This manual is also suitable for

Hobart 3813N is a manual meat slicer with a 1/2 hp motor and a 13" diameter stainless steel knife. It features the No Volt Release, Gauge Plate Interlock, Home Start, Close-to-Stop, and Auto-Shutoff features for safety and convenience. The Lift Assist feature allows you to lift and lower the right side of the slicer with little effort to enable cleaning underneath. The optional Knife Removal Tool allows you to remove the knife from the motor hub for easy cleaning.

GENERAL
The model 3813, 3813N, 3913 and 3913N slicers are equipped with a
1
2 h p motor and are available
for single-phase electrical service. The slicer features the Hobart CleanCut
t m
13" diameter contoured
stainless steel knife. The slicer is furnished with a cord and plug as standard equipment. Other features
include:
The No Volt Release feature, standard, requires the slicer to be restarted after a power interruption.
The Gauge Plate Interlock feature, standard, prevents the p
r o d u c t tr a y (Fig. 1) from being tilted or
removed unless the p
r o d u c t tr a y is in the home position (pulled all the way toward you) and the Ga u G e
p
l a t e is closed. Note also that the slicer will not start unless the Kn o b on the pr o d u c t tr a y Su p p o r t ar m
(Fig. 1) is tight.
The Home Start feature, standard, requires the p
r o d u c t tr a y (Fig. 1) to be in the home position (pulled
all the way toward you) before the slicer can be started.
The Close-to-Stop feature, standard, turns the slicer off when the G
a u G e pl a t e is returned to the closed
position by turning the I
n d e x Kn o b (Fig. 1) fully clockwise. The slicer also is turned off if the OFF button
is pressed.
The Auto-Shutoff feature, standard, will automatically turn the slicer off if a back-and-forth stroke of
the p
r o d u c t tr a y has not been made within 30 seconds.
The Lift Assist feature, standard, allows you to lift and lower the right side of the slicer with little effort
to enable cleaning underneath.
The model 3913 and 3913N slicer features automatic slicing with a choice of three speeds for
the p
r o d u c t tr a y . The Select-a-Stroke
t m
feature allows you to select the exact stroke length to t
the product being sliced; this can increase the slice rate on items needing a shorter stroke.

•4" Leg Set Raises the height of the slicer for use on some deli carts. To install: Remove the
slicer feet (two adjacent feet at a time) by unscrewing them. Reinstall the slicer feet
on the bottom of the 4" legs. Install a leg with foot in the two adjacent corners of the
slicer base where the slicer feet were removed. Use the same process for the next
two adjacent feet. There are three alternate corner locations that can be used for the
legs / feet in case the table does not permit use of the standard corners. Assure
proper stability by using only one alternate location for any corner.

INSTALLATION
UNPACKING
Immediately after unpacking the slicer, check for possible shipping damage. If the slicer is found to be
damaged, save the packaging material and contact the carrier within 15 days of delivery.
Prior to installing the slicer, test the electrical service to assure it agrees with the specications on the
machine data plate. The data plate is located on the left side of the slicer base.

n o b is spring-loaded and will pop

a u G e pl a t e (Fig. 2). Then hold the pr o d u c t tr a y
with both hands and lift upward (Fig. 3).

n o b on the Su p p o r t ar m , and rotate it in
either direction until the K
n o b is against the

u p p o r t ar m . Then, turn the Kn o b clockwise
a quarter turn until snug.

ELECTRICAL
This machine is provided with a three-prong grounding plug. The outlet to which
this plug is connected must be properly grounded. If the receptacle is not the proper grounding
type, contact an electrician.
CLEAN BEFORE USING
The 3000 series slicer must be thoroughly cleaned and sanitized after installation and before being
used. Refer to Cleaning, pages 8 – 11.

To operate the slicer in Automatic mode
Flashing auto light means carriage paused. Turn machine off when loading
product.

product. Alternatively, you can secure the f

symbol to increase speed; press the t
u r t l e symbol to decrease speed (Fig. 10). The speed
indicator, located to the left of the symbols, shows which speed is selected. You can change the
speed at any time.
• Selectastrokelengthforthep
r o d u c t tr a y to move back and forth by moving the pr o d u c t tr a y
forward to the exact place you would like the stroke to begin. Typically the stroke length selected
will be slightly longer (
1
/2" –
3
/4") than the width of the product setting on the pr o d u c t tr a y .
• Pressthea
u t o on / pa u S e button to start slicing (Fig. 10); the pr o d u c t tr a y moves back and forth
at the speed and at the stroke length you have selected.

(Fig. 10). Pressing a
u t o on/ pa u S e returns the pr o d u c t tr a y to the home position (all the way
toward you).
If you pressed au t o on / pa u S e , the Kn I f e continues to run and the stoke length is retained in
short-term memory for 30 seconds. If you wish to resume slicing within 30 seconds with the
same stroke length, you can press the a
u t o on / pa u S e button again.
If you pressed of f or turned the In d e x Kn o b fully clockwise, the Kn I f e stops, the pr o d u c t tr a y
stops where it is and the stroke length reverts back to a full stroke length.

