to handle it.Do not allow grease to collect around the
rangetopor in thevents. Wipe up spillovers immediately.
19. If therangeis installednear a window, properprecautionsshould
be taken to prevent curtains from blowing over burners creating a
FIRE HAZARD.
20. Do not use aluminum foil to lineaeration tray or burner basin.
Restriction of normal air flow may result in unsafe operation.
21. Do not usecookware on the grill section of this appliance.
22. Beforeservicing your appliance, disconnect powerto the rangeat
themainfuseorcircuitbreakerpanelandattheelectrical receptacle.
23. Always allow hot pansto cool in a safe place out of the reach of
small children.
24. Afaint gasodor may indicatea gas leak. If agas odor is detected,

Jenn-Air'sventilationsystem is designedto captureboth cooking fumesand smoke
while grilling.If the system does not, theseare someducting installation situationsto
check:
6" diameter round or 3¼" x 10" rectangular ducting should be used for duct lengths
10'-60'.Note: 5"diameter round ducting must be used if the duct length is 10'
or less.
No more than three 90° elbows should be used. Distance between elbows should
be at least 18".
Recommended Jenn-Air wallcap should be used. Make sure damper moves freely
when ventilation system is operating.
There should be a minimumclearance of 6"for cooktop installed near a side wall.
Ifthere isnot an obvious improper installation, theremay be aconcealed problemsuch
as a pinched joint, obstruction in the pipe,etc.Installation isthe resoonsibilitv of the
installer and questionsshould be addressedfirst by the installer. The installer should
very carefully check theducting installation instructions.

Thebuilt-inventilationsystemremovescookingvapors,odorsandsmoke fromfoodsprepared
on the eooktop, grilland grillaccessories. Regular use of this system will insure a more
comfortableand lesshumidkitchenwhichisfreeofheavycookingodorsandfumesthatnormally
createafrequentneedfor cleaningand redecorating.
The downdraft ventilationsystem features a twospeed fan.
Thefan positionsare:Hi, Lo, and Off. To turn on the
ventilationsystem,touchtheFan Pad. Thefan willcomeon
at the Hi speed. To set on Lo speed, touchthe Fan Pad
(oncefromHi setting ortwice from the Off position).
A beep willsoundevery Umethe Fan Pad istouched.
To turntheventilationsystem Off, touchtheFan Pad (oncefrom Lo speed ortwicefrom
Hispeed).
TheventilationsystemwilloperateautomaticallyonHispeedwhenthegrillburnerisinuse.
Duringgrilling,thefan speed isautomaticallysetfortheHi settingANDcannotbechanged
toLo speed.
UsetheHifanspeedforcapturingsteam. UseLofanspeedforcapturingsmokewhen
pan frying.
Thefancanbeusedtoremovestrengodorsfromthekitchenaswhenchoppingonionsnear

Besidesusingtheventilationsystemtoremovecookingvaporsandfumes, itcanbeused

Air Grille
The air grille lifts offeasily. Wipe clean orwash insinkwithmildhouseholddetergents. Itmay
be cleanedinthe dishwasher. Note: The ovenvent islocatedunder theairgrille.When using
orcleaningtheoven,hotand moistairmaybenoticedinthisarea. Be carefulnottospillanything
intothisvent. Remove theair grillebefore self-cleaning the oven. (See p. 40.)
Filter
Turn offventilationsystembeforeremoving. The filterisa permanent --
typeandshouldbe cleanedwhensoiled. Cleaninsinkwithwarmwater
and liquiddishwashingdetergent or indishwasher. Important: DO
NOTOPERATE SYSTEM WITHOUT FILTER. Filtershouldalwaysbe
placed at an angle.As youface the frontoftherange, the top ofthe
filtershoutdrestagainstthe leftside oftheventopeningand the bottom
ofthe filter should rest against the right sideof theventilation chamber at thebottom.
Ventilation Chamber
Thisarea,whichhousesthefilter,shouldbe cleanedinthe eventofspillsorwheneveritbecomes
coatedwithafilmofgrease.Theventilationchambermaybecleanedwithpapertowel,dampcloth,

