PARTS & SERVICE MANUAL for the DH Series
Display and Hold Cabinets
The DH Series Display & Hold Cabinets are engi-
neered for efficient, dependable service and to be
trouble free throughout the years. Like any piece
of fine equipment with moving parts and broad
temperatures ranges, physical wear takes its toll.
When this happens, the information found in this
Manual will prove very helpful. Although the
instructions are easy to follow, all repair proce-
dures should be carried out by a qualified Savory
Certified Service Representative.
THIS MANUAL SHOULD BE RETAINED FOR FUTURE USE

CAUTION
UNPLUG UNIT AND ALLOW TO COOL
BEFORE ATTEMPTING ANY SERVICE
PROCEDURES IN THIS MANUAL
NOTE: To gain access to internal compo-
nents of this unit, remove the 2 screws
securing top cover to unit and remove cover.
A Main Power Switch
(Figure 1)
1. Disconnect the wire leads from switch noting
proper orientation.
2. Squeeze ends of switch and push through
front of control panel.
3. Refer to wiring diagram when installing new
switch.
B Thermometer
(Figure 1 & 2)
1. Open front door of unit and remove the sheet
metal screw securing the temperature sensor
probe to the inside of the right front upright
post.
2. Remove sealastic compound securing capillary
tubing to upper right front upright post.
3. Cut wire tie securing capillary tube to unit.
Note proper orientation of tube placement.
4. Squeeze tabs on back of thermometer and
carefully push thermometer through front of
control panel.
5. NOTE: Capillary tube and temperature
bulb are removed with the thermometer.
C Heat On Indicator Light
(Figure 1)
1. Disconnect wire leads from back of light noting proper
orientation.
2. Squeezing tabs on light, push through front of control
panel.
3. Refer to wiring diagram when installing new light.
D Add Water Indicator Light
(Figure 1)
1. Disconnect wire leads from back of light noting proper
orientation.
2. Squeezing tabs on light, push through front of control
panel.
3. Refer to wiring diagram when installing new light.

E P.C. Board
(Figure 3 & 5)
1. Disconnect the wire leads from back of Add Water
indicator light.
2. Disconnect the wire lead from back of Heat On indicator
light.
3. Disconnect wire leads from back of P.C. board.
4. Disconnect sensor board from back of P.C. board.
5. Disconnect three sensor wires from top of water tank.
6. Remove the 4 nuts from the mounting stud screws and
remove P.C. board. Note proper orientation of spac-
ers.
7. Refer to wiring diagram when installing new P.C. board.
F Terminal Block
(Figure 5)
1. Disconnect all wires from terminal block.
2. Remove nuts from stud screws and remove terminal
block.
3. Refer to wiring diagram when installing new terminal
block.
G Ballast
(Figure 3 & 4)
1. Disconnect wire leads at both terminal blocks.
2. Cut yellow, red and blue/white wire leads at the lamp
holder sockets. Leave approximately 6” of wire at the
sockets.
3. Disconnect blue wires at wire nuts.
4. Remove 4 mounting screws securing ballast to floor on
unit. Note proper orientation of spacers.
5. When installing new ballast, connect existing
wiring ends with new wiring from ballast using
wire nuts.
6. Refer to wiring diagram when installing new
ballast.
7. Be sure all wiring is secured with ties in original
position.
H Gear Motor/Rack Adaptor
(Figure 5 & 7)
1. Disconnect wire leads at pigtail terminals.
2. Remove 4 motor mounting screws.
3. Replace rack adaptor if necessary.
4. Refer to wiring diagram when installing new gear motor.

