4. Installation
THIS MACHINE IS SUITABLE FOR DOMESTIC USE
The machine should be installed on a flat and safe surface.
-Electrical Installation:
Please observe the following requirements:
a) It is necessary to earth the machine. Do not connect to a two-pin plug.
b) Do not connect the machine to a circuit containing other high drain devices. You
will trip the circuit breaker.
c) Avoid using an extension lead, adaptors, multiple wall sockets or multi box at the
connection of coffee machine to the electricity supply.
- Water Installation:
If your machine was supplied with mains water connection it should connected to the
water mains via a 3/8 male fitting. It is strongly recommended that you use a water
softener if lime is an issue.
If you are going to use the machine with the water reservoir:
a) Remove the upper lid from the coffee machine.
b) Take out the water reservoir.
c) Fill the water reservoir with lime free water.

5. Start-up
Steps to follow:
1) If the machine is connected to the water network please open the gate valve (tap at the
wall).
2) If the machine is going to work with water tank:
i) Lift the top lid of the coffee machine, remove the water tank.
ii)
Fill the water tank , do not close the tank until the first coffee comes through. It is
advisable to use only de-scaled water, in order to avoid scale related problems.
iii) Connect the machine to the mains and switch it on. The boiler will start filling
automatically; when the machine has finished the initial filling process ,it will
start the heating process, indicated by a red light.
3) When the red light switches off, it will indicate that the machine has heated up to the
proper boiler temperature for brewing. This is also indicated on the dial guage on the
front panel showing a reading of approximately 1.
All the Office models are provided with an element protector system. In case of lack of
water in the machine, the element will be automatically disconnected, stopping the heating
process in order to avoid any damage on the machine.

8. Brewing Coffee
1. Take the filter holder from the machine.
2. Fill the filter basket with the right amount of freshly ground coffee.
3. Press the coffee with the tamper.
4. Place the filter holder into the brewing group (see above for correct position).
5. Place the cup under the coffee outlet and press the appropriate brewing button or
operate the lever.
Note: The switch panel on the automatic model is already programmed with 4
standard doses and a continuous pour button. The first 4 buttons (those with pictures
of cups) are volumetric controlled and automatically switch off at a predetermined
point, the 5
th
one is for continuous coffee, and should be pressed again to stop.
THE FILTER HOLDER SHOULD BE ALWAYS PLACED ON THE BREWING
GROUP, in order to keep it on the right temperature to obtain the best coffee.

9. Drip tray Removal
Remove the grill placed on the drip tray. Lift the tray up slightly at the front, and pull forward
to remove it from the machine. Empty contents and wash the tray out. PERIODICALLY
CHECK THE LEVEL IN THE DRIP TRAY. Do not operate the machine without the drip
tray
. The Leva model drip tray pulls directly to the front.

10. Switch Panel
10.1 Switch Panel Features
The switch panel is capable of the following functions:
Volumetric control of 4 different coffee dosages per group.
Boiler refilling.
System supervision through alarms.
Serial connection RS-232 with data reading from the control panel to PC.
Brewing group auto-cleaning (if activated).
10.2 Switch Panel Setting
To programme the switch panel, press and hold the symbol “*” for aprox. 5 seconds
until the green LEDs on the switchboard light up; at this moment press the symbol of the
coffee selection you want to programme (1 single, 1 large, 2 singles, 2 larges). You will see
all the green LEDs switched off, except the option you have selected and the “*” LED. Press
the same symbol again when the quantity in the cup reaches your desired level, it will be
memorized and the LED on this selection will then disappear to show that setting has been
successful. Repeat the above process for all the coffee selections.
This process should be carried out with fresh coffee in the filter holder each time.
To re-programme any dose (all the selections are independent) simply repeat the above
process on the button to be reprogrammed. Once done, any remaining buttons are unaffected
and will retain their original setting.

Example of 1 short coffee setting:
Take the filter holder from the machine and fill it with the coffee, then place it into the
brewing group. Place a cup under the coffee spout and press and hold the “*” button until all
the green LEDs on the switch panel light up then immediately press the short coffee. The
green LEDs will then disappear except the short coffee one and the “*” button. The coffee
will start to run into the cup. Once the quantity in your cup reaches your desired level press
the short button again. The LED on this selection will turn off to show that the setting has
been successful.

