permission from the manufacturer.

1. GENERAL WARNINGS
Only qualified installers and staff authorised by the manufacturer may perform the installation,
start-up and maintenance work to the appliance.
Read these instructions carefully beforehand, as they are very important for safety when
installing, using and servicing the appliance.
1. The appliance must only be used in the manner it was designed for, i.e. keeping
previously cooked dishes hot; any other use does not conform to its design and is
therefore strictly forbidden.
2. The ideal working conditions for the appliance are a temperature of 25°C with a humidity
level of 60%.
3. After unpacking the appliance, ascertain that no damage has been caused during
transport.
4. Before positioning and installing the appliance, check that the output and voltage features
given on the data plate correspond to the power supply in the installation site.
The data plate is on the bottom right of the serving side.
5. In the event of problems, immediately turn the machine off and disconnect or close all
connections.
2. SPECIAL WARNINGS FOR POSITIONING AND WIRING THE APPLIANCE
As prescribed by law, a multiple-pole switch must be installed between the appliance and the
main power supply, with a contact opening of at least 3 mm per pole. The ground wire must not
be disconnected. A water cut-off valve must be installed upstream from the bain-marie units; we
recommend using only softened water. The appliance may be connected to the hot water line, to
reduce the time required to reach the operating temperature.
4
3. POSITIONING
Remove the protective film from the appliance.
The appliance must be perfectly level, and any differences in floor level can be compensated by
regulating the height of the feet.
4. LEGAL PROVISIONS AND DIRECTIVES
The following provisions must be observed when connecting the appliance:
1. Current building and fire prevention provisions;
2. Current accident-prevention standards;
3. Installation provisions, CEI STANDARDS.
5) ELECTRIC AND EQUIPOTENTIAL WIRING
To reach the terminal block, remove the vertical panel on the right side of the unit.
The main switch upstream from the appliance must be in an easily reached position close to the
appliance itself.
The installer must be supplied with the suitable electric lead (H05 RN-F5x1.5mm²), which must
be firmly fixed in the cable clamp. The single wires must be joined to the corresponding terminals;
the earth wire must be longer than the others to ensure that it can only be disconnected in the
event of pulling, after the power wires have been disconnected.
Appliance safety is only guaranteed with the earth wire correctly connected as required by
current legislation in force.
The appliance must be incorporated in the equipotential system.
The screw is on the bottom of the right side (the serving side) and is clearly marked by a special
symbol.
5
6) WATER CONNECTIONS
INLET:
The pressure in the main water supply must be between 50 and 500 Kpa, in the event the
pressure is higher, a pressure reducer must be installed upstream from the appliance.
¾” attachments are used.
OUTLET:
¾attachments are used. In the event the outlet pipe needs extending, only heat resistant piping
must be used with a fixed diameter of ¾”. The outlet pipe must flow into an open drain, to avoid
polluting the appliance.
7) GENERAL OPERATING INSTRUCTIONS
Please read these instructions carefully, as they give the basic safety, operating and
maintenance instructions for the appliance.
Before leaving the factory, the appliance underwent very strict tests and controls by our qualified
staff. Any repair work that may be required must only be performed by qualified persons.
We strongly recommend contacting the authorised centre where you purchased your appliance,
giving clear details about the problem and the construction details given on the data plate, to
ensure that precise and specific servicing assistance can be supplied.
BAIN-MARIE UNITS
The appliance must not be used unless there is sufficient water in the tank, as given in the
instructions on page 11.
HEATED GLASS TOPS
WARNINGS:
a) Should there be even the smallest sign of breakage in the heated surface, the appliance
must be immediately disconnected from the mains and our service department should be
contacted.
b) The hardened glass surface must be protected against impact, knocks and violent
mechanical and thermal stress. At the end of each day, the top must be carefully cleaned
(refer to “CLEANING AND CARE”) to guarantee long life for the appliance.
At the end of each day’s work, the appliance must be turned off and disconnected from
the mains upstream.
The appliance may be supplied on 4 castors, 2 of which have brakes.
The installer must install a coiled lead and in the event the appliance needs moving, it must be
turned off and disconnected from the mains beforehand.
Failure to comply with this rule could jeopardize safety of both the appliance and the operator
The manufacturer declines all responsibility for any alterations made to the original functions of
the appliance, for failure to observe the instructions or for any alterations or additions made to the
devices.
6
8) CLEANING AND CARE
Attention: direct water jets or pressurised jets must not be used to wash the appliance.
Before using a new appliance, it must be carefully cleaned.
Disconnect the appliance from the mains and clean it with hot water and normal detergent.
Do not use acid or corrosive products, wire wool or brushes as these could deposit ferrous
particles that would oxidise and cause rust. Stainless steel wire wool may be used on the outer
surfaces, following the direction of the brushed satin finish.
In the event the appliance will not be used for a long time, rub it well with a cloth soaked in
Vaseline oil to spread a protective film all over; the room should be periodically ventilated as well.
Warning: the appliance must be disconnected from the mains in the event of long periods
without use.

10) USE AND FUNCTIONS
1. Open the water cut-off valve;
2. Turn on the appliance main switch;
3. Fill the bain-marie tank keeping the switch pressed until the water reaches the overflow mark
(the tank empties by drawing off the overflow water);
4. Introduce the support bars and fit the GN basin lids to speed up water heating; 1 hour is
required to reach the required water temperature.
5. Set the required temperature levels on the respective thermostats;
6. To maintain correct constant temperature levels for the dishes, we advise setting the
thermostats as follows: 90°C for the tank and heated glass surface and 70°C for the heated
cabinet;
7. The bain-marie units are designed for containing the dishes in GN basins measuring h=
150mm and h= 100mm;
8. To avoid remaining without water, check the level frequently and top up as required;
9. Do not cover the intake grids of the motorised fan in the heated cabinet with dishes to ensure
that the hot air is able to circulate perfectly.
