will find out how best to use your appliance

1. After unpacking the appliance, make sure that it
is not damaged and that the door closes
properly. Any damage must be reported to the
dealer within 24 hours of delivery of the
appliance.
2. Allow the appliance to stand for at least least
two hours after installation before switching the
appliance on, this is to ensure that the cooling
circuit has time to reach full efficiency.
3. Make sure that the installation and electrical
connection are carried out by a qualified
engineer according to the manufacturer’s
instructions and the local legislation in force.
4. Clean the inside of the appliance before using it.

1. Packing
The packing material is 100% recyclable and is
labelled with the recycling symbol. Please dispose of
all packing responsibly and carefully. Keep the
packaging material (plastic bags, polystyrene parts,
etc.) out of the reach of children as it is potentially
hazardous.
2. Scrapping/Disposal
The appliance is manufactured using recyclable
material.

disposal of the appliance helps to prevent any

A Blast chiller is a professionally designed household equipment for blast chilling and shock freezing food
and fast chilling beverages.
Food that is blast chilled with the blast chiller after cooking maintains its original texture flavour and aroma
for 5-7 days. Shock-frozen foods do not collapse and maintain its original texture and taste once thawed.

IMPORTANT NOTICE TO USERS
These Use and Maintenance instructions are part of the product and provide all the instructions that
are needed for the correct installation, use and maintenance of this equipment.
Users and installers should read these instructions carefully and always refer to them. These
instructions must be kept in a known, easily accessible location.
Store these instructions carefully and give them to any future owner of the equipment.
If you notice any problems with the equipment (for example if the power cable is damaged or if the
control panel is not working) do not use the blast chiller and notify your dealer immediately.
This equipment must be used exclusively by competent adults; DO NOT allow children or disabled
adults to use the equipment without correct supervision!
This equipment has been designed exclusively for its intended use, i.e. blast chilling and shock freezing
food. Any other use is considered inappropriate and potentially dangerous.
In the case of a power supply interruption during the blast chilling or shock freezing cycle, the
equipment will extend the remaining cycle by 30 minutes when it restarts.
Caution! Do not obstruct the blast chiller’s top and front air vents, otherwise the equipment may
overheat and suffer damage.
BEFORE YOU USE THE BLAST CHILLER...
The following instructions will help you make the best use of use the
blast chiller.
Preliminary cleaning of the chamber
Before you start the equipment clean the inside of the chamber with
a soft cloth and neutral detergent.
Do not use stainless steel scouring pads, scrapers or abrasive or acid
substances which could permanently damage the stainless steel
surface (fig. 1.2.1).
Rinse thoroughly after cleaning.
Available operating modes
Core probe controlled cycle
The core probe is attached to the door of the equipment. It is used
to measure the temperature at the centre, or core of the food to be
blast chilled or shock frozen. When the core probe detects that the
temperature at the core of the food product has reached +3°C
(during the blast chilling cycle) or -18°C (during the shock freezing
cycle) it stops the cycle automatically.
The core probe must be inserted into the food to be blast chilled or
shock frozen before the cycle is started.
Caution! Insert the core probe deep into the centre of the food
product, making sure it does not come out (fig. 1.2.2). Handle with
care as it is sharp. At the end of the blast chilling/shock freezing cycle
clean with a soft cloth and lukewarm water, and then replace in the
bracket.
Caution! If you are blast chilling or shock freezing products of
different sizes, insert the core probe into the thickest product.

