Kettle Zone
Cooking Guide
e Kettle Zone Cooking System is going to change the way you grill. You will be making low and
slow cooks lled with smoky avor like never before. You’ll also be able to cook indirect and direct at
the same time.
is guide will introduce you to some of the possibilities of the Kettle Zone. Don’t feel like you can
only do whats in this guide though! We want you to experiment and push the limits of what your
Kettle can do.
Whats in the box:
Each Kettle Zone comes with 1 Base Rack, 2 Half Moon Stainless Steel Cooking Grates,
and 2 Ceramic Half Moon Heat Deectors.
Setting It Up
For the start of any cook the rst thing you want to do is put the base rack in. The base sits
with the circle on the lower layer. You’ll notice on the bottom layer there are two posts fac-
ing down on one side and one post facing down on the other. The two posts t around the
grate supports you’ll see on the inside of your Kettle (Fig. 1.)
The single post side right on the side of the opposite grate
support. Putting in the base rack can be done before or after
lighting your charcoal.
The next step is going to depend on what type of cook you are
doing.
Low and slow cooking - If you are smoking food and want it go low and slow for a long
period of time, a pork butt or brisket for example, you want to put in both heat deectors.
Place the heat deectors one at a time onto the bottom rack. Make sure the stones are
touching each other in the middle to make the cooking surface fully heat deected. After the
heat deectors are in place the cooking grates one at a time on the top rack.
Direct cooking - If you are searing steaks or cooking chick and want that direct ame
action all you need to do is put the cooking grates onto the top rack.
Combination Cooking - If you want to cook indirect and direct at the same time, perfect
for grilling meats and veggies together (Fig. 2), place one half moon heat deector on the
bottom rack and place both cooking grates on the top rack.
During your cook if you want to switch to full deected cooking
to keep food warm or add some smoky avor you can take off
one cooking grate and add a heat deector to the bottom rack.
The opposite is also true, if you want to switch to fully direct
cooking you can take out a cooking grate and remove the ceramic heat deector. Then
replace the cooking grate and get your sear on.
Alternatives - You can use the accessory ring on the bottom rack of the Kettle Zone for all
sorts of things. It will t a wok, a pot, a griddle, and anything else that is safe for direct heat.
One of our favorite uses is stir frying in a wok on the Kettle!
Disclaimer: Nothing is better than cooking with charcoal or an open ame. There are dangers associated with it.
Always use caution and heat protection with coming near open ames and hot surfaces. This includes while changing
grates and heat deectors in the Kettle Zone as well as when check and ipping food.
