3. EQUIPMENT DESCRIPTION
Lang Model: ECOQ-AP-WB
Electric Quarter-Size Convention Oven
Exterior Construction
The oven exterior dimensions are 19” (48.26cm) Wide, 24” (60.96cm) High, 28”
(71.12cm) Deep (with legs) plus a 1-3/8” (3.49cm) handle extension on the door.
The Front, Top, and Sides are constructed of stainless steel with an aluminized back
and bottom.
The oven door comes standard with a window and is reversible for either left or right
directional opening.
The door handle is constructed of Stainless Steel and Polymer.
The oven cavity is insulated with high temperature insulation for efficiency and
reduced heat loss.
Interior
The dimensions of the oven cavity are 15-5/8” (39.68cm) Wide, 13” (33cm) High,
14-1/2” (36.83)(cm) Deep.
The oven is designed for three shelves and comes with three Chrome Plated Racks.
The interior air deflection baffle is constructed of stainless steel.
Operation
The ECOQ-AP is a forced air convention oven with a vented oven cavity.
The air is driven by a 1/6 HP fan motor.
Controls
The ECOQ-AP comes with the Lang “Purple” Computerized controls which include:
Pre-Programmable Product Selections.
Independent Shelf Timers for each Shelf.
Load Control through use of Cooking Curves.
Shelf Compensation Timing for uniform baking.
Technical
Oven operates as shipped on either 208 or 240 Volt Single Phase on a 20 Amp.
Circuit. It is shipped with a Power Cord and Plug attached.
Floor space required is 19” (48.26cm) Wide, 28” (71.12cm) Deep.
The oven weighs 158 lb. (71.8 Kilograms).
Each oven is shipped with a stacking kit to stack multiple ovens.

4. UNPACKING
3.1 Receiving the Oven
Upon receipt, check for freight damage, both visible and concealed. Visible damage
should be noted on the freight bill at the time of delivery and signed by the carrier's
agent. Concealed loss or damage means loss or damage which does not become
apparent until the merchandise has been unpacked. If concealed loss or damage is
discovered upon unpacking, make a written request for inspection by the carrier's
agent within 15 days of delivery. All packing material should be kept for inspection.
Do not return damaged merchandise to Lang Manufacturing Company. File your
claim with the carrier.
3.2 Location
Prior to un-crating, move the oven as near its intended location as practical. The
crating will help protect the unit from the physical damage normally associated with
moving it through hallways and doorways.
3.3 Un-crating
The oven will arrive completely assembled inside a wood frame covered by
cardboard box and strapped to a skid. Remove the cardboard cover, cut the
straps and remove the wood frame.
CAUTION
OVEN WEIGHS 158 LBS (71.8 kilograms). FOR SAFE HANDLING
INSTALLER SHOULD OBTAIN HELP AS NEEDED OR EMPLOY
APPROPRIATE HANDLING EQUIPMENT TO REMOVE GRIDDLE FROM
SKID.
CAUTION
ANY STAND, COUNTER OR OTHER DEVICE ON WHICH GRIDDLE WILL BE
LOCATED MUST BE DESIGNED TO SUPPORT THE WEIGHT OF THE OVEN
(158LBS).
Remove oven from skid and place in intended location.

5. INSTALLATION
DANGER
THIS APPLIANCE MUST BE GROUNDED AT THE TERMINAL PROVIDED.
FAILURE TO GROUND THE APPLIANCE COULD RESULT IN
ELECTROCUTION AND DEATH.
CAUTION
The data plate is located on the back of the oven. The oven voltage,
wattage, serial number, wire size, and clearance specifications are on the
data plate. This information should be carefully read and understood
before proceeding with the installation.
NOTICE
The installation of any components such as a vent hood, grease extractors, fire
extinguisher systems, must conform to their applicable Nationally recognized
installation standards.
4.1 Electrical Connection
The oven is supplied with a cord and plug connected. The plug provided is a NEMA-
L6-20P. The receptacle is not provided with the oven. The installer should install a
NEMA-L6-20R close enough to the oven for the plug to reach the outlet.
Follow the receptacle manufacturer’s instructions when connecting the receptacle to
the power supply.
4.2 Oven Voltage
The Lang Model EQS oven can be operated on 208 Volts or 240 Volt source. The
Amp draw and KW rating at both voltages are listed in the table below.

