GROUNDING INSTRUCTIONS:
This appliance must be grounded. It is equipped with a 3-prong cord
having a grounded plug. The plug must be plugged into an outlet which
is properly installed and grounded.
Warning: Improper use of the grounded cord can result in the risk of
electric shock. Consult a qualified electrician if necessary. Do not attempt
to defeat this safety feature by modifying plug.
A short power-supply cord is provided to reduce the hazards resulting
from entanglement or tripping over a longer cord. If it is necessary to
use an extension cord, it should be positioned such that it does not
drape over the counter or tabletop where it can be pulled on by children
or tripped over and:
A. Use only 3-prong extension cord with 3-blade grounding plug.
B. The marked rating of the extension cord must be equal to or
greater then the rating of this appliance. The electrical rating is
listed on the bottom of this unit.
C. Please ensure that the brew basket handle is fully locked in the down
position before brewing coffee as the machine uses some pressure to
speed up the brewing process. Do not try to open the brew basket
until the brewing cycle has finished.

Before Your First Use Using Your Coffeemaker
to Brew Coffee
Clean all detachable parts with warm water.
Add water into water tank to the MAX level.
Plug into standard 120V outlet.
Fit the filter.
Make sure the carafe is in place on the keep warm plate and the coffee
basket holder is in place.
Perform 2 or 3 Hot Water cycles (refer to 'Hot Water Dispense' section
on page 11).
If using the appliance at altitudes of 4,000 ft. or above please
reference the instructions on page 17.
When using the appliance for the first time, the display may show "Err".
This is because the unit has detected that the pipes are not filled with
water. If this happens, press the START/STOP button once to clear the
"Err" and press again to start a new carafe cycle.
Open the water tank lid and fill the water tank with potable water.
The water level should not exceed the MAX level marked in water
gauge. Then close the water tank lid.
Note: The appliance can make up to 12 x 5oz cups of coffee in a
brewing cycle.
Choose the CARAFE or single CUP coffee basket according to your
requirement, and then add coffee grounds into coffee basket. The
following table shows the recommended amount of coffee grounds to
use for a medium range of coffee strengths. When using the scoop
provided to measure coffee 8g is achieved with the coffee slightly
rounded.
Stronger or weaker coffee will be achieved by adding more or less
coffee grounds, according to your taste.

For best coffee taste and extraction across the range of volumes a
regular drip grind should be used. Finer grinds will produce stronger
coffee. Very fine and espresso grinds should not be used as these
could cause a blockage and incomplete brewing cycles. If there is
liquid remaining in the coffee basket at the end of the cycle then
the coffee used is too fine. Only use coffee grounds for one brewing
cycle.
Note: This appliance can be used with 62mm soft pods but we do
not recommend to use 2 pods together. If stronger coffee is required,
try selecting a heavier pod or stronger roast. Also, reduce the cup
volume setting and increase the strength selection to bold (3 bars)
or extra bold (4 bars).

Using Your Coffeemaker (Cont.)
Put the coffee basket; loaded with coffee grounds; into the coffee
basket holder and fit the coffee basket holder to the coffeemaker,
making sure that it is fully inserted and that the handle is fully closed
and latched. This ensures that the unit is correctly sealed.
Place the carafe on the Keep Warm plate. For individual cups,
depending on size place on stand, or directly on keep warm plate.
Please note, the Keep Warm setting does not work in Cup mode. or
cup on the keep-warm plate.
Plug the power cord into the outlet electricity and press START/
STOP button once. The LCD will display the default setting
mentioned on page 8 (See DEFAULT SETTING), the blue backlight
will be illuminated while the appliance is in use.
If WATER mode is displayed, press the COFFEE/WATER mode
button to select COFFEE.
Select the required cup or carafe mode by pressing the Cup Select
or Carafe Select button, then select the required volume by pressing
the Up Arrow or Down Arrow buttons.
The display will show the previous coffee strength selected for that
volume. If you want to change the coffee strength, press the Coffee
Strength button, then press the Up Arrow or Down Arrow buttons
to change. The strength will be remembered only for the selected
volume. If you change volume, you may need to change the strength
again.
Press START/STOP button again to start the coffee making.
The process will start immediately but you will notice a short delay
while the hot water is flowing into the coffee basket. Then the coffee
will start to flow. It may seem too strong but don’t worry – in this
first stage, the coffeemaker is making the perfect extraction of your
coffee grounds for the volume and strength that you have selected.
It finishes this stage by forcing any remaining liquid out of the
coffee basket with pressure before switching to the second stage of
‘bypass’, in which the hot water goes directly to your cup or carafe
without passing through the coffee grounds. The proportion of hot
water passing through the coffee to the amount of water bypassing
varies with the selected strength and the selected volume. This
intelligent bypass system ensures that any volume or strength of
coffee can be produced without over or under extraction.
At the end of the total brewing cycle, you will hear 2 short beeps to
indicate that the coffee is ready to drink.
Note: The coffee will not be ready until the end of the total brewing
cycle, including the coffee stage and the water bypass stage because
the coffee will not have reached the selected strength or volume.
Removing the cup or carafe will not stop the cycle and will result in
spillage of coffee or water.
You can stop the appliance at any time by pressing the START/STOP
button but this will cancel the cycle. Pressing again will start another
cycle from the beginning and could spoil the coffee.

