1. GENERAL
Dear customer,
This operation and maintenance manual makes it easy for you to get to know the Slicing
and Portioning machine IC 610/21 and how to use it properly. This manual contains
important information and instructions which help make it possible to operate the Slicing
and Portioning machine safely, correctly, and economically. Your attention and
consideration of the material contained in this manual will help to reduce potential danger,
repairs and out of operation time as well as extending the dependability and life-
expectancy of the machine.
It is necessary to comply with all safety requirements before bringing the machine into
operation.
The general safety and accident prevention regulations as well as those from local trade
and professional associations must be abided by at all times. All safety instructions from
this manual are to be observed. Only qualified and trained personnel are allowed to
operate the Slicing and Portioning machine. The machine may only be used according to
regulations.
We can no longer uphold our guarantee obligations as specified in the terms of delivery in
the case when maintenance work is negligibly or improperly executed. Only original MHS
spare parts guarantee quality and exchangeability. We draw your attention to the fact that
we assume no liability for damage or operational disturbances resulting from failure to
comply with the guidelines and instructions set out in this Operation and Maintenance
Manual.
The recognised technical regulations for safe and correct work procedures must be
complied with in addition to the accident prevention regulations expressed in this manual,
those regulations valid in the country where the machine is to be used and to those
regulations mandatory at the workplace.

1.1 WARRANTY
After installation, the electronic and mechanic parts are covered by a guaranty of 12
months, the parts of wear and tear e.g. blades, belts are not covered by a guaranty.
The guaranty is cancelled if unauthorised modifications are done or the use of the machine
does not correspond to the field of application.
1.2 Field of application
The Slicing and Portioning Machines of the IC series are designed to cut raw or deeply
cooled
(-4 C) meat, sausages, cheese or fish products. The quality of the cut depends on the to
be slice product and its temperature.
A usage of the machine for purposes other than those described above are not in
accordance with its design. The manufacturer/deliverer will not be held responsible for any
damage or injury resulting from improper usage of the machine. The operator assumes all
risk.
The field of application also includes the compliance of all safety instructions and regular
work of the cleaning and maintenance inspection.
1.3 FINAL DANGER
The machine is designed according the standards for chop cutting machines,
however the following final dangers lasts:

2.2 GENERAL SAFETY REGULATIONS
The Slicing and Portioning Machine IC 700/24B is safe according to the guidelines set out
by the European Machine Community (89/392/EWG) and its supplementary provisions
(91/368 EWG and 93/44/EWG), as well as those of the current Guidelines For Accident
Prevention (Unfallverhütungsvorschriften) (UVV/VBG). The Slicing and Portioning Machine
can be dangerous when used improperly and applied unduly in a way in a way contrary to
instructions. For this reason, the safety precautions and regulations must be adhered to by
those responsible for installation, operation, maintenance and repair of the Slicing and
Portioning Machine.
The following laws, rules and regulations ensuring work protection and safety are to be
complied with:

and environmental protection are, in addition to those outlined in this manual, to be
complied with and instructed.
Such duties could, for example, concern the handling of dangerous materials or the
making available/wearing of protective personal gear.
All safety and precautionary measures are to be observed when using the Slicing and
Portioning Machine.
Only authorized and trained personnel should operate, clean,
maintain and install the Slicing and Portioning Machine. They should
be specially instructed regarding the potential dangers involved.
Changes should never be made to any of the protective equipment/installations when
cleaning or carrying out maintenance. Always turn the machine off before starting
maintenance. Any removed protective equipment/installations must be replaced after
finishing maintenance or service work.
The Slicing and Portioning Machine is only to be used in technically faultless condition!
Only use the Slicing and Portioning Machine as directed in this manual and always in a
safety and danger conscious manner! In particular, all disturbances which can infringe
upon safety conditions must be immediately eliminated.

When the Slicing and Portioning Machine is turned off for repair and maintenance work, it
is absolutely necessary to ensure that it cannot be unintentionally turned on again: This
means: main switch off and in the locked position!
The operator is to safeguard against all unauthorised access to the machine. In the case
of safety relevant changes in the machine or its performance, the operator is obliged to
immediately stop the machine and report the disruption to the responsible person(s).
No changes, additions, or reconstruction of any sort which may impair with the safety of
the machine are allowed without the manufacturer’s consent.
Before turning the machine on. It is necessary to ensure that nobody can be endangered
by the machine start-up.
Only authorized electricians or persons under their guidance are
allowed to service the electrical equipment of the Slicing and
Portioning Machine.
Furthermore, work safety regulations are to be observed at all times
during machine operation.
Personnel must be specifically qualified for the workplace activity and be updated and re-
educated at regular intervals.
Only authorized electricians are allowed to carry out work on the
electrical control and switching units or on any other electrical parts
of the machine. All safety elements must be tested for complete
functionality upon completion of the maintenance or service. Only
after fulfilling these requirements can the worker be released for
production use.
Personel must be specifically qualified fort he workplace activity and be updated and

The machine is allowed to operate only in a faultless condition as
well as in its field of application, to be aware of the safety and
danger to follow the instructions of the operation and maintenance
manual.

