Usingathermometer(soldseparately),neverallowtheoiltogethotterthan400°F(200°C).Ifthetemperatureexceeds
400°F(200°C),orifoilbeginstosmoke,immediatelyturntheburnerorgassupplyoffandwaitforthetemperatureto
decreasetolessthan350°F(175°C)beforerelightingburneraccordingtothemanufacturer’sinstructions.Ifthereisalid
(cover),donotremovethelid.
Donotuseacookingpotorvessellargerthan30quarts.Cookingpotmusttinsidethesecurityringofthecooker.
Donot llcookingpotbeyondmaximumllline.
Neveroverllthecookingpotwithoil/greaseorwater.Followinstructionsinmanualforproperoil/greaseorwaterlevels.
Instructionsfordeterminingthemaximumlllevelwhenusingapotwithoutamaximumllline:
A. Placethefoodinthepotorbasket,ifusing.
B. Fillthepotwithwaterjustuntilthefoodiscompletelysubmerged.Theremustbeaminimumof3in(8cm)between
theoil/greaseorwaterlevelandtopofthepot.
C. Removethefoodandbasketfromthepotandeithermarkthewaterlevelonthesideofthepotormeasurethe
amountofwaterinthepot.
D. Removethewaterandcompletelydrythepot,basket,andfood.
E. Thisistheamountofoil/greaseorwaterthepotistobelledwithtocookfood.
Failuretocompletelythawanddryfoodsmaycauseoilorgreasetooverow.Whenfryingwithoilorgreaseallfoodmust
becompletelythawedandtoweldriedtoremoveexcesswater.Ificeispresentonthefood,thismeansthethawingprocess
isnotcompleteandmaycauseaboiloverwhenplacedintohotoilcausingare.
Introductionofwaterorice,fromanysource,intotheoil/greasemaycauseoverowandsevereburnsfromhotoilandwater
splatter.Whenfryingwithoil/grease,allfoodmust becompletelythawedandtoweldriedbeforebeingimmersedinthepot.
Usecautionwhenplacingfoodinthecookingpotwhiletheapplianceisinoperation.
Neverdropfoodoraccessoriesintohotcookingliquid.Lowerfoodandaccessoriesslowlyintothecookingliquidinorderto
preventsplashingoroverow.Whenremovingfoodfromtheappliance,careshouldbetakentoavoidburnsfromhot
cookingliquids.
Check thermometer, if using, before each use by inserting it into a pot of boiling water and ensuring that it registers
approximately212°F±20°F(100°C±10°C).Ifitdoesnotfunctionproperly,obtainareplacementthermometerbeforeusing
theappliance.
Evenwhenburnerissetonlowame,oilwillheatupquicklyandigniteat550°to700°F.
Heatedliquidcanremainatscaldingtemperatureslongafterthecookingprocess.Nevertouchthecookingapplianceuntil
thecookingliquidhascooledbelow115ºF(45ºC)orless.
Trippingovertheappliancehosemayresultinthespillingofhotoilorwater,causingpersonalinjuryandpropertydamage.
Ifoilstartstosmoke,turnburneroff. Thismeanstheoilhasexceeded400ºFandwillcatchre.Allowoiltocoolto350ºF
beforerelightingburner.
Whencookingwithoil,alwaysturnoffburnerbeforeloweringfoodintooil.Relightafterfoodissubmergedintotheoil.
Donotturnburnertoalowsettingtokeepoil/greasehotforlateruse.Thetemperatureoftheoil/greasewillcontinuetorise
andcatchre.
Thisisanattendedappliance.Donotleaveapplianceunattendedwhileheatingoil/greaseorwater,cookingfood,orafterit’s
use.Theapplianceremainsatscaldingtemperatureslongaftercookinghasended.Allowtocoolbelow115ºF(45ºC)
beforecleaningandstoring.

Before using cooker check wind direction
and place cylinder DOWNWIND 20” in
upright position. This is necessary so
that cylinder supply system is arranged
for vapor withdrawal, and prevent cylinder
from striking unit if tipped.

