Using your Raclee/Grill/Fondue for the rst me
Before using the Raclee stone for the rst me, wash the stone and
raclee pans in warm soapy water, rinse and dry thoroughly.
Wipe the cooking stone and raclee pans with a very thin coang of
vegetable oil. This will seal the stone and PTFE cooking surfaces and help to
prevent the food scking, making it easier to clean.
5
Place the oil collecng pan under the stone in the circular recess. Put the
stone carefully on top of the product. Align the four slits on the underside of
the stone with the four vercal supports.
Then plug the appliance into the electrical supply. switch the appliance on by
turning the rotary thermostat knob clockwise to the desired temperature
seng, then heat for thirty minutes in a well venlated room, some smoke
may be produced by the heang element. The heang process will remove
any residue le on by the manufacturing process.
Cooking with the Raclee/Grill/Fondue
Switch on the Raclee/Grill/Fondue and allow it to heat up for at least 20 minutes.
NOTE: The stone top accessory will take longer to reach high temperatures, allow
30 minutes for the appliance to reach it maximum temperature seng.
Grilling using the top pan
Add a lile vegetable oil
Simply cook on the correct temperature unl your required cooking degree
is achieved.
Foods such as prawns, steaks, eggs and vegetables are ideal to cook on the
top grill
Raclee
The best raclee is achieved by using tradional raclee cheese but you can
use many other variees such as French Cantal or Greek halloumi.
For each person cut about 100g of cheese into 2mm thick slices.
Put the slices in the Raclee pans and place them under the heang
element.
In 3-4 minutes the cheese will be melted and will have turned golden brown.
Fondue
Remove the dust cover
Fill the fondue pot with vegetable oil up to the required level between the
6
maximum and minimum marks.
Heat for 25 mins
Chop a selecon of meats into small cubes.
Place a cube of meat onto a fondue fork and immerse it into hot oil.
Cook unl the meat browns
You can also marinade the meat for a beer taste.
Chocolate Fondue
Ingredients
50g dark chocolate
150ml heavy cream
Break the chocolate into small pieces and put it into the fondue pot with the cream.
Place on the raclee and adjust the thermostat to a low seng. Once the chocolate
melted (about 10 minutes) and is mixed with the cream, turn the raclee o. Serve
with pieces of fruit and or plain cake. Of course, you could also add 1 tablespoon of
brandy or strong coee to the basic fondue mixture for a dierent avour.
Cheese Fondue ( for RA11F and RA11FS models only)
Ingredients
200g grated Gruyere cheese
1 clove of garlic, crushed and nely chopped
50ml white wine
Place all the ingredients in the fondue bowl and lace the bowl on the raclee.
Adjust the thermostat to a medium heat seng. Within 10 minutes, the cheese will
have melted and the fondue will be ready. Sr well and serve with chunks of bread.
Stock Fondue
Ingredients
1.5 pints of stock-avoured water (or broth) with soy sauce, garlic, ginger, curry
powder
7
Cook the ingredients to a boil on the stove top, then poured into the fondue pot
where it must be kept simmering to cook food properly.
Meats should be cut into slices.
Vegetables should be cut small enough to cook, hard vegetables such as carrots and
cauliower should be blanched briey prior to fonduing.
Grilling Using the Stone top accessory (For RA11S and RA11FS model only)
It is simple to cook all sorts of food by placing them on the hot stone top.
Add a lile vegetable oil before cooking.
Place the stone top on the top of the appliance ensuring it securely in place.
Turn the stone to the correct temperature.
You can cook many types of food such as fried eggs, steak, other meats and
vegetables.
How to host the perfect Raclee meal
Chicken
1. Take a couple of chicken breasts and cut them into strips.
2. To get the maximum taste from your chicken marinade the strips in any of
the following for two hours before grilling them:
Spices such as: turmeric, cumin, ground ginger, chilli powder, coriander. Mix
all the spices together or select certain spices to create unique tasng

Sweet chilli sauce
Curry paste e.g. Thai green, madras, korma and Tikka Massala
Teriyaki sauce
A marinade of garlic, chillies and olive oil is a parcular favourite of ours.
Simply grill the chicken on the Raclee grill and serve alongside vegetables or salad.

Surf and Turf
Ingredients
Large steaks into thin strips
Raw king prawns
Cook the steak strips on the raclee to your liking
Sauté the king prawns in a lile garlic buer in the mini pan

Alternavely just cook the steak on top of the stone/ grill and eat by itself.
Cooking on the raclee makes the steak really tender and succulent.
Steak with Parma ham and sun-dried tomatoes
Cook a few strips of steak on top of the stone
Remove the steak o the raclee and wrap sun-dried tomatoes and Parma
ham around the steak to make a parcel
Place the parcel back on top of the raclee unl the ham is crispy
Chicken may be used instead of steak for tasty alternave
Fresh sh
Any sh such as sea bass, monksh, salmon and fresh tuna is superb cooked
on top of the raclee.
Simply cook the sh on top of the raclee, squeeze lemon juice over the top
and serve but you could also marinate the sh if you wish.
New potatoes
Boil some new potatoes approximately 30 minutes before you raclee meal.
There are lots of dierent ways to use the potatoes on the raclee such as:
