In the beginning, there was
Wolfgang Puck. There were
cooks and there were kitchens
and there were people eating
food, but the world had never
seen anything like Spago—
with its California cuisine, its
casual elegance, and its chef
whose genuine warmth and
love of craft redefined the
dining experience. And they
came—from LA and from
everywhere—to experience
the future. Wolfgang Puck
shaped the modern culinary
landscape: he was the first
celebrity chef, the inventor
of fusion cuisine, the first in
farm-to-table. His work is
inspired by California living,
and an insistence on only the
freshest ingredients. From
his legendary fine dining icons, his entrepreneurial spirit has built
an empire—from dining, to catering, to products for the home—
touching the lives of millions around the globe. Today, as always,
Chef Puck is earnestly, restlessly, tirelessly at work behind the scenes
inventing what’s next. He is driven by a genuine love of his craft, a
passion for what’s possible, and its potential to change the world.

Before Your First Use
Carefully unpack your Brewer and all parts and place on a stable, level
surface. In order to ensure that your Brewer works perfectly it was tested
with water before leaving the factory. You may find a little water remaining in
the machine, or notice condensation in the Water Reservoir. This is normal.
Before you use your Brewer for the first time, perform an initial cleansing
brew by running water through the brew cycle without using a capsule in
the Brewer. We recommend cleaning your Brewer according to the care and
cleaning section of this manual.
During shipping in colder climates, your Brewer could be exposed to
temperatures below freezing. We recommend that you allow your Brewer to
remain at room temperature for at least 2 hours after unpacking.
Programming the Auto-Off Setting
The Brewer will shut off automatically once the auto shut-off time is reached.
The default setting from the factory is 1 hour. To change the auto shut-off
time follow the instructions below:
Ensure that the Brewer is unplugged before programming.
Press the Medium Cup Button and hold it down while simultaneously
plugging the Brewer into the outlet until you hear two short beeps.
The On/Off Button will begin to blink and the Medium Cup Button will
illuminate steadily which represents the default auto-off setting of 1 hour.
Press the Small Cup Button to change the setting to fifteen minutes
Press the Large Cup Button to change the setting to two hours.
After you have selected the preferred auto-off time press the On/Off
Button to record the setting to the Brewer memory.
Press the On/Off Button again to turn your Brewer back on using your
new settings.
The new settings will stay in memory even if the machine is unplugged.
Ensure that the Brewer is unplugged before resetting.
Press the Large Cup Button and hold it down while simultaneously
plugging the Brewer into the outlet.
The buttons will flash twice indicating that the Brewer has been
successfully reset to the factory defaults of brew size group three
(8oz - 10oz - 12oz) and the auto-shutoff time of 1 hour.

Using Your Brewer
Caution: Do not open lift the Brewer Head Handle while the machine is
brewing. If the handle is lifted during the brewing process the pump will stop
brewing and all button lights will begin blinking. A continuous beeping sound
will be heard indicating the potential danger of scalding water sputtering
from the Brewer Head. Lower the Brewer Head immediately to the closed
position as shown in figure 4.
Place Brewer upright on a flat, level, stable surface and plug into the wall
outlet.
Remove Water Reservoir Lid and fill with water to the MAX fill line. Your
Reservoir also comes equipped with a handle for easy removal from the
Brewer. Simply lift the handle straight up to remove and carry directly to
your water source.
If you removed the Water Reservoir for filling place it back on the
Brewer by lining up the Tab on the back of the Brewer (figure 1) with the
receptacle on the Water Reservoir (figure 2) and push straight down until
it stops. Place the Water Reservoir Lid back on the Water Reservoir.
NOTE: Always ensure that the water level in the Water Reservoir is above
the MIN line prior to brewing.
Press the On/Off Button until you hear a single beep. All cup size buttons
will begin to blink indicating that the water is heating.
Lift the Brewer Head Handle (figure 3) and insert a capsule into the
Capsule Holder. Do not remove the cover from the beverage capsule.
Lower the Brewer Head as shown in figure 4.
