1. Function Features
As the mixer uses variable speed and planetary gear technologies, so it has a broad speed range
which makes it easy and convenient to operate. It can mix dough, dumpling stuffing, circumrotates eggs
and cream mixing. It is very good for using in western food kitchen, bread-room, bar, restaurant as well as
at home.
2. Assembly
2.1 The mixer should be put on a stable and flat plane. Recommended height of the plane is
650mm-750mm. Please leave 150mm-space distance at front and rear of the machine and 300mm at
left and right.
2.2 Connection of the machine to power supply should be done by qualified electrician.
2.3 The power must be used with separated electronic socket with fuse device protection. Rated voltage
is 220V and Frequency is 50Hz.
2.4 The electronic socket should have ground connection. The resistance must be less than 0.1-ohm.
2.5 There is a ground connection point at bottom of the mixer. The resistance must be less than 0.1-ohm.
3. Operation
Operating parts are in Drawing 1
3.1 Assemble and disassemble
Shut off the machine; turn the handle clockwise to horizontal position using your left hand. The head
of machine will rise automatically. To release the handle rise the head ”A” to 45°,the head will be
locked and the handle will leap back to vertical position.
Along a key of the mixer axle, insert the mixing agitator ”D” to a hole in axle of mixer ”C” lightly, turn
left to ”stop point” to assemble the mixing agitator. Reverse the process to disassembly the mixing
agitator.
To set the mixer is working position rotate the handle to horizontal position by left hand, the head will
fall down; push the head down to lock. It is now in a working position. The handle will leap back to
horizontal position.

3.2 Choosing the suitable mixer agitator.
There are three kinds of shape of mixing agitator to choose.
3.2.1 Hook shape mixing agitator is for large, sticky and thick things such as dough, etc.
3.2.2 Racket shape mixing agitator is for bulking things such as meat dumpling stuffing, etc.
3.2.3 Netted shape mixing agitator is for unstuck or just a little stockless thing such as eggs and
creams.
Note: It’s important to choose correct agitator. Always use proper one. Otherwise the machine won’t
work, can be damaged or even broken. Please select item accordingly to the viscidity of mixing
material.
3.3 How to assemble and disassemble the Bowl.
Shut off the machine; raise the head of the mixer ”A”. Hold tight stainless steel body of the bowl
with two hands, turn it clockwise till the it stops, now it’s fixed and ready to operate.
Reverse the process to disassemble the bowl.

3.4 Adjusting speed
Set the speed button to “O” position (Drawing2-1), connect the electric power, indicator light turns
on. Start the machine by pushing power switch. Speed can be adjusted according to the
requirements of mixing materials (see drawings above):
Drawing 2-2: the mixer is at low speed, it is good for dough.
Drawing 2-3, the mixer is middle speed; it is good for meat dumpling stuffing.
Drawing 2-4, the mixer is high speed; it is good for beating eggs.
This mixer has no fixed speed it changes constantly turning the regulator clockwise
increases the speed, user can choose bests speed for you job.
Note: Always follow the rules of choosing proper agitator. Otherwise the machine’s working
efficiency will be reduced; it may even lead to serious malfunctions and damages to mixer
mechanism.
3.5 Adjusting the height of mixing agitator
Sometimes, the distance between bottom of mixing agitator to the bowl is too short or too big, in
such case adjusting the height of mixing agitator is necessary. Details are as follows (drawing3):

3.6 After finishing the procedure showed above, please return back the speed button to “O” position,
then turn off the machine, and cut off the power.
4. Safety
4.1 Before removing the machine, power must be cut off. While disassembling of the mixing agitator,
mixing bowl must be turned off.
4.2 Always keep your hands dry while operating the machine.
4.3 Don’t water the machine, don’t put it in water.
4.4 If any parts are broken or under abnormal conditions, the machine must be stoppedcall
technician to fix.
4.5 Don’t put fingers in bowl while it is working.
4.6 Keep away children from the machine.
4.7 When it is working or the head is raising, the handle ”e” must be at vertical position.
4.8 When the head is rising, don’t put any fingers on link parts between head and stand of machine
to avoid injury.
4.9 There is a ground point (Mark
) in a back of stand, please keep them in original position after
each maintenance.
5. Maintenance:
5.1 It is food processing machine, so all parts that have been in contact with food have to be
removed and washed every day after working. Don’t use cleaning pharmaceutical that may
injury persons.
5.2 Don’t turn on the mixer if the bowl is empty.
5.3 When mixing agitator beats stainless steel bowl, stop work immediately, correct the space or
change the agitator or bowl if necessary.
5.4 After one year, please contact with supplier to maintain and check the machine.

6. Potential Troubles and Solutions:
Trouble

Mixer is turned on, but
doesn’t work.

Note: Please change the carbon brush of electronic motor when it stops working for a long time.
