Vulcan Hart MGF24 is a powerful gas fryer, operated by natural or LP gas, with a heat input of 100,000 BTU/hr. It's a floor model with 32 lb. fat capacity and 25 lb. frypot capacity. This commercial countertop gas fryer is equipped with standing pilot light for easy starts and a continuously burning pilot that ensures ignition even after flame failure. MGF24 GAS MEDIUM DUTY FRYER
SERVICE
WARNING: HOT OIL AND PARTS CAN CAUSE BURNS. USE CARE WHEN OPERATING, CLEANING OR
SERVICING THE FRYER.
WARNING: SPILLING HOT OIL CAN CAUSE SEVERE BURNS. DO NOT MOVE FRYER WITHOUT DRAINING
ALL OIL FROM THE TANK.
WARNING: UNPLUG FRYER BEFORE PERFORMING ANY SERVICE.
Before servicing, turn the manual shutoff valve (located on the rear of the fryer) to OFF. Allow the fry tank and
frying compound to cool.
CHECKING THERMOSTAT CALIBRATION
The fryer thermostat is carefully calibrated at the factory so that dial settings match actual frying compound
temperatures. Field recalibration is seldom necessary, unless the fryer has been mishandled in transit or
abused. Recalibration should not be resorted to unless considerable experience with cooking results definitely
proves that the control is not maintaining the temperature to which the dial is set.
1. To check frying compound temperatures when recalibrating, use a precision test instrument, or a good
grade mercury thermometer. Fill fry tank with frying compound to "FULL" mark.
2. Check frying compound temperature at the center of the tank, approximately 1" to 1

" below surface of
frying compound.
3. Turn dial of thermostat being checked to the 350°F mark.
4. Allow temperature to stabilize, or until thermostat cycles to OFF three times after starting with cold frying
compound. With power ON, read highest and lowest frying compound temperature as thermostat cycles
through at least two cycles. Average the reading.
5. Thermostat should be recalibrated if temperature reading is not within 10 degrees of the control knob
setting (350°F plus or minus 10°F). If recalibration is required, continue with steps 6, 7, 8 and 9.
6. Remove control knob by grasping outer edge and pulling straight out, without twisting or turning.
7. Hold thermostat dial shaft "B" (Fig. 1) stationary with pliers, and with a screwdriver, turn screw "A" (Fig. 1)
clockwise to obtain a lower temperature, or counterclockwise for higher temperature. Each

turn (90°
rotation) of screw "A" represents 18°F.
8. Replace thermostat control knob.
9. Recheck thermostat as in Steps 4 and 5 above. If the frying compound temperature is not within 20
degrees of dial setting (350°F plus or minus 20°F), it means that the sensing element is inoperative, and
the thermostatic control should be replaced.

REPLACING BURNERS AND PILOT BURNER
In order to gain access to the main burners, the pilot burner, and the thermocouple for service or replacement,
lift out the fry tank.
1. Remove the fry baskets.
2. Grasp the black handle on the pivotal head above the fry tank and swing it to the left of the fryer until it
stops. Use caution; the pivotal head may be hot.
3. Remove the crumb tray.
4. Firmly grasp both handles of the fry tank and lift it out.
5. Remove the damaged component and replace it.
REPLACING THE PRESSURE REGULATOR AND SAFETY PILOT VALVE
1. Remove control knob by grasping the outer edge of the knobs and pulling them straight out without twisting
or turning.
2. Turn quick connect fasteners

turn counterclockwise.
3. Pull the top edge of the front panel to open.
4. Lift out the fry tank (refer to steps 1 through 4 above).
5. Remove two screws holding the pilot outage protection valve. These screws are accessible from the top of
the fryer.
6. Disconnect the supply piping to remove the damaged component .
7. Reverse steps 1 through 6 to reassemble.

