thechicken.Makecertainthechickeniscenteredonthespitandwellbalanced.Using
kitchentwine,securethechickensothatthewingsandlegsaresecurelytiedtothebody
ofthechicken.Rubthechickenwitholiveoilandseasonwithsaltandpepper.
Insertthepointedendofthespitintotherightsideoftheovenandplacetheleftsideinto
thespitsupport.Placetherackinthelowerrackpositionwiththerackdown.Placethe
broiler/bakepanontherackcenteringitbelowthechicken.
PresstheBakebutton,theovenispresettobakeat350°F.Setthetimefor1½hours.
TurnontheRotisserieandConvection.
Meanwhile,combinetheremainingingredientsinsmallsaucepanandbringtoaboil;
reduceheatandsimmer5minutes.Bastechickenseveraltimesduringlast30minutes
ofcooking.Testchickenfordonenessbyinsertingameatthermometerintothebreast
whichshouldregister180°F,orpiercebreastwithforkandseethatjuicesrunclear.
