Exterior Construction
The griddle dimensions are 21” (53.34cm) High, 30” (76.20cm) Deep, and width is
dependent on the actual model number. Working Height is 36” (91.44cm) to top of
griddle plate.
The griddle surface is made of 1” thick, highly polished steel to reduce hot and cold
spots, recovery problems, warping, and ensure even heat to the edges of the griddle.
Operation
A temperature sensor controls each twelve-inch section.
Controls
The griddle is controlled by a Jack in the Box® controller.
Technical
Griddle operates on either Natural Gas or Propane. Conversion instructions are
posted in the installation portion of this manual.
Floor space required is 30” (76.20cm) Deep, and width 82” (208.28cm).
The griddle weighs 390 or 780 lbs. depending on model.

UNPACKING
Receiving the Griddle
Upon receipt, check for freight damage, both visible and concealed. Visible
damage should be noted on the freight bill at the time of delivery and signed by the
carrier's agent. Concealed loss or damage means loss or damage, which does not
become apparent until the merchandise has been unpacked. If concealed loss or
damage is discovered upon unpacking, make a written request for inspection by the
carrier's agent within 15 days of delivery. All packing material should be kept for
inspection. Do not return damaged merchandise to Lang Manufacturing Company.
File your claim with the carrier.
Location
Prior to un-crating, move the griddle as near its intended location as practical. The
crating will help protect the unit from the physical damage normally associated
with moving it through hallways and doorways.
Un-crating
The griddle will arrive completely assembled inside a wood frame and strapped to a
skid. Remove the wood frame and cut the straps.
CAUTION

The griddle can now be removed from the skid and placed in its intended location.
Appliances installed on caster must use connectors complying with ANSI Z21.69
and quick disconnect complying with ANSI Z21.41. It must also be installed with
a restraining device to prevent strain against the gas connections. A restraining
point is provided at the rear of the grill.

Gas Connection
This griddle is manufactured for use with the type of gas indicted on the nameplate.
If your type of gas does not match the nameplate data consult the conversion
instructions in this section of the manual.
All gas connectors must be in accordance with local codes and comply with the
National Fuel Federal Gas Codes ANSI Z223.1, Natural Gas Installation Code
CAN/CGA-B149.1, or the Propane Installation Code, CAN/CGA-B149.2 latest
edition.
This appliance should be installed with a separate gas valve in the gas line ahead of
the unit. Use a 3/4-inch or larger gas supply line. The gas should be installed in one
of two locations, from under the body or from the back. The plug must be
installed on the connection not used.
Remove the 5/16-inch nuts securing the rear of burners. These nuts are for
securing the main burners during transportation only. The rear burner shield must
be removed to gain access to the nuts.
A pressure regulator for the type of gas specified is supplied and already installed
with each griddle. The pressure in the manifold of the appliance should be tested
with a manometer and the regulator adjusted for proper pressure with the appliance
operating at full fire. A 1/8-inch NPT tap is provided in the manifold for
connecting a manometer.
Correct manifold pressures are:
5 inches water column for natural gas
10 inches water column for propane
When replacing the plug in the manifold, a pipe joint compound or sealant must be
used that is resistant to the action of liquid petroleum gas.
Initial adjustments are the responsibility of the installer and are not chargeable to
Lang Manufacturing Company.

