Your Breville appliance is fitted with a
relatively short power supply cord as a
safety precaution to prevent personal

to use or be near this appliance without
close adult supervision. Longer detachable
power supply cords or extension cords are
not recommended but may be used if care
is exercised. If an extension cord is used, (1)

BEFORE FIRST USE
Remove and safely discard any packaging
material and promotional stickers before
using the appliance for the fist time. Wash
the whisk, beaters and dough hooks in warm
soapy water with a soft cloth. Rinse and dry
thoroughly. The whisk, beaters and dough
hooks are also dishwasher safe. Wipe the
motor body with a damp cloth then dry
thoroughly.
NOTE
When first using your hand mixer,
you may notice an odor coming from
the motor. This is normal and will
dissipate with time.
USING THE HAND MIXER
Step 1
Ensure the ‘ON/OFF’ switch is in the ‘OFF’
position and the power cord is unplugged
from the power outlet.
Step 2
Align the desired attachment shaft (whisk,
beaters, dough hooks) with the attachment
sockets on the underside of the hand mixer.
Push firmly, turning slightly if required, until
they click into place.
The attachment shaft with collar should
be inserted into the larger hole, while the
attachment shaft without collar should be
inserted into the smaller hole.
COLLAR LARGER HOLE
NOTE
The whisk shaft has a collar and should
be inserted into the larger attachment
socket. Do not insert the wire whisk by
holding the wire end as this may cause
damage to the wires. Do not use the
whisk with any other attachment.
Step 3
Select a mixing bowl large enough to
accommodate the attachments, as a
bowl that is too small will damage the
attachments. Add ingredients to the mixing
bowl as directed in the recipe.
Step 4
Insert the power plug into a 110/120V power
outlet.
Step 5
Place the attachment (whisk, beaters, dough
hooks) into the ingredients inside the
mixing bowl. To commence mixing, move
the ‘ON/OFF’ switch to the ‘ON’ position.
Push the ‘Increase Speed’
button until
you have reached the required speed. If you
wish to make the speed slower at any time,
push the ‘Decrease Speed’
button.
The LCD screen will display the selected
speed as well as the mixing time that has
elapsed.
NOTE
Always begin mixing on a lower
speed setting to prevent splattering,
increasing to the desired speed for the
mixing task.

Step 7
When mixing is complete, move theON/OFF
switch to the ‘OFF’ position then unplug the
power plug from the power outlet.
Step 8
Remove the attachments by pressing
the EJECT button while grasping the
attachment shafts. The attachments will be
released automatically. DO NOT try to pull
the attachments out of the sockets without
pressing the EJECT button.
TURBO BOOST FUNCTION
Pressing the ‘TURBO’ button while mixing
provides an extra burst of power (overriding
the speed setting being used). Press the
‘TURBO’ button and hold it down for no
more than 30 seconds to avoid overheating.
After the ‘TURBO’ button has been used,
always turn the hand mixer off and allow it
to cool for a few minutes before using again.
TIMER FUNCTION
Many recipes will tell you to mix, beat or
whisk ingredients together for a certain
amount of time. Your hand mixer has a
timer function which allows you to see
how long you have been mixing. Once you
begin operating the hand mixer, the timer
will automatically start counting. Once the
hand mixer is switched off, the timer will
automatically return to 00:00.

Step 6
Move the hand mixer in a slight
circular action during mixing to allow
the attachments to efficiently mix
the ingredients. Stop the hand mixer
intermittently and use a plastic spatula to
scrape down the sides of the mixing bowl,
then continue mixing.
NOTE
To stop mixing at any time, move the
‘ON/OFF’ switch to the ‘OFF’ position
or decrease the speed to ‘0’.
NOTE
Always turn the hand mixer OFF’ if you
need to scrape down the bowl during use.
NOTE
Avoid allowing the attachments to hit
against the side of the mixing bowl
while the hand mixer is operating
as this will result in damage to the
attachments.
CAUTION
Ensure the hand mixer is switched off
and unplugged from the power outlet
before inserting the attachments.
CAUTION
Avoid contact with attachments
during operation. Keep hands, hair,
clothing, spatulas and other utensils
away from the attachments to prevent
personal injury or damage to the hand
mixer.

CLEANING
Step 1
Before cleaning, ensure the ‘ON/OFF’ switch
is in the ‘OFF’ position and the power plug
is unplugged from the power outlet.
Step 2
Press the EJECT button and remove the
attachments.
Step 3
Use a rubber spatula to remove any mixture
remaining on the attachments. Wash the
whisk, beaters or dough hooks in warm
soapy water with a soft cloth. Rinse and
dry thoroughly. The attachments may also
be washed in the dishwasher. Do not allow
the attachments to soak in water for an
extended period of time as this may damage
the metal finish.
NOTE
Do not use abrasive scouring pads or
cleaners when cleaning the attachments
as these may scratch the surface.
Step 4
Wipe the motor body with a damp cloth and
dry thoroughly. Polish with a soft dry cloth.
Step 5
Wipe any excess food particles from the
power cord.
CAUTION
Never immerse the hand mixer, power
cord or power plug in water or any
other liquid.
STORAGE
Always unplug the hand mixer from the
power outlet before storage. Wrap the power
cord around the motor body. Stand the
motor body upright on its heel rest. Safely
store the attachments to avoid damage.