10.3 Switch Panel Alarms
If the boiler takes greater than two minutes to refill, the LEDs will start blinking.
You should switch the machine off and then on again (using the main switch) to
reset it.
If the coffee is ground to fine or packed to firmly the water flow will be severely
restricted and the LED will light. Switch the brewing button off, wait for the
pressure to be discharged from the valve, remove the handle. Adjust the grind
and try again.
5 minutes is the maximum safety time for any dosage.
11. Heating up Liquids
a) Place the steam pipe over the tray and discharge the water from inside the pipe.
b) Close the steam tap.
c) Insert the steam pipe into the liquid to be heated up.
d) Open the steam tap. It will start heating up the liquid (with the steam tap open do not
remove the steam pipe from the liquid, it could be dangerous). Close the steam tap before
taking out the steam pipe.
e) Once the process has finished, place the steam pipe over the tray, and open the tap again
to clean the pipe of product residue. Close the tap and clean the pipe with a damp cloth.
12. Hot Water Supply
Place the cup/recipient to be filled up under the hot water outlet. Open the hot water tap until
obtaining the desirable amount of hot water.
13. Coffee Machine Cleaning
Switch the machine off. The outside of the machine can be cleaned with a damp cloth and a
non-abrasive household detergent.

14. Water Softener/filter Cleaning
a) Fill the water reservoir.
b) Dissolve 300 grams of table salt inside the water reservoir.
c) Insert the water softener filter inside the water reservoir.
d) Siphon the water reservoir through the water softener filter as indicated below.
Once the water reservoir is empty, fill it again with non-salt water and repeat the
process in order to clean the water softener filter.

15. Brewing Group & Coffee Filter Cleaning
a) Remove the filter holder from the machine.
b) Place the filter membrane on the coffee filter.
c) Insert special cleaning compound (available for commercial coffee companies) into the
filter holder according to manufacturers recommendations. Use only special detergent
for brewing group cleaning.
d) Place the filer holder in the brewing group and operate the star button for 5 seconds.
Repeat 5 times. For the Lever models: raise and lower for 5-second intervals. Repeat 5
times.
e) Clean the filter holder of cleaning compound by washing under the brew group and
repeat the process without compound. This will flush away any residue.
f) It will be necessary to soak the filter holder in the head-cleaning compound from time to
time to remove caked on coffee oils.
g) Once the cleaning cycle has finished, dismantle the filter holder and wash thoroughly.

16. Cleaning the Shower Screen and Head Seal
After a period (say 6 months in domestic use and weekly cleaning) the shower screen will
become clogged with coffee oils that need to be removed. Proceed as follows:
Dislodge the shower screen with its neoprene seal from the group head. This may be
accomplished by levering the screen downwards using the handle of a teaspoon. Lever
your way around until the unit drops out.
Separate the seal from the screen and soak the screen in head cleaning compound until
clean. If this fails to adequately clean the item it will need to be replaced. Replace it
with any brand item designed for an E-61 group head.
If the neoprene ‘O’ ring (head seal) is hard it too needs replacing. Any 6mm thick
(standard size) head seal for an E-61 group head will be satisfactory.
Reassemble the seal to the shower screen ensuring the chamfered edge of the seal is
next to the open end of the shower screen. Failure to do this will make it difficult to
insert the unit in the group head.
Insert the combined unit (open side uppermost) into the group head. Force the
neoprene seal up into the group head until it can go no further and seats evenly all the
way around. Use the handle of the teaspoon. Now insert the filter holder and pull to
the right until it is correctly located.

18. FAQ’s
It is important to differentiate between mechanical issues relating to the machine and issues
relating to the brewing of coffee. One is a machine issue and the other is a coffee issue. Here
are some frequently asked questions and their suggest solutions:
Symptom: Coffee pours too slowly.
Cause: Coffee stream should be as thick as a mouses tail.
Remedy: If thinner, coarsen up the grind. Use less force with the tamper.
Symptom: Coffee pours too fast.
Cause: Coffee stream should be as thick as a rats tail.
Remedy: If thicker, fine up the grind. Try tamping more firmly. Is the filter basket
completely full?
Symptom: No crema on coffee.
Cause: Handle not full. Coffee ground too course. Water too hot. Coffee not fresh.
Coffee not freshly ground.
Symptom: Crema thin and will not heal.
Cause: Over extracted.
Remedy Coarsen up the grind.

Symptom: Coffee tastes bitter.
Cause: Water too hot. Over extracted.
Symptom: Coffee tastes burnt.
Cause: Group head dirty/handle dirty.
Remedy: Replace shower screen and shampoo filter basket & holder.
Symptom: Water runs over top of handle.
Cause: Head seal damaged.
Remedy: Replace head seal.
Symptom: Slow water flow from group.
Cause: Shower screen clogged
Remedy: Replace shower screen.
Symptom: Water under machine.
Cause: Drip tray full. Something else?
Remedy: Empty drip tray or call technician.
Symptom: No steam from wand.
Cause: Nozzle blocked.
Remedy: Remove nozzle and clear holes.
Symptom: Excessive water in grounds.
Cause: Filter basket not full. Coffee ground too fine.
Remedy: Fill filter basket completely. Coarsen grind.
Symptom: Pump lacks pressure.
Cause: Poor water supply. Pump defective.
Remedy: Call technician.
