NOTICE TO INSTALLER:
DO NOT DISCARD THIS MANUAL AFTER INSTALLATION. This manual contains important
operation, maintenance and precautionary information. Please present this manual to the
user/operator/owner after installation.
Read this manual prior to installing the water filtration system to ensure proper installation and operation.
Installation must conform to all local and state plumbing regulations and codes.
Connect the system to the cold water supply only. The water temperature cannot exceed 100°F (28°C).
Do not use with water that is microbiologically unsafe or of unknown quality without adequately
disinfecting before or after filtering through the CombiGuard System.
The CombiGuard Water Filtration System will perform as indicated with the water supply in
most areas; however, the water supply should be tested prior to installation to make
certain it meets the water criteria listed on the Combitherm specification sheet for the
oven model used. Contact Alto-Shaam service for recommendations if water does not
meet published standards.

TROUBLE-SHOOTING. It is recommended that all personnel responsible for operation and
maintenance of this product read the precautions, operation, and maintenance sections of this manual.
INTRODUCTION:
The CombiGuard Triple-Guard Water Filtration
System will provide optimum water characteristics
to the cold water supply used in conjunction with
gas or electric Combitherm
®
combination
oven/steamers. Use of the filter system will result
in improved operating efficiency, longer equipment
life, and reduced maintenance requirements.
CombiGuard is manufactured with high quality,
technologically advanced materials. Each filter
system is quality-inspected and pressure-tested prior
to shipment. Proper installation and routine
maintenance will ensure trouble-free operation for
years to come.
To obtain the maximum benefit from your filter
system, follow the simple instructions for periodic
maintenance located in this manual. Always refer to
this manual when performing a routine filter change.

: 125 psi (8.6 bar)

MINIMUM TEMPERATURE: 35°F (2°C)
SERVICE FLOW RATE
: 1.5 gpm (6 lpm)
GALLON RATING: 15,000 gal (56,775 ltrs)
CAPACITY: Change the filter a minimum of every
six (6) months or change the filter
when water is flowing through the
filter system under normal operating
conditions and the pressure gauge
needle on the outlet gauge enters
the “red zone.
Position the CombiGuard system in a suitable location. The direction of flow through the CombiGuard
unit is always left to right. Consider flow direction when determining installation location.
DO NOT mount the CombiGuard system near any source of heat.
DO NOT mount the system above any device or in any area that would be adversely affected by water.

INSTALLATION PRECAUTIONS:
DO NOT install the system on line pressure above
125 psi (8.6 bar).
DO NOT install system on HOT water line.
Failure to limit line temperature to 100°F (38°C)
may result in housing failure and damage.
DO NOT install the system backward with the feed
water line connected to the water outlet.
DO NOT use liquid pipe compounds for fitting
connections. USE 2 to 3 wraps of Teflon
®
tape.
DO NOT solder plumbing connections that are
attached to the filter housing or inlet valve. Inlet
valve and filter housing will be damaged by high
temperature.
DO NOT allow the system to freeze. Turn off
water supply to housing and drain housing if
temperature falls below 32°F (0°C).
DO NOT install system in direct sunlight or where
system is exposed to harsh chemicals such as a
chemical feeder.
DO NOT install system in any area where it may
be struck by moving equipment, carts, mops, or any
other item that may cause damage.
DO NOT install the system in any area difficult to
access for filter replacement.
DO NOT over-tighten fitting connections into inlet
valve or housing outlet.
IF water hammer is evident, install water hammer
arrestors before the CombiGuard System.
ALWAYS back up valves and fittings with a
wrench when installing a fitting in order to avoid
turning the valve.
ALLOW A MINIMUM OF 3" (76mm) UNDER
THE HOUSING TO PROVIDE SUFFICIENT
CLEARANCE FOR FILTER REPLACEMENT.
INSTALLATION PROCEDURES:
1. Turn the Combitherm oven to be connected to
the CombiGuard system to the OFF position.
2. Locate the water supply cut-off valve and turn to
the OFF position.
3. Install a 3/4" (19mm) full-flow ball valve on the
water supply side that will feed the Combi-
Guard system along with unions to allow the
CombiGuard system to be serviced.
4. Anchor the CombiGuard system on a wall stud or
suitable mounting material spanning the wall studs.
5. Run a suitable line from the 3/4" full-flow ball
valve at the tap water source to the inlet ball
valve on the left side of the CombiGuard system.
When connecting the feed water line, use 2 to 3
wraps of Teflon
® tape and brace the inlet ball
valve on the system with a wrench.
NOTE: DO NOT OVER-TIGHTEN CONNECTION
FITTING INTO BALL VALVE.
6. Connect a 3/4" supply tube from the outlet of
the CombiGuard to the combi oven.
NOTE: Limit line length between the outlet of the
CombiGuard and the combi oven to 20'
(6,1m). Use copper or stainless steel
tubing from the CombiGuard to the combi
oven inlet and the water connection.
7. With the CombiGuard inlet closed, slowly open
the 3/4" (19mm) full-flow valve at the tap water
source. Check for leaks.
8. Before connecting the line to the equipment,
hold the line in a clean bucket, a sink, or a drain.
Open the system inlet feed valve and allow
water to flush at the specified system flow rate
for a period of two (2) minutes. Flushing the
line removes air and any carbon particles.
NOTE: The CombiGuard system does not
require an activation for proper performance;
however, flushing the line to remove air and
carbon particles before connecting to the oven is
highly recommended.
9. Make certain the end of the tubing to be connected
to the combi oven is clean and sanitized.
10. After connecting the tubing to the combi oven,
open all water supply valves and check for leaks.
11. If no leaks are found, engage power to the combi
oven and check for normal operation.
12. Register the CombiGuard warranty by returning
the enclosed warranty card.