6. INITIAL START UP
5.1 PRE-POWER ON
After the oven is installed and connected to power, prior to turning on, verify the
following:
The door open and closes freely.
All three racks are in the oven correctly
All packing materials have been removed from the inside of the oven.
5.2 POWER ON
When the oven is first turned on the display will read “Enter”. The oven will not
begin to heat up at this point. As soon as a product button is pressed, (buttons
numbered 1 through 10), the oven begins to heat to the bake temperature for the
product selected. During this time the display will read “Preheat”. When the oven
reaches the correct temperature for the product selected, the display will read
“Ready”.
If the oven came pre-programmed from the factory, a light will be on next to each
product number which is programmed. Any of the products with the light on can be
selected. After selecting a product button the oven will preheat. Once the oven has
reached it’s programmed temperature, the product button will flash along with all of
the product programs with the same programming temperature. Now select the
product you would like to cook, and then select the shelf that the product was loaded
onto, to begin the cooking cycle.
If there are no product button lights on, it will be necessary to program your products
before the oven will operate. See section 6 Operation, on page 8 of this manual to
learn about programming the oven.
NOTICE
During the first few hours of operation you may notice a small amount of smoke
coming off the oven, and a faint odor from the smoke. This is normal for a new
oven and will disappear after the first few hours of use.

7. OPERATION
6.1 GENERAL
Convection ovens constantly circulate air over and around the product. This strips
away the thin layer of moisture and cool air from around the product allowing heat to
penetrate more quickly.
Cooking times can be shortened and cooking temperatures can be reduced.
To convert standard deck oven recipes, reduce the temperature 50 degrees and the
time by 25%. Make minor adjustments as necessary.
The lower the oven temperature the more even the bake.
Check the product near the end of the initial cooking cycle by turning on the oven
light and looking through the oven door windows.
Do not open the oven doors during baking as this will change the baking
characteristics of the oven and make it difficult to determine a final program.
If the product is overdone on the outside and underdone on the inside, reduce the
baking temperature.
If the product is pulling away from the edge of the pan, the temperature is too high or
the cooking time too long.
Load each shelf evenly. Spaces should be maintained equally between the pan and
oven walls, front and back.
For best baking results, load the oven from the top to the bottom during random
loading.
6.2 Control Panel
The control panel consists of the following items. Detailed operational descriptions
are given later in this section.
POWER SWITCH Turns the oven on and off.
STATUS DISPLAY Displays the oven status (EntEr, REAdY, DonE etc.) and is
the count down timer.
TIER LIGHTS Displays the tier that the program is running, mainly used
during programming.
PRODUCT BUTTONS Numbered 0 to 9 these buttons contain the programs that,
when selected, will run the oven.
SHELF BUTTONS Labeled A to C these buttons indicate which shelf the product
is placed on, A being the top shelf.
"MAN PROG" Short for Manual Program, this button allows the operator to
enter a time and temperature without being required to enter
the programming code. The program is lost once the oven is
turned off.

"TEMP" When pushed, this button will show the current operating
temperature of the oven in the status display.
"READ/CLEAR" Pressing this button twice then pressing a Product button
instructs the oven to "read back" the times and temperatures
for that product button in the status display. It will also
switch the oven from a running program to "EntEr" when
pressed and held until "88888" appears in the display.
6.3 Status Display
The Status Display (Display) informs the operator of the oven's status.
It can be used as a countdown timer, shelf in use or internal oven temperature display
during the cooking cycle (see separate PROGRAMMING instructions).
The Display informs the operator when the oven is ready to bake, or if the oven is
above or below the programmed temperature.
Below is a list of displays and their definitions:
"EntEr" The oven is energized and ready for an operator command.
"PrEht" Stands for PREHEAT. A product has been selected and the
oven is heating to the set temperature.
"rEAdY" A product has been selected and the oven has preheated to
the programmed temperature. The oven is ready to load a
product.
"COOL" The oven's internal temperature is below what is
programmed.
"HOt" The oven's internal temperature is above what is
programmed.
"ShELF" A product selection has been made after the oven has
preheated and the computer is asking which shelf the product
is placed on.
"hELP" There is a fault in the control system, the computer will not
operate until service is performed.
"COnt" Stands for CONTINUOS. The oven has been programmed
without a time being entered. The oven will operate
continuously at the programmed temperature.
"ErrOr" An entry has been made during the programming which is
outside the parameters of the computer.

