products. Model No. AE-60P2(A) is equipped with high torque 2-speeds, which is the best pizza
mixer that manages to handle pizza and bagel dough the way you want.

maintenance access from top, front, and sides.
z Use a level and shims as necessary to ensure that the mixer is installed in a level position from front

z Electrical connections should be made by qualified
personnel in accordance with applicable codes and
regulations.
z Permissible voltage fluctuation is ±10% of normal
voltage.
z Be sure to tag any electrical outlets, fuses, or
connections involved in installing the mixer until
installation has been completed.
z THE UNIT MUST BE PROPERLY GROUNDED TO
PREVENT ELECTRICAL SHOCK AND
INTERFERENCE. Use a grounding cable of not less
that the code-determined minimum length. The
diameter of the grounding cable must be the same as
that of the power cable. Each machine must be
separately grounded.
z To move or relate the mixer after it has been installed,
first disconnect the power and grounding cables.
z Be sure the planetary runs in the direction shown by
the arrow in the planetary head. Reverse direction is

MIXING OPERATION
STANDARD MIXING PROCEDURES
NOTE: Before using a new mixing bowl, and before each use of any mixing bowl or mixing
egg whites or whole eggs, the bowl should be thoroughly washed with hot water and mild
soap. Rinse the bowl with a mild soda or vinegar solution, and then thoroughly rinse it
again with clean water.
1. Always place bowl in position before installing agitator.
2. Be sure the mixing bowl alignment pin at the back of the
bowl is properly engaged with the insertion receptacle in
the center of bowl support.
3. Be sure to seat the bowl properly on the alignment pins on
the bowl support.
4. If using a bowl adapter, install it as you would a bowl, and
then put the bowl in place as usual.
5. Install the agitator by lifting it on to the agitator shaft, and
twist it to the right until the agitator lock engages. To
remove the agitator, raise it on the shaft, twist it to the left,
and pull down.
6. To avoid splatters, add all ingredients before starting
mixer.
7. Select the desired speed. Always stop the machine to
change speeds-never change speeds while mixer is in
operation.
8. Set the timer to the desired mixing time and set timer
switch to ON position, or leave timer at “0” and timer
switch OFF for un-timed mixing. On AE-60P4(A), the timer
switch is integrated with the mixer START switch.
9. Raise the bowl into position using the bowl lift. Never
raised or lower the bowl while the mixer is in
operation.
10. On safety guard models, close the safety guard into
position.
11. Press START to begin mixing. Press stop to stop mixing.

MAXIMUM MIXING CAPACITY
The moisture content of heavy dough is a critical factor when selecting proper mixing speed. You
should never use 2nd speed when mixing heavy dough with an Absorption Ratio (AR) of 50% or
less. To determine the Absorption Ratio (AR) of a product, water weight divide by flour
weight.
Example: Calculate the Absorption Ratio of a mixture containing 5 lbs. of
water and 10 lbs. of flour. 5 ÷ 10 = 0.50 = 50 % = AR

FUNCTIONS OF ACCESSORIES
DOUGH ARM:
Frequently used for heavy bread dough, and preferable to be used at low speed.
The moisture content of heavy dough is critical when selecting proper mixing
speed. You should never use 2nd speed when mixing heavy dough with an
Absorption Ratio (AR) of 50% or less.
BEATER:
Commonly used for thin batters, cake and mashing potatoes, like stuffing and
preferable to be used at middle speed.
WIRE WHIP:
Best for whipping cream and beating eggs and preferable to be used at high
speed.
BOWL
New mixers bowls and agitators (beaters, whip, and dough arms) should be thoroughly washed
with hot water and mild soap solution, rinsed with either a mild soda or vinegar solution, and
thoroughly rinsed with clean water BEFORE being put into service. This cleaning procedure
should also be followed for bowls and agitators before whipping egg whites with or whole eggs.
HUB ATTACHMENTS
The mixer’s standard-sized, No. 12 hub accommodates a variety of optional attachments. To
install an attachment, loosen the thumbscrew on the attachment hub and remove the hub cover
plug. Insert the attachment into the attachment hub making certain that the square shank of the
attachment is in the square driver of the mixer. Secure the attachment by tightening the
thumbscrew. Be sure to follow the manufacturer’s installation, operation, and safety instructions
for the hub attachment. Attachment hub should not be used while mixing.