2.3 SAFETY INSTALLATIONS
In order to protect the operator the machine was equipped with the following security
devices:

The machine has got protective flaps in the cutting area which protect the operator gainst
unintentional movements towards the moving components inside. As soon as this happens
the machine will be stopped immediately.
The forward feed conveyor belt additionally is verified by the cover on its locked position.

The system is set out of function by the emergency exit button (5). Restarting the system
is only possible if the emergency exit button is unlocked. After unlocking the emergency
button and pushing the button with the arrow symbol of the keyboard the grab will open
and return to the starting position. The rest of the material then has to be removed
manually. The latest versions of these machines move the grab forward after unlocking the
emergency exit button and then they eject the rest before the system returns to its start
position.
The stop button (4) at the display of the machine (see 4.3) enables the operator to stop
operation at any time of the cutting process. Starting the machine once again is only
possible when the grab has returned to its starting position and the remaining pieces have
been removed.
The stop button (6) at the control keyboard for the forward feed conveyor belt was applied
for the interruption of the automatic cutting process. The machine will stop in this case
after the completion of the running cutting process. Latest versions have got a single
button for the STOP and START function without a LED display.
Locking cutting area (7)
The cutting area is protected against forbidden opening by a coded security switch.
2.4 DAILY SAFETY INSPECTIONS
Before taking the machine in production the following safety functions are to be inspected
daily for defective behaviour and functional capability. Please take care about the
regulation of VGB 77.
The corresponding work will be described and demonstrated by installation of the new
machine (see ch. 5.1)

This functional evaluation guarantees that the safety system is n running order and that
the machine is ready for application.
Should there be any irregularities in the turning on and off the machine, then turn the main
and danger switches off and lock. The safety system is then to be tested from an
authorized electrician and when possible, brought back into proper functioning condition.
The machine can only then be cleared for use after a renewed evaluation from authorized
technicians.

3.3 MACHINE COMPONENTS
The slicing and portioning machines of the IC series were designed for the cutting of meat,
chops, fish, cheese and cold cut whose slice thickness can be preselected. Depending on
the structure of each single product to be cut the cutting process is executed by a rotating
(plain or cogged) single or double blade.
For this reason the system of the machine consists out of different components:
1. Automatic forward feed of the goods to be cut via a conveyor belt
2. Transportation by a grab towards the cutting area
3. Cutting area with rotating blades
4. Automatic removal via a conveyor belt
5. Preselection of the corresponding parameters via a keyboard at the display (see chapter
5, "operation")
1. Automatic forward feed
The forward feed of the goods to be cut is done automatically by a conveyor belt. This
conveyor belt is mounted on a moveable undercarriage. The belt itself is subdivided into
different sections by vertical plates. When switching on the conveyor belt via the control
keyboard the portioned goods to be cut inside the sections of the conveyor belt are being
transported towards the cutting area. The positioning of the belt is being controlled by an
approximate switch at the underside as well as by magnetic strips in the conveyor belt.

2. Transportation of the goods to be cut
The goods to be cut being transported by the forward feed are distinguished by a light
barrier.
Then the grab starts moving and grabs the good to be cut at the preselected position and
pushes it to the cutting area. A light barrier identifies the front part and the control
calculates the complete length in relation to the position of the grab. This figure is stored
and processed in the cutting programme.
3. Cutting area
In relation to the speed of the forward feed of the grab and the preselected number of
revolutions per
minute the goods are cut in different slices.
4. Removing the slices
The slices fall onto the conveyor belt and afterwards they are being transported off the
machine with the preselected speed.
5. Control
Alll processes are based on the parameters given by the system control. These
parameters are keyed in via the keyboard of the display. All functions and the different
cutting programmes are described in chapter 3.4, "components for operation" and in
chapter 5, "operation".

The inputfield for entering operation instructions on the appliance is changed with the
button “UP” and “DOWN”. Every input field could be entered by the 10 key pad.

3.4.2 READING ON DISPLAY
Program
Number is shown on the display, for activation please enter program no. and the
adjustment will be shown the display. (Programming: see Cap. 5).
Slice thickness
Once the mains has been switched on the slice thickness appears 0.0 mm. Please enter
slice thickness with the ten-key pad. For changing slice thickness press “Erase Field”
and enter new slice thickness or change with + / -.
Number of slices
The number of slices could be either entered in the display and the product will be grouped
or shingled in that quantity or if the product is cut at once the no. is “o”. The number of
slices then will be calculated by measuring through the light barrier.(see 5.4.3)

Blade speed + 80 % rpm.
The speed of the cutter blade rotation could be adjusted from 40 % - 100 %, i.e. from 120
rpm to 300 rpm depending on the slice thickness. The max. blade speed could be
achieved on slice thickness of < 10 mm step by step. > 10 mm the blade speed will
automatically adjusted by the machine. The blade speed will be increased when the
advance will be changed from step by step to continuous advance.