6.4 Control Panel Buttons
Product Buttons:
To select a product, simply push any of the programmed PRODUCT BUTTONS
which is labeled for the product you wish to cook.
Once a product button is selected, the oven will preheat to the preprogrammed
temperature.
The control will not allow the operator to select a shelf until it has reached its
programmed temperature.
The Status Display will show "ShELF", at that time press the SHELF BUTTON(S)
that match the shelf position(s) the product was placed on (A equals the top shelf, C
equals the bottom shelf).
If the product program is a MULTIPLE TIERED program, the operator has only one
opportunity to enter a PRODUCT and SHELF selection. The computer will not allow
a second selection during the cooking cycle (see separate PROGRAMMING
instructions).
When the product is done the Status Display will show "DOnE", the beeper will sound, and a Shelf
Button will flash indicating which product has finished baking.
Pressing the Shelf Button will turn off the beeper and allow the oven to continue
baking or go to stand-by with the Status Display showing "REAdY".
Shelf Buttons
The shelves are labeled A through C. A is the top shelf and C is the bottom shelf.
Each shelf is timed separately from the others.
Time Recall Button
To check the remaining cook time on a product that is baking, press the
corresponding Shelf Button, the Status Display will show the remaining time on the
cook cycle.
Manual Programming Button
The button on the control panel labeled MAN PROG is the MANUAL
PROGRAMMING button. Status Display will show.
“DOnE" or the time for the next to time to done.
The Manual Programming (MAN PROG) Button allows the operator to create a
short-term program for one time products.
The program will be erased when the oven is turned off or the READ/CLEAR button
is pushed.

The MANUAL PROGRAM button is active only when the Status Display shows
"EntEr".
To operate the Manual Program feature press the MAN PROG button.
The Status Display will show "000 F".
Select the desired temperature using the Product Buttons 0 through 9 to a maximum
of 450 degrees.
Once a temperature is entered the Status Display will show "0:00:00". The control is
asking for a cooking time input.
Enter the desired cooking time using the Product Buttons 0 through 9 to a maximum
of 9:59:59.
If the program does not require a time, press the flashing E button when the Status
Display shows "0:00:00". The oven will run continuously at the programmed
temperature with the Status Display showing "COnt".
No other buttons will be activated until the oven has reached the programmed
temperature.
Once the oven has reached the programmed temperature the Status Display will show
"rEAdY", the buzzer will sound briefly and all Product Buttons which are
programmed at the same temperature will also flash.
To run the Manual Program, load the product to be baked.
Press the MAN PROG button, the Status Display will show "ShELf" and the shelf
lights will flash.
Press the Shelf Button(s) which corresponds to where the product is loaded in the
oven (A equals the top shelf).
When the product is finished baking the beeper will sound continuously, the Status
Display will show "dOnE", and a Shelf Button will flash indicating which shelf is to
be removed from the oven.
Press the flashing Shelf Button to turn the beeper off.
To erase a Manual Program press and hold the READ/CLEAR button until the Status
Display shows "88888" then release the read/clear button
Temperature Recall Button
When pressed, the TEMP button will show the actual oven temperature in the Status
Display.

cancel shelf: Press the READ/CLEAR button twice then press the shelf to be
canceled. The Status Display will show “DOnE" or the next shelf to
be done.
changing a product selection: The READ/CLEAR button will change the oven
from a run mode to "EntEr", allowing the operator to select another
product which is programmed at a different temperature. To change
from "rEAdY" to "EntEr" or cancel a running program, push and
hold the READ/CLEAR button until "88888" appears in he Status
Display then release the button. The Status Display will show
"EntEr" and the control is ready to accept a new operator command.
reading a program: The READ/CLEAR button can also be used to "read" and
existing program. To "read" an existing program, press the
READ/CLEAR button twice and then press the Product Button to be
read. The Status Display will scroll through the product program one
entry at a time. Always start the "read" sequence with the Status
Display showing "EntEr".
programming: It is used during the initial programming to back up a step if an error
is made during the programming sequence.
6.5 Typical Operation Sequence
Below is a typical operation sequence. Listed in the left column is the operator action, in the right
column is the result of the action. Actions and Results shown in italics are actions and results initiated
by the computer control.
ACTION RESULT
Turn power switch to ON Control panel comes on, display says ENTER,
motor starts.
Press a product button. Display says PREHT (Preheat), oven begins to heat
to programmed temperature.
Beeper sounds briefly Display says READY.
Open the oven door and load the product. Close the
door and press the product button again.
Beeper sounds briefly and display says SHELF.
Press the shelf button(s) which correspond to the
shelf positions which the product is loaded (A
equals the top shelf and C equals the bottom shelf).
Displays shows a countdown timer and begins to
count toward zero.
Beeper sounds continuously Display shows DONE, shelf button(s) flash.
Press the flashing shelf button(s). Beeper stops. Display shows either “READY” if no
other shelves carry product or resume count down
for shelves that still have product cooking.
Open oven door and remove the product which
corresponds to flashing shelf button(s).

