Logik L1BMS11 is a stainless steel bread maker with a range of functions to help you bake delicious homemade bread. With 12 automatic programs, you can choose from a variety of bread types, including basic white, French, whole wheat, and sweet bread. There's also a super rapid program for when you're short on time, and a dough program for when you want to make your own pizza or pasta dough. The bread maker also has a delay timer, so you can set it to start baking later, and a keep warm function to keep your bread warm after it's finished baking.

Item Description
TIMER / Button
Used when setting the delay timer to increase or decrease the time.
These buttons allow you to select a delay time period if you don’t want your bread maker to
start cooking immediately.
LOAF Button
Select the loaf size 500g, 700g or 900g when using programme 1 (BASIC), 2 (FRENCH), 3
(WHOLEWHEAT) or 4 (SWEET).
Note that the total cooking time will vary depending on the size of loaf being cooked. The
default setting is 900g. The selected loaf size will be indicated on the display.
Start Indicator Light Illuminates when your bread maker is operating
Programme Guide Listed out the 12 preset cooking programmes.
MENU Button
Select one of the 12 preset cooking programmes. Each time it is pressed a short beep will
sound and the selected programme will change. If you press and hold the button, the menus
will cycle through quickly.
1. BASIC: This programme is primarily used for breads that use white our, although some
recipes may include small quantities of whole wheat our. The bread will be slightly
denser than french or sweet breads, as there are fewer rising cycles and the overall cycle
time is shorter.
2. FRENCH: Traditionally, french bread has a crispier crust and lighter texture than basic
breads. These recipes do not usually include additional fats or milk.
3. WHOLEWHEAT: This programme is used for recipes which contain signicant amounts of
whole wheat or rye our, oats or bran. It begins with a rest period during which the ours
and grains absorb the liquid - this softens the ingredients and helps them to combine
properly. The programme also incorporates an additional rise cycle which helps the
heavier wheat and grains to expand.
4. SWEET: Suitable for sweet breads such as raisin, cinnamon, apricot, etc.
5. SUPER RAPID 700g: This programme cooks a 700g loaf in about an hour. The recipes call
for very warm water and larger amounts of yeast.
6. SUPER RAPID 900g: As above but for a 900g loaf.
7. QUICK: This is for quick breads that do not use yeast and require only mixing and baking.
8. BROWN BREAD: This programme is for dark breads such as pumpernickel.
9. DOUGH: This programme only makes the dough and will not bake the nal bread. This
dough setting is suitable for pizza bases, doughnuts, etc. Remove the dough to shape
and bake in a conventional oven (or, in the case of doughnuts, deep fried)
10. BAGEL DOUGH: As above for the preparation of bagel dough.
11. JAM: Use this setting to make sweet and savoury jams. The process is a simple case of
mixing and heating.
12. BAKE: This setting will use your bread maker’s oven to bake for one hour. Baking can be
controlled manually by pressing the start/pause button to stop the function at any time.
COLOUR Button
Select the crust colour LIGHT / MEDIUM / DARK when using programme 1 (BASIC), 2 (FRENCH)
or 3 (WHOLEWHEAT). The default crust colour is medium. The selected crust colour will be
indicated on the display.
When used with programme 1, 2, or 3, selecting RAPID activates the quick cook mode. This
setting produces a basic, French or wholewheat loaf in less time than the conventional
programme.
START / STOP Button
Press to start your bread maker. Press and hold to stop your bread maker.
This button is used for starting and stopping the selected baking programme. To start a
programme, press the START/STOP button once. A short beep will sound, the colon (:) in the
time display will ash, the start indicator light will illuminate and the programme will start. All
the other buttons on the control panel will be deactivated except the Start/Stop button when
the programme has begun.
To stop the programme, press and hold the Start/Stop button for approximately two seconds.
A beep will sound and the start indicator light will go out indicating that the programme has
been switched o.

Before using your unit for the rst time, wash the inside of the bread pan, the kneading paddle and the measuring utensils in
hot soapy water. Rinse and dry well. Wipe the interior of the lid and the exterior of the bread pan and unit with a damp cloth.

To remove the non-stick coated bread pan pull with medium force on
its carrying handle.

How to Attach the Bread Pan
Place the bread pan exactly in the middle of the base inside the
baking space. Be careful not to hit the oven element!
How to Attach the Kneading Paddle
To attach the kneading paddle, match the shape of the kneading
paddle’s hole with that of the rotating shaft. Be sure to insert the
kneading paddle securely; otherwise it will not knead properly.

