PROCESS OF BREAD MAKING
It’s important to put the ingredients into the bread maker in the EXACT
order given in the recipe. This means:
— FIRST, liquid ingredients - room temperature
— SECOND, egg
— LAST, ingredients like salt, milk powder, etc.
Also, make sure flour and yeast separate from wet ingredients.
Then place yeast on the dried flour.
Specially NOTE: yeast must be separate from salt. And additional
ingredients like fruit should be added when an audible signal of short beeps
after the dough kneaded for a while. To add the additional ingredients too
early will lose the flavor after a long time of kneading.
Note: Do not use perishable ingredients such as milk, eggs, cheese, and
yogurt with the delayed start function.
1) Rotate the bucket out anticlockwise;
take it out.
Notice: to avoid the paste sticking on the
bottom of the blade, coat the blade with
some oil when install the blade.
17
USING THE APPLIANCE
2)Prepare the ingredients and put them into the bucket in order. Normally,
water or other liquid first and then sugar/salt/flour and yeast or fermented
powder last.
Notice Cover the water with flour Before putting the ferment powder into
the flour, press out a pit on the paste to store the ferment powder. Ensure the
fermented powder is out of contact with the salt and other liquid.

INGREDIENTS INTRODUCTION
1. BREAD FLOUR
Bread flour is a kind of gluten flour(sometimes it’s called strong flour or high
protein flour, with high protein content), During bread fermentation, gluten flour
may keep the strength of the dough after its volume expansion and avoid the
collapsed shape. Compared with the common flour, bread flour is with more
wheat gluten. It makes the volume of bread bigger and the inner fiber texture
better. Bread flour is the most important ingredient for making bread.
Note: flour looks similar, but, the performance of flour fermentation and the water
absorption of flour vary from the producing place of wheat, growing seasons,
and grinding process to shelf life. It’s important to seal well after unpacking the
flour. Flour can absorb moisture in the air and become wet, especially in the rainy
season. If the flour is wet, pls add less water accordingly
in the ingredient.
2. LOW-GLUTEN FLOUR
Low-gluten flour, also known as cake flour, selected carefully from the flour
made by soft wheat, which is suitable for making rapid bread and cakes.
3.WHOLE WHEAT FLOUR
Whole wheat flour is made from grinding whole wheat, containing wheat skin and
fine quality. The whole wheat flour is heavier than common flour, and it’s more
nutritious. The bread made by whole wheat is heavier than white bread, and the
size is smaller. To make high quality bread, the ingredients are usually mixed with
whole wheat flour and bread flour.
Rye flour, also known as graham flour, is a high fiber flour, like whole wheat
flour. It must be mixed with a high proportion of bread flour to make the
bread volume bigger.
4.SELF-RISING FLOUR
Self-rising flour is a kind of premix flour added by baking powder. It’s specially
used as the ingredient of cake and other cookies. There’s no need to add baking
powder and sodium bicarbonate to make cake.
19
INGREDIENTS INTRODUCTION
5.FLOUR
Flour looks all the similar, but, the performance of flour fermentation and the
water absorption of flour vary from the producing place of wheat, growing
seasons, grinding process to shelf life. It’s suggested to try and test dierent
brands of flour in your local place, and then get the best flour according to your
own test experience.
6. CORN FLOUR AND OAT KERNEL FLOUR
Corn flour and oat kernel flour is the additional ingredients to make
pumpernickel bread, separately made from the grinding of corn and oat kernel,
which is used to strengthen the bread flavor and quality.
7. SUGAR
Sugar is important to add the sweetness and bread color, meanwhile, it’s also the
aliment of yeast to support the fermentation of white bread. White granulated
sugar is generally used for making bread, and brown sugar, pulverized sugar or
cotton sugar is used for special request.
8. YEAST
When yeast is added into the dough, the yeast will grow and propagate by
absorb the nutrition in the dough and produce the gas carbon dioxide to make
dough larger, soft and the structure of honeycomb. The yeast determines
the fermentation of the bread. The rapid reproduction of yeast needs the
carbohydrates of sugar and flour. There are two kinds of yeast: active dry yeast
and yeast instant. The yeast mentioned in the recipes of this bread maker are all
active dry yeast. The yeast instant is faster than active dry yeast, and only small
amount to use.
After unpacking the yeast bag, pls seal the bag well and put it into fridge
for refreshment. Note: high temperature may kill the yeast, pls recheck the
production time and shelf life of the yeast before using. Pls put yeast into fridge
as soon as possible after unpacking. Normally, bad bread fermentation is usually
results from the failure of yeast fermentation.
20
INGREDIENTS INTRODUCTION
9. SALT
Salt is necessary to better the bread flavor and the color during baking. But
salt may restrain the reproduction of yeast, so don’t add too much salt into the
ingredients. If you don’t like to add salt in the ingredients, you may leave it out.
And without salt, bread fermentation will be larger than normal standard.
10. EGG
Adding egg may change bread fiber texture, and the nutrition make bread larger
and add the flavor of egg.
Note: The eggs should be shelled and mixed well before adding into the
ingredients.
11. GREASE, BUTTER, AND VEGETABLE OIL
Adding oil makes bread more soft and extends the bread freshness.
Note: Butter should be melted before adding it into the ingredients. Take butter
out from fridge or cut it into pieces to make it mixed well.
12. BAKING POWDER
Baking powder is mainly used for the fermentation of rapid bread or cake. This
kind of leavening agent doesn’t need time for fermentation.
13. SODA
The same as the action principle of baking powder, soda can also be added with
baking powder at the same time, no need time for fermentation, it makes food
soft when heating by the chemical theory.
