Operating Instructions
1. Lift the front handle to unlock and open the wafe maker.
2. Make sure the Double Rotating Wafe Maker’s bottom cooking plate is positioned at and locked into a stable
position. Before baking the rst wafes of the day, use a pastry brush to lightly coat the top and bottom
wafe plates with butter or vegetable oil.
DO NOT USE NON-STICK SPRAYS AS THEY CAN CAUSE BUILD-UP ON THE COOKING PLATES.
3. Plug unit into a 120V AC electrical outlet. The red POWER light will illuminate and remain lighted during use.
NOTE: When your Double Rotating Wafe Maker is heated for the rst time, it may emit slight smoke or odor.
This is normal and should disappear after one or two uses. This does not affect the safety of the appliance.
However, as it may affect the avor of the rst wafes prepared in the Wafe Maker, it is recommended that
these be discarded.
4. Turn the temperature control dial to the MAX setting to preheat.
5. While preheating, prepare wafe batter.
6. After approximately 5 minutes, the green READY light will illuminate, indicating the unit is preheated and is
ready for use.
7. Turn the temperature control dial to the desired setting. A lower setting produces a lighter browned wafe,
while wafes made at a higher setting are darker and crispier. When preparing a recipe for the rst time, turn
the temperature control dial to the center (medium); then adjust according to preference. Recipes will vary in
cook time and brownness; batters with more sugar will brown quicker. Thicker batters may require a longer
cooking time. Note the perfect temperature and time setting for each batter recipe for future use.
8. Make sure the side handle is extended. Lift the front handle to unlock and open the wafe maker.
9. Pour or ladle just enough batter to ll lower grid so that the peak area is covered (Approximately 2/3 to 3/4
cup of batter for each wafe compartment). If necessary, use a spatula to spread the batter in to the corners
of the plate. Do not overll; batter will expand when cooked. The drip tray will catch any spilled-over batter.
10. Lower the top cooking plate to close the Double Rotating Wafe Maker. When the top locks shut, use the
extended side handle to rotate unit 180° to the bottom side.
11. When the Green Ready Light turns on again, rotate the handle 180º counter-clockwise (left) to unlock and then
carefully open the Wafe Maker. NOTE: Do not open the wafe maker for at least 1 min 30 seconds. This can
cause the under-cooked wafes to break and they can be difcult to remove from the plates.
12. Lift the front handle to unlock and open the wafe maker.; if it pulls, continue cooking for 1 minute and test
again. Wafes should be baked according to the temperature control setting chosen. If the wafes need
to bake to a darker nish, turn the temperature control dial to increase the temperature, close the lid and
continue to bake for 30 additional seconds, checking until the desired color is achieved.
13. Remove wafes from the cooking plates using a rubber spatula or any non-metallic utensil.
NOTE: If additional wafes are to be baked, keep the lid closed to retain heat. Always be sure the green light
is illuminated before baking more wafes.
NOTE: Wafes made later will bake faster because extra heat has been retained.
14. When baking is complete, unplug the power cord from electric outlet. The Double Wafe Maker will remain
ON unless it is unplugged. Make sure the Double Rotating Wafe Maker’s bottom cooking plate is positioned
at and locked into a stable position. Lift the front handle to unlock and open the wafe maker and allow to
cool.
15. Do not clean until unit has fully cooled.

Wafe Baking Tips
Recipes may be doubled.
Sift all dry ingredients together. It is not necessary to beat egg yolks and milk separately. Just add them to the
combined our mixture and use a whisk or mixer to blend the ingredients well.
Egg whites should be beaten until they form stiff peaks. Stir 1/4 of the beaten whites into the batter to lighten
it, and then gently fold in the rest. There should be white streaks in the batter. Do not over-mix batter when
adding egg whites.
Do not open the Double Rotating Wafe Maker during the rst minute of baking or the wafe will separate.
Completely bake the wafe before removing.
When the recipe bake time for the wafe is done, lift the front handle to unlock and open the wafe maker.
Lift the top cooking plate gently; if it pulls, continue cooking for 30 seconds and test again.
When preparing wafe batter, do not over-mix or wafes will be tough. Stir batter only until large lumps of
dry ingredients disappear.
The optimal amount of batter to produce a full-shaped wafe, without overowing, will vary with different
wafe batters. Pouring batter from a measuring cup will help to gauge how much batter to use each
time. Fill bottom grid of Double Rotating Wafe Maker with enough batter to cover peak areas of the grid.
(Approximately 2/3 to 3/4 cup of batter for each wafe compartment).
Spread thick batters to the outer edges of the cooking plate using a heat-proof rubber spatula or other non-
metallic utensil before closing the lid.
To retain crispness, move baked wafes to a paper napkin or a wire cooling rack to absorb any condensation.
To keep wafes hot, place in an ovenproof dish on an oven rack and warm at about 200-250°F (90-120°C).
Wafes will keep for about 20 minutes before they begin to dry out.
Cooled wafes can be re-warmed and re-crisped individually, by returning to hot Wafe Maker. Set wafe
temperature control to MIN. Place wafe on cooking plate so grooves match up; close lid and heat for 1 to 2
minutes, watching carefully to prevent burning.
Baked wafes freeze well. Cool completely on a wire rack. Store in a plastic freezer bag or in a covered
container, separating wafes with wax paper.
Reheat frozen wafes in a microwave, toaster, convection, conventional oven or toaster until hot and crisp.
For Lower Fat, Lower Cholesterol Wafes:
Use skim milk.
Adapt recipes by eliminating the egg yolk. Butter may be substituted with liquid vegetable oils such as canola,
corn or sunower.
For Higher Fiber Wafes:
Substitute 1/2 cup or more of white our with whole-wheat our.
Substitute 1/4 cup of white our with wheat or oat bran.

3. Let the paste stand for a few minutes on the stains (not more than an hour)
4. Rub with a soft damp cloth or lightly scrub with a plastic scouring pad, wipe clean and dry thoroughly.
NOTE: Do not rub vigorously when using a plastic scouring pad and NEVER use a metal scouring pad as this
may damage the non-stick coating.
5. Repeat the cyctle once again if necessary The performance and non-stick property of the ceramic non-stick
coating will not be affected due to stains.
Storage
1. Make sure unit is unplugged and fully cooled.
2. After cleaning, fold handle and store for future use.