Bold. (See Fig. 7)
Note: The strength is controlled by
adjusting the quantity of water passing
through the coffee grinds. The higher
the strength setting the more water
that passes over the grinds and the less
water through bypass. There are separate
controls for each volume setting as the

against electrical shock, do not immerse cord, plug or unit in water or
liquid. After each use, always make sure plug is first removed from wall
outlet.
Clean all detachable parts after each use in hot, sudsy water.
Wipe the product’s exterior surface with a soft, damp cloth to remove
stains.
Water droplets may buildup in the area above the coffee basket
spout and drip onto the product base during brewing. To control the
dripping, wipe off the area with a clean, dry cloth after each use of the
product.
Use a damp cloth to gently wipe the keeping warm plate. Never use
abrasive cleaner to clean it.
Replace all parts for next use.

Coffeemaker Tips
A clean coffeemaker is essential for making great-tasting coffee.
Regularly clean the coffeemaker as specified in the Care and Cleaning
section. Always use fresh, cold water in the coffeemaker.
Store unused coffee grounds in a cool, dry place. After opening
a package of coffee grounds, reseal it tightly and store it in a
refrigerator to maintain its freshness.
For an optimum coffee taste, buy whole coffee beans and grind
them to a regular drip grind size. A slightly finer grind can be used
if stronger coffee is preferred but DO NOT USE VERY FINE OR
ESPRESSO grind!
Do not reuse coffee grounds since this will greatly reduce the coffee’
flavor. Reheating coffee is not recommended as coffee is at its peak
flavor immediately after brewing.
Clean the coffeemaker when over-extraction causes excess oil. Small
oil droplets on the surface of brewed, black coffee are due to the
extraction of oil from the coffee grounds.
Oiliness may occur more frequently if heavily roasted coffees are
used.
If the volume of coffee or water dispensed by your coffee maker
changes over time run an 8, 10 or 12 cup carafe of water. The machine
will then automatically check and if necessary adjust dispense
volumes.