Timer-controlled cycle
The blast chilling and shock freezing cycles can also be carried out in timer-controlled mode. The pre-set
duration of the blast chilling cycle is 1:30 (hours:minutes) and that of the shock freezing cycle is 4:00
(hours:minutes). At the end of the pre-set cycle the equipment stops automatically.
Caution! The core probe cannot be used in conjunction with the timer-controlled mode.
Caution! The pre-set duration of the cycle can be adjusted by the user according to the type of food to
be blast chilled or shock frozen.
Functions
Blast chilling
The blast chilling cycle rapidly reduces the temperature of food products to +3°C at the core (with air
temperature inside the chamber between 0°C and 2°C) within a maximum of 1:30 (hours:minutes). The
blast chilling cycle can be operated in the timer or core probe mode.
Shock freezing
The shock freezing cycle rapidly reduces the temperature of food products to -18°C at the core (with air
temperature inside the chamber between -35°C and -40°C). This cycle has to be completed as rapidly as
possible, within a maximum of 4:00 (hours:minutes). The shock freezing cycle can be operated in the
timer or core probe mode.
Fast chilling cycle for beverages
This cycle is used to chill beverages in bottles or cans. You can select one of 3 pre-set chilling cycles (5-10-
15 minutes) by pressing the cycle button repeatedly.
Holding mode
“Holding mode” starts automatically at the end of the blast chilling, shock freezing or fast chilling cycles.
When the equipment is in holding mode the temperature display flashes and a brief signal is emitted.
At the end of the blast chilling cycle the temperature inside the chamber is maintained at a steady +2°C.
At the end of the shock freezing cycle the temperature inside the chamber is maintained at a steady -20°C.
At the end of the beverage fast chilling cycle the temperature inside the chamber is maintained at a steady
+ 10°C.
Caution! “Holding mode” lasts indefinitely and can only be interrupted by the operator.
It is advisable that you DO NOT use the equipment as a normal “holding cabinet” and that you DO NOT
open and close the door too often when the equipment is in the holding mode.
“Holding mode” is considered a temporary phase between the blast chilling and/or the shock freezing
cycles and refrigerated conservation in a normal refrigerator or freezer.

Air temperature gauge
The air temperature gauge (which is not accessible or visible, and cannot be adjusted by the operator)
continuously monitors the temperature of the air inside the chamber.
This is in order to:
perform safety checks
keep air temperature inside the chamber constant during “holding mode” after the blast chilling, shock
freezing or beverage fast chilling cycles.
Containers and lids
It is recommended that you use trays and containers that are as shallow as possible, and not deeper than
65 mm. Do not cover the trays and containers with lids or cling film: the bigger the surface of the food
product exposed to the cold air, the shorter the blast chilling cycle.
Caution! Make sure that the containers are suitable for low temperatures (-40°C).
Loading the equipment
Make sure that the foods to be blast chilled and/or shock frozen do not overlap and are not thicker than
5-8 cm. Do not overload the equipment. The maximum load per cycle is indicated by the manufacturer:
Blast chilling: 7 kg
Shock freezing: 4 kg
Check that there is enough space between the trays, so as to allow enough air to pass through.
The maximum weight that can be supported by each grille is 5 kg.
Food temperatures
Caution! Do not leave cooked food too long at room temperature before blast chilling or shock freezing
it. Food at room temperature undergoes the following harmful changes:
- it loses moisture
- it loses its original quality (colour, fragrance, flavour, etc...)
- it is more subject to bacterial contamination
It is for these reasons that we recommend that the blast chilling and/or shock freezing cycle start as soon
as the food has been prepared and/or cooked. Food should undergo the blast chilling and/or shock
freezing cycle whilst at a high temperature (70°C or more).
Caution! If you are placing very hot containers (above 100°C) into the blast chiller, you should pre-chill
the empty chamber (i.e. with nothing inside). Also remember that hot containers should not be placed
directly onto the bottom of the chamber, but on the wire shelves provided instead.

CONTROL PANEL
A: START/STOP starts/stops the selected cycle
B1: selects the timer-controlled blast chilling cycle with a pre-set duration of 1:30 (hours:minutes). Press

OPERATION
Turning on
1) Press one of the function keys to turn the equipment on and
to light up all symbols on the control panel.
Caution! If you are using the built-in model, when you press the
START/ STOP key the front panel automatically opens to let air
circulate.
DO NOT close the front panel!
The front panel closes automatically at the end of the selected
cycle, when the START/STOP key is pressed to turn the
equipment off.
Pre-chilling
2) Before placing hot food into the blast chiller pre-chill the
empty chamber as follows:
Select the beverage fast chilling cycle by pressing button D.
Press button D again to set the duration of the cycle to 15
minutes. The duration of this cycle appears on display H.
Make sure that the door of the equipment is closed and that
the chamber is empty. Press button A (START/STOP) to start
the dummy cycle.
Wait for the pre-chilling cycle to end. This is indicated by the
buzzer and by the flashing symbols on the display.
At the end of the pre-chilling phase you can place the products
to be blast chilled, shock frozen or fast chilled inside the
equipment.

