The Dynamic Cooking Systems Professional
Ranges and Cool,tops feature a large number of
features varying vvith each model.Included on the
48", 36", and 30"' ranges is a large capacity gas
oven, with a gas infra red broiler. A smaller ove~
is designed into the 48" Range models also. All
models feature a minimum of 4 open burners,
with the option ,of up to 6 open top burners on
all models except the RG 304. All the 48" and
36" Ranges and <:::ooktops feature the possibility
of various Grill a][ld Griddle combinations. All
Range Models require installation of one of the
three Backguards (this piece must be ordered sep-
arately}except tht, RG 304 Model, which is
shipped standard with a 9 II Low Back.

These ranges and must be installed in conjunc-
tion with a suitable overhead vent hood. (See Step
1 for ventilation requirements.) Due to the profes-
sional high heat capacity of this unit, particular
attention should be paid to the hood and duct
work installation to assure it meets local building
codes. To eliminate risk of burns or fire by reach-
ing overheated surface units, cabinet storage
located above the surface units should be avoided.
.{:;f1U ~[;: Ventilation hoods and blowers
are designed for USt' with single wall ducting.
Howeve1; some 10ctOrl building codes or inspectors
may require doubu' wall ducting. Consult local
building codes and/or local agencies, before starting,
to assure that hood and duct installation will meet
local. requirements.
Hood blower speeds should be variable to reduce
noise and loss of heated or air conditioned house-
hold air when ma>:imum ventilation is not
required. Normally, the maximum blower speed
is only required when using the B-B-Q grill.
For best smoke elimination, the lower edge 06 the
hood should be installed a minimum of 30" to a
maximum of 36" above the range cooking sur-
face, -See Fig. 3. If the hood contains any com-
bustible materials (i.e. a wood covering) it must
be a minimum of ;36" above the cooking surface.
Check local building codes for the proper
method of range installation. Local codes vary.
Installation, Electrical connections, and
Grounding must comply with all applicable
codes. In the absence of local codes, the range I
cooktop should be installed in accordance with
the National Fuel Gas Code ANSI Z223.1-
1988 and National Electrical Code ANSI I NFPA
70-1990.
Be sure that the unit being installed is set up for
the kind of gas being used. The gas range is
shipped from the factory set and adjusted for
Natural Gas. If LP Gas (propane) is to be used,
refer to Step Five for instructions on converting
the range for LP use. (The unit is shipped
equipped for LP conversion: no additional parts
are required, but adjusting is necessary) Only a
qualified service technician or installer should
make this conversion.
Due to a high volt;Lme of vent.~lation air, a source
of outside replacenrlent air is recommended. This
is particularly imp'Drtant for tightly sealed and
insulated homes. A reputable .heating and venti-
lating contractor s]t1ould be consulted.

OVEN DOOR HANDLES !!
The range has a shipping weight of approximate-
ly 408 pounds or 354 pounds after removal of
packing materials. It is recommended that the
door, grates, burners, front kick panel and drip
pan (below knobs), be removed ro facilitate han-
dling. This will reduce the weight ro about 230
pounds.
To remove the door, open the door and hold i all
the way open. Close the hinge larches -See Fi 10
and release the door. The door can then be
removed by gently lifting and pulling thedoo ,
wirh the hinges UJ::I and our of the framt:,

It may be necessary to remove the oven doors and
knobs to pass through some doorways. With the
doors and knobs removed a 29-3/8" wide open-
ing is required. Without removing the door, a
30-13/16" wide opening is required -See Fig. 2A.

The professional range should be transported y
a dolly close to its final location. The range c n
be tipped back and supported on the rear legs
while the dolly is removed. The floor under t e
legs should be protected (Wood Strips, Carpet,
Paneling, Etc.) before pushing the unit back i to
position. Electric and gas connections should e
made (Steps 4 & 5) and the backguard installe
(Step 6) before the: range is placed in its final osi-
tion. If the unit i~; to be converted to LP gas,
convert is before pushing the unit into place. See
Step 5.

For proper performance, the professional ran e

rear left and right corners. Adjust the correspond-
ing rear corner of the range to an equal height of
the counter, as the rear leveling legs are not acces-
sible once the range is pushed into place. Once
the range is in place, the front leg levelers can be
accessed to level the front of the range. Replace
the kick panel and oven doors by reversing the
procedure described previously. It is important
that the two screws retaining the kick panel are
secure to prevent accidental access to live electrical
components and wires. -See Fig. 6
Always disconnec{ electric supply cord from the
wall outlet or serviice disconnect before servicing
this appliance.

