Production Area Design
1. In the entire area, there should be some room to allow for inspection and cleaning when
manufacturing equipment is installed.
2. When placing the machines, all connections must be closed so that there are no openings.
3. The floor on which the machines are placed should be accessible from the point of view of the
cleaning operation or should be completely closed.
4. In cases where equipment passes through sections such as ceiling, floor, wall, sucient floor
should be provided between equipment and wall for cleaning or machine should be mounted on
the wall not to permit any gap.
5. Auxiliary equipment must be removable and can be reassembled to facilitate cleaning.
6. Production base should be covered with hard, smooth, easy to clean and non-absorbent material.
7. For insulation, non-absorbent materials should be used. These surfaces should be accessible.
8. Stacking should be made on palettes to let minimum 100 mm distance with the floor when
storing the products.
9. Vessels used to collect waste products and waste water should be made of easy to clean materials
and should have sucient volume.
10. Doors and windows opening out of the plant should be isolated to prevent any outsourced
contamination.
11. Sucient ventilation should be ensured in the washing rooms.
12. Water and water vapor that come into direct contact with the products should be of drinkable
quality.
13. Pipes, valves and fittings used for liquid materials: Either “on-site cleaning” programs should be
implemented for these sections or systems allowing easy disassembly and assembly should be
used.
14. All fixed pipes should be isolated to prevent condensation.
15. Drainage systems for wastewater must be installed in areas where cleaning is required.
16. Floor slope should be such as to prevent water accumulation on the surface.
17. Illumination lamps should be protected as to prevent falling and breaking.
18. Power cables should be stabilized (their contact with the ground should be prevented)
19. Machine’s electrical components should be closed to prevent dust formation. Water should be
prevented from entering electrical panels.
20. Machine parts such as fan, motor should be accessibly mounted.
21. Motor and other auxiliary equipment should be placed not to touch the floor.

Spral mxers are the machnes of dough preparaton group. The flour transferred from sfter s added
nto the mxer bowl. Water that measured accordng to the specalty of the flour s added nto the
bowl. The flour s kneaded n desred specalty by settng the kneadng duraton on machne control
panel.

General Rules on Unpackng the Machne
• Inspect the machne for damages durng transportaton before unpackng. Check that all parts
lsted n the shppng documents are present. If there are mssng parts, manufacturer must be
nformed wthn 24 hours.
• Dspose of the packagng materal n accordance wth the applcable legal regulatons when the
machne s fully nstalled.
• Store the materals used for lftng the machne n a sutable place for future use. (Fgure 2)

Load Structure
Machne can be shpped n form as stated below:
• Completely assembled;
• Partally assembled;
• Not completely assembled; parts are stacked on the pallet or optonally on top of any wooden
structure.
The vehcle to be transported must have the requred lftng capacty. (Please see machne’s techncal
nformaton chart.).
Lftng devce used to rase the machne; should have sucent lftng capacty and fork length.
Product Transport
Spral mxers are able to move n every drecton easly thanks to ther wheels. The machne s delvered
to the customer on a wooden pallet or n a wooden case.
GGM Gastro s not responsble for the malfunctons that may occur durng the transportaton.

The packaging structure of the product is made according to the world and European norms. It is made
ready for the shipping procedure by placing into cases packed with nylon and design in compliance
with standards by compressing with nylon with bubble pack.
DO NOT TAKE OVER PRODUCT WITH DESTROYED PACKAGE, DAMAGED CASE AND BEING CRUSHED
AND SCRATCHED. MOREOVER, INFORM THIS SITUATION IMMEDIATELY TO MANUFACTURER BY
TAKING PHOTO AND WITH A BRIEF NOTE.

Electrcal Installaton
Electrcal nstallaton produced n accordance wth the world and European norms adds value for your
machne and gves confdence to you and your employees. The electronc systems used were desgned
to facltate your works. Wth the technologcal possbltes, an easy and confortable usage s amed.
For the electrc/electronc problems, mantenance and/or repar should be only performed by the
authorzed people, the permnant damages that may occur as a result of system nterference made by
unauthorzed people should be prevented.

Rules:
• Customer s responsble for electrcal connecton. Also, customer have to make the electrcal
connecton accordng to the laws and regulatons n force.
• Not only the protecton of power supply and ts conductors, and also a strong and eectve
earthng system s customers responsblty.
• The cables used for the connecton of electrc pannel to power network have to be approved
(tested), and have to be applcable for the operaton of an nstalled machne.
• Make sure that the power supply s dsconnected before you ntend to connect electrcty.
• Make sure that the cables are n a safe place, and that there s no rsk for an accdent.
• Termnals should be stablzed properly n a way that they do not aect each other and damage
the peces nsde.
• There should be a dscoonector that provdes electrcal energy for the oven or a fused swtch
close to the customer.
• All of the cables that connect the oven panel wth ts elements are heat resstant.
• Ventlaton of electrcal cabn s mportant. Ar temperature may rse untl the levels whch
damage the peces.

