Cook and Hold Oven
Since 1947, Foodservice Equipment That Delivers!
1. Turn off power switch. The cooling fans will continue to operate until
electrical housing cools down. Wait for cooling fans to turn off before
unplugging the heater.
2. Before cleaning, unplug heating unit.
3. Racks are easily removed without tools for cleaning. Simply lift up and
pull out. The tray slides may be hand washed or run through an
automatic washer.
4. Vinyl trim should be washed with a chlorine-free detergent and water.
Rinse thoroughly with clear water and allow to dry. Never use abrasive
cleaners, waxes, car polish, or substances containing strong aromatic
solvents or alcohol.
5. To clean stainless steel surfaces use only cleansers, detergents,
degreasers, or sanitizers that are certified to be "chloride-free" and
"phosphate-free," and cleansers, degreasers, or sanitizers only in the
recommended concentrations. DO NOT exceed recommended
concentrations or mixing ratios. After cleaning and sanitizing, rinse all
exposed surfaces thoroughly with large amounts of clear water. Wipe
off any standing liquid or residue from all surfaces, corners, or near
edges.
6. For thorough cabinet cleaning, remove the heater module from the
top of cabinet and store in a dry place. Note: It will require at least
two people to remove the heater.

and safety codes and will give years of
dependable service if used properly. This
cart should be thoroughly cleaned before it
is used.

with water jet.
WARNING
The cooling fans will operate continuously while the unit is
plugged in, even though the on/off 'switch is off. Do not unplug
heater until cooling fans have turned off.

The damage appears as pits, eruptions,
voids, small holes, cracks, severe discol

oration, or dulling of the metal finish.
Water with high chloride content can
also damage stainless steel. If unsure
of your water quality, we recommend
you have it tested. THIS DAMAGE IS
PERMANENT, COSTLY TO REPAIR, AND
IS NOT COVERED BY THE WARRANTY.
Before placing this cabinet into service, please operate this unit for 30
minutes at 250°F. This procedure will remove any residual oils which
may adhere to the metal surfaces during the manufacturing process.
To cool down the cabinet, turn off the power and open the doors for
about 15 minutes. You may notice a slight emission of smoke which is
normal during this start-up procedure. Cabinet is now ready for normal
operation.
Do not locate this unit under an overbead ventilation system or close
to other cooking equipment. Fumes and grease particles generated by
other equipment can be drawn by the cooling fans into the control
compartment of the heater. These deposits should be avoided in order
to assure top performance and longer life.
Timer
Programming
NOTE:
The setpoint may be displayed at
any time without disturbing the
timing operation bypressing the
"SET" key. The actual value is
returned to the display by
pressing the "ENT" key.
4. When the desired setpoint is displayed, press the "ENT" key. The new
setpoint will be entered into memory, and the up and down keys will
become inoperative. If the unit is in the reset or timed out states, the
display will show either zeros or the setpoint value depending on
programming. If the unit is in the timing mode, the display will show the
actual time value. If a new setpoint has been entered while the unit is
in the timing or timed out operating states, the new setpoint will not
become effective until the unit is reset.

Initial Start-up
CAUTION
1. Select roasting time by pressing the "SET" key on the timer display.
The display will either show zeros or the setpoint (if one exists) in
memory. The other keys will also become active.
2. When the "SET" key is pressed, the display will show the farthest
right digit on the display flashing in cursor fashion. The flashing digit
is the one which can be changed using the up and down keys.
Pressing the < key moves the position of the flashing cursor digit to
the left so that any digit can be changed individually.
3. The flashing cursor digit can be changed by pressing the