Use20LB(9kgs)gascylinderthathasprotectivecollar(cylindernotincludedwithunit).
Keepventilationopeningsofcylinderenclosurefreeandclearofdebris.
LPgascylinderbeingusedmustbeconstructedandmarkedinaccordancewithspecicationsforLPgascylindersofthe
USDepartmentofTransportation(DOT),ortheStandardforCylinders,Spheres,andTubesfortheTransportationfor
DangerousGoods,CAN/CSA-B339.
Neverusegascylinderifthereisevidenceofdents,gouges,bulges,redamage,erosion,leakage,excessiverust,orother
formsofvisibleexternaldamage.Thismaybehazardous,andcylindershouldbetakentoaliquidpropanesuppliertobe
checked.
Neverattach/disconnectgascylinder,move,oraltergasttingswhenunitisinoperation.
Alwaysdisconnectgascylinderfromunitwhennotinuse.
Unitisdesignedtoworkwithpropanegasonly.Onlyusegascylindersmarkedpropanewiththisunit.

capsorplugsmaycauseleaks.

Soapywatertestmustbeperformedoutdoors,inwellventilatedarea.
Whenperformingsoapywatertest,keepunitawayfromopenames,sparks,orlitcigarettes.
Neveruseanopenametotestforgasleaks.
PREPARATION:
Removeanycookwareandaccessoriesfromunit.
Makesuregascylindervalve,regulator,andburnercontrolvalveareturnedtotheoffposition.
Preparesoapywatersolution:(1)partdishwashingliquid(ormoreifdesired),(3)partswater.
Applysoapywatersolutiontogascylindervalve,regulator,andhoselengthuptoburnercontrolvalve.
TESTING GAS CYLINDER VALVE:
Turngascylindervalveonandwatchforbubbles.Do not leave gas on more than 12 seconds.Ifbubbles
appear, stop, turn gas cylinder valve off,andretightentting.Repeattest.
TESTING REGULATOR AND HOSE:
After gas cylinder valve has passed soapy water test, turn gas cylinder valve on, and check for bubbles at
regulatorlocation,alongfulllengthofhose,andatburnercontrolvalve.Do not leave gas on more than 12
seconds.Ifbubblesappear,stop,turnburnercontrolvalveoff,turngascylindervalveoff,andretightenthe
connectionthatisleakinggas.Ifhoseissourceofleak,STOP.Donotuseunit.Hosemustbereplaced.
Whentestiscomplete,andtherearenoleaks,waitaminimumof5minutesforgasfumestodiminishbefore
lightingstove.
SOAPY WATER TEST WARNINGS & PROCEDURES
PERFORM “SOAPY WATER TEST” BEFORE EACH USE. SEE “SOAPY WATER TEST”
SECTION IN MANUAL.
EXTINGUISH ALL OPEN FLAMES BEFORE CONNECTING REGULATOR
TO GAS CYLINDER. TURN GAS OFF AFTER EACH USE.
MATCH LIGHT INSTRUCTIONS
1. Readallinstructionsandwarningsbeforelighting.
2. Checkgascontrolvalve,andgascylindervalve,tobecertainit
isinoffpositionbeforeconnectingtogascylinder.
3. Performsoapywatertestbeforeeachuse.
4. Removeallaccessoriesandcookingvesselsfromunit.
5. Turngascylindervalveon,thenturngascontrolvalveon.
6. Placealong,litreplacematchstickcloseenoughtoburnerto
ignite.
7. Ifignitiondoesnottakeplacewithinveseconds,turngas
controlvalvetooffposition,andwaitveminutesandrepeat
matchlightinstructions.
8. Aftereachuse,rstturngascontrolvalveoff,thengascylinder
valveoff.Alwaysallowunittocoolcompletelybeforetouching,
moving,orstoring.
Apply solution to gas