Selecting the cycle
3) Choose the desired cycle:
- blast chilling
- shock freezing
- beverage chilling.
Both the blast chilling and shock freezing cycles can be carried
out in “timer-controlled” or “core-probe” controlled modes.
Blast chilling/shock freezing in “timer-controlled
mode”
After cycle B1 (blast chilling) or C1 (shock freezing) in “timer-
controlled” mode is selected symbol E lights up. The pre-set
duration of the blast chilling cycle (1:30 - hours:minutes) or of
the shock freezing cycle (4:00 - hours:minutes) appears on
display F.
If the pre-set duration is not suitable for the food type to be
blast chilled or shock frozen, it can be adjusted by pressing
buttons B1 or C1 of the “timer-controlled” cycle repeatedly,
until the desired cycle time appears on display H.
Caution! The duration of the cycle is affected by various factors,
incl. the type of food, its thickness or size, the initial temperature
and the type of container being used.
The blast chilling or shock freezing cycle ends at the end of the
pre-set time.
Blast chilling/shock freezing in “core-probe”
mode
Insert the core probe into the food to be blast chilled or shock
frozen (Chapt. 1.2.2).
After cycle B2 (blast chilling) or C2 (shock freezing) is
selected, symbol G lights up. The temperature measured by
the core probe appears on display F. When the probe detects
that the temperature at the core, or centre, of the food has
reached +3°C (for the blast chilling cycle) or -18°C (for the
shock freezing cycle) it stops the cycle automatically.
Beverage fast chilling
This cycle is only available in the “timer-controlled” mode and
lasts 5, 10 or 15 minutes. The user can select the desired
duration by pressing button D repeatedly. The selected cycle
duration is displayed in display H.

Starting the cycles
4) Make sure that the door of the blast chiller is closed. Press
button A START/STOP to start the desired cycle.
Caution! To avoid damaging the equipment do not leave hot
food to stand inside the chamber. Start the blast chilling/shock
freezing/beverage chilling cycle IMMEDIATELY.
Caution! If in an emergency situation the cycle
has to be stopped in advance, press button A
START/ STOP to stop the equipment.
5) The end of the cycles (both in the “timer-controlled” and in the
“core-probe controlled” modes) is indicated by the sound of
the buzzer and by the flashing symbols on the display. Remove
the blast chilled/shock frozen food from the blast chiller and
store them adequately, close the door of the blast chiller and
press button A START/ STOP. The control panel will turn off
automatically within 3 minutes. In the built-in models the front
panel closes automatically.
STORAGE OF BLAST CHILLED OR SHOCK FROZEN
FOOD
Blast chilled and/or shock frozen food MUST NOT be stored
inside the blast chiller. The food should be adequately covered
and protected (with cling film, hermetic lids or for best results
vacuum packed) and stored in the refrigerator or freezer.
Shock frozen foods, whose shelf life in the freezer ranges from 2
to 12 months, should be identified by a label where the content,
the dated cooked and the assigned expiry date are to be written
with a permanent marker (fig.1.5).
Blast chilled food must be stored in a refrigerated cabinet at a
steady +2°C.
Shock frozen food must be stored in a freezer at a steady -20°C.
Vacuum packing (optional)
Vacuum packing extends the storage life of blast chilled food up to
15 or 21 days depending on the type of food. The food must be
vacuum packed perfectly in strict compliance with the times and
temperatures guidelines and labelled with contents, dated cooked
and expiry date with a perminent marker.

