OPERATION SAFETY
This section explains the potential dangers that may arise when operating the Anova
Precision
TM
cooker sous vide circulator and notes many important safety precautions.
Counter tops such as marble and Corian
cannot withstand the heat generated by
the circulator. Place cooking container
different surface to prevent damage.
Do not use extension cords. Never oper-
ate with a damaged cord or plug.
Use properly grounded electrical outlets
only.
Do not immerse system past the top etch
mark of stainless steel skirt. Only the stain-
less steel skirt and the pump housing are
dishwasher safe. Unplug from outlet when
not in use and before the cleaning pro-
cess.
Burn Hazard - the cooking container, the
stainless steel portion of circulator, and
food pouches all get hot when used. Use
oven mitts or tongs when handling. Allow
system to cool before emptying the water
bath.

This system is an indoor appliance and is
not a toy.
If your circulator falls into water, discon-
nect power ASAP to avoid shock. Then
send back system to repair (water dam-
age not covered by warranty). Do not
retrieve the unit until you have unplugged
the cord. Do not attempt to use the sys-
tem if this has happened.
DO NOT DISASSEMBLE. OBSERVE ALL
WARNING LABELS. Do not remove warning
labels.
Do not use this appliance for anything
other than intended use. (Like laboratory
work or heating a hot tub)
Firmly lock the circulator on the bath tank
with the screw clamp - Place the con-
tainer on an even surface to prevent spills
and tipping over. Do not place unit on a
stove, or in an oven.

sous vide circulators are precision temperature controlled circulators
designed to regulate the temperature of a water bath.
The system features:
1) Control interface
2) Numeric scroll wheel
3) Removable skirt with directional
water pump cap
4) Adjustable ring clamp



Anova circulators are not designed for direct contact with food. Do not
use Anova circulators to directly contact food – at no time should food
products also come in contact with bath uid. Food must be vacuum-
sealed, heat sealed, or zip locked before use with the circulator.
Food products like juice, soup or milk products still need to be bagged or
sealed in jars for cooking.
Only the stainless steel skirt and pump cover are dishwasher safe – the
heating circulator and display contain sensitive electronics and cannot
be placed into the dishwasher.

Tip: If you want to have an easier time cleaning the stainless steel parts, use
soft/decalci ed water to avoid water spots and calci cation.

SETUP
Anova sous vide circulators are designed to be used only with water.

SETUP (clamp & pot)

cooker circulators require a 4.25 inch (11cm) deep container or pot.
1) Place the ring clamp on the side
of your container and turn the lower
clamp knob until it is tight.

3) turn the top system clamp knob until
tight.
SETUP (pump direction)
The pump can channel ow around large objects or away from delicate foods.
1) Turn the Precision
TM
cooker in the ring clamp.
or
2) Take off the pump cap, then reinstall with the output pointing to a different
direction to change the output direction of the water ow.
For extremely delicate foods like eggs or ounder - turn the output to the back of
the container wall. For large roasts or crowded pots turn the output so the water
jet is not blocked by the foods.
Why Change Pump Flow Direction?
Precision cooking requires the temperature to be even all the way around the
food. For crowded pots or large objects this could mean uneven cooking. For
delicate objects like eggs or sh the water jet can damage llets or crack eggs
when “blown” around in the container.

SETUP (set temp)
Changing Temperature:
1) Turn the scroll wheel up or down

Changing Temperature Units:
1) Hold down the Play/Start button for 3 seconds

SETUP (Bluetooth)
Enter Pairing Mode:
1) Press “Bluetooth” symbol. Please note if your system is already paired,
this action will break pairing

SETUP (timer)
To display Timer function:
1) Press and hold “Play/Start” for 8 seconds -
2) Press and hold the timer icon for 3 seconds to set time via the scroll wheel.
Pressing start or the timer icon again will start the timer countdown

Why is the timer function not toggled on from the beginning?
In sous vide cooking temperature is far more important than the time. In fact
for most steak dishes going over time multiple hours doesn’t change results as
long as you have the correct temperature.
SETUP (small pots)
For small pots:
1) Place the system
in the ring clamp
2) Let the unit rest
on the bottom of the
pot then tighten the
top knob of the ring
clamp.

Maintenance
BEFORE BEGINNING SERVICE:
• Always turn off and unplug the unit.
• Internal service work must be performed by Anova certi ed personnel only
• Make sure system is at room temperature
Check for signs of damage including pulled cord or physical damage to system
or heaters. If any signs of physical damage are found send back for factory ser-
vice and replacement parts.
Repairs:
If your system falls into the water or is physically damaged, contact Anova Culi-
nary LLC for a return authorization number and instructions.

Maintenance (assembly)
Twist the skirt to the left until it comes off.
Sometimes the impellers will get
caught on the side of the skirt as
the skirt is getting pulled off. Jiggle
the skirt from side to side to loosen
up the skirt
You can also remove the pump
cap rst to remove the skirt.

Maintenance (skirt/pump)
Turn the pump cap out of the lock position then pull off.
The skirt and pump cap can be placed into the dishwasher.
