OPERATION
The range top has a single pilot that is lit using the TOP SURFACE IGNITION switch located on the base
oven control panel. The pilot can viewed through a hole in the range top’s front valve panel to verify its
status.
To light the pilot, do the following:
1. Check that all range-top control knobs are in the OFF position.
2. Turn on the gas supply (if not already on).
3. Press and hold in the red PILOT SAFETY VALVE button, then press the TOP SURFACE IGNITION
switch on the control panel of the base unit. Continue to hold in the red PILOT SAFETY VALVE button.
4. Verify that the pilot is lit by viewing it through the hole in the front valve panel.
5. After about 45 seconds, release the red PILOT SAFETY VALVE button. The pilot should remain lit.
The griddle is thermostatically controlled
.
Each 12" (305mm) wide section has one control knob that can be
turned to OFF, or to any temperature in the range 180°F to 600°F (82°C to 316°C).
To start cooking, turn on the appropriate control knob(s) to the desired temperature. Check that the burners
ignite. If the burners do not ignite, check and/or light the pilot (see procedure above).
Never place utensils on the griddle.
Do not waste gas and abuse equipment by leaving the thermostat at a high temperature all the time. During
idling periods, turn the thermostat to a low temperature to keep the griddle warm. (Do not allow the griddle
to overheat above 600°F (316°C) as this will cause warping or breakage.) When necessary while cooking,
pull out and empty the grease drawer.
When done cooking, turn the appropriate control knob to OFF. (The pilot should remain lit.)
To shutdown the entire range-top griddle, turn all the control knobs to the OFF position. The pilot should
remain lit.
OPERATON OF OVEN BASE
The oven-base controls are shown in the figure on the following page of this manual. To operate the oven,
do the following:
1. Turn the POWER switch on the base-oven control panel to ON. (The oven is equipped with a direct
hot surface ignition system. There is no pilot to light.) If the burners fail to ignite within four seconds,
the oven will automatically shut off the gas, wait five minutes to allow the gas that was released to
dissipate, and try to light the burners again. If the burners still fail to ignite after three such attempts, the
oven will stop trying, even though the POWER switch is in the ON position. To continue to attempt to
light the burners, turn the POWER switch OFF and then ON again.
2. Switch the FAN MODE switch to COOK. The fan will run continuously when the oven doors are closed
(the fan does not cycle on and off with the burners). (If this switch is set to COOL the only difference is
that the fan will continue to run when the oven doors are open.)
3. Set the cooking temperature by turning the COOK TEMPERATURE control until the indicator mark on
the knob is pointing at the desired cooking temperature (HIGH, MEDIUM, or LOW). The heat-on
indicator will light when the burners are on, and will remain on while the oven preheats.
4. Wait until the heat-on indicator has come-on and gone-out three times. At that time the oven will have
reached the set cooking temperature.
5. Open the oven doors, load the product into the oven, and close the doors. When you open the oven
doors, the burners and fan will shut off until you close the doors.
6. When the load has finished cooking, you can rapidly cool the load by opening the oven doors (which
will shut off the burners) and switching the FAN MODE switch to COOL (which will cause the fan to run
even though the doors are open).
7. When you are done cooking, turn the COOK TEMPERATURE control to LOW (fully counterclockwise)
and turn the POWER switch to OFF.
To shutdown the oven, switch the POWER switch to the OFF position.
