UNDERSTAND AND FOLLOW THE INSTRUCTIONS AND WARNINGS CONTAINED IN
THIS MANUAL.
FOR YOUR SAFETY
DO NOT STORE OR USE GASOLINE OR OTHER FLAMMABLE VAPORS AND LIQUIDS
IN THE VICINITY OF THIS OR ANY OTHER APPLIANCE.
POST IN A PROMINENT LOCATION
INSTRUCTIONS TO BE FOLLOWED IN THE EVENT USER SMELLS GAS. THIS
INFORMATION SHALL BE OBTAINED BY CONSULTING YOUR LOCAL GAS SUPPLIER.
AS A MINIMUM, TURN OFF THE GAS AND CALL YOUR GAS COMPANY AND YOUR
AUTHORIZED SERVICE AGENT. EVACUATE ALL PERSONNEL FROM THE AREA.
WARNING: IMPROPER INSTALLATION, ADJUSTMENT, ALTERATION, SERVICE OR
MAINTENANCE CAN CAUSE PROPERTY DAMAGE, INJURY OR DEATH. READ THE
INSTALLATION, OPERATING AND MAINTENANCE INSTRUCTIONS THOROUGHLY
BEFORE INSTALLING OR SERVICING THIS EQUIPMENT.

NOTICE:
If the Clamshell® is to be attached to a griddle/ charbroiler in the
field – it is recommended to complete the installation of mounting adapter
before un-crating the Clamshell®.
CAUTION:
UNIT IS EXTREMELY HEAVY. FOR SAFE HANDLING, INSTALLER SHOULD
OBTAIN HELP AS NEEDED, OR EMPLOY APPROPRIATE MATERIALS
HANDLING EQUIPMENT (SUCH AS A FORKLIFT, DOLLY, OR PALLET
JACK) TO REMOVE THE UNIT FROM THE SKID AND MOVE IT TO THE
PLACE OF INSTALLATION.
WARNING:
INSTALLATION OF THE UNIT MUST BE DONE BY PERSONNEL QUALIFIED
TO WORK WITH ELECTRICITY AND PLUMBING. IMPROPER
INSTALLATION CAN CAUSE INJURY TO PERSONNEL AND/OR DAMAGE
TO EQUIPMENT. UNIT MUST BE INSTALLED IN ACCORDANCE WITH ALL
APPLICABLE CODES.
CAUTION:
SHIPPING STRAPS ARE UNDER TENSION AND CAN SNAP BACK WHEN
CUT.
DANGER:
DO NOT REMOVE THE MOUNTING NUTS OFF OF THE MOUNTING PLATE
STUDS WHILE THE UNIT IS IN THE LOWERED POSITION. THE
STANCHION BACK IS UNDER TENSION AND CAN CAUSE BODILY INJURY.
NOTICE:
The data plate is located on the inside surface of the hood wrap. The
Clamshell® voltage, wattage, serial number, clearance and gas
specifications are on the data plate. This information should be carefully
read and understood before proceeding with the installation.
NOTICE:
This unit is approved to be installed only on equipment which meets NSF
standards, and for which the adapter kit is provided.
WARNING:
BEFORE LIGHTING, USE A SOAP AND WATER SOLUTION TO TEST ALL
JOINTS FOR GAS LEAKS.
NOTICE:
The installation of any components such as a vent hood, grease extractors,
fire extinguisher systems, must conform to their applicable National, State
and locally recognized installation standards.
WARNING:
DURING INITIAL USE, OR USE AFTER SERVICE, IF THE PILOT DOES NOT
IGNITE ON FIRST TRY THE MAIN GAS VALVE MUST BE TURNED OFF FOR
AT LEAST FIVE MINUTES.
CAUTION:
ALWAYS KEEP THE AREA NEAR THE APPLIANCE FREE FROM
COMBUSTIBLE MATERIALS.
CAUTION:
KEEP FLOOR IN FRONT OF EQUIPMENT CLEAN AND DRY. IF SPILLS
OCCUR, CLEAN IMMEDIATELY, TO AVOID THE DANGER OF SLIPS OR
FALLS.
NOTICE:
While cooking, the Clamshell® must be monitored at all times. Do not leave
the Clamshell® unattended while cooking.
NOTICE:
Fan in Clamshell® runs continuously. For the safety of the unit, the fan
must run continuously to provide cooling to the electrical components.
Component cooling is required if the base unit is running. If power to the
Clamshell® is turned off, gas to base will be turned off. If it is necessary to
remove power from the Clamshell®, the base unit must be cooled below

