Installation of adapter kit to mount Model AGC on a Wolf
Charbroiler

INSTRUCTIONS TO BE FOLLOWED IN THE EVENT USER SMELLS GAS. THIS
INFORMATION SHALL BE OBTAINED BY CONSULTING YOUR LOCAL GAS
SUPPLIER. AS A MINIMUM, TURN OFF THE GAS AND CALL YOUR GAS

If the Clamshell® is to be attached to a griddle/ charbroiler in the
field – it is recommended to complete the installation of mounting adapter
before un-crating the Clamshell®.
CAUTION:
UNIT IS EXTREMELY HEAVY. FOR SAFE HANDLING, INSTALLER SHOULD
OBTAIN HELP AS NEEDED, OR EMPLOY APPROPRIATE MATERIALS
HANDLING EQUIPMENT (SUCH AS A FORKLIFT, DOLLY, OR PALLET
JACK) TO REMOVE THE UNIT FROM THE SKID AND MOVE IT TO THE
PLACE OF INSTALLATION.
WARNING:
INSTALLATION OF THE UNIT MUST BE DONE BY PERSONNEL QUALIFIED
TO WORK WITH ELECTRICITY AND PLUMBING. IMPROPER
INSTALLATION CAN CAUSE INJURY TO PERSONNEL AND/OR DAMAGE
TO EQUIPMENT. UNIT MUST BE INSTALLED IN ACCORDANCE WITH ALL
APPLICABLE CODES.
CAUTION:
SHIPPING STRAPS ARE UNDER TENSION AND CAN SNAP BACK WHEN
CUT.
DANGER:
DO NOT REMOVE THE MOUNTING NUTS OFF OF THE MOUNTING PLATE
STUDS WHILE THE UNIT IS IN THE LOWERED POSITION. THE
STANCHION BACK IS UNDER TENSION AND CAN CAUSE BODILY INJURY.
NOTICE:
The data plate is located on the inside surface of the hood wrap. The
Clamshell® voltage, wattage, serial number, clearance and gas
specifications are on the data plate. This information should be carefully
read and understood before proceeding with the installation.
NOTICE:
This unit is approved to be installed only on equipment which meets NSF
standards, and for which the adapter kit is provided.
WARNING:
BEFORE LIGHTING, USE A SOAP AND WATER SOLUTION TO TEST ALL
JOINTS FOR GAS LEAKS.
NOTICE:
The installation of any components such as a vent hood, grease extractors,
fire extinguisher systems, must conform to their applicable National, State
and locally recognized installation standards.
WARNING:
DURING INITIAL USE, OR USE AFTER SERVICE, IF THE PILOT DOES NOT
IGNITE ON FIRST TRY THE MAIN GAS VALVE MUST BE TURNED OFF FOR
AT LEAST FIVE MINUTES.
CAUTION:
ALWAYS KEEP THE AREA NEAR THE APPLIANCE FREE FROM
COMBUSTIBLE MATERIALS.
CAUTION:
KEEP FLOOR IN FRONT OF EQUIPMENT CLEAN AND DRY. IF SPILLS

While cooking, the Clamshell® must be monitored at all times. Do not leave
the Clamshell® unattended while cooking.

Fan in Clamshell® runs continuously. For the safety of the unit, the fan
must run continuously to provide cooling to the electrical components.
Component cooling is required if the base unit is running. If power to the
Clamshell® is turned off, gas to base will be turned off. If it is necessary to
remove power from the Clamshell®, the base unit must be cooled below

CLEANING THE GRIDDLE OR CHARBROILER UNDER THE CLAMSHELL®
AS MOST CONTAIN POTASSIUM HYDROXIDE OR SODIUM HYDROXIDE
WHICH IS HARMFUL TO THE CLAMSHELL® BURNER TILES.
NOTICE:
Do not spray any liquids on to the tiles, or wipe the tiles with any materials.
Liquids and direct contact on the tiles can damage them.
CAUTION:
DO NOT USE YOUR HAND TO CHECK GRIDDLE/CHARBROILER
TEMPERATURE.