Yournewcooktopburnershavebeenpresetforan"average"set ofconditions.Regional
variancesingaspressureand atmosphericconditionssuchas heightabovesealevel
mayaffectyourinitialflame performance.
Whenthecontrolknob isturnedon,gasentemthemixertubeand mixeswithair. This
airandgasmixtureflowstotheburnerheadandislightedbyasparkfromthesolidstate
igniter.
A properlyadjustedburnerwithcleanportswilllightwithina few seconds. Thecone-
shapedflame willbeclearblueincolorwitha clearlydefinedinnercone. Thereshould
be notraceofyellowin theflame. Ayellowflameindicatesan impropermixtureofair
andgas.Ifyourflamedoesnotresemblethe"correct"flameasdescribedabove,follow

Surface Burners

To adjust the Lo setting
1. Lightburnerandsetcontrolknobfor lowflame.
2.Remove controlknobfrom valvestem.

Toachieveoptimumcookingperformanceusecookpotswithfiat bottomsandtightfitting
covers.F/ame size shou/d be adjusted so it does not extend beyond the edge of the

flameto fit thesize ofthe cookwarealsohelpsto savefuel.
Important: Leavea minimumof1½"betweenside ofpan and surroundingsurfaces,
suchascountertopbacksplashorsidewalls,to allowheattoescapetoavoidpossible
damageto these areas.
Numinum cookwareheatsevenlyand quickly. A slightlylargerflamesizecan be
used.Theflamecanbeadjustedsoitcornestotheedgeofthecookware.However,
theflameshouldNEVER beadjustedsothatitextendsbeyondthebottomofthe
cookware.
Stainlesssteelcookwarewith copper or aluminumcores heat evenly andfairly
quickly.The flamesizeshouldbeadjustedtoextendonlyhalfwaybetweencenter

Cast ironcookwareheatsslowly.
Checkmanufacturer'srecommendationsbeforeusingporcelainonsteel,porcelain

To Install Burner Module
1. Besurecontrolknobsare turnedOff.
2. If the grillburnerand grillgratesarein place,removebefore instarlinga surface
burnermodule.Cleanburnerbasinofanygreaseaccumulation.(See page21 for
cleaningrecommendations.)
3. Positiontheburnerassemblywiththemixertubeopeningstowardtheorifices.Slide
theburnerassemblytowardtheorificesuntilopeningfor igniterisovertheigniter.
Lowerintoplaceuntilsideopeningsarerestingon theburnersupportsand igniter
is centeredbetweenthe twoflashtubes.
4. Installtheaerationtraybyinsertingtheprongattheendofthepanintotheopening
inthe end oftheburnerbasin.Lowertheoppositeend intothe rangetop.

To Remove Burner Module
1. Control knobsshouldbeintheOff positionandtherangetopshouldbe cool.
2. Removetheaerationtraybyliftingup the frontendon therightside (backend on
the left side) untilthetop clearstheopeningofthe rangetopbyabout5 inches.
3.Holdaerationtraybythesidesandslideawaytoremovetheprongfromtheopening
and clearthesurfaceburners.
4. Liftup on the sidesofthe surfaceburnerassemblybracketabout2inches.Slide
awayfrom theorifices.
NOTE: Optionalsurfaceburnerassembly,ModelAG202, canreplacethegrillburner
assembly. ModelAG202airshuttershavebeenadjustedfor compatibilityon
the leftside.

To Install Grill Module
1. Before installing grill components,be certain control knobs are in the Off position,
2. Position the grill burner with mixer tube openings toward the orifices. Slide the
burner towards the orifices untilthe igniteris inbetween front and rear grill sections.
Lower into place until side openings are resting on the burner support pins.
3.Place the grill grates on thetopof the rangetop.
NOTE: Beforeusing thegrill for the first time, heat theE-ven HeatTM grirl burner to
remove the protective shipping coating. Heat the grill on Hi for 10 minutes and
use the vent system to removeany additional smoke duringcooling.
To Remove Grill Module
1.Be sure control knobs are in the Off position. Remove grill components once they
are cool.

from the orifices.

