Cream of vegetable soup
2–4 people
Ingredients
2 - 3 tbsp. cooking oil
7 oz. / 200 g onions
7 oz. / 200 g potatoes (mealy potatoes are best)
7 oz. / 200 g carrots
Approx. 1.5 cups / 350 - 400 ml of vegetable stock
(fresh or instant)
Salt, pepper, nutmeg
Parsley

and cut into slices. Peel and rinse the potatoes and cut into
approx. 1-inch (2 cm) cubes.
2) Heat the oil in a pan and sauté the onions until translucent.
Add carrots and potatoes and allow to sweat. Add enough
stock to cover the vegetables and boil everything until soft,
about 10‒15 minutes. Add more stock as needed if the
vegetables are no longer covered.
3) Wash the parsley, shake it dry, and remove the stems. Tear the
parsley into large pieces and add to the soup. Purée every-
thing with the hand blender 5 for about 1 minute. Season to

Pumpkin soup
4 people
Ingredients
1 medium-sized onion
2 garlic cloves
0.5 oz / 10 - 20 g fresh ginger
3 tbsp. canola oil
14 oz / 400 g pumpkin (hokkaido pumpkins are best, since
their shells become soft during cooking and therefore they
need no peeling)
approx. 1 cup / 250 - 300 ml of coconut milk
1–2 cups / 250 - 500 ml vegetable stock
Juice from ½ orange
Dry white wine
1 tsp. sugar
Salt, pepper
Preparation
1) Peel and dice the onions and garlic. Peel the garlic and chop
it fine. Sweat the onion and ginger in hot oil. After 2 minutes,
add garlic and let it sweat as well.
2) Clean the pumpkin thoroughly with a vegetable brush under
warm water, then cut into approx. 1-inch cubes (2‒3 cm).
(If using pumpkins other than hokkaido pumpkins, they must
be peeled.) Add the cubed pumpkin to the onion and ginger
and let them sweat as well. Add half of the coconut milk and
enough vegetable stock to cover the pumpkin. Cover and cook
until soft, about 20–25 minutes. Mix everything with the hand
blender 5 until smooth. Keep adding the coconut milk until
the soup has the right soft, creamy consistency.
3) Season the soup with orange juice, white wine, sugar, salt and
pepper, so that it has a sweet and sour-salty note to balance
out the spicy taste.

Sweet fruit spread
Ingredients
Approx. 9 oz. / 250 g strawberries or other fruit
(fresh or frozen)
1 small package (approx. 4.5 oz / 125 g) of gelling sugar
(non-cooking)
A splash of lemon juice
1 pinch of vanilla bean pulp
Preparation

and keep the spread from being too runny. Cut large
straw berries into smaller pieces.
2) Weigh 9 oz. of strawberries and add to a suitable mixing
bowl.
3) Sprinkle lemon juice over the top.
4) If needed, scrape out and add the pulp of a vanilla bean.
5) Add the contents of a package of gelling sugar (non-cooking) and
mix thoroughly for 45–60 seconds with the hand blender 5.
If any large pieces remain, let everything rest for 2 minutes and
then purée again for 60 seconds.
6) Enjoy the fruit spread right away or pour it into a glass jar with
a screw cap and firmly seal it.