The information and instructions contained in this chapter are
intended for all operators of the equipment: both users and
maintenance technicians.
BASIC SAFETY RULES
The following safety rules must be followed during routine
cleaning and maintenance of the equipment:
do not disconnect the equipment from the power supply by
pulling the power cable;
do not touch the equipment with bare, wet or damp hands or
feet;
do not insert screwdrivers, kitchen utensils or other tools
between the guards and moving parts.
Never remove guards and safety devices in order to carry out
routine maintenance.
The manufacturer shall not be liable for any accident caused by
non-compliance with the above rules.
CLEANING EXTERNAL SURFACES
Body
The Blast Chiller’s external surfaces are stainless steel and must
be cleaned with a soft cloth or sponge and neutral detergent,
rubbing in the same direction as the grain.
Do not use stainless steel scouring pads, scrapers or abrasive, acid
or other harsh substances, which could permanently damage the
stainless steel surface.
After cleaning the external surfaces should be protected with oil-
based products designed for use on stainless steel.
Caution! When cleaning the blast chiller DO NOT remove the
serial plates, which contain information about the equipment that
might be needed by service technicians.
Control panel
The Blast Chiller’s control panel has “soft-touch” controls without
protruding buttons and can be cleaned easily with any detergent
suited to glass.
We recommend using a soft cloth with a small amount of mild
detergent, then carefully wipe dry.
CLEANING THE CHAMBER
In order to ensure the hygiene and quality of the blast chilled /
shock frozen foods, clean the chamber after every use.
Because of its special construction, the chamber can be washed
with a soft cloth or a sponge and neutral detergent.
Do not use stainless steel scouring pads, scrapers or abrasive, acid
or other harsh substances, which could permanently damage the
stainless steel surfaces.
After cleaning the chamber rinse and thoroughly wipe dry.

CLEANING THE CONDENSER
Caution! Disconnect the equipment from the power supply
before carrying out any maintenance.
The condenser should be cleaned monthly in order to remove
dust and fluff from the fins.
To access the condenser lift the front guard (both with built-in and
countertop models) (fig.2.4).
Caution! The condenser fins are made of aluminium and are
extremely delicate. Clean them with a soft-bristle brush with a
vertical motion along the direction of the fins. Alternatively use a
vacuum cleaner to prevent the scattering of dust in the
environment. Use a brush soaked in alcohol to remove greasy
residues.
Caution! Do not scrape the surface with sharp or abrasive tools!
Caution! Always wear protective gloves when cleaning the
condenser.
CLEANING THE EVAPORATOR
Caution! Disconnect the equipment from the power supply
before carrying out any maintenance.
To ensure the blast chiller is used correctly and efficiently it is
necessary that the evaporator is always clean and that air can
circulate freely.
You can access the evaporator by removing the 4 screws that
secure the RH protection grid inside the chamber (fig. 2.5).
This periodic operation can be carried out with a soft brush,
brushing the evaporator fins with a vertical motion. Use a brush
soaked in alcohol to remove greasy residues.
Caution! Do not scrape the surface with sharp or abrasive tools!
Caution! Always wear protective gloves when cleaning the
evaporator.
Caution! When you have finished cleaning put the covers
back in place and secure them carefully with the screws.
The equipment can only be started after this has been
done.

PERIODS OF NON USE
If you are not planning to use the blast chiller for a long period of
time clean it thoroughly both inside and outside, coat the external
surfaces with oil-based protective products specially designed for
use on stainless steel and leave the cabinet door slightly open.
Caution! Keep the equipment disconnected from the power
supply until it is used again.
Caution! Before using the blast chiller again check to make sure it
is in good condition and clean it thoroughly.
MALFUNCTION
Caution! In the case of any equipment malfunction, before calling
the retailer and requesting service, check that the power cable is
plugged in properly and that power is available.
If the blast chiller is still not working call the retailer and provide
the following information:
data on the serial plate
date of purchase
alarm code (if any) shown on the display (for example AS2)
Caution! Do not attempt to repair the equipment or any of its
parts, as this could be dangerous and void the warranty; refer
exclusively to qualified and authorised technicians.

FOREWORD
This equipment must only be installed by authorised,
trained staff in compliance with the instructions and rules
contained herein.
Before installing the equipment make sure that the existing
electrical system complies with the specifications in force and is
suitable for the rating of the equipment to be installed (V, kW, Hz,
No. of phases and power).
The installer should also check to make sure that existing fire-
prevention regulations are complied with.
The manufacturer provides with each item of equipment a
declaration of compliance with the current laws and regulations.
TRANSPORT AND HANDLING
The equipment can be loaded onto and unloaded from the means
of transport using suitable lifting equipment or by two people
using the handles at the sides of the box (fig. 3.3).
Caution! Take all necessary precautions when moving the
equipment in order not to damage the equipment, persons or
things. Follow the instructions on the box.