The open top grates should be level and not rock.
They are supported in three places by leveling
screws and should be adjusted after final place-
ment of the range.
The grill and griddle sections are fastened in
place at the front with screws. They are designed
to be stationary and not meant to be removed for
cleaning.
The griddle has two leveling screws beneath the
rear flue cover which can be used to adjust the
griddle to the desired slope. The center screw is
for shipping and should be removed.
Observe all governing codes and ordinances when
grounding, in the absence of which, observe
National Electrical Code ANSI/NFPA No. 70-
1990.
RECOMMENDED GROUNDING
METHOD
This appliance is j~ctory equipped with a power
supply cord with a three-prong grounding plug
(with polarized pa.rallel blades). It must be
plugged into a ma.ting grounding, type receptacle,
connected to a correctly polarized 120 Volt cir-
cuit. If the circuil: does not have a grounding
type receptacle, it is the responsibility and obliga-
tion of the installt~r or used to have the existing
receptacle change~i to a properly grounded and
polarized receptac:le in accordance with all applic-
able local codes and ordinances by a qualified
electrician. In th(~ absence of local codes and
ordinances the receptacle replacement shall be in
accordance with the National Electrical Code.
THE THIRD GROUND PRONG SHOULD
NOT, UNDER ANY CIRCUMSTANCES, BE
CUT OR REMOVED (See Fig. 11).

Verify the type of gas supplied to the location
The range is shipped from the factory set up and
adjusted for natural gas. The unit can be readily
converted to LP gas. After LP conversion, burner
adjustment may be necessary.

DCS-RG-36: 7 Amp. Max.

NATURAL GAS REQUIREMENTS
Connection: 1/~~" N.RT. Minimum 5/8" dia,
flex line. Pressure: 6" to 14" W.C.
L.P. GAS REQUIREMENTS
Connection: 1/2" N.P.T. Minimum 5/8" dia.
flex line. Pressure: 11" to 14"WC. A regulator
is required at the L.P. source to provide a maxi-
mum of 14" WC. to the range regulator.
CONVERTING TO L.P. GAS
ile. If the Back Guard is in place, protect the
Back Guard during removal and installation of
the griddle to prevent scratching.
4. FOR GRILL UNIT
(MODEL RG484(:;L, GG, RG364GL)
To remove the grill assembly, begin by lifting off
the front trim adjacent to the grease gutter.
Beneath the trim, you'll find tWo screws, remove
them. Remove the Briquette Rack with briquettes
(if in place). Remove the (2) screws holding the
grill igniter in place, then without removing the
wires, gently lay the igniter on the side. Use care
around the grill igniter, it is fragile. Remove the
tie wire securing thl~ grill burner then remove the
grill burner. If the Back Guard is in place, pro-
tect the Back Guard during removal and installa-
tion of the grillpar'ts to prevent scratching.
GENERAL
5. OVEN
Empty the oven, remove the tWo oven rack side
supports, the four \:;,rackets and screws holding the
oven bottom down" and then the oven bottom.
Remove the screw securing the oven burner, than
remove the burner. Replace the oven burner ori-
fice with the red color coded orifice supplied
(wired to the tubin!~). Tighten until snug.

SMALL OVEN (48" MODELS ONLY)
Converting a range from factory set natural gas to
L.P. is best done prior to pushing the range in
place while the back of the range is accessible,
prior to installing the back guard. Begin by mak-
ing sure that the range is unplugged. Next
remove the open top burner grates and the enam-
eled pans beneath the grates. Treat all parts with
care to avoid chipping the porcelain enamel. Lift
and remove all open top burners.
2. REGULATOR
-See Fig. 16
The convertible regulator on this unit has a nat-
ural gas setting of5.0" WC. for natural gas and
10" WC. for L.P., and can be found in the left
rear corner of the burner box. Remove the slot-
ted plug in the regulator and turn it over so that
the side stamped "L.P." faces outward, then rein-
sert ensuring it is properly locked in place.
3. FOR GRIDDLE UNIT
(MODEL RG484GD,GG, RG364GD)
Empty the oven, remove the two side supports,
the four brackets, and screws holding the oven
bottom down, and then the oyen bottom.
Remove the screw ~;ecuring the oven burner, then
the burner. Tighten the oven orifice hood down
until seated against the integral predrilled L.P.
pin. A 1/2" deep well socket is ideal for this pur-
pose. Do not over 1:ighten.
To remove the griddle assembly, first lift off the
front trim adjacent to the grease gutter. Beneath
the trim, you'll find tWo screws,- remove them.
Also remove the rear flue cover and remove the
center shipping screw. With these screws
removed, you can now lift off the griddle plate
assembly. Lift vertically and to the rear and
remove the griddle thermostat bulb from beneath
the plate by sliding it out (Do Not Tug Hard at
the Bulb or Capillary). Then remove the screw
securing the griddle burner and remove the burn-
er. Use care around the griddle igniter, it is frag-

burner box. From the back of the unit with the
back guard removed, remove the infrared broiler
orifice with a 1/2 inch open end wrench and
replace with the black coded orifice supplied
(wired to the tubing in the rear). Tighten until
snug.

To install the air s;hutter, remove the mounting
screws, slide the air shutter in place from the side,

Ensure that the air shutter rests flat on the orifice
elbow bracket. (It may be necessary to rotate the
mounting nut on the orifice elbow slightly until
flush)

The air shutter is .for L.R Gas use only. Remove if
converting a L.R IGas unit back to Natural Gas.

