jacket and lining (316 stainless steel liner, 20 & 40 gallon).

). Counterbalanced hinged
stainless steel cover with drop down lift handle (60 - 100 gallon
spring assist). 2" compression tangent draw-off valve with
perforated strainer. Tubular stainless steel legs with anged
feet. Operates with 5 psi (0.4 kg/cm

) direct steam. Steam control assembly includes
nickel plated steam supply control valve, nickel plated
condensate return line strainer and steam trap.

DIRECT STEAM DATA:
Steam supply to the kettles must:
1. Maintain a steady 13 psi ow under operating conditions.
2. Have a minimum ow (see chart) of dry steam.
3. Be adequately trapped to provide dry steam. (See ball oat
trap.)