Measuring Cup and Spoon
The supplied measuring cup is for measuring liquids only. It has scales marked in cups,
millilitres (ml) and uid ounces (.oz) to help you measure the ingredients correctly.
Always ll the liquid exactly to the marked line. The liquid should be poured into the
cup while the cup is placed on a at surface and measured at eye level.

How to Measure the Ingredients
The supplied measuring spoon may be used to measure yeast, sugar, salt, dry milk and
spices. The large side measures 1 tablespoon; the smaller side measures 1 teaspoon.
If you are measuring dry ingredients by weight, use a good pair of
kitchen scales calibrated in grammes.
For dry ingredients, ll to overow and then level it. Do not press or
shake down.

Before Baking
Ensure you have all the ingredients to hand. Carefully ll the pan making sure you do not leave any ingredients out. When
lling, it is essential that the ingredients are lled in the prescribed order. Otherwise the bread will not bake properly.
The ingredients should be at a warm room temperature (20°C-25°C ). If the room is cold (below 18°C), use warm water (40°C)
to make sure the yeast ferments fully. To gauge the temperature if you do not have a thermometer, heat some water and
slowly add this to a jug of cold water until the resulting temperature is barely warm to the touch.

Buzzer
The buzzer goes o.
• When pressing all the programme buttons;
• During the second kneading cycle of the programmes, the unit will beep to signal that the cereals,
fruit, nuts or other ingredients can be added.
• When the end of the programme is reached. During the warming phase at the end of the baking
procedure an audible sound will be heard several times.
Repeat Function
If there is a brief power cut of up to approximately ve minutes the programme position is stored
and the machine can continue from this position when power is restored. This is possible only if the
programme was stopped before the kneading phase was reached. Otherwise you will have to start
from the beginning.
Safety Functions
If the temperature of the appliance is still too high for a new programme after using the appliance
previously, E 01 will appear on the display when pressing start again and an audible sound is given. If
this is the case, press the START/STOP button until the E 01 message is deleted and the basic setting
appears on the display. Remove the container and wait until the appliance has cooled.

Attach the kneading paddle to the bread pan, precisely measure the
ingredients and add them to the bread pan in the following order:
1. Water (or other liquids).
2. Bread our, sugar, dry milk, salt and butter.
3. Make a depression in the middle of the our and sprinkle the yeast
in it. Make sure the yeast does not touch any liquid and salt before
mixing commences. Otherwise, the bread will not rise properly.
4. Clean o any spills around the outside of the bread pan. Do not overll
the bread pan as it will aect the bread and damage the unit.
Basic Steps for Baking
Set the Bread Pan and Close the Lid
1. Use the bread pan’s handle to lower the pan into the unit.
2. Push the pan rmly in place.
3. Lay the handle back on the pan. Close the lid.
4. The ingredients are now ready for baking.
5. Connect the unit to the mains socket.
Start Baking
1. Press the MENU button to select the desired programme.
2. Press the LOAF button to choose the weight corresponding to the selected programme.
3. Press the COLOUR button to select the desired degree of browning (for programmes BASIC (1), FRENCH (2) and
WHOLEWHEAT(3) only).
4. Press the / button to set the time when the programme is to be started.
5. Press the START/STOP button to start baking.
6. The unit mixes and kneads the dough automatically until it reaches the right consistency.
7. After the last kneading cycle the unit is heated to the optimal temperature for the rising of the dough.
During the baking process, the main body and the lid will get hot. Be careful not to burn yourself.
To cancel during a process, press and hold the START/STOP button until the unit sounds once.
• Only do this in an emergency, as the unit will reset to the beginning of its programme. You must then begin
again as the ingredients may be ruined and need replacing.
• Only press this button after you have selected the menu programme, weight of the loaf, degree of browning
(and delay time if required). Otherwise, it will not reset.
When the unit is operating, only open the lid at the prescribed places in the baking cycle. Failure to observe this
will aect the quality of the bread, especially its ability to rise properly.