GAS CONVERSION INSTRUCTION
Oven Broiler Burner
OPEN TOP BURNERS
Tighten all cooktop main bl,lrner orifice hoods
down until seated against the integral predrilled
L.P. pin. ~See Fig. 20. A 1/2" deep well socket is
ideal for this purpose. Do not over tighten.
Replace oven burner orifice and oven broiler ori-
fice with orifices supplied as described in steps 5
&6.
The Range is shipped from the factory set for
Natural Gas. When converting the appliance to
L.P. gas, it is necessary to install the factory sup-
plied air shutter on the oven broiler burner ven-
turi. The air shutter is located at the back of the
unit attached to the oven broiler burner tubing
8. REASSEMBLY
Reverse procedures ro install the burners. Make
sure that the burner is correccly centered on the
orifice. Before replacing all the grates erc., go ro
the next section "Hook Up". Ir is necessary ro
adjust all the air shurrers (excepr the oven broiler)
and the low serring prior ro final assembly, Step
7, Tesr and Adjusrmenr.
9 HOOK UP
A manual valve must be installed external to the
appliance, in an accessible location from the front
for the purpose of shutting off the gas supply. The
supply line must not protrude beyond the back of
the unit. Make sure the gas supply is turned off at
the wall valve before connecting the appliance.
*NOTE- The Arrou' on the Regulator indicatIng
direction of gas flow should be pointing towards the
front of the unit.
**The flex line for the gas supply must be metal
and be approved by an approved certifying
agency (AGA, CGA, or U.L.). Never use a hose
made of rubber or other synthetic material, as the
heat may cause the hose to melt and develop
leaks.
The backguard is installed after the gas connec-
tion is made. The backguard must be installed
when there is less than a 12" clearance betWeen
combustibles and the back of the range (above
the cooking surface:) -See Fig. 3. A stainless steel
trim channel is available for covering the back-
guard mounting flanges for an island installation
-See Fig. 16
The gas supply connections should be made by a
competent technician and in accordance with local
codes or ordinances. In the absence of a local
code, the installation must conform to the
National Fuel Gas Code ANSI 223.1-1988, latest
edition.
.CAUTION: The appliance must be isolat-
ed from the building s gas supply piping system by
closing its individual manual shut-off valve during
any pressure testing of the gas supply piping ~ystem at
test pressures equal to or less than 1/2 psig
(3.5kPa.). II

When checking the manifold gas pressure, the inlet
pressure to the regulator should be at least 70" WC.
for natural gas or 12.0"forLP.
*Improper or lal:k of adjustments will void your
warranty.
.CAUTION: For Warranty coverage, DCS
requires that burner adjustments be made by a qual-
ified technician at the time of installation. Extreme
care should be used when adjustments are made
after installation. *
Check for the proper burner flame characteristics
and adjust air shutters if necessary -See Figs 17-20.
Each valve and air shutter is individually tested
and adjusted prior to shipment. Normally adjust-
ment is not required, however, vibration during
transit, gas conversion or variations in the local
gas supply may make minor adjustments neces-
sary. **
Burner flames should be blue and stable with no
yellow tips, excessive noise or lifting of the flame
from the burner. If any of these conditions exist,
check that the air shutter or burner ports are not
blocked. If this condition persists, adjust the air
shutter as required.
AD JUSTABLI~ LOW SETTING
Plug unit back in. Turn gas on. The open top
burner and grill v:llves used on your Range have
an adjustable low setting. Each valve is individu-
ally tested and adjusted on the appliance prior to
shipment. Due to fluctuations in gas pressure
and heating value or gas conversion, you may feel
it necessary to increase or decrease the gas flow at
the low position. The griddle is thermostatically
controlled, therefore, no adjustment is necessary.
To Adjust:
1. Turn knob counter-clockwise to the LITE
posItIon.
2. Once lit, turn Ithe knob back to the "LOW"
position.
If the flame is too yellow, indicating insufficient
air, adjust the shutter counterclockwise to
increase air inlet.
3. Remove knob.
4. Hold the valve :,haft still.-See Fig. 21
Insert a thin-blade:, flat-tipped screw driver
through the valve shaft and turn to adjust the
desired setting (clockwise-higher / counter-clock-
wise-lower). Be careful not to turn it down so
low that the flames disappear at any of the ports
or that a nuisance sparking is caused from the
igniter. Once the desired low flame setting is
achieved, replace 1:nob and turn burner off.
*1f the open top buJ"ner does not ignite, check the
spark igniter by listening for a clicking sound. If
you do not hear the igniter click, turn off the burner.
Check for a tripped' circuit bred'ker, blown fuse, or
poor wire connection to the igniter.
If the flame is noisy or tends to lift away from the
burner, indicating too much air, turn the shutter
clockwise to reduce air.
The open burner flames should be approximately
1-1/2 II high. The griddle and grill burner flames
should be 1-1/2" to 2". -See Figs. 17-18
TO CLEAN EXTERIOR SU'RFACES
The stainless steel surfaces may be cleaned by
wiping with a damp soapy cloth. Any mild glass
cleaner will remov,e fingerprints and smears. Do
not use steel wool as it will scratch this surface.
Small scratches may be removed by lightly sand-
ing, with the grain, using 120 grit paper.