Black Pepper Scones
Makes 18 scones
INGREDIENTS
4 cups plus 1 tablespoon all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
13 tablespoons (6 1/2 ounces) unsalted butter, cut into small pieces and chilled
1 1/2 tablespoons medium grind black pepper
2 1/2 teaspoons finely chopped lemon peel
1 1/2 cups heavy cream, plus 2 tablespoons for brushing
METHOD
1. Into a large bowl, sift together the flour, sugar, baking powder and
salt. Using two knives or a pastry blender, cut in the butter until the
mixture resembles coarse meal. Gently stir in the pepper and lemon
peel. Add the 1 1/2 cups cream all at once and mix until the dough
just comes together.
2. Turn out onto a lightly floured surface and knead the dough into a
ball. For a flakier consistency, do not knead the dough into a smooth
ball. If smooth, the scone will be more cake-like. Wrap in plastic wrap
and refrigerate for at least 30 minutes, up to overnight.
3. Cut the dough into three equal pieces. Working with one piece at a
time, keeping the other two pieces covered, roll out to a circle, 6 inches
in diameter and 1/2-inch thick (see note below). Cut the circle
into 6 wedges and arrange the wedges on one or two baking trays
lined with parchment paper. Repeat with the remaining dough.
4. Preheat the oven to 350°F. Lightly brush the scones with the
remaining 2 tablespoons of cream and bake until golden, about 10-12
minutes.
Note: The scones can be cut out with a 2 1/2-inch cookie cutter if
desired. Roll out the dough, cut, and place on a baking tray. Re-roll
the dough and continue cutting out circles. Proceed as in step 4.
5. Serve warm with butter, and jam if you like.
Strawberry Marzipan Tart
Makes one 10-inch tart
INGREDIENTS
1/3 recipe Sugar Dough (see separate recipe on page 25)
1/2 pound unsalted butter, slightly softened
1/2 cup sugar
3 eggs
2 tablespoons orange liqueur
Zest of 2 oranges, finely grated
1 teaspoon almond extract
2 cups ground almonds
1/4 cup currant jelly, melted
2 baskets strawberries, sliced 1/4-inch thick
METHOD
1. Preheat the oven to 350°F.
2. On a floured surface, roll the pastry 3/8-inch thick and line a 10-inch
flan ring with it. Place the ring on a parchment paper lined baking
sheet and chill it until needed.
3. Cream the butter and sugar lightly in an electric mixer; don’t let the
butter get too soft. Add the eggs and mix lightly.
4. Stir in the liqueur, zest and almond extract, then mix in the ground
almonds.
5. Pour into the chilled pastry shell and bake for 1 hour to 1 hour and 15
minutes, or until the pastry and marzipan are a deep golden brown.
6. Remove the tart from the oven and let cool to room temperature.
7. Brush the top of the tart with the currant jelly. Cover the top of the
tart with sliced strawberries arranged in concentric circles or in a
flower petal design, making certain the whole top of the tart is
covered.
8. Remove the flan ring and transfer the tart to a flat serving platter.
Cut into wedges.
24 25
Pecan Pie
Makes one 10-inch tart
INGREDIENTS
1 1/2 cups light corn syrup
3/4 cup sugar
3/4 cup light brown sugar
4 eggs
2 egg yolks
3 tablespoons unsalted butter
1/2 recipe Sugar Dough (see separate recipe on page 25)
1 1/2 cups pecan halves
METHOD
1. Preheat the oven to 350°F.
2. In a large skillet over medium heat, toast the pecans, shaking
frequently, for about 7 minutes or until golden and fragrant.
3. Place the corn syrup, sugars, eggs, and egg yolks in a mixing bowl.
Beat well.
4. Heat the butter in a small skillet over medium heat until it turns
brown and has as nutty aroma. Stir it into the corn syrup mixture.
5. Line a 10-inch tart pan with the Sugar Dough. Arrange the pecan

Sugar Dough
Makes about 1 1/2 pounds or two 9-inch tart shells
INGREDIENTS
2 1/3 cups cake or pastry flour
1/3 cup sugar
1/2 pound (2 sticks) unsalted butter, chilled, cut into small pieces
2 egg yolks
1 or 2 tablespoons heavy cream
METHOD
1. In a food processor fitted with the steel blade, combine the
flour and sugar. Add the butter and process until the texture
resembles fine meal.
2. In a small bowl, whisk together the yolks and 1 tablespoon of the
cream. Scrape into the machine and process until a ball begins to
form, using the additional tablespoon of cream, if necessary. Remove
the dough from the machine, and on a lightly floured surface, press
down into a circle. Wrap in plastic wrap and refrigerate for at least
1 hour.
3. Use as needed.

Macaroons
Makes about 3 dozen
INGREDIENTS
1/2 pound confectioners sugar, about 1 7/8 cups
1/4 pound almond meal, about 1 cup
1/2 cup egg whites, about 4 large egg whites
Pinch cream of tartar
1 1/2 ounces granulated sugar, about 1/4 cup
5 drops red food coloring
METHOD
1. Preheat the oven to 325°F.
2. Meanwhile, sift together the confectioner’s sugar and almond meal
directly into a medium mixing bowl. Set aside.
3. In another bowl, beat the egg whites until foamy. Add the cream
of tartar and continue beating until they form soft peaks when
the beaters are lifted out. Continue beating while pouring in the
granulated sugar in a steady stream; then, add the food coloring
and continue beating until fully blended, about 30 seconds.
4. Spoon the mixture into a piping bag fitted with the round tip. Pipe
the mixture into 1-inch rounds on a parchment paper-lined baking
sheet. Put the sheet in the oven and bake for 5 minutes; rotate the
sheet 180 degrees and bake for 7 minutes more, until the macaroons
are firm.
5. Remove the baking sheet from the oven and let the macaroons cool
before transferring to an airtight container.