Place a cup on the Drip Tray and ensure that it is pushed all the way back
towards the Brewer. If you are brewing a travel mug it may be necessary
to remove the Drip Tray to accommodate a taller size cup.
Ensure that the beverage cup that you are using is large enough to
accommodate the brew size you are selecting.
Press the cup size button of your choosing once the lights remain steady.
You will hear a short beep and the brewing process will begin.
Wait until you hear two short beeps at the end of the brewing process
prior to removing your beverage.
You can cancel the brewing process at any time by pressing the
illuminated cup size button that you selected. You will hear two short
beeps once pressed.
Caution: Wait 20 seconds before opening the Brewer Head after the
brewing cycle has been canceled to allow steam/residual water to purge
completely.

Using Your Brewer (Cont.)
Note: The water pump will always stop before the brewing cycle is complete.
The chosen cup size button will blink for approximately 10 seconds after the
pump stops to let steam purge the residual water from the beverage capsule.
This ensures that you receive maximum coffee extraction from the capsule.
We recommend using Wolfgang Puck RealCup™ Coffee. Please visit
HSN.com to see the latest selection of Wolfgang Puck Coffees. Your Brewer
is also compatible with all varieties of Keurig® K-Cups®.
A few notes about brewing different beverages in your Brewer:
If brewing powdered beverages such as sweet teas or hot chocolate
we recommend a rinse cycle after the beverage is brewed. Remove
the beverage capsule from your Capsule Holder and close the Brewer
Head (see figure 4). Place a cup on the Drip Tray and press the Medium
Cup Button. This will clean out any residual content that may be on the
Brewer Head Needle.
Your Brewer can make the perfect iced beverages as well. Since heat
is needed to extract the maximum flavor from the capsule we suggest
placing ice in a cup prior to brewing. Place the cup on the Drip Tray
and press the desired cup size. We do not recommend brewing an
iced beverage into a glass cup. The combination of cold ice and a hot
beverage could cause the glass to crack.
You can also use your Brewer without a capsule inserted to produce hot
water. Place a cup on the Drip Tray, lower the Brewer Head and press the
cup size of your choice.

Helpful Hints
Before you use your Brewer for the first time, perform an initial cleansing
brew by running water through the brew cycle without using a beverage
capsule.
Your Brewer is equipped with a programmable chip that allows you to
select up to 3 groupings of cup sizes. See the section "Programming the
Cup Size Buttons" in this manual for more information.
To ensure the purest tasting brew we recommend using filtered or bottled
water. Chlorine and minerals can negatively affect the taste of your
brewed beverage.
Your Brewer is compatible with K-Cups®. If using a powdered K-Cup®
such as hot cocoa, run water through the Brewer without a capsule in
place after the beverage is finished to clean the Brewer Head Needle.
A clean coffeemaker is essential for making great-tasting coffee.
Regularly clean the coffeemaker as specified in the Care & Cleaning
section.
Do not use a beverage capsule for more than one brewing cycle.
Care & Cleaning
Never immerse the Brewer or Power Cord in water or any other liquid. To
clean the Housing use a damp, soapy, non-abrasive cloth or sponge.
There are no dishwasher-safe parts included with you Brewer.
Two Piece Drip Tray
To remove, place finger in the hole of the Drip Tray and lift straight up. Slide
bottom section out from the Brewer and use a damp, soapy, non-abrasive
cloth or sponge.
Capsule Holder/Funnel
Use caution when cleaning the Capsule Holder as there is a sharp needle in
the bottom. The capsule has two parts, the Capsule Holder and the Funnel.
To remove the Capsule Holder from the coffeemaker, rotate the Capsule
Holder counterclockwise until it clicks then lift straight up (see Lock/Unlock
graphics on top of Capsule Holder in figure 5).
To separate the Funnel from the Capsule Holder, turn it upside down and
notice the Lock/Unlock graphics on the bottom of the Funnel. Twist the
Funnel in the direction of the unlock graphic to remove. We recommend
immersing both parts in warm, soapy water and rinsing clean.
