WARNING! READ BEFORE USE
• Be sure the electrical connection matches the label rating. The machine is equipped with a standard three-
pronged, grounding plug. Do not remove the 3
rd
prong or use any adapter plug.
• Keep hands and other body parts away from the working blade or moving parts.
Do not attempt to repair the machine yourself. The machine should be repaired by the manufacturer or
authorized service agent.
• Repairing or modifying the machine will void our warranty.

OPERATING THE SLICER
CAUTION: Before using, make sure the machine is installed on a flat work surface with sufficient stability and
strength to support the weight of the machine. Make sure that the line voltage of your main power source
matches the rated voltage of the machine.
1. Turn the power button (part 7) on and let the machine run about 2-3 minutes, making sure the blade
(part 1) runs smoothly and quietly. Verify that the blade is rotating counter-clockwise.
2. Be sure to loosen the knob located behind the slice thickness regulator. This knob supports the panel.
3. Adjust the blade by turning the adjustment dial (part 8) to the desired thickness number. New
machines may be slightly stiff.
4. The regulator panel will move automatically to adjust thickness. Tighten the supporting knob to come
in contact with the panel.
5. Push the product carriage forward and back over the blade with a continuous motion, using the
product pusher handle and the pusher knob.
6. After slicing the desired amount, turn the adjustment dial back to “0” position. Adjust the knob back to
the original position.
7. You can now remove the sliced product.

DAILY CLEANING PROCEDURE FOR THE MACHINE
Always turn off and unplug the machine before cleaning, and make sure to turn the dial to zero position.
• Never use any chemical or abrasive products. Use a damp cloth with mild soap or sanitizer to clean the
machine. Make sure to wipe down the machine completely every day. IMPORTANT: Do not wash the
machine by water directly, or use a very wet towel.
• CAUTION: Wearing safety glove, remove the blade cover away from the blade to clean. Clean product
carriage. Do not touch the edge of the blade.
Allow the blade to air dry by running for a few minutes after cleaning.
MAINTAINING AND LUBRICATING THE SLICER
Note: We recommend NSF approved meat slicer lubricant spray or grease for application on our slicers.
Please check your local foodservice distributor catalog.
Daily Maintainence
Rustproofing the Blade
Dry the blade with fry cloth after work. Spread oil on the edge of the blade with dry cloth. Sharpen the blade
daily for best results.
Pusher axle lubrication:
Clean the pusher axle with dry cloth first. Put oil on the both of the axles and pull the pusher up and down to
spread the oil evenly. It is suitable to lubricate the axle every day.
Weekly Maintenance
Guide lubrication:
Push the carriage to one side, and clean the grease dirt of the guide with dry cloth. Smear the guide surface
with food grade grease by finger, spread well. The guide should be lubricated once a week.
Sharpener lubrication:
Clean the sharpener axle before sharpening. Apply a thin coat of oil on the both of the axles. Turn around and
slide the axle until the axles work well.
Slice regulator lubrication:
Turn the supporting knob behind panel counterclockwise to the max length. Clean the panel and slide rod.
Apply a thin coat of oil. Turn the positioner back to the original position. Do not use too much oil if you
lubricate every week.

BLADE SHARPENING
Caution: Sharp Blade. Safety goggles and gloves recommended.
American Eagle meat slicers should be lightly sharpened at frequent intervals. Sharpening lightly every few
days is more effective than over-sharpening at infrequent intervals. The blade should be sharpened if slice
thickness is not even, or the slices are breaking into pieces.
• Clean the edge of blade before sharpening. Loosen the knob, pull the sharpener out and lubricate the
sharpener axles.
• After lubricating, pull the sharpener completely out and turn 180º. Press the right side stone down by finger
and adjust the sharpener until it comes in contact with the blade.
• Make sure that the surface of stone is sitting closely to the surface of edge. If not, please adjust it.
• Turn the power on and let the blade work 1-2 minutes. Stop the machine look if the blade is sharpened well,
• If not, press the left side stone down and make sure the surface of stone is nesting closely to the surface of
blade, then sharpen 3 seconds to remove the burr.
• Pull out the sharpener and turn 180º back to the original position when blade is sharp. Always keep the
stone clean for best results.
• Avoid looking directly at the grinding stone in case of flying accidental debris resulting from improper
sharpening technique.
