This machine is exclusively to be used to prepare vegetable, fruits,
cheese etc.
Safety
The "Attention" symbol is shown beside instructions that are essential

technicians or the use of other than original spare parts, and any

1. Installation
1.1 Unpacking
Crating and packaging materials should be removed with care.
Shipping damage claims
This appliance was carefully inspected and packed before
leaving the Hobart factory. The company transporting it
assumes full responsibility for its safe delivery.
Visible damage or loss
If the shipment is damaged and that damage or loss is visible
upon receipt, make sure that this is noted on the delivery note
or any other shipping documents. These documents should
then be signed by the person making the delivery. Damage
claims should be made immediately, regardless of the extend
of the damage.
Unnoticed damage or loss
If damage is noticed after the equipment is unpacked, the
transport company should be notified immediately and a
concceled damage claim made within fifteen days of the date
of delivery. The packaging should be kept for inspection.
Hobart cannot assume responsibility for loss or damage
incurred in transit.
Locating
Place the VPU on a suitable work surface close to a 13 Amp
switched socket outlet.
Note: It is not necessary to bolt the machine to the work top.
1.2 Electrical connection
The machine is supplied with 2 metres of cable fitted with a
13 Amp fused plug.
Note:
Check that electrical details stamped on the machine
data plate agree with those of your electrical service. If
in doubt consult a qualified electrician.
The machine is fitted with NVR (No Volt Release) to prevent
accidental restart should the mains supply be interrupted.
The motor has thermal overload protection.
For added operator protection special interlocks are fitted which
prevent the machine starting unless the feed head and/or the
pusher plate are correctly assembled and/or positioned.
Caution:
Slicing, dicing, shredding, grating plates have very
sharp blades. Handle with extreme care.
Plates should when not in use be stored on the plate
rack supplied with the machine for wall mounting.

2. Preparation
2.1 Cutting / grating
Raise pusher plate (1) and turn it to the left.
Turn the lock handle anticlockwise and lift the feed head (2)
to the rear.
Put the ejector plate (3) onto the shaft and turn it until it drops
into position.
Put required cutting disc (4) onto the shaft and turn it until it
drops into position.
Close feed head, the lock handle snaps in automatically if the
pusher plate is turned to the right.
2.2 Shredding / dicing
Raise pusher plate (1) and turn it to the left.
Turn the lock handle anticlockwise and lift the feed head (2)
to the rear.
Put the ejector plate (3) onto the shaft and turn it until it drops
into position.
Put the dicing grid (5) onto the shaft and turn it until it drops into
position.
Note: Make sure the dicing grid is placed correctly on the
locating pin.
Select cutting disc (4) with a view of end result required:
- for dicing use standard slicer
- for chopping use Julienne cutter 4,5 x 4,5 mm.
Put cutting disc (4) onto the shaft and turn it until it drops into
position.
Close feed head, the lock handle snaps in automatically if the
pusher plate is turned to the right.

3. Use of the cutting tools
3.1 Description
A Standard slicer, cutting size 10 mm,
for normal use and with dicing grid 10 x 10 or 15 x 15 mm.
B Fine cut slicer, cutting size 1.5 mm,
for cutting firm or fragile products and for chopping with dicing grid.
C Fine cut slicer, cutting sizes 4, 6 and 10 mm,
use as fine cut slicer 1.5 mm.
Note: Always use a fine cut slicer when slicing soft and delicate
products (eg. tomatoes). A standard slicer might damage
the product.
D Julienne cutter, cutting sizes 2 x 2, 3 x 3, 4.5 x 4.5, 6 x 6 and
8 x 8 mm.
Note: if used with dicing grid use 4.5 x 4.5 mm disc only.
E Dicing grid, sizes 7.5 x 7.5, 10 x 10 and 15 x 15 mm,
to be used with: standard slicer,
fine cut slicers,
Julienne cutter 4.5 x 4.5 mm.
Note: when dicing, make sure that the dicing grid dimension
is equal or larger than the slicing tool dimension.

4. Operation
4.1 Operation with feed head
Switch ON main switch (if fitted).
Raise pusher plate (1) and turn it to the left.
Fill feed head with product.
Turn pusher plate to the right and lower it into the feed head.
Push ON switch.
During cutting, press the pusher plate slightly downwards.
To re-fill raise pusher plate and turn it to the right – the
machine stops automatically.
Note:
To cut french fries with Julienne disc and for cross-cut of round
fruits (i.e. tomatoes):
Position the product to the right of the feed head.
4.2 Operation with feed tube
Check correct position of the pusher plate in the feed head.
Switch ON machine.
Remove pusher from the tube and fill in product (i.e. cucumbers).
Press smaller items slightly downwards with the pusher.
Note:
As the machine does not stop when the pusher is removed from
the feed tube, the machine may be operated continuously.
Important:
Clean the machine immediately after use.
Dried-on fruit juice may cause discoloring and may
complicate cleaning.

5. Cleaning
Important:
Do not wash discs or any component of this machine in
a dishwasher.
Do not wash feed head, disc or any aluminium parts in
dishwashing liquid since this may cause corrosion. Use
only mild detergents suitable for aluminium.
Do not use solvents for cleaning the machine.
Attention:
Disconnect electrical supply.
Do not rely on switches fitted to the machine.
The machine should be cleaned immediately after use.
Raise pusher plate and turn it to the left to the resting position.
Open lock handle, remove feed head and rinse in warm water.
Remove and clean cutting tool.
Note: If the dicing grid was used, let it remain in the chamber
and push the remaining product through with the nylon
brush.
Remove dicing grid and / or ejector plate and rinse in warm
water.
Turn pusher plate to the right and lower it into the chamber.
Place a dish under the ejector chute and clean pusher plate and
chamber with warm water.
Replace ejector plate and feed head
Store tools on the wall rack.
6. Maintenance
To be checked each week:
Note: The following items should be checked without cutting
tools or ejector plate mounted.
That the machine stops when the pusher plate is raised.
That the machine does not start with the feed head removed
and the pusher plate lowered over the knife chamber.
Unplug the machine and check that the electrical cord is ok and
does not have any cracks.
That knives and grating plates are intact and sharp.
That the pusher plate shaft has sufficient grease.
Note: If not, use a drop of machine oil, not cooking oil.

If any of above functions do not work properly call your
regional Hobart office.