MEASURING AND WEIGHING
INGREDIENTS
Weighing Scales
For consistent results it is recommended to
use weighing scales if possible as they provide
greater accuracy than measuring cups. Place
a container onto the scale, tare (or zero) the
scales, then spoon or pour ingredients in until
the desired weight is achieved.
Dry Measuring Cups and Spoons
For dry ingredients, use nested plastic or
metal dry measuring cups and spoons.
Do not use tableware cups or spoons. It
is important to spoon or scoop the dry
ingredients loosely into the cup. Do not tap
the cup or pack the ingredients into the cup
unless otherwise directed eg. packed brown
sugar. This extra amount can affect the
critical balance of the recipe. Level the top
of the cup by sweeping the excess with the
back of a knife or spoon handle.
When using measuring spoons for either
liquid or dry ingredients such as yeast,
sugar, salt, dry milk or honey, measurements
should be level, not heaped.
Liquid Measuring Cups
For liquid ingredients, use transparent
plastic or glass liquid measuring cups with
the measurements marked clearly on the
side. Do not use non-transparent plastic
or metal measuring cups unless they have
measurement markings on the side. Place
the cup on a horizontal flat surface and
view markings at eye level. The level of the
liquid must be aligned to the appropriate
measurement mark. An inaccurate
measurement can affect the critical balance
of the recipe.
NOTE
Do not use tableware, cups or spoons
when measuring ingredients.
A speed indicator is conveniently printed on
the motor body with the suggested mixing
tasks for each speed setting. Use this in
combination with the tables below:

SOUFFLE FRENCH OMELETTE WITH
HAM & HERBED CHEESE
Serves 4
INGREDIENTS
2 tablespoons butter
4oz/120g ham, thinly sliced
2 tablespoons finely snipped chives
1 tablespoon chopped parsley
1 medium tomato
4 eggs, separated
2 tablespoons milk
1 teaspoon mild English mustard
¼ teaspoon salt, optional
½ cup grated tasty cheese
METHOD
1. Melt butter in frypan on medium heat.
2. Sauté the ham, chives, parsley and tomato
for 2 minutes. Remove and set aside.
3. Combine egg yolks, milk, mustard and
salt in small bowl and using the whisk
attachment, select speed 2 and whisk
until combined. Clean and thoroughly
dry the whisk before using in Step 4.
4. In a separate, clean and dry bowl, whip
the egg whites on speed 13 (start on a
low speed and slowly increase to the
higher speed) until soft peaks form and
whites are light and fluffy.
5. Fold egg whites through combined egg
yolk mixture.
6. Heat frypan over medium heat. Pour
egg mixture evenly into frypan and cook
until omelette puffs and base of omelette
is golden and crisp.
7. Sprinkle with sauteed filling. Fold
omelette in half and sprinkle with
grated cheese.
Slice into four large slices and serve with salad.
FLUFFY SMOKED SALMON
CREAMED EGGS
Serves 2
INGREDIENTS
4 eggs
½ cup/125ml thickened cream
Freshly ground black pepper, optional
2 tablespoons butter
5oz/150g smoked salmon, roughly chopped
2 tablespoons finely snipped chives, for serving
METHOD
1. Place eggs and cream into a small bowl
and using the whisk attachment, whisk
on speed 6 until light and fluffy. Season
with pepper.
2. Melt butter in frypan. Pour egg mixture
into hot pan, stir until mixture has
thickened slightly.
3. Stir in chopped salmon, then cover with
a lid until eggs are firm, light and fluffy.
Sprinkle with chives and serve.