MAINTENANCE
NOTE: ALL MAINTENANCE WORK SHOULD BE DONE ONLY AFTER UNIT HAS BEEN
DISCONNECTED FROM ELECTRICAL POWER AND GROUNDING.
General
Clean the mixer after each day’s use. It should be wiped with a clean, damp cloth. Use a soft brush to
clean areas that are difficult to clean with a cloth. NEVER USE A METAL OR OTHER TYPE OF STIFF
BRUSH TO CLEAN THE MIXER. NEVER CLEAN THE MIXER WITH A WATER HOSE OR ANY TYPE
OF FLUID UNDER PRESSURE OR IN HIGH QUANTITY.
Daily
z Clean the mixer regularly after each day’s use.
z Do not run the mixer continuously for long periods.
z Wash the bowl, agitators, and attachments according to normal food-contact equipment procedures
after each use.
Weekly
z Inspect planetary mechanism and transmission case for leaks or damage. CONTACT YOUR LOCAL
SERVICE REPRESENTATIVE IF IT BECOMES NECESSARY TO REPACK THE BALL BEARING.
Use of unapproved grease or lubricants may lead to damage and may void the manufacturer’s
warranty.
Periodic
z Lubricate the bowl lift semi-annually, or more often under heavier use.
z Inspect the drip cup periodically for moisture or lubricant dripping. Remove the cup and wipe it with a
soft cloth.
Lubrication
z The mixer comes with grease-packed ball bearing and/or roller bearing that do not require regular
lubrication. When it becomes necessary to repack them, contact your authorized service
representative or AMERICAN EAGLE.
z The polished drip cup protects against lubricant seeping out of the planetary into the bowl. The drip
cup should be wiped clean monthly and inspected for excessive leakage. The drip cup may be
removed by pulling down on it. (SEE NOTE 1)
z The bowl slideways and bowl-lift-unit require periodic lubrication with a small quantity of
high-quality mineral oil that may be applied with a cotton swab or by fingertip. (SEE NOTE 2)
Electrical
z The mixer’s electrical system does not require electrical maintenance under normal use. Should

service be required, contact your local service representative or AMERICAN EAGLE.
NOTES 1:
The DRIP RING or SAFETY GUARD should be inspected
periodically for moisture or lubricant dripping. Remove the
cup and wipe it with a soft cloth. A large flat blade
screwdriver may be used to remove the drip cup after remove
the screw.
NOTES 2:
To make sure the operation function, The Bowl lift slideways (No. 1),
Bowl lift gear (No. 3), Bowl lift drive gear (No. 5) and Hand wheel
should be lubricated semi-annually, or more often under heavy usage.
If bowl lift is not so smooth as it normally does, following checks are
required:
a. Removing the two Screws (No. 4) and Apron (No.2) and apply a
light coat of lubriplate to both slideways (No. 1) and bowl lift gear
(No. 3).
b. Remove Rear cover of column. Drip some oil to oil groove ( No. 5)
and oiler (No. 6).
c. Fill oil to oil cup (No. 7) in the clamping ring of hand wheel.
TROUBLESHOOTING

Product that the Product will be free from defects in material or workmanship for a period of one (1) year form the date of
acquisition when installed and operated according to our instruction, OR eighteen (18) months form the date of shipment form
our factory to our dealer, whichever expires first.
LABOR:
American Eagle Food Machinery, Inc. will, during its normal business hours, or through an authorized service representative
repair or replace all parts found to be defective under this warranty without charge for labor for a period of ninety (90) days from
the date of acquisition.
THIS WARRANTY IS CONDITIONAL UPON NOTIFICATION OF AMERICAN EAGLE FOOD MACHINERY, INC. BEING
