General Information
Henny Penny SmartCombi and
ClassicCombi ovens are unique in
their flexibility to accommodate a wide
range of pan sizes, styles and racking
configurations.
Units come in two power options,
Series 1 and Series 2. Different
racking options are available for each
series. In general, Series 2 have
around twice the power of Series 1. It
is important not to load Series 1 units
with more or larger pans than
recommended. Food may cook
unevenly leading to possible food
safety risks.
Series 1
• Accepts full-size steam table pans
(1/1 GN) in lengthwise or crosswise
racks.
• Extra large Crosswise Plus pans
are designed for crosswise racks to
increase capacity in Series 1 units
without compromising food quality.
• Accepts chicken grids in chicken
racks.
Series 2
• Accepts full-size sheet pans in sheet
pan rack or on 2/1 GN wire shelves
in 2/1GN rack.
• Accepts 2/1 GN pans in 2/1 GN
rack.
• Accepts 2 full-size steam table pans
crosswise in 2/1 GN rack

Crosswise Plus pans, trays and grids have
special wings that slide directly into rack runners.
The wings allow additional pan length for greater
capacity in Series 1 units.