MOST CLEANERS ARE HARMFUL TO THE SKIN, EYES, MUCOUS
MEMBRANES AND CLOTHING. PRECAUTIONS SHOULD BE TAKEN TO
WEAR RUBBER GLOVES, GOGGLES OR FACE SHIELD AND PROTECTIVE
CLOTHING. CAREFULLY READ THE WARNING AND FOLLOW THE
DIRECTIONS ON THE LABEL OF THE CLEANER TO BE USED.
CAUTION:
A COMMERCIAL LIQUID GRIDDLE CLEANER IS NOT RECOMMENDED FOR
CLEANING THE GRIDDLE OR CHARBROILER UNDER THE CLAMSHELL®
AS MOST CONTAIN POTASSIUM HYDROXIDE OR SODIUM HYDROXIDE
WHICH IS HARMFUL TO THE CLAMSHELL® BURNER TILES.
NOTICE:
Do not spray any liquids on to the tiles, or wipe the tiles with any materials.
Liquids and direct contact on the tiles can damage them.
CAUTION:
DO NOT USE YOUR HAND TO CHECK GRIDDLE/CHARBROILER
TEMPERATURE.
NOTICE:
Service on this, or any other, LANG appliance must be performed by
qualified personnel only. Consult your authorized service station directory

DANGER:
BOTH HIGH AND LOW VOLTAGES ARE PRESENT INSIDE THIS APPLIANCE

Tools required:
Phillips screwdriver, Vice grips, 1/2” Electric Drill, 9/16” Socket, Ratchet, 1/2”
Open ended wrench, 9/16” Open ended wrench.
1) Insure all legs are tightened.
TO INSTALL ADAPTER KIT & AGC:
2) Using a Phillips screwdriver, remove 6 sheet metal screws securing griddle flue to griddle back.
(see figure 2-1)

3) Remove 2 sheet metal screws holding flue mounting bracket to griddle back. (See figure 3-1)

4) Remove 2 sheet metal screws securing the griddle plate to the frame. (See figure 4-1)

5) Install 2 sheet metal screws to hold griddle sides to back of griddle. (See figure 5-1)

6) Using 7/16” drill bit, drill out the bottom two mounting holes (One on each end). (See figure 6-1)

7) Pry out the griddle mounting tabs (about 1/2”) on both sides of the back panel. (See figure 7-1)

8) Place the adapter frame assembly into place. (See figure 8-1) Insure that the griddle tabs slide into
the adapter frame assembly. (See figure 8-2)

9) Place adapter left and right skin into place. (See figure 9-1, 9-2)

10) One person should hold the mounting nuts (See figure 10-1) to the inside of the unit, while another
person installs the 4 3/8” X 1” mounting bolts. (See figure 10-2)

11) Tighten all four of the 3/8” bolts with the 9/16” wrench or socket, securing adapter frame assembly.
12) (For a right hand side mounted AGC only) Install a 90° pipe fitting on the base units gas connection
(See figure 12-1)

13) Remove AGC Carriage back access cover, if installed, to improve access to mounting nuts. Remove the
four 5/16” nuts securing AGC to the skid mount bracket using the 1/2” wrench. (See figure 13-1 & 13-2)

14) Place AGC onto the adapter frame assembly mounting studs. (See figure 14-1)

DANGER:
DO NOT REMOVE THE MOUNTING NUTS OFF OF THE MOUNTING PLATE STUDS WHILE THE
UNIT IS IN THE LOWERED POSITION. THE STANCHION BACK IS UNDER TENSION AND CAN
CAUSE BODILY INJURY.
15) Place 5/16” nuts and lock washers onto all four mounting studs and tighten with 1/2” wrench.
16) Install Flue piece number 1 into place. (See figure 16-1, 16-2, 16-3, and illustrations 16-1 & 19-1)

17) Place insulation over piece number 1, so that it sits flush with the piece. (See illustrations 18-1 & 19-1)
18) Place flue piece number 2 into position so that the bottom 2 tabs sit in front of the tabs on the carriage
(See figure 18-1). (See figure 18-2, 18-3, 18-4 and illustrations 16-1 & 18-1)

19) Place flue piece number 3 into position so that it rests firmly on piece number 2. (See figure 19-1, 19-2,
19-3 and illustration 19-1)

20) Slide flue piece number 4 over the griddle back splash as shown. Tabs spot-welded to flue piece # 4
will seat into offset tabs on the front of the carriage. (See figure 20-1, 20-2 and illustration 19-1)

21) Place flue piece number 5 over flue piece number 3 so that it sits on flue piece number 4. (See figure
21-1, 21-2, 21-3, 21-4 and illustration 19-1)

22) Tighten the two nut on the spring loaded counter balance rods until the last thread disappears into the
shaft. (See figure 22-1) This is done most easily by holding the rod still with a pair of vice grips. (See figure
22-2)

23) Place and tighten a second nut over each of the counter balance rod nuts to lock the first nut in place.
24) Place warning label (appliance on casters) provided on the lower front right corner of the Griddle.
NOTE: REFER TO THE AGC INSTALLATION, MAINTENANCE, AND OPERATING
MANUAL FOR GAS AND ELECTRICAL CONNECTIONS.
25) Using two sheet metal screws, secure the carriage back access cover to the carriage. (See
figure 25-1 & 25-2)