SPICY PIKELETS
(SPICY DOLLAR PANCAKES)
Makes 12
INGREDIENTS
1 cup/150g all purpose flour
2 teaspoons baking powder
¼ cup brown sugar
1 teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground mixed spices
2 eggs, lightly beaten
1 tablespoon honey
1 cup/250ml milk
3 tablespoons butter, melted
Extra butter, for greasing
METHOD
1. Sift flour, baking powder, sugar and
spices into a mixing bowl.
2. Using the beater attachments, select
speed 2 and gradually add eggs, honey,
milk and butter.
3. Increase to speed 6 until a creamy
consistency is formed or ingredients
are smooth.
4. Allow mixture to stand for 5 minutes.
5. Heat a little extra butter in a frypan over
medium heat and spoon 6 tablespoons
of mixture about 1.5 inches (4cm) apart
into the frying pan.
6. Cook over a medium heat until golden
and bubbles appear in pikelets, turn and
cook other side until golden. Repeat with
remaining batter.
CRÊPES
Makes 10 – 12
INGREDIENTS
1½ cups/225g all purpose flour
Pinch of salt
1 teaspoon vanilla essence
3 eggs, lightly beaten
1¼ cup/312ml milk
2 tablespoons butter, melted
1 tablespoon oil, for greasing
METHOD
1. Sift flour and salt into a mixing bowl.
In a separate bowl, combine the vanilla
essence, eggs, milk and butter.
2. Using the beater attachments, select
speed 3 and gradually add the egg
mixture to the flour mixture.
3. Increase to speed 6 and beat well until
smooth and free of lumps.
4. Lightly grease a crêpe pan. Heat pan
over a moderate heat.
5. Pour sufficient batter into pan to cover
evenly, but not too thick. Swirl pan to
coat thinly with mixture. Crêpes cook
quickly; overcooking causes crêpes to
toughen.
6. Turn crêpe and cook other side
until golden.
Serve crêpes drizzled with lemon juice and
dusted with powdered sugar.

WAFFLES
Makes approximately 10 waffles
INGREDIENTS
3 eggs, separated
1½ cups/375ml milk
2¼ cups/337g all purpose flour, sifted
2¼ teaspoons baking powder
1 cup bakers sugar
4 tablespoons butter, melted
METHOD
1. Using the beater attachments, select
speed 3 and beat egg yolks and milk
lightly, until well combined.
2. Gradually add sifted dry ingredients,
beat until smooth.
3. Add melted butter. Beat until
well combined.
4. Using the whisk attachment, whisk egg
whites on speed 13, in a clean mixing
bowl until light and fluffy.
5. Fold egg whites through prepared batter
until well combined.
6. Spoon ½ cup of batter into the center of
a preheated waffle maker.
7. Close waffle lid and cook until golden
brown. Cooking time approximately
4 minutes.
8. Repeat with remaining mixture.
PANCAKES
Makes approximately 8-10 pancakes
INGREDIENTS
1 cup/150g all purpose flour, sifted
Pinch of salt
1 egg
1¼ cups/312ml milk
2 tablespoons butter, for greasing
METHOD
1. Combine flour, salt, egg and milk
in a mixing bowl. Using the beater
attachments, select speed 4-6 and beat
until well combined and smooth.
2. Heat frying pan, lightly grease with a
little butter, and pour a small quantity of
batter into frying pan, swirl to cover base
of pan.
3. Cook over a medium heat until bubbles
come to the surface and break.
4. Carefully turn the pancake and cook
other side until golden brown.
5. Remove from pan. Continue with
remaining batter until all the batter
is used.
Serve pancakes with fruit and ice cream.

PLAIN SCONES
INGREDIENTS
2 tablespoons butter
2 cups/300g self-rising flour, sifted
1 cup/250ml skim milk
Pinch of salt
Extra self-rising flour, for kneading
Extra milk, for glazing
METHOD
1. Using the beater attachments, select
speed 2 and cream butter until soft.
2. Add half the flour and mix well on
speed 2.
3. Add remaining flour, salt then gradually
add milk. Mix to form soft dough on
speed 2. Do not over mix.
4. Raise and lower beaters throughout
mixing to assist in combining the mixture.
5. Turn dough onto a lightly floured board
and knead lightly.
6. Cut into desired shapes and place close
together on a lightly greased baking
tray. Brush scone tops lightly with a little
extra milk.
7. Bake in a hot oven 425°F (220°C) for 10-
15 minutes or until golden.
PUMPKIN SCONES
INGREDIENTS
4 tablespoons butter
2 tablespoons sugar
1 egg, lightly beaten
1 cup/250g mashed, cooked pumpkin, well
drained
¼ cup/60ml milk
2 cups/300g self-rising flour, sifted
Pinch of salt
1 teaspoon ground cinnamon
Extra self-rising flour, for kneading
Extra milk, for glazing
METHOD
1. Using the beater attachments, select
speed 2 and cream butter until soft.
2. Increase to speed 3 and gradually add
sugar and egg until just combined.
3. Add pumpkin, reduce to speed 2, add
milk, flour and spices alternately. Do not
over mix.
4. Raise and lower beaters throughout
mixing to assist in combining the
mixture.
5. Turn dough onto a lightly floured board
and knead lightly.
6. Cut into desired shapes and place close
together on a lightly greased baking
tray. Brush scone tops lightly with a little
extra milk.
7. Bake in a hot oven 425°F (220°C) for 10-
15 minutes or until golden.