I Door Switch
(Figure 1)
1. Remove wires from back of switch.
2. Carefully squeeze back of switch and push through
front of control panel.
3. Refer to wiring diagram to install new switch.
J Water Tank/Solenoid Valve
(Figure 5 & 6)
1. Remove 3 sheet metal screws securing sensors to
top of water tank.
2. Remove top cover on water tank.
3. WARNING: SIPHON ALL WATER FROM TANK.
DO NOT ALLOW WATER TO COME IN CONTACT
WITH WIRING.
4. Disconnect solenoid wire leads at P.C. board.
5. Loosen hose clamp on solenoid hose.
6. Remove mounting screws from side of unit and
carefully slide tank with solenoid attached from unit.
7. Remove solenoid from water tank and replace if
needed.
8. When attaching new solenoid to water tank, do NOT
over-tighten nuts, as this may cause leakage.
9. Refer to wiring diagram when installing new tank or
solenoid valve.
K Heating Element
(Figure 5)
1. Disconnect wires from heating element terminals.
2. Remove nut securing mounting bracket to wall of
unit.
3. Carefully slide element from unit.
4. Refer to wiring diagram when installing new ele-
ments.
L Blower Motor Assembly
(Figure 3)
1. Remove fan.
2. Disconnect wire leads from terminal blocks.
3. Remove 2 sheet metal screws securing blower motor
assembly to side of unit and lift assembly out from unit.
4. Remove the 4 mounting nuts and separate housing from
motor assembly.
5. At this point check to see if your unit has a 2” ventilation
hole. Refer to Section M for location & bearing lubrica-
tion information.
6. Refer to wiring diagram when installing new motor
assembly.

M Blower Motor Bearing Access and
Ventilation Hole
(Figure 7, 8 & 9)
1. Disconnect unit from power source and
allow to cool thoroughly before proceeding
with this service operation.
2. Remove top cover. Remove lexan panels,
merchandising panels and flourescent
bulb from area involved.
3. Remove 10 sheet metal screws securing
cover to air box assembly and remove
cover. (Figure 7)
4. Remove the 2 sheet metal screws secur-
ing blower motor to side of unit. (Figure
7)
5. Lift blower motor up and move away from
corner of unit. Do NOT disconnect any
wiring from motor.
6. CAUTION: To prevent debris from getting
into the food chamber, completely cover
warm air return hole in component plate
with a piece of duct tape. (Figure 8)
7. Using a hole saw or Greenly punch, place
a 2-1/8” diameter hole into side of unit as
shown in Figure 8.
8. IMPORTANT: REMOVE TAPE FROM
AIR RETURN HOLE and clean out any
debris from area before returning blower
motor to original position.
9. Return blower motor to original position
and reattach to side of unit. Replace air
box cover.
10. Remove the rubber plug in the blower
motor bearing and add 1 drop of SAE 20
non-detergent oil. Replace rubber plug.
(Figure 9)
11. Replace fluorescent bulb, lexan panels,
merchandising panels and top cover.
NOTE: PERIODIC LUBRICATION OF THE
BEARING IS NECESSARY. THIS SHOULD
BE INCLUDED WITH ANY PREVENTATIVE
MAINTENANCE PROGRAM.

N Steam Generator
(Figure 3, 5 & 6)
1. Remove 10 sheet metal screws securing outer
cover and remove cover.
2. Remove 4 sheet metal screws securing inner cover
and remove cover.
3. Disconnect all wire leads from steam generator.
4. Loosen hose clamp on solenoid tube and fitting (at
generator end).
5. Remove the 4 mounting nuts securing generator to
floor of unit.
6. Refer to wiring diagram when installing new genera-
tor.
0 Interior Lamp Sockets
(Figure 10)
1. Remove 60 W lamp and unscrew ceramic socket.
2. The entire top portion of the unit must be removed
to gain access to the socket. Remove all the sheet
metal screws around the perimeter of the top
control box.
3. Carefully lift up top.
4. Disconnect socket wires at wire nuts. (Models prior
to 6/92)
5. Refer to wiring diagram when replacing sockets.
6. CAUTION: Replace lamps with Savory Part
#45025. These light bulbs have a hi-tempera-
ture silicone coating to help prevent breakage.
P Power Cord
1. Remove sheet metal screws securing bottom cover
to unit.
2. Disconnect wiring at wire nut connections.
3. Squeeze strain relief bushing and push through
panel.
4. Refer to wiring diagram when installing new power
cord.
