1. INTRODUCTION
This Technical Manual describes the technical characteristics that correspond to the automatic
coffee grinders in the MO2 / CAPRICCIO range.
The M02 / CAPRICCIO range has two models:
M02 / CAPRICCIO with a display
M02 / CAPRICCIO with no display
Both models in this range can be manufactured in different colours.
1.1. DEFINITIONS
Coffee grinding point: this is the point to which the coffee beans are ground, finer or
coarser.
Espresso coffee: infusion of coffee elaborated according to the following conditions:
- 7 g of ground coffee.
- The temperature of the infusion water between 92º C and 96º C.
- The water pressure at 8 kg/cm².
- The infusion time of the coffee between 20 and 28 seconds.
- The volume of water in the infusion 40 ml.
Programming mode: when the machine is ready for any of its functions or parameters to be
programmed.
Working mode: when the machine is in the working state and ready to prepare any of the
services it offers.
1.2. PRINCIPLE TECHNICAL CHARACTERISTICS
Ô Automatic: A press of the micro switch is enough to grind and dose the programmed
dosage of coffee.
Ô It can provide one or two doses of coffee.
Ô There is the option of grinding the coffee at the moment the dose is requested or pre
grinding the coffee beforehand.
Ô It automatically changes the grinding times to always achieve equal doses of ground
coffee. With this system, the quality of the beverage is constant.
Ô Capacity of the coffee bean hopper: 1500 grams
Ô Programming the dose of coffee in “grams” or “time”:

Note:
If the programming function <<COUNTRY CODE>> is programmed with the values 1 or 2, the
maximum dosage can be programmed up to 25 g.
Ô The grinder motor spins at 1250 r.p.m.
Ô The grinding teeth are of very high quality. Their diameter is 64 mm.
Ô All models in the range use 230 Vac.
Ô The power consumption of all the models in the M02 / CAPRICCIO range is 525 w.

2. DESCRIPTION OF COMPONENTS
1. Coffee bean hopper
The hopper is made of smoked transparent polycarbonate and the cover of ABS; it has a
maximum capacity of 1500 g of coffee beans.
The hopper has a gate that can be closed manually. It is used to block the exit of coffee beans
when it is removed from the grinder.

2. Coffee identification label
The hopper has a window where a label can be placed that identifies the type, variety or
quality of the coffee beans used in the hopper. It can also be used for publicity.
3. Knob for regulating the grind point
Made of POM, it is used to regulate the “grind point” of the coffee beans. Turning the knob
clockwise will make the “grind point” finer and turning the knob anticlockwise will make the
“grind point” coarser.
Never turn the knob clockwise with the grinder motor stopped.
If this is done, the compressed coffee beans will jam the grinder.

Only the third and subsequent services of ground coffee should be used after regulating
the new “grind point”
4. Display
El display is comprised of four 7-segment displays that can show four digits.
5. Programming button
Pressing on this button gives access to the deferent programming functions on these coffee
grinders.
6. button
Pressing on this button increases the value of the function you are programming.
There is no button to decrease a value. To decrease a value it is necessary to advance
through the values until you loop back to the beginning to choose a lower value.
7. button
This button is used to programme a dose of ground coffee that the grinder supplies for a single
coffee. The doses that can be programmed are:
Measuring in time: 1 second minimum and 7 seconds maximum with increments of 0.05
seconds.
Measuring in grams: 5 grams minimum and 20 grams maximum with increments of 0.5
grams.
8. button
This button is used to programme a dose of ground coffee that the grinder supplies for two
coffees. The doses that can be programmed are:
Measuring in time: 1 second minimum and 7 seconds maximum with increments of 0.05
seconds.
Measuring in grams: 5 grams minimum and 20 grams maximum with increments of 0.5
grams.

9. ON/OFF button
On the grinders that have a display, this button is used to switch the grinder on and off.
10. Programming button
This button is only on the grinders that do not have a display. It is used to go fromworking
mode” to “programming mode”.
10. Coffee presser
This is used to compress the ground coffee in the filter holder. This will provide an adequate
infusion of the coffee.
The grinders have a 55 mm presser that coincides with the standard filter holder on the
market. For filter holders with different diameters it is necessary to substitute the presser for
another that is the correct diameter.
11. Micro switches
Activating the micro switches with the filter holder will dose the corresponding dose of ground
coffee into the filter holder.
12. FILTER HOLDER guide
Its function is to make the loading of the ground coffee into the filter holder easier. The
grinders have filter holder guide that coincides with the standard filter holder on the market.
For filter holders with different diameters it is necessary to substitute the filter holder guide for
another that is the same diameter.
13. Residue tray
Made of POM, this element collects the coffee grinds that fall from the filter holders during the
loading process.