CLEANING
This machine must be thoroughly cleaned and sanitized at least as often as required by local regulation
or after being idle for an extended period of time.
The slicer knife is very sharp. Exercise extreme caution when working near
the knife.
Unplug the machine power cord and turn the index knob fully clockwise to
close the gauge plate before cleaning the slicer.
For general cleaning, use a clean cloth soaked in mild detergent and warm water, and wipe all surfaces
of the machine especially where food or liquids can accumulate. Be sure to wipe any surface where
there is frequent hand contact including handles, knobs and the control pad. Use generous amounts
of soapy water and sanitizer on the S
h a r p e n e r mo u n t hardware (Fig. 12). Rinse using a fresh cloth and
clean water. Apply sanitizing solution to cleaned surfaces. Make sure the slicer is clean of all food soil
before sanitizing. Use only products formulated to be safe on stainless steel or aluminum. DO NOT
exceed chemical manufacturer’s recommended concentrations for detergent or sanitizer.

l a t e is already closed) pull the pr o d u c t tr a y all
the way to the front. Turn the K
n o b on the Su p p o r t
a
r m counterclockwise a quarter turn to release. Tilt
the p
r o d u c t tr a y to the right (Fig. 11). The pr o d u c t
t
r a y can be cleaned in this open position, or it
can be removed by grasping with both hands and
lifting straight up. Once removed, the p
r o d u c t tr a y ,
including the p
u S h e r and pu S h e r ha n d l e (Fig. 11),
can be washed, rinsed and sanitized in a sink.
Cleaning the Knife in Place (3813N & 3913N)
Remove the S
h a r p e n e r by lifting it straight up (Fig. 12).
Wipe out any residue remaining inside the S
h a r p e n e r housing. Wash, rinse and sanitize the
S
h a r p e n e r in a sink or dishwasher.

To reinstall the p
r o d u c t tr a y , hold it with both hands and lower
it so the bottom of the S

I n S (Fig. 17). Return the pr o d u c t tr a y to the Ga u G e pl a t e by
tilting the p
r o d u c t tr a y to the left. Turn the Kn o b on the
S
u p p o r t ar m in either direction until it moves inward, then turn
the K
n o b clockwise until snug.
The l
I f t aS S I S t (Fig. 18) underneath the machine, allows you to
lift the right side of the slicer base with little effort — the slicer
is completely supported so you can clean underneath. Press
down on the right side of the slicer to lower it back to the table.
The slicer has a c
l e a n I n G le G (Fig. 19) underneath the machine. To engage the cl e a n I n G le G , lift the front
of the slicer base. The c
l e a n I n G le G will swing straight down. Pull the cl e a n I n G le G all the way to the front
so the slicer is completely supported before cleaning underneath.

Unplug the machine power cord and
turn the index knob fully clockwise to close the gauge
plate before cleaning the slicer.
Slicer must be cleaned with knife removed
(3813 & 3913).

MAINTENANCE
Unplug the machine power cord and turn the index knob fully clockwise to
close the gauge plate before doing any maintenance on the slicer.
KNIFE SHARPENING
The CleanCut
TM
Kn I f e will provide long service in normal food retail or commercial kitchen use.
Sharpen only when necessary; prolonged or too frequent sharpening results in unnecessary
K
n i f e wear. The Sh a r p e n Kn I f e indicator light (Fig. 9 or Fig. 10) will come on after a factory-preset
number of slicing strokes to indicate when sharpening is needed. This number has been set to
represent a typical operation. Your operation may need more frequent sharpening.

Food debris should not be allowed to transfer from the K

h a r p e n e r . Plug in the machine power cord. When Sh a r p e n Kn I f e
indicator light is on, press and hold the S
h a r p e n Kn I f e button (Fig. 9
or Fig. 10) with your right hand while pulling the S
h a r p e n e r le v e r fully
forward with your left hand (Fig. 30). The K
n I f e comes on, sharpens
for 15 seconds and shuts off. Release the S
h a r p e n e r le v e r . The
stroke counter will automatically reset and the indicator light will turn off.
To sharpen before the S
h a r p e n Kn I f e indicator light illuminates: Follow
the directions above, but instead of turning on the motor with the S
h a r p e n Kn I f e button, press the on
button for 15 seconds. Then,release the S
h a r p e n e r le v e r and press the of f button. Unplug the Sl I c e r
power cord. Wipe the slicer with a clean damp cloth to remove any grinding particles. Reinstall the

LUBRICATION — Carriage Slide Rod
The slicer lubrication system requires that the reservoirs under the c
a r r I a G e tr a n S p o r t be relled with
Lubriplate FMO-200-AW oil (not supplied) after approximately 1 year of operation for a manual slicer
(model 3813/3813N) and after approximately 6 months of operation on an automatic slicer (model
3913/3913N). Typical operation is estimated to be 2 hours of slicing per day. To check reservoir
levels, look through the c
a r r I a G e Sl o t (Fig. 7) to observe
the oil level relative to the red line on the c
l e a r re S e r v o I r S
under the c
a r r I a G e tr a n S p o r t (Fig. 31). The side panel
can be removed for this operation (Fig. 7). A ashlight
(not supplied) might be helpful. To replenish the oil reservoirs
if below the red line: Aim the telescoping tube on the
Lubriplate FMO-200-AW oil bottle at the r

r o n t be a r I n G bl o c K . Gently squeeze the sides
of the bottle to add drops slowly to the front reservoir
funnel until lled to the red line (Fig. 31). Repeat the above
procedure to rell the rear r

reservoir funnels. Stop adding oil once the oil level on both
reservoirs reach the red line.
LUBRICATION — Meat Grip Slide Rod
The meat grip slide rod can be lubricated periodically or when any resistance is felt while using the
meat grip assembly (Fig. 7). First, wipe the meat grip slide rod so the lubrication is applied to a clean
dry surface. Next, gently squeeze a small amount of the provided Lubriplate oil on the rod. Then slide
the meat grip up and down the rod to restore smooth operation.

It features the No Volt Release, Gauge Plate Interlock, Home Start, Close-to-Stop, and Auto-Shutoff features for safety and convenience.