UNPACKING
Remove the equipment from the cardboard box and from the
polystyrene shells.
After removing the equipment from the box check that it is intact;
if something is wrong DO NOT operate the equipment and
contact the retailer.
Wearing protective gloves, lift the equipment using a suitable
tool or with the help of two people and place where it is going to
be installed.
Carefully remove the protective PVC film from all sides. Any
adhesive residue should be carefully removed with a soft cloth and
a neutral cleaner. Do not use stainless steel scouring pads,
scrapers or abrasive, acid or other harsh substances, which could
permanently damage the stainless steel surfaces.
Environmental considerations: all components of the package
must be disposed of in compliance with the laws in force in the
country where the equipment is used. Do not dispose of the
package in the environment under any circumstances.
Caution! This packaging is potentially dangerous for children and
animals. Make sure they do not play with the packaging.
BASIC SAFETY RULES
The user shall be liable in the case of non-compliance with the
instructions contained herein.
Following are some of the basic safety rules to be followed during
installation:
do not touch the equipment with bare, wet or damp
hands/feet or without suitable protective gloves or shoes)
do not insert screwdrivers, kitchen utensils or other tools
between the guards and moving parts
carry out maintenance operations only after having
disconnected the equipment from the power supply (do
not disconnect the equipment by pulling the power cable).

The equipment must be installed and tested in compliance with
the relevant safety laws and with any other rule and regulation in
force.
ELECTRICAL CONNECTION
Before installing the equipment make sure that the available
electrical system complies with the specifications in force and is
suitable for the rating of the equipment to be installed (V, kW, Hz
and power).
The equipment is supplied with a 150cm long power cable fitted
with a 16A UK plug; the socket must be fitted with a 10A fuse and
must be easily accessible.
Caution! Make sure the plug is accessible even after the unit has
been installed.
If the plug of the unit is not easily accessible, the power supply
network must be equipped with devices for omni-polar
disconnection with a distance of opening of the contacts that
allows complete disconnection in category III overload conditions.
Caution! If the entire length of the cable is not used, DO NOT
roll up the cable. Nevertheless ensure that is does not get ’in the
way’ and that it does not constitute a trip hazard. Ensure the
power cable is not crushed or bent.
Caution! Ensure that the power cable does not come into
contact with any liquids or corrosive substances nor sharp or hot
objects.
Caution! Do not allow children or pets to play with the power
cable.

POSITIONING THE EQUIPMENT
Blast chiller is suitable for built-in installation (Blast chiller for built-
in installation) as well as for countertop installation (Blast chiller
for countertop installation).
Neither model should be installed in closed rooms with high
temperatures and where there is insufficient air circulation. Do
not expose the blast chiller to direct sunlight or the weather. Keep
away from sources of heat.
Caution! When choosing where to install the blast chiller check
that there is enough space for the door to be opened.
Caution! The power cable is 150 cm long. To prevent
overheating do not use with extension cords or cables.
Consider the location of the sockets when deciding where to
install the blast chiller.
We also strongly recommend that the following instructions are
complied with to prevent overheating.
Built-in models: to allow enough air circulation leave the back of
the installation compartment open. Provide a minimum air vent of
300cm2 (fig. 4.3.1). When the equipment has been inserted into
the compartment it must be secured with the 4 screws provided.

ROOM TEMPERATURE AND AIR CIRCULATION
The temperature of the air in the room where the blast chiller is used should not exceed 32°C.Above this
temperature the efficient operation and performance of the appliance cannot be guaranteed.
FINAL INSTALLATION INSPECTION
Before starting the appliance carry out the following actions:
if the appliance was handled in a non-vertical position (for example on its back) or if it was turned
upside down during installation do not turn it on immediately. Wait at least 4 hours before starting it.
Check the power connection.
After carrying out this inspection:
Check power absorption with the help of an ammeter.
Carry out at least one complete blast chilling or shock freezing cycle.
Demonstrate to the client how to use the equipment, with specific reference to the client’s own
requirements.
SAFETY AND CONTROL SYSTEMS
Please note!
General protection fuses protect the entire power circuit from short-circuits and overloads.
A Clixon compressor will intervene in the case of an overload or other operating problems.
A safety pressure switch will intervene in the case of excessive pressure in the cooling circuit.
The chamber’s temperature is controlled by a circuit board and temperature gauge.
