Operation & Maintenance Manual
Food Warmers
Models FW-20, FW-40
WET OPERATION
Pour 1 gallon of water into Pan and turn the thermostat knot to its maximum (#10) position.
Once water has reached maximum temperature, the knob can be turned counterclockwise to
a desirable position of {#7 or #6) for serving temperature.
Hot water can be used for quicker preheating.
To prevent unnecessary evaporation of water, keep inserts in the pan at all times.
DRY OPERATION
The thermostat can be set at the desired warming temperature. It will take 15 minutes for the
unit to heat up to serving temperature. It is recommended that a 6" deep insert be used when
operating dry.
CAUTION: NEVER POUR WATER INTO A DRY PRE-HEATED
PAN. THE STREAM VAPORS MAY CAUSE
INJURY.
NEVER PLACE FOOD DIRECTLY INTO PAN. (USE
INSERTS)
CLEANING OPERATION
Clean pan daily with hot water and soap or detergent. If dry operation is preferred, a slight
discoloration of the pan's bottom may be removed by using a mild abrasive cleaner or pad.