To replace, put the Funnel back onto the Capsule Holder until the two parts
are flush, then twist to the lock position until it clicks into place. Place the
Capsule Holder back into the machine by lining up the Locking Tabs on the
Capsule Holder (see figure 5) with the receptacles in the Brewer Head and
rotate clockwise until it clicks into place (see locking graphics in figure 5).
Water Reservoir and Lid
Wash the Water Reservoir and Lid with a damp, soapy, non-abrasive cloth
or sponge then rinse thoroughly to remove all soap. It is important to
ensure that no pieces of lint, sponge or any other material are in your Water
Reservoir once fully rinsed. Any particles left in the Water Reservoir could
cause permanent damage to the Brewer.

Decalcification
For best performance of the coffeemaker it will be necessary to decalcify the
unit from time to time. The frequency depends upon the hardness of your
tap water and how often the appliance is used. If you use your Brewer daily,
it is recommended to decalcify the unit every 4 months.
To decalcify the Brewer, remove any residual water from the Water
Reservoir and pour 32 ounces of undiluted white vinegar into the Water
Reservoir.
Change the auto-off time to 2 hours (See section Programming the Auto-
Off Setting).
Place a coffee mug on the Brewer and press the Large Cup Button
without any capsule in the Brewer. Empty the cup in the sink and repeat
this step until the Water Reservoir is empty. Once the Water Reservoir is
empty press the illuminated cup size button to stop the pump.
Rinse the Water Reservoir with water and fill with water to the MAX line.
Place Water Reservoir back on the Brewer. After 2 hours the Brewer
will turn off. Turn the Brewer back on, place a coffee mug on the Drip
Tray and press the Large Cup Button without any capsule in the Brewer.
Empty the cup in the sink and repeat this step until the Water Reservoir is
empty. Once the Water Reservoir is empty press the illuminated cup size
Button to stop the pump.

Black Pepper Scones
Makes 18 scones
INGREDIENTS
4 cups plus 1 tablespoon all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
13 tablespoons (6 1/2 ounces) unsalted butter, cut into small pieces and chilled
1 1/2 tablespoons medium grind black pepper
2 1/2 teaspoons finely chopped lemon peel
1 1/2 cups heavy cream, plus 2 tablespoons for brushing
METHOD
1. Into a large bowl, sift together the flour, sugar, baking powder and
salt. Using two knives or a pastry blender, cut in the butter until the
mixture resembles coarse meal. Gently stir in the pepper and lemon
peel. Add the 1 1/2 cups cream all at once and mix until the dough
just comes together.
2. Turn out onto a lightly floured surface and knead the dough into a
ball. For a flakier consistency, do not knead the dough into a smooth
ball. If smooth, the scone will be more cake-like. Wrap in plastic wrap
and refrigerate for at least 30 minutes, up to overnight.
3. Cut the dough into three equal pieces. Working with one piece at a
time, keeping the other two pieces covered, roll out to a circle, 6 inches
in diameter and 1/2-inch thick (see note below). Cut the circle
into 6 wedges and arrange the wedges on one or two baking trays
lined with parchment paper. Repeat with the remaining dough.
4. Preheat the oven to 350°F. Lightly brush the scones with the
remaining 2 tablespoons of cream and bake until golden, about 10-12
minutes.
Note: The scones can be cut out with a 2 1/2-inch cookie cutter if
desired. Roll out the dough, cut, and place on a baking tray. Re-roll
the dough and continue cutting out circles. Proceed as in step 4.
5. Serve warm with butter, and jam if you like.
Strawberry Marzipan Tart
Makes one 10-inch tart
INGREDIENTS
1/3 recipe Sugar Dough (see separate recipe on page 19)
1/2 pound unsalted butter, slightly softened
1/2 cup sugar
3 eggs
2 tablespoons orange liqueur
Zest of 2 oranges, finely grated
1 teaspoon almond extract
2 cups ground almonds
1/4 cup currant jelly, melted
2 baskets strawberries, sliced 1/4-inch thick
METHOD
1. Preheat the oven to 350°F.
2. On a floured surface, roll the pastry 3/8-inch thick and line a 10-inch
flan ring with it. Place the ring on a parchment paper lined baking
sheet and chill it until needed.