8. SEQUENCE OF OPERATION
7.1 POWER ON
When power switch is turned on, 208/240 volts is applied to the two transformers.
1.) The 240Volt to 12 Volt transformer, which supplies 12 Volts for the
computer board.
2.) The 240 Volt to 24 Volt transformer which supplies 24 volts for the Motor
and Element Relays.
208/240Volts is also made available to the hot sides of the Motor Relay and the
Element Relay.
The 12 Volts is supplied to the computer board which will start the computer and
interface board. The interface board display will read “ENTER”.
The 24 Volts from the transformer goes to the interface board on the yellow wire,
number 2A. When the oven is turned on, the computer is set to turn on the fan motor.
This is done at the interface board by the “fan on signal” which then applies the 24
volts from the interface board to the motor relay coil, through the purple wire, number
3A. The current path for the relay then goes to the door switch through the blue wire,
number 10. With the door closed the fan on signal energizes the motor relay, and
turns on the motor. The motor will remain on until; the computer turns off the fan,
the door is opened or the power is turned off.
7.2 PRE-HEAT
When a product button is pressed the display will read “PREHEAT”. At this point the
computer board signals to turn on the heat element on. This is done at the interface
board by the “heat on signal” which applies 24 volts from the interface board to the
element relay coil, through the brown wire number 4A. The current path for the
element relay then goes to the door switch through the blue wire, number 11. With
the door closed the heat on signal energizes the element relay, and turns on the
element. The element will remain on until; the computer turns off the heat on signal,
the door is opened or the power is turned off.
There is also a safety temperature thermostat in the circuit of the element relay. If the
oven should get too hot the thermostat will open causing the element relay to open
and turn off the element. The fan in this case would continue to run.
7.3 TEMPERATURE & TIME CONTROL
The time and temperature are controlled by the computer according to the product
programs stored in the computer memory. An RTD probe in the oven is used by the
computer to determine the oven temperature. The resistance of the probe will
increase as the temperature increases. The computer compares the probe reading with
the programmed temperature and turns the “heat on signal” on when the oven
temperature drops below the programmed temperature set point, and off when the
oven temperature exceeds the programmed temperature set point.

9. MAINTENANCE & CLEANING
8.1 Door Reversal
Remove the three Phillips screws located at the back of the oven securing the top to
the oven.
Remove the top of the oven.
Open door and remove 5/8 bolt in the lower right-hand corner of the opening.
Remove the 5/8-door pin in the upper left hand corner holding the door to the oven.
Lift door off of lower door pin and set to side.
Remove the lower left-hand door pin and re-install into the lower right-hand corner.
Place door on lower door pin and re-install the upper 5/8-door pin into the top of the
oven securing door to oven.
Place 5/8 bolt into vacant hole at the lower left of oven.
Re-install top of oven.
Re-install the three Phillip screws at the back securing top to the oven
.
8.2 Cleaning
Always start with a cold oven.
The stainless interiors can easily be cleaned using most domestic or commercial oven
cleaners.
Always follow the cleaner manufacturer's instructions when using any cleaner.
Care should be taken to prevent caustic cleaning compounds from coming in contact
with the blower wheel.
The oven racks and rack slides may be cleaned by removing them from the oven and
soaking them in a solution of ammonia and water.
The stainless steel door liners and oven front should normally be cleaned with a soap
and water solution.
Discoloration or heat tint may be removed with any of the following cleaners: Penny
Brite, Copper Brite, Du-Bois Temp, or Past Nu-Steel.
Always apply these cleaners when the oven is cold and rub in the direction of the
metal's grain.

9.1 Symptoms
What follows is a chart of Symptoms and Possible Causes to aid in diagnosing faults
with the oven.
Refer to the Symptoms column to locate the type of failure then to the Possible Cause
for the items to be checked.
To test for a possible cause refer to the TEST section and locate the Possible Cause
then refer to test to identify test procedures.

Lang ecoq-ap-wb is an electric quarter size convection oven with a stainless steel exterior and interior. This oven is designed for three shelves that come with three chrome plated racks. It has a vented oven cavity and is driven by a 1/6 HP fan motor. The oven comes with the Lang “purple” computerized controls which include pre-programmable product selections, independent shelf timers for each self, load control through use of cooking curves, and shelf compensation timing for uniform baking.