Gas Conversion
1. Disconnect grill from gas and power.
2. Remove 4 Phillip screws holding front panel to grill.
3. Remove the front panel.
4. On the far left section, locate the pilot assembly and remove the two screws that hold it to
the grill.
5. Follow the aluminum tubing from that pilot assembly back to the gas valve and remove the
tubing from the valve using a 7/16” wrench.
6. Gripping the pilot bracket with a set of pliers and using a 7/16” wrench remove the tubing
from the pilot assembly. This should expose the pilot orifice.
7. Remove the old orifice and replace it with the new orifice.
8. Re-install the tubing to the pilot assembly.
9. Re-install tubing to the gas valve and re-attach pilot assembly to the grill.
10. Locate main burner tubing and remove it from the main burner using a ½” wrench.
11. Remove the main burner assembly from the grill.
12. Remove the old main burner orifice and replace it with the new main burner orifice.
13. Re-install the main burner assembly to the grill.
14. Re-install the tubing to the main burner assembly.
15. Repeat steps 4 though 14 for the remaining sections.
16. Place gas conversion sticker below serial tag.
17. Attach a manometer to the pressure tap located on the backside of the main gas manifold
line (from the back of the unit look underneath towards the front and to the right).
18. Locate regulator on the under side of the grill and remove the spring cap on the top of the
regulator (silver cylinder sticking up from the regulator).
19. Remove nylon spring cover and the old spring.
20. Re-install new spring and nylon spring cover and screw nylon spring cover all the way
down and then back it off two turns.
21. Re-connect grill to gas and power and check for leaks (see lighting procedures).
22. Turn all burners on and check manometer for correct gas pressure (5”W/C for NG and 10”
W/C for LP). Adjust gas pressures as necessary.
23. Re-attach spring cap to regulator.
24. Disconnect power and gas and remove manometer and re-attach pressure tap.
25. Re-connect power and gas, re-attach the front panel and test grill for normal operation.

Electrical Connection
The electrical connection must be made in accordance with local codes or in the
absence of local codes with NFPA No. 70 latest edition (in Canada use: CAS STD.
C22.2.
The electrical service entrance is provided by a three-prong cord and plug located
at the rear of the grill.
Each grill requires a 115-volt grounded supply.

INITIAL START UP
WARNING
BEFORE LIGHTING, USE A SOAP AND WATER SOLUTION TO TEST ALL
JOINTS FOR GAS LEAKS.
Initial Lighting Procedure
Clean the preservative coating from the griddle plate and splashguard. Add a mild
detergent to hot water and wash the griddle plate and splashguard. Rinse with a
damp sponge and dry with a clean rag.
Turn the main gas valve on.
Light the pilot light by turning the control knob on the combination valve counter-
clockwise to the “PILOT” position. Push the control knob in. It will take several
minutes of holding the knob in, to clear the gas line of air during the initial lighting.
When the gas line is clear of air, hold a small flame next to the pilot burner while
you continue pushing the knob in. Release the knob. The pilot light should remain
lit.
If the pilot flame goes out when you release the knob, re-light while pushing the
knob in for another 45 to 60 seconds.
When the pilot continues burning, the pilot generator is hot enough to generate
sufficient voltage to lock in the safety pilot valve.
Turn the combination valve knob to the “ON” position.
Turn on the Jack in the Box® controller, follow the store Operations manual for
calibrating the controller.
Seasoning the Griddle Plate
Turn on the controller.
Observe the burners through the opening at the top of the control panel.
When the burners go OFF, apply a thin coat of high-grade, non-salted vegetable oil
to the griddle surface.
Rub the oil into the griddle surface with the flat side of a spatula or a towel.
Recoat any dry spots that appear then wait two minutes and wipe off any excess oil.

Daily Cleaning
Empty the grease drawer daily or whenever it is 3/4 full. It is easily removed for
washing.
Keep the griddle surface clean. After each cooking load, scrape the griddle surface
to remove any carbonized grease.
Once a day or when necessary the griddle surface should be thoroughly cleaned
and seasoned again. Use a griddle stone, griddle pad, or liquid cleaner. Rub with
the grain of the metal, being careful not to scrape the splashguard.
Weekly Cleaning
A mild detergent with water or one of the many commercial cleaners may be used.
Be sure to rinse thoroughly and coat the griddle with a thin film of oil to prevent
rusting.
Clean the exterior of the appliance with hot water and a mild detergent to maintain
a gleaming appearance.
Re-season the griddle plate after each cleaning.
Burner Air Shutter Adjustment
The air shutters are pre-set at the factory. However, minor adjustments may be
required in the field to accommodate differences in gas and elevation.
To adjust the air shutters, loosen the setscrew holding the air damper to the burner
near the gas inlet.
Adjust the air mixture until the burner flame just flickers on the burner. “Lift-off”
or yellow flame indicates improper shutter adjustment.
Periodically inspect and clean the air shutters to insure complete combustion.