OPERATION
Operation of the CombiGuard Water Filtration System
is completely automatic provided adequate water
pressure is maintained. The requirements to
maintain dependable operation include outlet
pressure monitoring, filter changes at recommended
intervals, and service documentation including a log
of filter replacement.
MAINTENANCE
Routine maintenance of the CombiGuard system
includes the periodic replacement of the sump
O-rings and the replacement of filter cartridges at
recommended intervals. Filter changes are necessary
to maintain optimum performance of the
CombiGuard filter system in order to provide full
benefit to Combitherm oven operation.
PRESSURE GAUGE MONITORING
It is important to periodically monitor the pressure
gauge located on the CombiGuard unit. If the needle
on the gauge enters the red zone, it is usually an
indication that the filters have become clogged with
sediment. Ideally, the pressure gauge should never
drop into the red zone.
FILTER CHANGE FREQUENCY
Replacement of the filter cartridge (FI-26356) must
be made whenever any of the following apply:
Six (6) months have passed since system
installation or the previous filter change.
PRESSURE GAUGE needle enters the red zone.
PRESSURE GAUGE drops below the pressure
required for equipment operation.
WATER FLOW is reduced.
FILTER CARTRIDGE REPLACEMENT:
1. Turn power to the Combitherm oven to the
OFF position.
2. Turn OFF water to the CombiGuard System by
closing the inlet ball valve .
3. Press the RED BUTTON on the CombiGuard
system to release pressure.
4. Remove the filter housing using a filter wrench
if necessary.
5. Clean the inside of the filter housing with warm
water only. DO NOT use detergent or bleach
solution to clean the housing.
6. Insert a new cartridge into the filter housing.
Make certain the cartridge model number
matches the model number on the bracket.
7. Inspect the O-ring and replace if damaged or
distorted. Wet the O-ring with water (only) and
make certain it is properly positioned before
replacing the filter housing. The filter housing
should only be tightened by hand.
8. Slightly open the inlet ball valve . To release
trapped air, push and hold the red pressure
relief button until a small amount of water is
visible. After the pressure button has been
released, fully open the ball valve.
9. When the water supply inlet valve has been
opened, confirm the water flow and restore
power to the Combitherm oven.
10. Record the filter change date in the service log.
NOTE: If the filter change frequency is less than 6 months due to a pressure drop, it may be necessary to
add additional pre-filtration. Contact the Alto-Shaam service department for assistance.


CombiGuard Triple Guard Water Filtration Systems are designed, tested, and certified with proven
performance, size, and operating capacities. The use of replacement cartridges other than those specified will
void warranties, certifications, and may compromise equipment protection, water quality, and cartridge life.