Service on this, or any other, LANG appliance must be performed by

Tools required: Phillips screwdriver, clamps, 3/8” drill bit, 1/2” open-ended wrench & an Allen
wrench set.
1) Insure all legs are tightened. Do not remove cast iron grates or unit will tip over. Check the
charbroiler gas connections to ensure they don’t interfere with the installation of this adapter.
Adjust the gas fittings as required. Take note of label on back of charbroiler to ensure compliance
with their requirements during this installation.
TO INSTALL ADAPTER KIT & AGC:
2) Remove the top 2 screws from back panel. (see figure 2-1 & 2-2)

3) Using a clamp, set the adapter plate into place so that it is centered between the left and right side
of the unit. (see figure 3-1)

4) Drill 3/8” holes in the indicated spots, drill through all layers. (see figure 4-1)

Remove debris from area. Place weld nuts into place. (see Figure 5-1 & 5-2)

6) Insert six 5/16” bolts into all weld nuts. (see figure 6-1)

Tighten all six bolts. (see figure 7-1)

8) Place the top trim piece into place. (see figure 8-1)

9) If the unit is on a counter, complete step 9A. If the unit is on a stand, complete step 9B.
9A) Install two stainless steel legs onto back brace and extend the legs until they are firm against the
counter top. (see figure 9A-1)

9B) Position the stand extension 4” in from the side of the charbroiler, then clamp in place. This will
center the stand extension on the charbroiler. (see figure 9B-1 & 9B-2)

10) Drill three 3/8” holes through the stand using the stand extension as a template. (see figure 10-1)

11) Secure stand extension by using the stand reinforcer, 5/16” bolts & nuts. Place the bolt and flat
washer into the holes in the stand extension, the stand, then the stand reinforcer. Secure the bolts
with the lock washers and nuts provided. (see figure 11-1)

12) Install two stainless steel legs onto back brace. Then extend the legs until they are firm against
the stand extension. (see figure 12-1)

DANGER:
DO NOT REMOVE THE MOUNTING NUTS OFF OF THE MOUNTING PLATE STUDS WHILE
THE UNIT IS IN THE LOWERED POSITION. THE STANCHION BACK IS UNDER TENSION
AND CAN CAUSE BODILY INJURY.
13) Place AGC onto the adapter plate assembly mounting studs. (See figure 13-1)

14) Place 5/16” nuts onto all four mounting studs and tighten with a 1/2” wrench.
15) To assembly flue diverter: Place piece number 1 into place. (See figure 15-1, 15-2, 15-3, and
illustration 15-1 & 18-1)

16) Place insulation onto piece number 1, so that it sits flush with the piece. (See illustration 17-1)
17) Place piece number 2 into position so that the bottom 2 tabs sit in front of the of tabs on the
griddle (See figure 17-1). (See figure 17-2, 17-3, 17-4, and illustration 17-1)

18) Place piece number 3 into position so that it rest firmly on piece number 2. (See figure 18-2, 18-2, 18-3,
and illustration 18-1)

19) Slide piece number 4 onto the back splash guard on the griddle so that it sits directly in front of the
opening of the AGC. (See figure 19-1, 19-2 and illustration 18-1)

20) Place piece number 5 onto piece number 3 so that it sits on piece number 4. (See figure 20-1, 20-2, 20-
3, 20-4 and illustration 18-1)

21) Tighten both of the height adjustment nuts until the last thread disappears into the shaft. (See figure 21-
1) This is done most easily by holding the stud still with a pair of vice grips. (See figure 21-2)

22) Place and tighten a second nut onto both of the height adjustment nuts until the first nut is locked into
place.
23) Place warning label (for appliances on casters) provided on the right side of the charbroiler adjacent to
the Wolf data label.
Note: Refer to the AGC installation, maintenance, and operations manual for gas and electrical connections.
24) Using two sheet metal screws, secure the carriage back access cover to the carriage. (see figure 24-1 &
24-2)
