The Lang Purple Plus Oven
Push-of-a-Button Computerized Convection Cooking/Baking
The revolutionary new Lang Purple Plus Oven is a state-of-the-art computerized
convection oven. The oven features a graphic display, and affords the operator
complex baking functions with the simple press of a button.

Operation of the
Lang Purple Plus Oven
The following information explains the basic operation of the Lang Purple Plus
Oven, including programming nine products, operation of the oven, and manually
programming the oven.
Explanation of the Control Panel:
POWER SWITCH
Turns the oven on and off.
STATUS DISPLAY
Displays the oven status.
NUMBERED KEYS
Numbered 0 to 9 these keys contain the programs that, when
selected, will run the oven.
SHELF KEYS
Labeled A to E these keys indicate which shelf the product is placed
on, A being the top shelf.
"MAN PROG"
Short for Manual Program, this key allows the operator to enter a
program without being required to enter the programming code. The
program is lost once the oven is turned off, or when a new manual
program is entered.
"READ/CLEAR"
Pressing this key will take the operator back to the previous screen.
Holding it down will take the computer back to the beginning screen.
Press the Read/Clear key three times and then a product key and the
screen will display the program.
Daily Operation of the Purple Plus
Convection Oven
Step 1
Turn the Power Switch On by flipping the power toggle switch to the up position.
Step 2
Screen will display:
SELECT PRODUCT OR
READ/CLEAR TO PROGRAM
XX:XX PM XXX F
Select the product you wish to bake by pressing the number key (0-9) for that product.
Step 3
Screen will display:
PRODUCT 1
PREHEATING TO XXX F
XX:XX PM XXX F
When the oven reaches the desired temperature, the screen will display:
READY
SELECT PRODUCT
TO START
XX:XX PM XXXF
Step 4
Open the oven door, place product in the oven. Close the oven door and press the program
key you are using.
Step 5
The display will now read:
SELECT OVEN SHELVES
PRODUCT 1
XXXF XX:XX:XX
XX:XX PM XXXF
Press the lettered keys indicating what shelves you placed product on to bake (A is top shelf).
If you do not select a shelf, the oven will beep and the following display will appear:
NO SHELF SELECTED
PRESS E TO CONTINUE
Press the E Key and the previous display will appear, again asking to select oven shelves.
Step 6:
Once a shelf or shelves have been selected, the display will now read:
COOKING PRODUCT XX
TIER #1 XX:XX:XX
SELECT PRODUCT
XX:XX PM XXX F
At this time, you may select any other pre-set product program which has the same oven
temperature. A lighted red light next to a numbered product key indicates that the program is
compatible with the program selected, and can be run at the same time.
Step 7:
When the bake time is concluded, the oven will beep and the display will read:
DONE
PRESS SHELF BUTTON X
REMOVE PRODUCT
XX:XX PM XXX F
Step 8:
Once you have completed baking on one pre-set program, you may change to another pre-set
program by pressing the Read/Clear Key.
The display will now read:
SELECT PRODUCT OR
READ/CLEAR TO PROGRAM
Energy Saving Note: It takes approximately 8-15 minutes for a half size oven to heat to the
desired temperature (approximately 15-20 minutes for a full size oven). Consider turning the
oven off if you do not plan to use the oven again for 2 or more hours.
Entering a Manual Program
To enter a Manual Program, press the Man/Prog key. This will give you an 11
th
, but temporary
program. Manual Programs are lost when the oven is turned off, or when a new Manual
Program is entered. The Manual Program will also be erased if you press the Read/Clear Key.
The screen displays will walk you through manually programming the oven. The programming
functions are very similar to pre-setting programs.
Programming the Purple Plus
Convection Oven
The following procedures are step-by-step instructions for programming the Purple Plus for up to
TEN PRE-SET PROGRAMS. Additional programming capabilities exist, if the need arises.
Please contact the Lang Factory (Training and Corporate Services).
Step 1:
Turn the power switch on. If the oven is already on, press the Read/Clear key until the
following screen is displayed:

Step 2:
Enter the Password. The default password is 1 6 2 7 3 8.
The display screen will now read:
A: SET TIME
B: SET DATE
C: PROGRAM PRODUCTS
D: NEXT MENU
Step 3:
Set Time: Press the “A” key to set the time. This is the time that is displayed on the screen.
Set Date: Press the “B” key to set the date. This is the date that is displayed on the screen.
Program Products: Press “C” key to enter the programming mode.
Press the “D” key to advance to the next display screen:
A: EDIT ACCESS CODE
B: EDIT READY ZONE
C: EDIT PRODUCT MATCH
These functions are available as options to fine tune (customize) the oven operation to a
concept’s specific needs. All functions have factory pre-set defaults.

Press the “A” key to Edit the Access Code. The display will direct you to enter a 6-digit
code, and then to repeat entering it to verify it.

Press the “B” key to Edit the Ready Zone. The Ready Zone is a feature that alerts the
user when the oven temperature has been reached for a newly selected program. The
default is five degrees, which means that the beeper will sound to signal “ready” within
five degrees (up or down) of the actual programmed temperature. This is an alert. For a
specific concept, when efficiency dictates a different alert, this feature can be utilized.
(Example: Set the Ready Zone alert at 10

Press the Read/Clear Key to return to the former screen.
Step 4:
Press the “C” Key to Program products. The display screen will now read:

Step 5:
Select a number from one to nine, and press the key corresponding to that number.
If a Product Key selected already has a program, the screen will display:
EDIT PRODUCT?

Note: In line 3 and 4 in the above screen, the product program is displayed. Line 3: The N
refers to the Product Number. The T refers to the tier. The xxxF is the temperature. The C is
the cooking curve. Line 4 : The first six digits is the program bake time. The P is the Pulse-
how much of each 100 seconds of time the fan is to be on. The F-xx is fan high or fan low.
If you select Edit, follow through each screen making any changes as you go.
If you select Delete, the program will be deleted, and the next screen will display the
programming and editing choices A-D on one screen and A-C on the other.
Step 6:
If you selected a product number to program which has no program, the screen will display:

Step 7:
Enter the desired cooking/baking temperature. The screen will automatically advance to the next
display:

Step 8:
Enter the cooking time and then press E to advance to the next screen:

Step 9:
Enter the desired cooking curve. The cooking curve is a unique heat-compensating feature.
Refer to the Lang “Unique Baking Solutions with Lang Convection Ovens” for an explanation.
Once you have entered the cooking curve, press the E key or Read/Clear Key to advance to the
next screen:

Step 10:
High fan speed is approximately 1700rpm, and low fan speed is approximately1400 rpm. Some
products may bake more evenly with a lower fan speed. If you are creating a NO FAN program,
you will probably want the LOW Fan Speed, since the fan will activate when there is a call for
heat to maintain temperature during the bake cycle. Once you have entered either 1 or 2, the
next screen will automatically appear:

Step 11:
The Fan Pulse Rate is a true variable pulse. Determine how many seconds of each 100-second
block you desire the fan to be on, and enter that number. (Example: If you desire the fan to be
on all of the time, enter 100. If you want the fan off all of the time, enter 0. Any number
between 0 and 100 that you enter will be the number of seconds in each 100 second block that
the fan will be on.)
Note: In the Fan OFF mode, the fan will cycle on ONLY when there is a call
for heat to maintain temperature during the bake cycle.

Step 12:
If you press 1, you will go through the same sequence as outlined above. If you press 2, the next
screen to automatically appear is:

D: NEXT MENU
Step 13:
If you have more products to program, press the C key and continue through the programming
mode. If you have finished programming, exit the programming mode by pressing the
Read/Clear key, which will automatically display the next screen:
