Do not store or use gasoline or other flammable vapors or liquids in the
vicinity of this or any other unit.
WARNING
Improper installation, adjustment, alteration, service or maintenance can
cause property damage, injury and death. Read the installation, operating
and maintenance instructions thoroughly before installing or servicing this
equipment.
WARNING
To reduce the risk of electric shock, do not remove or open cover.
No user serviceable parts inside. Refer servicing to qualified personnel.
Disconnect power supply before servicing.
WARNING
Disconnect power at the main external power switch before servicing or
repairing a combi oven.
IMPORTANT
IT IS COMPULSORY TO POST INSTRUCTIONS WHICH ARE TO BE FOLLOWED IN THE EVENT
THE USER SMELLS GAS. THESE INSTRUCTIONS MUST BE LOCATED IN A PROMINENT LOCA‐
TION, AND BE FULLY UNDERSTOOD BY ALL USERS OF THIS EQUIPMENT. THIS INFORMA‐
TION NEED TO BE OBTAINED FROM YOUR LOCAL GAS SUPPLIER.
ALL SERVICE MUST BE PERFORMED BY A QUALIFIED CONVOTHERM AUTHORIZED TECHNI‐
CIAN.
KEEP AREA FREE AND CLEAR OF COMBUSTIBLES.
Installation
Installation of this unit must be done by a licensed professional when installed in the Commonwealth
of Massachusetts.
The wiring diagram is located on the inner part of the side panel.
Customer documentation
The customer documentation is part of the combi oven.
Keep the customer documentation manuals handy at all times so that you can look up any required
information.
Keep the customer documentation manuals for the entire life of the unit.
Carefully read the installation manual, the operating manual, and the operating instructions before
using, handling, and working on this unit.
If you transfer the combi oven to a new owner, make sure to give the new owner the customer doc‐
umentation manuals as well.

About this easyStart operating manual
These easyStart operating instructions are intended to complement the operating manual for the com‐
bi oven. It has the following goals:
To provide you with an overview of how to work with easyStart in this section.
To describe how the touchscreen pages are laid out. Make sure to use this description to explain to
your employees how the touchscreen works
To explain the tasks that your employees need to carry out with easyStart step by step. Make sure
to use these instructions to brief your employees on how to work with easySystem
This section makes reference to additional instructions in the combi oven's operating manual.
Safety requirements
Brief your employees on how to safely work with/on the combi oven. Refer to the instructions in the
'For your safety' section of the combi oven's operating manual.
How easyStart works
You can use Convotherm easyStart to work with pre-defined cooking profiles that can be selected us‐
ing the touchscreen. These cooking profiles cannot be modified.
The user manual contains a series of tried-and-true cooking profiles – please refer to the Pre-Defined
Cooking Profiles in easyStart section.
You can cook products with different cooking profiles on multiple shelf levels simultaneously. The sys‐
tem will monitor all cooking processes and automatically let you know when each product can be tak‐
en out.
Access to easyStart can be protected with a password – please refer to the Settings subsection of the
How the Touchscreen's Pages Are Laid Out section in the operating manual.
Prerequisites for working with easyStart
Your combi oven must be set up as follows so that your employees will be able to work with it:

The basic steps in a cooking sequence with easyStart
easyStart makes cooking extremely easy in seven simple steps:

Cooking multiple product batches simultaneously
You can cook multiple product batches – consisting either of the same product or of multiple products
from a single product group – at the same time (please refer to Cooking – Starting Several Products at
the Same Time on page 14 and Cooking – Starting Several Products One After the Other on page
16). When doing so, the following rules apply:
As soon as you open the unit door to place another batch into the oven, any cooking programs in
progress will be paused. As soon as you close the unit door, they will resume. The energy loss re‐
sulting from opening the unit door will be compensated for.
You can cancel the cooking program for one or more product batches without affecting the remain‐
ing cooking programs (please refer to Cancelling a Cooking Program Before It Is Done on page
19).
Cleaning and maintaining the combi oven
To clean and maintain the combi oven, follow the cleaning and maintenance schedule in the operating
manual. Make sure to brief your employees accordingly.

Configurable options
In order to make the use of Convotherm easyStart even safer, the following functions can be enabled
using the easyTouch service interface:
SteamProtect:
This function will remove moisture from the oven, significantly reducing the hot steam coming out
when the unit door is opened. Once enabled, this function will be available before placing food in‐
side the oven again (e.g., when starting several products one after the other), as well as at the end
of the cooking operation.
SafeCoolDown:
This function makes it possible to leave the unit door closed while the oven cavity is cooling down
before placing food inside or cleaning it, reducing the risk of scalding when the unit door is
opened.

3  Cleaning with easyStart
3.1  Cleaning a Cold Oven Cavity Semi-Automatically
Contact with cleaning agents
Risk of chemical burns and skin, eye, and respiratory tract irritation
The ConvoClean new cleaning agent and the ConvoCare rinse aid will cause skin, eye, and
respiratory tract irritation upon direct contact. The ConvoClean forte cleaning agent will result in
chemical burns to the skin, eyes, and respiratory tract upon direct contact.
Do not inhale the cleaning agents' and rinse aid's vapors or mist.
Do not let the cleaning agents or rinse aid come into contact with your eyes, skin, or mucous
membranes.
Do not spray cleaning agents or rinse aid into a oven cavity that is at a temperature higher than
140°F, as doing so will cause more caustic and/or irritating cleaning-fluid vapors to be produced.
Wear the required personal protective equipment.
Prerequisites
Check whether the following prerequisites are met:
The oven cavity must have cooled down to a temperature of less than 140°F since the last time it
was used.
All food must have been taken out from the oven cavity.
All bakeware, sheet pans, and shelf grills, as well as any other accessories, must have been taken
out from the oven cavity.
If there are any large food residues, they must have been taken out from the oven cavity.
The unit door must be closed.
Required tools
You will need the following tools:
ConvoClean new or ConvoClean forte cleaning agent in the spray bottle
Using the spray bottle
Observe the following when using the spray bottle:
Never leave the spray bottle pressurized for an extended period of time if you are not using it.
Slowly open the pump head so that the compressed air can escape.
Rinse the spray bottle weekly.
Rinse the nozzle, the nozzle extension, and the nozzle fitting after every use.
