1. USES, TABLES AND TIPS
The temperature and baking times
in the tables are guidelines only.
They depend on the recipes, qual-
ity and quantity of the ingredients
used.
1.1 Sous-vide cooking
Recommendations regarding food
safety:
Sous-vide cooking function uses lower
cooking temperatures than normal cook-
ing. Handle the food with special care for
better food quality:
Use high quality raw materials.
Always use the raw material that is as
fresh as possible.
Always keep raw materials in correct
conditions before you cook them.
Always clean the food before you cook
it.
For good and safe results, always look
at the values in the cooking tables.
Check the cooking time, temperature
and dimension of the food.
Food should not be kept at a tempera-
ture below 60 °C for a longer time to
avoid safety problems.
Use low temperatures only for food that
could be eaten raw and only for a short
time.
Sous-vide dishes have the best taste
immediately after cooking. If you do not
to eat the food immediately after the
cooking, quickly decrease its tempera-
ture. To do that, put the food in an ice
bath and put it in the fridge. You can
keep the food in the fridge for 2 – 3
days.
Do not use Sous-vide cooking function
for reheating food leftovers.
Prevent contact between raw food and
cooked food while you prepare and
cook the food.
Do not use the same tools for different
things without washing them carefully.
For recipes with raw eggs, prevent egg
whites or yolks from contact with the
external part of the egg shells.
Hints and tips regarding food vacuum
packing:
Necessary equipment for Sous-vide
cooking function are a vacuum sealer
and vacuum bags.
Recommended vacuum sealer type:
chamber vacuum sealer (only this type
of vacuum sealer can vacuum pack liq-
uids).
Use vacuum bags correct for Sous-vide
cooking function.
Do not reuse vacuum bags.
Put the food in one layer of the vacuum
bags to get an even cooking result.
For faster and more even cooking of
the food, set the vacuum degree to the
highest possible.
To guarantee a safe closing of the vac-
uum bag, make sure that the area sub-
ject to the seal is clean.
General hints and tips for Sous-vide
cooking function:
To keep the cooking steam, always
keep the appliance door closed when
you use Sous-vide cooking function.
Open the door carefully after cooking
because there is steam cumulated in
the appliance.
You can add oil and spices to the food
in accordance to your taste. Oil pre-
vents the food from sticking to the vac-
uum bag.
For faster and more even cooking of
the food, keep the vacuum degree as
high as possible.
Cooking times are recommendations
and can be different in accordance to
your preferences.
The cooking times in the cooking tables
are for dishes for 4 people. If the quan-
tity of the food is higher, the cooking
times can be longer.
If the dimension of the food is different
than the cooking tables show, the
cooking time can change.
Put the vacuum bags on the grid with-
out overlapping when using more bags.

1.2 Sous-vide cooking : Meat
Look at the tables to prevent under-
cooking. Do not use meat portions of a
larger thickness than the tables show.
The cooking times in the tables are the
minimum necessary times. The cooking
time can be increased in accordance to
personal preferences.
Use only boneless meat to avoid dam-
ages to the vacuum bags.
For the poultry fillets to taste better, fry
them on the skin side before and after
vacuum packing.

1.3 Sous-vide cooking : Fish
and seafood
Look at the table to prevent undercook-
ing. Do not use fish portions of a larger
thickness than the table show.
Dry the fish fillets with a paper towel be-
fore you put them in a vacuum bag.
Add a cup of water in the vacuum bag

To prevent protein leak soak the fish in a 10 % salt solution (100 g salt in 1 liter of water) for
30 min and dry with a paper towel before befire you put it in a vacuum bag.
1.4 Sous-vide cooking :
Vegetables
Peel the vegetables where necessary.
Some vegetables can change their col-
our when you peel them and cook in a
vacuum packing. For better results
cook the food immediately after you
prepare it.
To keep the colour of the artichokes,
put them in water with lemon juice, after
you clean and cut them.