Ifunitisequippedwithburnercovers,removecovers.Neveruseburnercoversduringoperation.
Inspectburnerbeforeeachuse.Checkburnerandburnerventuritubeforinsectsandinsectnests.Acloggedtube
canleadtoarebeneathunit.
Ensuretheoriceiscenteredinsidetheventuritube.Failuretoproperlyassemblethevalveoricetotheventuri
tubecanresultingasleakorpotentialreatconnection.Seeassemblystepsforproperassemblymethod.
Ensuretheigniterpinisproperlyspacedandalignedtotheburner.Igniterpinshouldbe
approximately1/4”fromtheburnerandalignedtothetopofaburnerport.See Figure 1.
Conrmspacingiscorrectbypressingtheigniterbuttonandensuringspark.
ConnecthoseregulatortoLPgascylinder.
1. Makesuregascylindervalveisclosed.Turnvalveclockwiseuntilitstops.
2. Makesureburnercontrolvalveonstoveisintheoff position.
3. Removeprotectivecapfromgascylinderandcouplingnut,ifapplicable.
4. Centerandinsertregulatornippleintovalveoutletongascylinder.Turnregulator
couplingnutclockwiseuntilitstops.DO NOT OVER TIGHTEN. See Figure 5.
Performsoapywatertest.
Beforestartinglightingprocedure,makesureallcookingaccessoriesandcookingvesselsareremovedfromunit.
Whenlightingburner,removeallpartsinside,oronunittopreventexplosionfromgasbuild-up.
TO USE:
1. Turngascylindervalveon.
2. Pushburnercontrolvalveinandturncounter-clockwise1/4turntoHIGHsetting.
3. Pushignitorbuttontolight.
Ifignitiondoesnottakeplacewithinveseconds,turnburnercontrolvalvetooffposition,waitveminutes,and
repeatlightingprocedures.Ifignitionstilldoesnotoccur,seematchlightinstructions.
Ifamegoesoutduringcooking,turnburnercontrolvalveoff,turngascylindervalveoff,removeanycooking
accessoriesorcookingvesselsfromunit,andwait5minutesbeforerepeatingignitioninstructionsabove.
Burnercontrolvalveadjustsburnerame.Turnvalvecounter-clockwisetodecreaseame.Turnvalveclockwise,
slowly, toincreaseame.Pushburnercontrolvalveinandturnclockwisetoshutameoff.
Visuallycheckburnerame.Acorrectameshouldbebluewithasmallamountofyellowatthetip.Anincorrect
ameisexcessivelyyellowandirregular.See Figure 2.Ifanincorrectameoccurs,turnburnercontrolvalvetooff
position,turnoffregulatorandgascylindervalve.Allowunittocoolandthencleanburner.Letburnerdry
completelybeforere-lighting.Adjusttheairshuttertotheburneruntiltheburnerameisasblueaspossible.See
Figure 4.
Afteruse,turnburnercontrolvalveoff,thenturngascylindervalveoffanddisconnecttank.
Type1regulatorswillhaveahook,asshowninimagebelow.Theregulatorhookisusedtokeeptheregulatoroff
thegroundwhenremovedfromtheLPcylinder.Attachregulatortounitusinghook.See Figure 3.

ALWAYS MAKE SURE UNIT IS COOL TO THE TOUCH BEFORE CLEANING AND STORING.
Simplywipedowntheunitwithadampclothaftereachusetokeepinproperworkingcondition.
Donotuseacleaningagent.Makesuretodrythoroughly.
Ifanyrustingoccurs,usesteelwooltocleanandbuffaffectedarea.
Theexterioroftheunitmaybetouchedupwithhightemperatureresistantpaint.
Storeonlywhenreiscompletelyoutandallsurfacesarecold.
Storecookerstandincovered,dryareaaftercleaning.
When a flame occurs inside the venturi this is caused by a blockage and could cause damage to the
hose assembly.
TO CLEAN BURNER:
1. Removethehosefromtheburnerusinga7/16”wrench.
2. Insertasmallrodintheholethatthehosewasremovedfrom.
3. Holdtheburneruptoalightlookingintotheholethatthehosewasremovedfromtoseeanyobstructions.
4. Ifburnerhasnotcleared,flushwithwateranddrycompletely.
5. Oncetheburnerhasbeencleared,reassembletheburner(airshutter,spring,hose).

