Frymaster EH1721 is a versatile, high-performance electric fryer with an 80-lb. (40 L) oil capacity and a variable cooking depth of 5” to 6-1/2”. It's ideal for frying unique menu items like bone-in chicken and wet-battered products. Its features include a deep cold zone and forward sloping bottom for easy sediment removal, digital solid-state temperature controls for quick recovery, and optional Cascade and Super Cascade filtration systems for extended oil life.

This versatile, high performance
EH1721 has an 80-lb. (40 L) oil capacity,
and a variable cooking depth of 5 to
6-1/2” (127-165 mm). The spacious 18
x 18 (457 x 457 mm) frying area makes
this unit suitable for frying unique
menu items such as bone-in chicken
and other wet-battered products.
The EH1721 is available with standard
17 or optional 21 kW input.
The EH1721’s deep cold zone and for-
ward sloping bottom help collect and
remove sediment from the frypot to
safeguard oil quality and support rou-
tine frypot cleaning. The 1-1/4” (32 mm)
drain, makes draining the frypot fast
and thorough.
Digital solid-state temperature controls
react quickly to changes in load condi-
tions for rapid temperature recovery
and eliminate loss of time incurred
waiting between loads.
The optional Cascade and Super
Cascade filtration systems make filter-
ing fast and safe, encouraging frequent
filtering which further extends the use-
ful life of oil.
*Liter conversions are for solid shortening @70°F.

HOW TO SPECIFY
The following description will assist with ordering the
features desired for this equipment.
EH1721 Free-standing electric fryer with digital control-
lers, 17 kW input, stainless steel front and sides,
swing-up elements.
NOTES
Export units built with under-fryer filters require
60/50 Hz pump motor and total amperage draw will
increase by 3.5 amps.
CLEARANCE INFORMATION
A minimum of 24” (610 mm) should be provided at
the front of the unit for servicing and proper opera-
tion, and 6 (152 mm) between the sides and rear of
the fryer to any combustible material.