Remove the Bread Pan
1. When the programme is completed, the display will show “0:00” and the
appliance will beep several times. The unit will continue baking the bread
under the KEEP WARM function for another hour, but this will not be
displayed.
2. Once this 1 hour KEEP WARM baking process is complete, the unit will beep
several times again and switch o. For best result, stop the unit with the
START/STOP button and remove the bread pan within this period.
3. Use oven gloves to hold the handle. Turn the bread pan anti-clockwise to
remove.
Remove the Bread
Do not place the HOT bread pan on place mats that are vulnerable to
heat as they may get damaged.
Take care when removing the bread. The bread pan is VERY HOT!!
Remember to wear oven gloves to hold the bread pan and kneading
paddle.
Occasionally, the kneading paddle will stay in the loaf; wait until the
loaf is cool and then remove the kneading paddle to avoid damage to
the non-stick surface. If you need assistance to remove the loaf from
the bread pan, use only wooden or heat proof plastic utensils.
1. Open the lid.
2. Place a baking rack on a at work top.
3. Turn the bread pan upside down, hold the handle and shake the loaf out.
4. Place the bread on the baking rack to cool down for about 10 minutes and to
release moisture from the bottom of the bread.
5. Make sure the kneading paddle has been removed before slicing the bread.
After use
Unplug the unit from the mains socket by holding the mains plug.

Warming
Once the baking is over, the buzzer goes o to signal that the bread can be
removed. The 1 hour warming time starts immediately.
The unit sets the baking temperature and time automatically. If the
bread is too light at the end of the baking programme, use the BAKE
programme to let it brown more. To do so, press the START/STOP
button, then select the BAKE programme and start. When the desired
degree of baking has been reached, stop the process by press the
START/STOP button.

Super Rapid Bread Programme
The super rapid programmes (5 and 6) can bake a loaf in about 1 hour. Please note that you must use hot water at 45-50°C.
Use a cooking thermometer to measure the temperature. The inuence of temperature is very critical to the performance of
baking. If the water temperature is too low, the bread will not rise to its expected size. If the water temperature is too high
the yeast will be killed before rising.
Using the Delay Timer
Using Your Bread Maker
• If you are using the bread maker in hot or humid weather with a delay time greater than 2 hours, there is a
danger of the bread rising too quickly. To prevent this, reduce the liquid by one or two tablespoons, increase
the salt ¼ to ⁄ teaspoon and reduce the sugar by up to one half of the amount indicated in the recipe.
• Don’t use the delay timer for long delay periods if you are using ingredients that do not keep well at room
temperatures e.g. milk, eggs, cheese, etc.
Your bread maker has a built in timer that allows you to delay operation for up to 12 hours. The delay timer cannot be used
on certain programmes such as the SUPER RAPID, JAM, BAKE, and QUICK.
1. Prepare your bread maker and add the ingredients as previously described.
2. Make the required settings for programme, loaf size and crust colour. Set the timer. Press the TIMER / buttons
until the required time is displayed.
For example, if the time is 8:30 p.m. and you want the bread to be ready at 7.00 a.m., you need to set the timer for a 10
hour 30 minute delay. Press the TIMER / buttons until 10:30 appears on the display.
3. When the timer is set, press the START/STOP button. The display will start to count down the time to completion.
The bread maker will automatically start and your bread will be ready at the desired time. Once you have pressed the
START/STOP button you cannot alter the timer. If you forget to press the START/STOP button, the timer will not work.
Keep Warm Function
The automatic keep warm function prevents the bread from getting soggy by keeping the baked bread warm for up to one
hour after the programme has ended. The function stops when the START/STOP button is pressed or the bread maker is
unplugged from the mains socket.
Add Ingredient Alert
If you are baking bread which requires the addition of other ingredients, such as dried fruit or nuts, the unit will beep during
the kneading cycle to inform you to add the ingredients into the unit.
Memory Recall
If the mains supply is temporarily interrupted, the process of bread making will continue automatically when power is
restored. However, if the interruption exceeds 5 minutes, the unit must be restarted manually. If the process has gone
no further than the kneading phase when the mains supply is cut o, you may press the start/stop button to resume the
programme from the beginning.

long you’ll be baking perfect loaves each and every time.

Add the ingredients in the order listed. When added, the yeast and salt should be kept separated from each other.

Bagel Dough - Programme 10
Basic dough for dinner rolls or breadsticks. Shape into rolls or breadsticks and bake in your own oven.
Ingredients Quantity
Water (Tepid) 300 ml
Granulated Sugar 1½ tbsp
Salt 1½ tsp

To cook
Preheat the oven to 200°C/400°F/Gas mark 6. Remove the dough from your bread maker and cut it into 8 equal pieces. Shape
each piece into a ball and using oured hands, work the ball into a ring using your nger to make a donut shape. Bring a
large pan of water to the boil then turn it down to a simmer. Add 1 tablespoon of sugar and stir until it has dissolved. Gently
lower about three bagels into the water and poach for about two minutes turning the bagels once. Remove, drain and place
the poached bagels on a baking sheet. Bake for about 15-20 minutes until golden brown then transfer to a wire rack to cool.