Flap open / closed
The arrow shows if which flaps is open. If no arrow is shown the machine is ready for
operation. If all flaps are closed and only one the left arrow on the display lights up, only
open one flap briefly and close it again (safety circuit for the flaps must be activated).
Subsequently this arrow goes out, the machine is ready for operation.
Conveyor speed
The conveyor speed during the cutting procedure can be pre-selected from 0 – 99
Distance of the portioning products
The distance of each entered “number of slices” is selected from 1 to 99. For example if
the number of slices is 4 pcs; the machine is slicing groups of 4 pcs with a distance from 1
to 99. The forward feed stops after 4 slices for moving the product on the conveyor as
selected from 1 to 99 and then continues slicing.
Run on time
Time in seconds after the cutting procedure is finished the conveyor is running.
Example: A product should be slice in groups of 5 pcs. and be put on the outfeed belt.
The groups should place with a certain distance to each other on the belt..
Adjustment parameters:

Enter blade speed: e.g. 80 %
Enter belt speed: e.g. 25
Enter distance of the portioned products: e.g. 60
COMMENT!
The distance between the single product groups to be c
ut shouldn`t
be bigger than speed of the conveyor belt (each in figures) in order
to have a sufficient distinction between each group.

3.5 ENVIRONMENTAL INFLUENCES
This machine can be used in meat processing companies without any kind of restrictions.
4 INSTALLATION
The MHS-service personnel is responsible for the transport, set-up, and installation of the
Slicing and portioning machine as described in the Installation Manual.
Only the specially trained MHS
-
service personnel are allowed to set
-
up and install the machine. MHS will not be held liable for any
damage occurring through customer installation.
The Slicing and portioning machine comes equipped with a power cord and plug. The
customer is to ensure a proper compliance with electrical power supply regulations.
4.1 SET UP
The machine has to be aligned in such a way that no vibrations of
tilting may occur.
The machine may not be lifted or carried by means of the output
channel.
For setting up the machine or for carrying the machine to an anther place the belts have to
be removed.
4.2 ELECTRICAL CONNECTION
The machine is equipped by the company with an operation voltage of 400 volts and 50 Hz
three-phase-current.
In case of different main voltages the connections have to be changed in accordance with
the wiring diagram and certain electric parts must be exchanged.
Only authorized electricians are allowed to carry out work on the
electrical control and switching units or on any other electrical parts
of the machine. All safety elements must be tested for complete
functionality upon completion of the maintenance or service. Only
after fulfilling these requirements can the worker be released for
production use.

5 OPERATION
The machine must only be operated with all safety equ
ipment intact
as described in the safety instructions.
Failure to abide with these regulations can result in danger of being exposed the knife etc.
In order to eliminate all danger to life and limb it is necessary to execute daily functional
inspection of all protection guards and apparatus. Only after a positive result to this
inspection can the machine be set into operation.
Due to the extreme amount of danger involved, utmost caution is
urged when working with the blade! Always wear cut-proof gloves!
5.1 TRIAL RUN
If the machine is plugged the slicing and portioning machine is ready for operation and
could be turned on by the main switch. By depressing the Start – button on the forward
feed belt the cutting procedure could be started.
It’s advisable to let the machine run first without product, to avoid any damages. Therefore
the safety installations have to be checked (see 2.3).
5.2 POSITIONING OF PRODUCT
The product have to be place lengthwise with the straight side on the forward feed belt.
For slicing pork chops it is recommend to place the bone and and the rib vertically (to the
right side as seen on the picture). Please take care on no overlapping on each section.
The fronte plate of the gripper could be changed by a lever in order for a correct gripping
of the product.

5.3 CUTTING PROCESS
The start button enables the operator to start the machine automatically:
The start button will only function if all protective hoods are closed and if a programme or
the slice thickness has been preselected (0,5 mm) before.
When the forward feed conveyor belt is being started the following working steps will be
executed:
1. The forward feed conveyor belt will move until the goods to be cut have reached the
beginning of the cutting area.
2. The grab device of the forward feed fixes the goods to be cut by closing itself at the
preselected closing point.
3. The goods to be cut are pushed towards the cutting area.
4. Sensors identify the goods and the machine starts cutting. The outward conveyor belt
ejects the cutted parts.
5. After the termination of the cutting process the carriage returns to the starting position
and the process will start again.
The automatic process can be interrupted by pressing the stop button which means that
the machine will cut the remaining parts and then the grab returns to its starting where it
will stop.
Distribution of the remaining slice
This machine works with an automatic device dividing the remaining part i.e. after the
cutting process has started the length of the remaining part is identified and the slice
thickness is optimized. As a result of this only a small rest will remain uncut. If the slice
thickness is bigger than the remaining part in the gripper all slices will be divided in the
same slice thickness.
5.4 PROGRAMMING
The control of the machine was designed in a way that a maximum of 75 different cutting
programmes can be stored at one time. These programmes are divided into three different
groups:
Position 0: Special programme
Programmes 1 to 25: Cut- off programmes
Programmes 26 to 49: Standard programmes
Programmes 50 to 75: Continuous programmes
