General information about deep frying
GENERAL INFORMATION ABOUT DEEP FRYING
Oils and fats for the fryer
Only use “non-foaming” oils or fats, which are suitable
for deep frying. Never mix any oil or fat varieties.
Excessive foaming may occur.
Frying oil or liquid frying fat is recommended for use in this
fryer.
You may also use solid frying fat, but it must be melted in
a saucepan on the stove or melted in a water bath in an
appropriate container before transferring it to the frying tank.
Oils and fats after use
For hygiene reasons, you should store oils and fats in
the refrigerator after cooling them down. It is best to
use a glass container for this.
Do not leave the used oil or fat in the fryer.
1. First of all, let the hot oil or fat cool down in the fryer (do not
allow the fat to solidify).
2. Line a sieve with a layer of paper towel and sieve the
lukewarm oil or fat through it.
If you are mainly preparing chips with the fryer and the oil or
fat is sieved after each use, you can use it 10 to 12 times, but not
for longer than six months.
Please also always note the instructions on the packaging. Do
not mix fresh and used oil.
Replace the oil or fat, if it foams during heating, develops a
strong taste or odour or if its becomes dark and viscous.
To use it again, melt the solidifi ed fat in the glass container in a
warm water bath before pouring the fat into the fryer.
20
Low-acrylamide preparation
Acrylamide is suspected of being a carcinogenic
substance, which increases dramatically when heating
foods containing starch to over 175 °C.
Therefore, do not fry chips at a temperature of more than 175 °C.
Fried food should not be served brown, only “golden yellow”.
The correct frying temperature
The following table shows examples of which foods are
cooked at which temperature and for which duration.
If the i
n
structions on the packaging of the fried food differ from
this tab
le, please follow the instructions on the packaging.
Dry off wet foods before they are immersed in the hot frying
liquid.
This avoids spraying fat, on the one hand, while the fried
food forms an even crust, on the other hand, and accordingly
absorbs less fat.
Deep-frozen foods should always be slightly thawed and
dried off, in ord
er to remove the surface moisture.
Avoid salting and seasoning prior to deep frying: Salt promotes
the migration of water out of the inside of the surface of the
food and the formation of toxic substances.
Prior to immersing breaded foods, e.g. schnitzel, loose crumbs
should be removed from the fried food. Small pieces will
otherwise burn quickly in the frying liquid and therefore
accelerate the spoilage.
With meat or fi sh that isn’t breaded, no acrylamide is created, a
higher temperature setting (approx. 190 °C) is also appropriate
for this.

7. Rotate the on/off switch / temperature controller
9
in a
clockwise dire
ction to the required temperature.
The red indicator lamp
8
shows the connection to
the power supply and the heating-up process. After
the pre-selected temperature is reached, the lamp goes
out and lights up again after a short time = compensation
of heat loss.
The lid and the housing of the fryer become very hot
during operation. Use oven gloves, if you are inserting
or removing a basket.

fat may cause burns.
9. Open the lid by pressing the release button
7
.
10. Immerse the lled frying basket carefully and slowly into the
oil/fat and immediately close the lid.
The red indicator lamp
8
lights up after a short time

WARNING!
Burn hazard! Never touch the frying basket
after frying. It is hot! Only lift the frying basket
out of the frying tank using the frying basket handles
13
!
12. Open the lid and carefully lift the frying basket. Hang the basket
with the drip holder
14

Use
24
Pour oil/fat out of the frying tank
Filter the cooled oil or liquid fat through a sieve, in order
to remove food particles from the oil. (refer to
Oils and
fats after use
). Store the oil in a suitable container in a cool
place, e.g. refrigerator.
1.
Open and remove the lid (refer to Removable lid).
2.
Pick up the appliance using the side handles