3. Cream the butter and sugar lightly in an electric mixer; don’t let the
butter get too soft. Add the eggs and mix lightly.
4. Stir in the liqueur, zest and almond extract, then mix in the ground
almonds.
5. Pour into the chilled pastry shell and bake for 1 hour to 1 hour and 15
minutes, or until the pastry and marzipan are a deep golden brown.
6. Remove the tart from the oven and let cool to room temperature.
7. Brush the top of the tart with the currant jelly. Cover the top of the
tart with sliced strawberries arranged in concentric circles or in a
flower petal design, making certain the whole top of the tart is
covered.
8. Remove the flan ring and transfer the tart to a flat serving platter.
Cut into wedges.
16 17
Pecan Pie
Makes one 10-inch tart
INGREDIENTS
1 1/2 cups light corn syrup
3/4 cup sugar
3/4 cup light brown sugar
4 eggs
2 egg yolks
3 tablespoons unsalted butter
1/2 recipe Sugar Dough (see separate recipe on next page)
1 1/2 cups pecan halves
METHOD
1. Preheat the oven to 350°F.
2. In a large skillet over medium heat, toast the pecans, shaking
frequently, for about 7 minutes or until golden and fragrant.
3. Place the corn syrup, sugars, eggs, and egg yolks in a mixing bowl.
Beat well.
4. Heat the butter in a small skillet over medium heat until it turns
brown and has as nutty aroma. Stir it into the corn syrup mixture.
5. Line a 10-inch tart pan with the Sugar Dough. Arrange the pecan
halves in the bottom of the shell. Ladle the filling over the pecans.
6. Bake the tart for 40-45 minutes, or until a skewer inserted
near the center comes out clean. Remove and let cool at
room temperature.
7. Cut into wedges and serve with rum-flavored whipped cream or a
scoop of vanilla ice cream.
Sugar Dough
Makes about 1 1/2 pounds or two 9-inch tart shells
INGREDIENTS
2 1/3 cups cake or pastry flour
1/3 cup sugar
1/2 pound (2 sticks) unsalted butter, chilled, cut into small pieces
2 egg yolks
1 or 2 tablespoons heavy cream
METHOD
1. In a food processor fitted with the steel blade, combine the
flour and sugar. Add the butter and process until the texture
resembles fine meal.
2. In a small bowl, whisk together the yolks and 1 tablespoon of the
cream. Scrape into the machine and process until a ball begins to
form, using the additional tablespoon of cream, if necessary. Remove
the dough from the machine, and on a lightly floured surface, press
down into a circle. Wrap in plastic wrap and refrigerate for at least
1 hour.
3. Use as needed.
18 19
Macaroons
Makes about 3 dozen
INGREDIENTS
1/2 pound confectioner’s sugar, about 1 7/8 cups
1/4 pound almond meal, about 1 cup
1/2 cup egg whites, about 4 large egg whites
Pinch cream of tartar
1 1/2 ounces granulated sugar, about 1/4 cup
5 drops red food coloring
METHOD
1. Preheat the oven to 325°F.
2. Meanwhile, sift together the confectioner’s sugar and almond meal
directly into a medium mixing bowl. Set aside.
3. In another bowl, beat the egg whites until foamy. Add the cream
of tartar and continue beating until they form soft peaks when
the beaters are lifted out. Continue beating while pouring in the
granulated sugar in a steady stream; then, add the food coloring
and continue beating until fully blended, about 30 seconds.
4. Spoon the mixture into a piping bag fitted with the round tip. Pipe
the mixture into 1-inch rounds on a parchment paper-lined baking
sheet. Put the sheet in the oven and bake for 5 minutes; rotate the
sheet 180 degrees and bake for 7 minutes more, until the macaroons
are firm.
5. Remove the baking sheet from the oven and let the macaroons cool
before transferring to an airtight container.