Then"season"thesurfaceby wiping on a thincoatingofcookingoil. Remove
excess oilby wipingagainwithanother papertowel. Thisprocedureshouldbe
repeatedwhen: a) cleaningin the dishwashersincethedetergentmay remove
seasoning,or b) anytime asugar-basedmarinade(forexample, barbecuesauce)
isgoing to be used.
Use nonmetallicspatulas or utensils to prevent damaging the Excalibur®nonstick
grill grate finish.
• Preheat thegrirl on Hi for 5 minutes.Preheating improves theflavor and
appearance of meats andquickly searsthemeat to help retain thejuices.
Excessive amounts of fat should be trimmed from meats. Somefat is necessary
to producethe smokeneeded for that smoked, "outdoor" flavor. However,
excessivefat can createcleaning and flare-up problems.
Allowing excessive amounts of grease or drippings to constantly flame voids the
warrantyon the grill grates. Excessiveflare-ups indicatethat eitherthegrill interior
needsto becleaned or that excessiveamountsof fat arein the meat or themeat
wasnot properly trimmed.
• Greasedrippings will occasionally igniteto produce harmless puffsof flamefor a
second or two. This is a normal pad of thecooking process.
NEVER LEAVE GRILL UNATTENDED DURING GRILL OPERATION.
Should excess grease cause sustained flare-up
1. Turn on FAN manually.
2. Immediately turn grillcontrol knobsto Off position.
3. Remove meat from grill.
IMPORTANT
• Do notuse aluminumfoil insidethe grillarea.
Do notuseehamoalor woodchipsinthe grillarea.
Do notallowburnerbasin tobecomeoverloadedwithgrease. Cleanaftereach
use.
Donotcovergratescompletelywithmeat. Leaveairspacebetweeneachsteak,
etc.to allowproperventilationas well as preventflare-ups.

Thefollowingsuggestionsaregoodrulestofollowandwillincreaseyourenjoymentof

Be suretofollowdirectionson page18 for usingthegrill.
Suggestedcookingtimesandcontrolsettingsare approximateduetovariations
inmeats. Experiencewillquicklyindicatecookingtimesas wellaswhichsettings
workbest.
Forbestresults,buytop grademeat.Meatthat isat least_inchwillgrillbetter
thanthinnercuts.
Scorefat on edgesofsteak,but do notcut intomeat,to preventcurlingwhile
cooking.
Fortheattractive"branded"lookonsteaks,besuregrillispreheated.Allowone
sideofmeattocooktodesireddoneness,oruntiljuicesappearonthetopsurface,
before turning. Turn steaks and hamburgersjust once. Manipulatingfood
causeslossofjuices.
When bastingmeats or applyingsaucesto foods, rememberthat excessive
amountswind up insideyour grilland do not improvethe foodflavor. Apply
saucesduringthelast15 to20 minutesof cookingtime unlessrecipespecifies
otherwise. Plus, any timea sugar-basedmarinade, (for example,barbecue
sauce)isgoingto beused,thegratesshouldbe"seasoned"priorto preheating.

Thereare manymeatmarinadeswhichwillhelptenderizelessexpensivecutsof
meatfor cookingonthe grill.
Certainfoods,suchas poultryand non-oilyfish,mayneedsomeextrafat.Brush
withoilor meltedbutteroccasionallywhilegrilling.
Usetongswithlonghandlesorspatulasforturningmeats. Do notuseforksas
thesepiercethemeat,allowingjuices tobe lost.
To helpretainmeatjuices,saltafterturningmeator aftercookingiscompleted.
Besure thegrilliscooland controlsareOff.
Grill Grates
ThesearemadefromcastaluminumandarecoatedwiththeExcalibur_nonstickfinish.
Afterthegrillgrates havecooled,wipeoffgrateswith apapertowel.Wash cool
grates (DO NOT IMMERSE HOT GRILL GRATES IN WATER) with soap or
detergentinhotwaterinthesinkorwashtheminthedishwasher.Besuretoremove
all foodresiduebeforecookingon thegrillgratesagain.
Removestubbornspotswitha plasticmeshpufforpad.Forbestresults,useonly
thosecleaningproductswhichstatetheyarerecommendedforusewhencleaning
nonstick surfaces.
Ifgratesarewashedinthedishwasher,seasonwithoilpriorto grilling.(See p. 18.)
Do not use metal brushes or abrasive scouring pads or other scrubbers intended
to cleanoutdoor charcoal grills. These willremovethefinish aswell asscratchthe
grates.Do not clean in the self-cleaning oven or use oven cleaners on the grates.