Testing Safeties and Controls
The pilot combination valve can only be checked with a multi-meter that measures
mili-volts.
Connect the mulit-meter to the top terminal of the combination valve marked
“TH/TP” and the body of the combination valve. The voltage should read 400 to
500 MV with the burner off.
Between “TH” and “TP” the voltage should read above 150 MV with the burner on.
If no voltage is present at the combination valve, install a thermocouple tester
between the thermocouple and the combination valve, and then retake the voltage
measurements.
If no voltage is present, replace the thermocouple.
If voltage is present, replace the combination valve.

If an item on the list is followed by an asterisk (*), the work should be
done by a factory authorized service representative.

NCC GRILL CONTROLLER
DESCRIPTION
The grill controller reads the temperature of the cooking lanes then turns burners on
and off as needed to archive the standard temperature on the grill surface. For the
grill to
Function correctly, the controller must be set to the correct grill type, number of
burners, and the grill configuration (standard or reverse).
The grill controller components include:
Power switch turns the controller and grill on and off.
PROGRAM and SEL keys program the controller
UP/DOWN ARROWS allow selection of options.
ENTER Key will accept program and advance to the next mode.
Pressing the PROG & ENTER keys will allow you to back up and get out.
Indicator lights indicate the status of the grill burners.
OPERATING PROCEDURE
Turning the Grill Controller on and Checking the Self-test
1. When the power is turned on, the controller will perform a self-test. If the
controller passes the self-test, the message LOW GRILL TEMP will be
displayed. Also, the LED’s will be flashing red until the grill reaches 275 F.
2. When a zone reaches 275 F, the message WARMING UP # (X) (XXX) will be
displayed.
3. Yellow LED indicates burner on: Green LED indicates set-operating
temperature has been reached.
(x) = grill lane
(xxx)= temperatures in degrees F or C.
Checking Actual Grill Temperatures
1. When the grill is properly calibrated, the controller can be used to check grill
temperatures. Temperatures of each grill section are displayed on the display.
2. Temperature must be verified with the thermometer kit according to HAACP
guidelines.

CLEANING
As needed, wipe the surface of the controller with a damp towel to remove any
dust, grease, or debris.
OPERATING CONDITIONS
Grill controller operating in the auto scan mode.
Each section is set for the correct temperature.
Indicator lights are green when corresponding lane temperature is reached.
Indicator lights are yellow when the corresponding burner is on.
No lights are blinking.
The display shows Lane # (x) (xxx) F.
ADJUSTING TO
SPECIFICATIONS
Changing to Calibration Mode
When the controller is in the calibration mode, the temperature the controller reads
from the probes can be changed to match the grill surface temperature measured by
a thermometer.
Checking Set Temperatures
1. Press SEL until LUNCH SET #1 (xxx) F displays.
2. Press UP ARROW to move to the next lane.
Changing Set Temperatures
1. Press PROG/UP ARROW at the same time.
2. Press SEL to scroll to “Temperature Setting.”
3. Press ENT to select this menu.
4. Press SEL 2 times to scroll to “LUNCH SET” (xxx) F.
5. Press UP or DOWN ARROW to change temperature setting.
6. When temperature is set, press ENT to move to the next lane.
7. When all temperatures have been set, press PROG and ENT at the same time
to exit programming.
NOTE: Controller will automatically go back to the auto scan mode.
Checking the Grill Controller Settings
The controller must be set to the correct grill type, number of burners, and the grill
configuration (standard or reverse).
1. Press PROG and UP ARROW at the same time.
2. Press and hold PROG for 5 seconds.
3. Press SEL to scroll through menu options.
4. GRILL TYPE (xxxxxxx) –Press UP ARROW to choose between WOLF &
LANG or US RANGE grills and press SEL.
5. # of BURNERS (x) – Select the number of burners installed in the grill (x) =
2,3,4,5,6,7, or 8. Press UP ARROW to increase the number; press DOWN
ARROW to decrease the number. Press SEL.
6. GRILL CONFIGURATION (xxxxxxx) – Press UP ARROW to choose
STANDARD or REVERSE grill. Press SEL>
7. BURNER DELAY (10) SEC – The burner delay should always remain at the
default of 10 seconds. Press SEL.
8. Press PROG and ENT at the same time.
Exiting the Programming Mode
Press PROG/ENT at the same time to exit the programming mode. NOTE: No key
pressed for 2 minutes will cause the controller to exit the program mode or grill set-
up menus.