Do not allow the oil to get hotter than 400°F (200°C). One gallon of oil can reach 350°F (177°C) in 7 to 10
minutes. Use a thermometer to check temperature. If oil begins to smoke, immediately turn the burner
off.
Wheninuse,donotleavethestoveunattended.Oilwillheatquicklyandigniteat550°Fto700°F(288°C
to 371°C).
Failuretocompletelythawanddryfoodsmaycauseoilorgreasetooverow.Whenfryingwithoilor
grease, all food must be completely thawed and towel dried to remove excess water. If ice is present on
the food, this means the thawing process is not complete, and may cause a boil-over when placed into
hotoilcausingare.
Do not leave oil or grease unattended while in use.

Cajun-Fried Fish
• 1 gallon of oil
• 4 catfish or red snapper fillets, 1/2”-3/4” inch thick (1 to 1-1/4 lbs.)
• 1/4 cup all-purpose flour
• 1/4 cup yellow cornmeal
• 1 tsp dried basil, crushed
• 1 tsp onion powder
• 1/2 to 1 tsp ground red pepper
• 1/2 tsp garlic salt
• 1/2 tsp ground white pepper
• 1/2 tsp dried thyme, crushed
• 1/4 to 1/2 tsp black pepper
• 1/4 tsp ground sage
• 1/4 cup margarine or butter
1. Thaw fish if frozen.
2. In a mixing bowl, combine flour, cornmeal, basil, onion powder, red
pepper, garlic salt, white pepper, thyme, black pepper, sage, and
butter.
3. Coat both sides of fish with the flour mixture.
4. Bring 1 gallon of oil to 350°F (177°C).
5. Deep fry for 3 to 4 minutes.

Hot Wings
• 1 gallon vegetable oil
• 24 chicken wings
• 1 small bottle of hot sauce (your choice)
• 1/2 tsp of salt
• 1/4 tsp of pepper
• 1/4 cup butter or margarine, melted
• 1 tsp white vinegar
• Pinch of garlic salt
• Celery sticks (optional side dish)
• Blue cheese dressing
1. Thaw wings, if frozen, and place into basket.
2. Pour 1 gallon of oil into a 10½-quart pot.
3. Bring oil to 350°F (177°C), then turn burner off.
4. Wearing protective gloves, slowly lower basket of wings into oil
then relight burner.
5. Cook 8 to 12 minutes.
6. Turn burner off, remove and drain wings, and pour into bowl.
7. Mix hot sauce with remaining ingredients, pour over wings, mix well,
and serve.
Low Country Boil
• 1 lb. shrimp
• 1 lb. crawfish
• 1 lb. smoked sausage
• 8 pieces of short ear corn
• 2 bags of crab boil mix
• 2 lbs. of whole new potatoes
1. Use a 30-quart pot and bailing basket.
2. Add 2 or 3 gallons of water and 2 bags of crab boil mix to the pot,
bring water to a boil.
3. Allow water to boil for 15 minutes, then add sausage (cut into 1/4-
inch thick slices).
4. Three minutes later, add potatoes.
5. Three minutes later, add corn.
6. 3 minutes later, add shrimp and crawfish together.
7. Three minutes later, remove and serve.
Deep-Fried Onion
• 4 medium onions
• Cajun seasoning
• 1 gallon of oil
1. Peel the outer skin off the onions.
2. Cut approximately 1/4-inch off one end of the onions, creating a flat
top.
3. Cut from the flat part of the onions down, but not all the way through
(1/4-inch from the bottom).
4. Repeat this step 3 to 4 more times, in a pie shape.
5. Loosen the onions with your fingers and season the outsides and
insides of the onions.
6. Fry the onions for 3 to 4 minutes, flat side down, in 350°F (177°C)
cooking oil. Remove and serve.
