IMPORTANT
The installer must ensure that the installation of the appliance is in conformity with these
instructions and National Regulations in force at the time of installation. Particular attention MUST

This appliance has been CE-marked on the basis of compliance with the Low Voltage and EMC
Directives for the voltages stated on the Data Plate
WARNING -THIS APPLIANCE MUST BE EARTHED
CAUTION: Read the instructions before using the machine.
On completion of the installation these instructions should be left with the Engineer-in-Charge for
reference during servicing. Further to this, The Users Instructions should be handed over to the User,
having had a demonstration of the operation and cleaning of the appliance.
IT IS MOST IMPORTANT THAT THESE INSTRUCTIONS BE CONSULTED BEFORE INSTALLING AND
COMMISSIONING THIS APPLIANCE. FAILURE TO COMPLY WITH THE SPECIFIED PROCEDURES MAY
RESULT IN DAMAGE OR THE NEED FOR A SERVICE CALL.
PREVENTATIVE MAINTENANCE CONTRACT
In order to obtain maximum performance from this unit we would recommend that a Maintenance
Contract be arranged with SERVICELINE. Visits may then be made at agreed intervals to carry out
adjustments and repairs. A quotation will be given upon request to the SERVICELINE contact
numbers below.

At end of unit life, dispose of appliance and any replacement parts in a safe
manner, via a licenced waste handler.
Units are designed to be dismantled easily and recycling of all material is
encouraged whenever practicable.

Electrical Safety and Advice Regarding Supplementary Electrical Protection
Commercial kitchens and foodservice areas are environments where electrical appliances may be located
close to liquids, or operate in and around damp conditions, or where restricted movement for installation
and service is evident.
The installation and periodic inspection of the appliance should only be undertaken by a qualified, skilled
and competent electrician; and connected to the correct power supply suitable for load as stipulated by the
appliance data label.
The electrical installation and connections should meet the necessary requirements to local electrical
wiring regulations and electrical safety guidelines.
We recommend:-
Supplementary electrical protection with use of a residual current device (RCD).
Fixed wiring appliances incorporate a locally situated switch disconnector to connect to, which is
easily accessible for switching off and safe isolation purposes. The switch disconnector must meet
the specification requirements of IEC 60947.
Warranty Policy Shortlist
Warranty does not cover :-
Correcting faults caused by incorrect installation of a product.
Where an engineer cannot gain access to a site or a product. Repeat
commission visits.
Replacement of any parts where damage has been caused by misuse. Engineer
waiting time will be chargeable.
Routine maintenance and cleaning.
Gas conversions i.e. Natural to Propane gas.
Descaling of water products and cleaning of water sensors where softeners/conditioners are not
fitted,
or are fitted and not maintained. Blocked
drains.
Independent steam generation systems.
Gas, water and electrical supply external to unit. Light
bulbs.
Re-installing vacuum in kettle jackets.
Replacement of grill burner ceramics when damage has been clearly caused by misuse. Where
an engineer finds no fault with a product that has been reported faulty.
Re-setting or adjustment of thermostats when unit is operating to specification. Cleaning
and unblocking of fryer filter systems due to customer misuse.
Lubrication and adjustment of door catches. Cleaning
and Maintenance:
Cleaning of burner jets
Poor combustion caused by lack of cleaning Lubrication
of moving parts
Lubrication of gas cocks
Cleaning/adjustment of pilots Correction
of gas pressure to appliance. Renewing of

SECTION 1 – INSTALLATION
UNLESS OTHERWISE STATED, PARTS WHICH HAVE BEEN PROTECTED BY THE MANUFACTURER ARE

1.2 SITING
E350/30:
The appliance should be installed on a firm level floor in a well lit position. Should the unit be
required to be positioned in close proximity to a wall, partition or decorative finish, etc. the surface
must be constructed of non-combustible material. Alternatively it may be clad in a suitable
non-combustible insulating material.
E350/32 & 33:
The appliance must be installed on a firm counter or table or alternatively on the special purpose
made floor stand supplied by Falcon.
If either appliance requires to be installed in close proximity to a wall, partition, etc. a clearance of
25mm at the rear and sides is recommended.
All Models:
A vertical clearance between the hotplates and any overlying combustible surface of 900mm should
be allowed and Fire Regulations must be complied with.
1.3 ELECTRICAL SUPPLY
The E350/30 is designed for connection to either a 3 phase/5 wire AC supply or to a single phase AC
supply. (See note below).
The E350/32 is suitable for connection to a single phase AC supply only.
The E350/33 is designed for connection to either a 3 phase/5 wire AC supply or to a single phase AC
supply. (See note below).
The cable entry is located underneath at RH side of the E350/30 and at the rear of the appliance for
the E350/32 & 33 and is suitable for 20mm conduit. The connection to the mains electricity supply
must be made through a suitable isolating switch with a contact separation of at least 3mm in all
poles. All wiring must be executed in accordance with the relevant regulations listed on the cover of
this document.
Warning
THESE APPLIANCES MUST BE EARTHED.
A suitable terminal is provided within compartment which should be used for this purpose.
Note
When connecting the E350/30 or 33 units to a single phase supply, the three line terminals must be
connected together by wire links. It is important that the links and incoming supply cable are
connected exactly as shown in the following diagram.
This appliance is also provided with a terminal for the connection of an
external equipotential conductor. This terminal is in effective electrical
contact with all fixed exposed metal parts of the appliance, and shall
allow the connection of a conductor having a nominal cross-sectional
area of up to 10 mm². It is located on the rear panel and is identified by
the following label and must only be used for bonding purposes.

The hotplates embody a temperature limiting device which automatically cuts off part of the
element circuit should the plate become overheated due to being left on without a pot on it.
SECTION 2 - ASSEMBLY and COMMISSIONING
2.1 E350/30 FOUR HOTPLATE RANGE
a) Place the appliance in position and carefully level it by turning the feet adjusters. Holes are
provided in the feet to enable the appliance to be fixed to the floor if this is considered necessary.
b) Open the door and remove all packing material etc.
c) Connect the unit to the electrical supply (terminals underneath).
Note
If a single phase AC supply is being used, fit bridging links and connect to the mains strictly in
accordance with below
d) Switch appliance on. Ensure that all controls, elements and pilot lamps function correctly.
e) After completion of installation, demonstrate method of operation to kitchen staff. Indicate the
location of mains isolating switch to be shut down in event of an emergency or during cleaning.
2.2 E350/32 and E350/33 BOILING TOPS
a) Place the appliance in position and carefully level it by using the feet adjusters if it is to be
mounted on a counter or table. If the unit is required to be mounted on the special purpose stand,
please refer to the instructions supplied with that component.
b) The appliance is supplied complete and ready to connect to the mains.
c) To gain access to the terminals, proceed as follows:
Remove the two screws in the upper flange of the control panel (i.e. below the front hob). Move
the panel forward at the top until it clears the hob and lift it slightly upward to release the lower
fixings and remove the panel.
d) The terminals are now accessible. The supply cables can be fed through the in-built conduit tube.
e) After connecting to the supply, replace the control panel and test the unit. Check that all
hotplates, pilot lamps, etc. function correctly.
SECTION 3 - SERVICING
BEFORE ATTEMPTING ANY MAINTENANCE, ISOLATE THE APPLIANCE AT THE MAIN SWITCH AND
TAKE STEPS TO ENSURE IT IS NOT INADVERTENTLY SWITCHED ON.
When ordering spares please quote the model number, serial number and voltage as stated on the
data plate.
3.1 E350/30 FOUR HOTPLATE RANGE
3.1.1 CONTROL PANEL - TO REMOVE
Open oven doors and remove fixings from bottom flange of control panel. Ease top of panel forward
slightly and lift it up to release panel.
3.1.2 THERMOSTAT - TO REMOVE
a) Remove control panel as detailed in Section 3.1.1.
b) Undo two nuts inside plated side trim ends.
c) Pull hotplate assembly forward to release front fixing and swing it up, pivoting at the rear. Prop
plate up in raised position.
d) Open door and release thermostat phial from oven roof clips.
e) Feed capillary tube up through hole in oven roof and through hole in controls compartment.
f) Remove connections to thermostat then pull off knob. Remove screws which secure thermostat to
control panel. Remove thermostat.
When fitting a new thermostat, fit existing insulating sleeving over capillary tube.
Avoid kinking capillary tubing and ensure earth connection is replaced.
3.1.3 HOTPLATES - TO REMOVE
a) Remove facia panel as detailed in Section 3.1.1. Raise hotplate assembly as detailed in Section 3.2.2
b) Remove hotplate connections and undo central fixing nut. This will allow hotplate to be removed
from top. Fit replacement plate in reverse order, referring to wiring diagram when re-connecting.
3.1.4 CONTROL SWITCHES - TO REMOVE
a) Remove control panel as detailed in Section 3.1.1.
b) Remove switch connections, note cable arrangement.
c) Pull off control knob and undo fixing screws to release switch. Fit new switch in reverse order,
ensure that earth bonding wire is attached to it.
3.1.5 PILOT LAMPS - TO REMOVE
a) Remove control panel as detailed in Section 3.1.1.
b) Pull off connections to lamp.
c) Remove nut at panel rear to release lamp. Fit replacement in reverse order.
3.1.6 OVEN ELEMENTS - TO REMOVE
a) Remove control panel as detailed in Section 3.1.1.
b) Remove outer side panels as follows. Undo screws in rear flange of panel. Swing panel rear
outward slightly then forward to release front fixing.
c) Open door and remove base panel.
d) Remove element connections and undo fixing nut.
e) Withdraw element from inside oven. Replace element in reverse order, ensuring small earth
bonding wire connection is securely fastened in place.
3.2 E350/32 and E350/33 BOILING TOPS
3.2.1 CONTROL PANEL - TO REMOVE
Remove the two screws in the upper flange of the panel, below the front of the hob. Move the panel
forward at the top until it clears the hob and lift it slightly upward to release the lower fixings.
Remove the panel complete with switches.
3.2.2 CONTROL SWITCHES - TO REPLACE
If a control switch is faulty it is not normally repairable. The switch must be replaced adopting the
following procedure:
Remove the control panel as detailed in Section 3.2.1.
Remove the switch connections, noting the arrangements of the cables.
Pull off the control knob and undo the switch fixing screws to release the switch.
Fit the new switch in reverse order. Ensure that the earth bonding wire(s) is attached to it.
3.2.3 PILOT LAMPS - TO REPLACE
If a lamp is faulty it is not normally repairable. The indicator must be replaced adopting the following
procedure:
Remove the control panel as detailed in Section 3.2.1.
Pull off the lamp connections. Undo the nut which secures the lamp at the rear and remove.
3.2.4 HOTPLATE - TO REPLACE
Remove the control panel as detailed in Section 3.2.1.
Slacken the two nuts inside the ends of the chrome plated side trims.
Pull the hob assembly forward to release the front fixing and swing it upward, pivoting at the rear.
Prop the plate up in the raised position.
Undo the connections to the hotplate, noting their locations.
Remove the central fixing nut to allow the plate to be withdrawn from the top.
Replace in reverse order.