Heater/Cabinet
Operations
2. For optimum product integrity we recommend the use of the
humidity water pan at all times. This pan should be checked
frequently for water level.
3. Set the Cook Temperature Dial to cook temperature. Set Hold
Temperature Dial to hold temperature. Note: The temperature is
monitored by the return air through the air probe.
4. Plug the heater into the proper power source. If humidity is required,
remove water pan from interior of cabinet, fill halfway with warm
water and return to cart.
5. Turn on the power switch. The power light will illuminate. The hold
light will also illuminate. The heater will be in the hold mode until the
Cook/Start button is activated. Note: If the temperature dials are set
in the OFF position the cabinet will heat to approximately 100°F.
Note: Turning the power off will cancel the current cook cycle.
6. Press the Cook/Start button to start cook cycle. The Cook Light will
illuminate and the Cook Timer LED will flash.
7. When the cook cycle has ended, the heater will automatically switch
to the hold cycle and the hold indicating light will illuminate. The
CootoT/merLED will extinguish. The cabinet will remain in the Hold
Cycle until the cabinet is turned off or another Cook/Start cycle is
started. Please note that if a lower hold temperature is selected, it
may take a while for the cabinet temperature to decrease depending
on the product being held. Once the cabinet is turned off, the timer
will return to the original cook time setpoint.
8. The cooling fans will operate whenever the inside electrical housing
elevates above 120°F to protect the electrical components.
Illumination of the TROUBLE PILOT LIGHT indicates that the
temperature in the control housing has exceeded safe operating limits.
If this condition should occur, unplug the cabinet and ^/a B M i M f call
for service. Prolonged operation of the cabinet will result
in electrical component failures.

Switch
Some casters are equipped with Zerk grease fittings so that they may
be easily lubricated with a grease gun. Recommended lubrication is at
least once every six months. Lubrication will be required more
frequently if carts are cleaned with a hot water or steam cleaning
system. Casters with special bearings are recommended for frequent
cart wash or steam cleaning situations.
Check frequently to insure that all door latches are secure. Latches may
become "sticky" due to residue buildup from daily use and cleaning.
Lubricate latches regularly with WD-40, silicone spray, graphite or other
commercial lubricants for stainless steel products. Do not use oil.
PERIMETER BUMPERS___________________________
Vinyl which has been dislodged from the channel due to severe bumping
or scraping can be pried back into place with a common screwdriver.

WIRE DIAGRAM COOK AND HOLD
Carter-Hoffmann Corporation ("CARTER-HOFFMANN") warrants to the initial
purchaser of its standard Carter Line Products that CARTER-HOFFMANN will, at its
option, repair or replace, during the warranty period set forth below, any part of such
products made necessary due to a defect in material or workmanship which is present
when the product leaves its factory and which manifests itself during the warranty
period under normal use and service.
This warranty applies only to original equipment owned and possessed by the initial
purchaser and the warranty period begins on the date of original shipment from the
CARTER-HOFFMANN factory and extends as follows: to electrical and refrigeration
components for one year; to electrical and refrigeration labor for 120 days; to
refrigeration compressor unit for I year (limited to replacement of the unit onlynot to
include labor for removal, repair or replacement), and to all other component parts and
labor for 12 months.
Repair or replacements under this warranty will be performed, unless otherwise
authorized in writing by CARTER-HOFFMANN, at its factory. All parts or
components to be repaired or replaced under this warranty are to be shipped prepaid to
CARTER-HOFFMANN, with reimbursement credit for such part or component to be
given if found by CARTER-HOFFMANN to be defective.
CARTER-HOFFMANN neither makes nor assumes and does not authorize any other
person to make or assume any obligation or liability in connection with its products
other than that covered in this warranty. This warranty applies only within the
continental United States and Canada. In Alaska and Hawaii, this warranty applies only
to and is limited to the supply of replacement parts.
Any implied warranty of merchantability or fitness for a particular purpose is hereby
specifically disclaimed by Carter-Hoffmann Corporation. There are no warranties,
expressed or implied, which extend beyond the description on the face hereof.
This warranty does not cover and CARTER-HOFFMANN shall not under any
circumstances be liable for any incidental, consequential or other damages (such as
injury to persons or property, loss of time, inconvenience, loss of use, loss of business
or profits, or other matters not specifically covered) arising in connection with the use
of, inability to use, or failure of these products.
