1.1 DESCRIPTION
• These portable WHISK-MIXERS are intended for restaurants,
large kitchens and small companies for:
- Mix, liquidise and give soups and sauces a regular consistency
with the MIXER equipment.
- Whisking, emulsifying and mixing egg whites, mayonnaise or
purées with the WHISK equipment .
• For special preparations out of the food range:

3.1 BUILT-IN SAFETY - GUIDELINES
The safety of the user is guaranteed in accordance with the
prEN 12853 regulations by:
- The machine’s double insulation (Class II).
- The START 1 and 2 buttons needing to be pressed after the
STOP button has been pressed (no volt release).
- The relay which protects the motor against overloads.

The distance of the tool from the area where the user’s hands

- The protection of the mixer tool.

The user of the Mixer - Whisk must observe the following
safety guidelines:
- The machine must always be unplugged before fi tting or
removing the mixer and whisk equipment.
- Never operate the machine when not in a recipient and
only immerse the tool to 2/3 of its length at most.
- Always use a stable recipient at a suitable height.
- To avoid splashing hot liquids, immerse the tool to the bottom
of the recipient before starting it, and let it stop completely
before removing it.

2.2 ELECTRICAL CONNECTION
The various class II (double insulated) Whisk - Mixer models
use a single phase AC supply and do not need to be earthed.
The universal motor is interference shielded.
• Use a 10/16 A single phase standardised plug.
Check that the voltage of the electrical system is the same
as that marked on the rating plate and the label of the power
cable.
The machine must be protected by a differential circuit breaker
and a 10 A fuse.
To PAT test the Electrolux Range of Food Preparation Equipment,
the PCB board needs to be disconnected before any test is done.
This is due to the fact that the boards are fi tted with a grounding
diode that can give incorrect result during such a test. Also on a
standard appliance a fl ash test of 25 amps and up to 3000v is
used but, as you would expect, to use this on equipment, which
has a printed circuit, board would be quite destructive to that
board. We would recommend the use of a PAT tester approved
for computer systems which use a lower rate of amps.
The appliance is perfectly safe and is CE certifi cated. There are
two ways to get overcome this problem.
· Disconnect the board as instructed and test using test for
PC’s,
· Or install the mixer on a fused spur (no plug) as this takes it
away from being a portable appliance and the PAT test is then
not needed.
- Respect the safety instructions in § 3.1.
- Hold the Mixer - Whisk by the motor unit handle
- Press the switch 1 (green button ) and the double switch 2
(green button ) simultaneously.
- Release the and switches. The Mixer - Whisk remains in
continuous operation.
- Press the switch 2 (red button ).
- Select low speed and start (see § 3.2).
- If the speed is too low, increase it progressively.
- Move the whisk slowly from the centre to the edges of the
container (beaten egg whites, mayonnaise, etc.).
Note: To remove the equipment, turn in an anticlockwise direc-
tion (white arrows in diagram 3.4 / Arrows on the outside of
the mixer tube).
- Angle the mixer slightly and start to stir whilst keeping the
blade off the bottom. The products will be sucked up by the
whirlpool and pulverised.
- Then, allow the Mixer to rest at the bottom so that the job can
be finished without fatigue.
- Remove the Mixer from the pot after it has come to a complete
stop.
- Respect the safety instructions in § 3.1.
- Align the bayonet of each whisk with the groove of the reduction
box spindles and push in fully.
Each of the whisk rings should be flush with the reduction box.
- Remove by pulling each whisk.

- Insert the nose of the motor unit and align the 2 lugs with
the 2 cavities in the machine.
- Lock the two assemblies together by turning the motor unit
by 1/4 turn in a clockwise direction .

- Turn the speed variation knob , graduated from 0 to 9:
. in a clockwise direction (viewed from above) to increase
the speed,
. in an anticlockwise direction (to reduce it.
- Max. mixer blade speed (position 9): approximately 10.000
rpm under load, depending on the consistency of the product,
or 17.000 rpm when empty.
- Max. whisk speed (position 9): approximately 1.400 rpm,
depending on load.
- Respect the safety instructions in § 3.1.
- Plunge the Mixer into the pot, making sure that is immersed
to 2/3 at MAXIMUM of its length.
- Select the highest speed (BERMIXER only) by turning the speed
knob in a clockwise direction and start up (see § 3.2a).
- Respect the safety instructions in § 3.1.
- Hold the machine by its handle with one hand for light
preparations (egg whites) and with both hands for thicker
preparations (e.g. purées).
- All stews, cream and fish soups .
- Brandades, brunoises, cream of spinach, panandas.
Mashed potatoes
- Drain the potatoes when boiling and fully cooked
Remarks: For up to 6 kg of mashed potatoes, the whisk may be
used directly: for larger quantities, up to 20 kg or if the potatoes
are a little hard after cooking, mix roughly with the mixer at high
speed then use the whisk.
- Select medium speed (4 --> 6).
- Pulverise potatoes from the centre outwards to the edges of
the container.
- Season then add the hot milk at HIGH speed and mix until a
smooth creamy mixture is obtained.
Mayonnaise (for 5 litres):
- Start at medium speed.
- Progressively increase the speed, depending on the quantity.
Beaten egg whites (up to 60 eggs):
- Beat the eggs slowly at low speed
- Finish by progressively increasing to high speed to ensure
the volume and stiffness of the egg whites.
Others:
- Creams: pastry, butter, chantilly, genoese, meringue, flans,
choux pastry, soufflés, etc.
Important:
- Keep the motor assembly away from sources of heat.
- Handle the machine carefully and avoid dropping or
banging it.
Respect the safety instructions in § 3.1.
- Immerse the dirty parts of the tool in hot water.
- Start it up for a few seconds and the tool will be cleaned
automatically.

- After cleaning, hang the motor unit and the Mixer and Whisk
equipment on the wall support.
The machine is plugged in.
The electrical power supply to the socket is correct.

If low speed cannot be selected (BERMIXER only), check the
condition of the carbon brushes of the motor and change if
necessary, by removing the motor unit (see §6.1).
If variable low speed (BERMIXER only) or high speed cannot
be selected, check that the variator is not defective (see §6.1).
Stop and unplug the machine.
Check the condition of the Mixer on a regular basis:
- If when operating there are vibrations, play in the shaft, wear
in the bearings or the shaft is out of true.

If the machine stops in mid-cycle:

trip can reset.

purpose (UV, ozone, etc.) in accordance with the manufactu-
rers instructions.
- After cleaning and each time before use : geared reducer
housing and whisks in the same way as the tube.
- Do not immerse the Whisk or Mixer equipment.
- Do not clean the bearing bush and shaft of the Mixer or
the Whisk geared reducer in a dishwasher.
This should be dismantled over a table or a stable sup-
port so as to avoid injury when the shaft and the cutter
come out.
To prevent damage to the plastic parts, after putting them
through a dishwasher wait for them to return to room tem-
perature before doing anything with them

- Remove the 4 screws retaining the aluminium lower casing.
- Remove this casing and open the two plastic casings.

is always in the 0 position and that the wires are not trapped

Note: Before clipping the variator knob on, ensure that its two
clips are aligned with the casing cavities to avoid damaging