Adjusting Grill Calibration – Weekly
1. Remove all items (press, covers, etc.) from the grill and DO NOT cook on the
grill for 5 minutes.
2. Enter the manual scan mode by pressing SEL 3 times then the UP ARROW.
3. Change all temperatures to 325 F.
4. Enter Calibration mode by pressing PROG and UP ARROW at the same time,
the press SEL unitl Calibration mode displays, and then press ENT.
5. Press SEL, “SET ZONE #1 (XXX) F” displays.
6. Scrape the grill in front of that probe marker and take the temperature halfway
between the back and front of the grill in line with the probe marker.
7. Change the reading on the controller to match thermometer reading (press the
UP or DOWN ARROW). The temperature will change in 1-degree
increments.
8. Press ENT and move to the next lane.
9. Repeat step 7-8 until all lanes are set.

Calibration ensures that the controller is reading the temperature information sent through each probe accurately.
Perform calibration every two weeks.
IMPORTANT! Before beginning calibration:
- Ensure that grill has been on for 20 minutes.
- Check that the set temperatures are correct.
- Clean the grill flue and remove any obstructions
- Have a second person available to assist you with the calibration process.
What to do: How to do it:
1. Scrape the grill surface
Use the grill scrapper to clean surface
2. Enter the manual scan mode.
Press SEL 3 times
Press up arrow
Press SEL
3. Change all set temperatures to 325° F.
Continue with step 3 immediately; do not wait
for temperature to drop.
Press PROG & UP arrow at the same time
Press SEL, press ENTER, press SEL 2 times
Press DOWN arrow to set lane to 325° F, press
ENTER to set temperature and go to the next lane.
When each lane has been set to 325° F, press PROG
& ENTER at the same time to exit.
4. Enter Calibration mode.
Press PROG & UP arrow at the same time.
Press SEL 2 times, press ENTER
Press SEL (Set Zone #1temp displays)
5. Use the thermometer kit grill probe to read the
actual temperature of the grill over the probe.
NOTE: Ensure that the grill probe is clean
Plug the grill probe into the thermometer.
Turn the thermometer on.
Place the probe in front of a probe marker (see grill
backsplash), halfway between the front and the
back of the grill, on a clean surface.
Read temperature when numbers stop changing (in
3-5 seconds).
6. Change reading on controller display to match
thermometer reading.
Press UP or DOWN arrow to change temp
accordingly.
Press ENTER
7. Repeat Steps 5 and 6 for all lanes.
See steps 5 and 6
8. Exit calibration mode.
Press PROG & ENTER at the same time
9. Reset all temperatures to 350° F, except the
lanes used for grilling sourdough bread.
Press PROG & UP arrow at the same time.
Press SEL, press ENTER, press SEL 2 times.
Press the UP arrow to set lane to 350° F or 375° F,
press ENTER to set temperatures and go to next
lane.
When each lane has been set to 350° F or 375°F.
press PROG & ENTER at the same time to exit.

TROUBLE SHOOTING
Food Safety and Quality Check
1. Destroy food if you suspect that it has been exposed to contamination
(physical, biological, or chemical).
2. Destroy food if you suspect it has been exposed to temperatures that are too
low or too high.
3. Ensure that employees do not use the equipment until the problem is corrected.
4. Inform guest service employees of the problem and advise them on satisfying
guests who order affected the products.
5. Discard any food that does not meet quality standards.
6. Block of the affected grill.