• If you leave the kneading paddle tted to the shaft it may be dicult to separate
them afterwards. If this happens, ll the bread pan with warm water and add a
few drops of liquid detergent. Leave it to stand for 30 minutes and then remove
the kneading paddle from the shaft for cleaning.
• The bread pan, kneading paddle and the drive shaft should be thoroughly
cleaned in warm water with detergent. The bore in the kneading paddle can be
cleaned with a soft bottle brush or similar implement.
• Always disconnect the unit from the mains supply immediately after use.
• Allow the unit to cool down after use before you clean or store it. It takes about 30 minutes until the unit is cool enough to
be used again.
• Assist the unit to cool down by leaving the lid open but ensure it is in a safe place away from children and pets.
Cleaning and Care
• Use only warm water with a mild liquid detergent for cleaning. Under no circumstances use chemical cleaners or solvents,
oven cleaners or abrasive agents.
• Ensure the unit is disconnected from the mains and has cooled down to the point where it can be safely handled.
• Pour some water into the bread pan and leave for a few minutes to assist it to cool down. Do not re-insert the bread pan
into the unit until it has been cleaned.
• Remove all crumbs from the lid, housing and oven housing with a soft cloth.
• Wipe the housing inside and outside with a damp cloth.
• Do not immerse the unit in water and never pour water into the oven housing.
• Do not allow the mains cable or mains plug to come into contact with water and do not pour water on the
appliance or excessively wet the interior or the control panel.
• Clean and dry all parts carefully after use.
• Rinse the bread pan and kneading paddle thoroughly to remove all traces of
detergent and allow to dry. Wash the measuring cup and a spoon after every use.

Maintenance
When storing the bread pan in the unit, store it in the LOCKED position, but leave the kneading paddle loose in the pan and
ready for assembly.
To protect the non-stick coating on the bread pan and the kneading paddle:
• Do not use hard utensils such as metal spatulas, knives or forks.
• Do not use scrubbing brushes, hard nylon sponges or metal brushes.
• Be sure to clean after every use.
• As times goes by, the colour of the non-stick coating may change due to moisture or steam created during cooking. This is
normal and has no eect on the appliance performance or use.
• Do not use benzene, thinner or chemically treated cloth for cleaning. (It may damage the main body or the bread pan)
• Do not place it in dishwasher or dishdryer.
• Allow the unit to cool completely before storing it.
• When storing the unit, be sure to close the lid and do not place items (especially heavy items) on the lid.
• Always dry the bread pan and kneading paddle well before storing.

Why do loaves sometimes vary in height
and shape?
Any one of the following could aect the height and shape: temperature,
weather, humidity, altitude, use of the timer and uctuations in household
current. The bread shape can also be aected if fresh ingredients are not used
or measured incorrectly.
Why do the loaves vary in shape
depending on the season?
During summer, loaves may sometimes rise too high or collapse, causing a
dent in the middle. During winter, you may have trouble getting the bread to
rise. This may be solved by keeping the water temperature at about 20°C (68°F).
Why does our occasionally stick to the
side of the bread?
During the initial mixing period, small amounts of our may sometimes stick to
the sides of the bread pan and baked onto the sides of the loaf. If this happens,
scrape o that portion of the outer crust with a knife.
Why is the dough sometimes very sticky
and dicult to work with?
Dough may sometimes be sticky (or too wet) depending on the room and
water temperatures. Try using colder water when making the dough and dust
the kneading surface and your hands with our more frequently.
Why does the top of the loaf sometimes
look torn?
Sometimes the dough rises too well and the top of the loaf looks torn.
However the loaf will have a very soft texture.
Can I make breads using eggs in the unit? Yes. Reduce the amount of water and replace with eggs. Put the eggs in the
measuring cup rst; then add water to measure accurately. Do not use the
Delay Timer function when using eggs as they may spoil.
Can I use this unit to make bread recipes
found in other cookbooks?
The accompanying recipes were especially created for this unit; results may
vary when using other recipes.
Why can’t the Delay Timer function be set
for more than 12 hours?
Ingredients may spoil and aect the quality of the dough if left out for an

strange odor?
Too much active dry yeast or outdated ingredients (especially our and water)
may cause odors. Always measure ingredients accurately and use fresh