REMOTE CONTROL ELEMENTS

Control Panel Usage
In the fgure below, the mage of STKMMK 40-100-200-250 control panel s shown. (Fgure 6)

Emergency Stop Button
Emergency stop button s used when havng faced wth a functonal malfuncton or emergency
stutaton. The task of the button s to stop all of the workng functons and to deenergsze the control
energy of electrcal penal.
Low Speed Button
The task of the button when the poston of t s selectve swtch Auto s to start the process of kneadng.
Hgh Speed Button
It s used to swtch the process of kneadng from low speed to hgh speed.
Tmer-1
It is used to set the duration of kneading in low speed. White indicator shows the duration set, orange
indicator shows the remaining duration. Timer is sent by the factory gradually, and it also has second,
minute, hour option.
Zaman Saat-2
It is used to set the duration of kneading in high speed. White indicator shows the duration set, orange
indicator shows the remaining duration. Timer is sent by the factory gradually, and it also has second,
minute, hour option.

Automatc Manual Swtch Button
It s used to set the operatng optons of dough mxng machne as manual or automatc.
7th Bowl Drecton Determnaton Button
It s used to rotate the bowl clockwse or counter-clockwse.
8th Bowl Everson Button
After fnshng the process of dough mxng, t s used to gather the dough left n the bowl.
Do the works gven below respectvely to provde the frst operaton.
1. Place the man swtch from “0” poston to “I” poston.
2. Swtch to automatc operaton poston to the machne.
3. Add flour and water n a proper amount for the capacty ndcated n the techncal specaltes
secton.
4. Determne low and hgh speed operaton duraton by usng low and hgh tmers.
5. Start the process of kneadng by pressng low speed button.
6. The machne wll automatcaly swtch to hgh speed at the end of the operaton duraton n low
speed, and t wll fnsh the process of kneadng by stoppng at the end of the tme set.
Important Note:
Do not put your hand between the body of machine and rotating bowl while the machine
operates.
While calculating engine power of the machine, water ratio was accepted as 55-60% of the
amout of flour.
While processing with lower amount of water ratio, decrease the amount of dough to be kneaded
in a proper amount.
DOUGH KNEADING PROCESS
1. Add flour and water n an amount to be kneaded n the bowl.
2. Do necessary settngs on machne control panel.
3. Operate the machne.
4. After completng the duraton set, empty the dough n the bowl by openng the door of bowl.
POINTS TO BE CONSIDERED IN THE USE OF PRODUCT
1. If the door of the bowl opens whle the machne operates, t stops automatcally.
2. If the machne moves as a result of shakng, check the stablzng chocks.
3. If balance occurs n the bowl, close the gap between pulley and bowl by loosenng the screws or
blateral bowl settng pulleys.
4. For the loosenngs that may occur on the belts, provde stretch by usng te nuts placed n buttom
and top.

PERSONAL PROTECTIVE EQUIPMENT
Operator must wear a glove whle emptyng the bowl.
Ths symbol means that the furnace may have a voltage supply nsde the electrcal
panel. Before openng the electrcty panel, t s necessary to cut electrcty from man
wtch or by drectly pullng out the socket from the plug (For mantenance personnel).
Whle the machne s operatng, do not nterfere. Operator must not wear baggly
clothes and te. He/She must wear a protectve bonnet.
Do not remove or damage warnng sgns.
It s mandatory to replace damaged and llegble warnng sgns. Please contact wth the
manufacturer for new warnng sgns.
Manufacturer s not lable for work accdents or damage to the machne resultng from falure to
observe the safety and warnng sgns or the removal of these plates from the machne.
POINTS SHOULD BE DONE TO MAKE THE PRODUCT LONG LASTING
Clean the nsde of the bowl, the spral and ts knfe at the end of each work. Do not use metal
scrapers durng the cleanng process.
Clean the external parts of the machne.
Lubrcate the buttom and top bearngs regularly.
Replace the bowl settng pulleys f they are eroded.
Check the belt pulley system regularly, and replace the old ones.
WARNINGS
For lfe, good and envronment safety, warnng sgns are located on necessary places of the machne.
These warnngs should be followed, and these sgns should not be removed.
The warnng sgns of the machne are shown below.

For stretching the belts, loosen the screws shown in the circle, afterwards, pull the platform connected
to screw in the arrow direction while loosening the screw shown in the circle. Continue the process of
pulling until the belts become stretched. When the belts become stretched, tighten the screws shown
in figure 10. After tightening the screws, the process of stretching will be done. (Figure 7 and Figure 8)