14. Mains switch
This is used to switch the grinder on or off. It connects and disconnects both phases of the
mains.
15. Mains flex
It is 1500 mm long. The plug is Schucco.
16. Housing
It is divided into two pieces: the front made of aluminium and the casing made of sheet metal.
To remove the housing, follow these instructions:
Remove the coffee hopper.

The useful life of the grinders is reduced if the coffee mix has torrefacto coffee
(caramelised coffee)
When the grinding teeth are changed, to adjust the “grind point” of the coffee, proceed in the
following way:
Make sure there are no coffee beans in the grinder.
Request a dose of coffee so the grinder motor starts.
Turn the “grind point” knob anticlockwise until you hear the top teeth touch the bottom
teeth. Now switch of the grinder.
Turn the knob clockwise 8 “notches”. The moving grinding teeth will separate from the
fixed teeth.
Now introduce the coffee beans into the hopper and request a ground coffee. If
necessary, adjust the “grind point” finer or coarser.
19. Brake
Its job is to maintain the grinding teeth separated at a constant distance when grinding the
coffee beans. The objective is to achieve a uniform “grind point” of the coffee.

22. Loading gate assembly
This system opens and closes the loading gate for the ground coffee for single or double
serves.
The technical characteristics of the motors are:

When one of the two motors is activated, it receives 24 Vdc for 50 ms.
23. “Butterfly” motor
Its job is to take the ground coffee to the dosage element for a single of double coffee.

When the motor is activated to change position, it receives 24 Vdc for 50 ms.
When the grinder is working, this motor receives 3 impulses of 24 Vdc for 10 ms. The three
impulses are received in the first 3 tenths of a second, one impulse for each tenth of a second.
The objective is to ensure the palette is closed.

24. Distributor – dosage element
It is made of polycarbonate. Its job is to guide the ground coffee into the dosage element.
Remove it in the following way:

Separate the cover from the distributor.
Disconnect the wiring from the butterfly motor.

3. INSTALLATION AND SWITCHING ON
3.1. Unpacking
Proceed with unpacking the grinder when you are at the site location. Dispose of the packing
material according to current legislation.
3.2. INSTALLATION AND SWITCHING ON
Place the grinder in the chosen position and plug it in to a socket that supplies 230 Vac, a
minimum of 550 w and is earthed.
Ô Switch on the grinder with the ON/OFF button.
Ô Fill the hopper with coffee beans.
Ô Programme the grinder according to your requirements.
Ô Regulate the “grind point" of the coffee.
Basic safety norms:
a) Never touch the grinder with wet hands or feet.
b) Never connect, disconnect or switch on the grinder with bare feet.
c) Never pull the flex to unplug the grinder from the socket.
d) Never leave the grinder exposed to the elements: sun, rain, snow, etc.

5. CLEANING AND MAINTENANCE
Cleaning is an important part of the maintenance in order to guarantee an adequate level of
hygiene of the grinder.
Maintenance is an important factor to achieve optimum performance from the equipment.
5.1. CLEANING PROGRAMME
Daily
Ô Residue tray. Use warm soapy water to clean or put in a dishwasher.
Ô Coffee presser. Wipe with a clean damp cloth.
Monthly
Ô Coffee bean hopper. When empty, wipe with a clean damp cloth inside and out.
Never submerge the grinder any liquid
Never use alcohol or abrasives to clean the grinder housing
5.2. MAINTENANCE PROGRAMME
Depending on consumption of coffee
Ô Regulation of the “grind point” of the coffee. When there is a variation in the “grind
point” of the coffee use the regulating knob to achieve the desired “grind point”.
On changing the coffee “blend” or a new roast of the coffee
Ô Regulation of the “grind point” of the coffee. When there is a variation in the “grind
point” of the coffee use the regulating knob to achieve the desired “grind point”.