1.7 Advice for special heating
functions of the appliance
Keep Warm
Use this function if you want to keep food
warm.
The temperature regulates itself automati-
cally to 80 °C.
Plate Warming
For warming plates and dishes.
Distribute plates and dishes evenly on the
oven shelf. Move stacks around after half
of the warming time (swap top and bot-
tom).
The automatic temperature is 70 °C.
Recommended shelf position: 3.
Dough Proving
You can use this automatic function with
any recipe for yeast dough you like. It
gives you a good atmosphere for rising.
Put the dough into a dish that is big
enough for rising and cover it with a wet
towel or plastic foil. Insert a wire shelf on
level one and put the dish in. Close the
door and set the function dough proving.
Set the necessary time.
Add some water into the water
drawer.
1.8 Cooking with steam
Cookware for steam cooking
Use only heat and corrosion resistant
cookware.
Glass dishes are correct too (included
with some models).
Shelf positions
There correct shelf positions are in the
table below. Count the shelf positions
from the bottom to the top.
General notes
When you cook longer than 30 minutes
or when you cook large quantities of
food, add water if it is necessary.
Put the food in the correct cooking
containers and put the containers on
the shelves. Keep the distance between
the shelves to let the steam get to each
container.
After each use, remove the water from
the water drawer, connecting hoses
and steam generator. Refer to the
chapter "Care and cleaning".
Note on the tables for steam cooking
The tables give data for typical dishes.
The temperature and time are for guid-
ance only and depend on the composi-
tion, size, quantity of food and the
cookware.
Use a similar recipe if you cannot find
the settings for your recipe.
Start the procedure with a cold appli-
ance unless the data in the tables is dif-
ferent.
When you cook rice, because of its
ability to absorb water, use a water to
rice ratio of 1.5:1 - 2:1.
1.9 Steam cooking tables
WARNING!
Do not open the appliance door
when the function is active. Risk
of burns.
The function is suitable for all types of
food — fresh and frozen. You can use it
for cooking, warming, defrosting, poach-
ing, or blanching vegetables, meat, fish,
pasta, rice, sweet corn, semolina and
eggs.
Cooking of menus: You can prepare
complete set in one go. To avoid under or
over cooked dishes choose those which

require similar cooking times. Use the
largest amount of water specified for indi-
vidual component. Put the dishes on the
oven shelves in the suitable cookware.
Adjust the gap between the dishes to let
the steam circulate.
Sterilisation with the Full Steam
function
With the Full Steam function you can
sterilise containers (e.g. baby bottles).
Put the clean containers in the middle
of the shelf on the 1st level. Make sure
that the opening faces down at a small
angle.
Fill the water drawer with the maximum
amount of water and set a time of 40
minutes.

1.10 Baking
General instructions
Your new appliance may bake or roast
differently to the appliance you had be-
fore. Adapt your usual settings (temper-
ature, cooking times) and shelf posi-
tions to the values in the tables.
With longer baking times, the appliance
can be switched off about 10 minutes
before the end of baking time, to use
the residual heat.
When you use frozen food, the trays
in the appliance can twist during bak-
ing. When the trays get cold again,
the distortion will be gone.
How to use the Baking Tables
We recommend to use the lower tem-
perature the first time.
If you cannot find the settings for a spe-
cial recipe, look for the one that is al-
most the same.
Baking time can be extended by 10 -
15 minutes, if you bake cakes on more
than one level.
Cakes and pastries at different heights
do not always brown equally at first. If
this occurs, do not change the temper-
ature setting. The differences equalize
during the baking procedure.
Unless otherwise stated, the values in
the tables assume that the appliance is
cold when the cooking starts.
1.11 Tips on baking

Preheat oven.
1.14 Slow Cooking
Slow Cooking function is correct for
pieces of tender, lean meat and fish to
make them succulent.
Do not use Slow Cooking function for
pot roasts or fatty pork roasts.
Always cook without a lid in Slow
Cooking function.
With Slow Cooking function the oven
gets the preset temperature and a sig-
nal operates. Then, the oven automati-
cally sets to a lower temperature to
continue cooking.
Cooking with Slow Cooking function:
1.
Sear the meat in a pan in a very high
heat.
2.
Put the meat in a roasting dish or di-
rectly on the wire shelf.
3.
Put the tray below the shelf to catch
the fat.
4.
Put the shelf in the oven.
5.
Set Slow Cooking function.
If it is necessary, change the temper-
ature and cook until done (refer to
Slow Cooking table).

1.15 Roasting
Roasting dishes
Use heat-resistant ovenware to roast
(refer to the instructions of the manu-
facturer).
You can roast large roasting joints di-
rectly in the deep pan (if present) or on
the wire shelf above the deep pan.
Roast lean meats in the roasting tin with
the lid. This keeps the meat more suc-
culent.
All types of meat that can be browned
or have crackling can be roasted in the
roasting tin without the lid.
We recommend that you cook meat
and fish weighing 1 kg and above in the
appliance.
To prevent the meat juices or fat from
burning onto the pan, put some liquid
into the deep pan.
If necessary, turn the roast (after 1 / 2 -
2 / 3 of the cooking time).
Baste large roasts and poultry with their
juices several times during roasting.
This gives better roasting results.
You can deactivate the appliance ap-
proximately 10 minutes before the end
of the roasting time, and use the residu-
al heat.