REPLACING THE AUTOMATIC SOLENOID VALVE
1. Disconnect wire leads to the automatic valve.
2. If the fryer is equipped with an automatic valve located behind the front panel, follow steps described in
"Replacing the Pressure Regulator and Safety Pilot Valve."
3. If the fryer is equipped with the automatic valve located underneath the fryer, disconnect supply tubings to
the automatic valve and remove the valve.
4. After assembling the valve, connect wire leads to corresponding terminals. Check completed circuit against
wiring diagram on rear panel.
5. Wire leads from the automatic valve (step 3 above) must be protected by wrapping them with insulating
tape supplied with the replacement valve.
REPLACING THE MERCURY SWITCH
1. Remove the screws securing the pivotal head (located above fry tank). Remove pivotal head cover and
gasket.
2. Dislodge mercury switch from the mounting clip.
3. Disconnect mercury switch leads and reconnect them to corresponding leads of replacement switch.
4. Snap mount mercury switch in the mounting clip in the same position as the original mercury switch.
5. Check mounted position of mercury switch by rotating the pivotal head to its stop position. In this position
the liquid inside the bulb should move to expose at least one lead (located inside the bulb), thus disconnecting
the electrical circuit.
6. Reassemble pivotal head and gasket.
REPLACING HI-LIMIT THERMOSTAT
1. Remove the mercury switch as in steps 1 through 3 above.
2. Remove Hi-Limit thermostat bulb and capillary tube clamps from support rod located below the pivotal
head.
3. Dislodge capillary bushing from hole in front of pivotal head.
4. Disconnect the wire lead to the damaged high limit thermostat.
5. Remove screws securing the high limit thermostat.
6. Remove thermostat and thread capillary and bulb through the hole in the pivotal head.
7. To reassemble, reverse steps 2 through 6 above, and steps 4 through 6 under "Replacing the Mercury
Switch."
8. Check the completed circuit against the circuit diagram on the rear panel.

REPLACING CYCLING THERMOSTAT
1. Remove screws securing pivotal head (located above fry tank). Remove pivotal head cover and gasket.
2. Remove fry baskets.
3. Grasp the black handle on pivotal head above fry tank and swing it to the left of the fryer until it stops. Use
caution; the pivotal head may be hot.
4. Remove the crumb tray.
5. Firmly grasp both handles of the fry tank and lift it out.
6. Remove cycling thermostat bulb and capillary tube clamps from support rod located below pivotal head.
7. Dislodge the capillary bushing from hole on side of pivotal head.
8. Remove rear cover of fryer by removing "U" bolt clamped to the gas inlet pipe, removing the strain relief
bushing located where electrical supply cord passes through rear cover, removing the 10 sheet metal
screws fastening the rear cover to the fryer, and removing the rear cover.
9. Remove the three sheet metal screws holding pivot post (located on pivot arm at the opposite end of
pivotal head). One of the screws also secures one end of the thermostat coil (moving end) with a Tinnerman
Nut. Mark the screw and the pivot post hold through which it is mounted for identification.
10. Remove the other end of thermostat coil (fixed end) from the sheet metal bracket behind the pivot post.
11. Pull the entire pivotal head and pivot post assembly toward the front of the fryer.
12. Thread the thermostat bulb and capillary through pivotal head and pivot post assembly. Then thread the
bulb, capillary, and thermostat coil through pivot ring weldment. Straighten out the coiled portion of
thermostat capillary.
13. Open front panel. Remove control knob by grasping the outer edge of the knobs and pulling them straight
out without twisting or turning. Turn quick connect fasteners

turn counterclockwise. Then pull the top
edge of the front panel to open.
14. Remove the three screws holding the thermostat mounting bracket. Pull out the thermostat bracket.
15. Disconnect wire lead to the thermostat. Remove two screws holding the thermostat to thermostat bracket.
Pull out thermostat capillary and bulb through opening on front cross members.
16. Connect wire leads to corresponding terminals on new thermostat.
17. Reverse steps 13 through 15 so that the thermostat is securely mounted at front with thermostat capillary
and bulb at rear.
18. Wind the thermostat coil (supplied with new thermostat) around capillary of new thermostat at approximately
the same position from the bulb as on the damaged thermostat. The thermostat coil should cover
approximately 11" to 12" of capillary length.
19. Wrap the portion of thermostat capillary, which is covered by the thermostat coil, into approximately two
turns of 1

" diameter.
20. Reassemble the thermostat bulb and capillary by reversing steps 1 through 12 above.
Required replacement parts should be ordered by part numbers as shown on parts list in this manual.
